Abstract
本发明提供了一种高钙黑芝麻丸及其制备方法,属于食品技术领域。本发明的高钙黑芝麻丸,包括按照重量份数计的如下原料:黑芝麻30‑60份、蜂蜜20‑50份、菊芋10‑20份、魔芋5‑10份、桑叶5‑10份、鸡蛋壳1‑5份。本发明对黑芝麻进行的处理可使黑芝麻皮肉分离,易于磨细,更易消化吸收,且精胺酸含量提高,补肾效果更好,同时添加黑芝麻和嫩桑叶,进一步提高和改善黑芝麻和桑叶的营养保健效果,“乙癸同源”,肝肾同补。桑叶和魔芋复配能够促进肠道健康,降低机体高蛋白饮食蛋白质消化酶的活性,减轻机体负担。菊芋能够使大便变软且快速排出,减少肠道毒素的产生,还有利于钙的溶解吸收。总之,本发明黑芝麻丸含钙量高,易于消化吸收,长期食用不会便秘。

技术领域
本发明属于食品技术领域,尤其涉及一种高钙黑芝麻丸及其制备方法。
背景技术
黑芝麻丸是以黑芝麻为主要原料,经研细末等制成的蜜丸,具有补肝益肾,健脑强身,填精髓,延衰老等功效,有很高的营养价值。但是现有技术中的黑芝麻丸多味辛,直接食用有点难以下咽,而且黑芝麻丸的有效生物活性成分难以被消化吸收。钙是人体内含量最丰富的矿物质元素,约占人体体重的1.5-2%,成人体内总钙量可达1.2-1.4kg,其中超过99%的钙以羟基磷灰石结晶形式存储于骨骼和牙齿中,低于1%的钙分布于软组织、组织间液和血液中。钙在维持机体正常生命机能方面具有重要作用。虽然市面上补钙的食品很多,但普遍存在吸收效率不高,长期食用容易造成便秘的现象。

有鉴于此,本发明的目的在于提供一种高钙黑芝麻丸及其制备方法,该高钙黑芝麻丸补钙效果好,且易于被消化吸收,使食用者排便通畅。

本发明提供了一种高钙黑芝麻丸,包括按照重量份数计的如下原料:黑芝麻30-60份、蜂蜜20-50份、菊芋10-20份、魔芋5-10份、桑叶5-10份、鸡蛋壳1-5份。

本发明还提供了一种上述高钙黑芝麻丸的制备方法,包括如下步骤:将黑芝麻九蒸九晒后,150-165℃烘烤15-30min,磨细至2-10μm,得黑芝麻粉;将桑叶蒸制,晒干,粉碎过筛得桑叶粉;将魔芋微波热风干燥,粉碎过筛得魔芋粉;将菊芋喷雾干燥,粉碎过筛得菊芋粉;去除鸡蛋壳的内衣,粉碎过筛得鸡蛋壳粉;将蜂蜜与黑芝麻粉以及桑叶粉、魔芋粉、菊芋粉、鸡蛋壳粉混合,制丸。
优选的,所述九蒸九晒具体为:将黑芝麻与5wt%-15wt%的水混合,110℃-120℃蒸30-60min后,20℃-35℃晒6-10h;重复9次上述步骤。
优选的,所述桑叶蒸制的时间为0.5-1.5h,晒干的温度为18℃-30℃。
优选的,所述微波热风干燥具体为:先用微波干燥到水分含量为35-45%,再用热风干燥至水分含量为10-20%。

本发明的有益效果:
本发明所述高钙黑芝麻丸,属于高钙食品,且更易消化吸收,黑芝麻精胺酸含量有所提高,补肾效果更好。添加春天采摘的嫩桑叶,进一步帮助营养成分的消化吸收,同时添加黑芝麻和桑叶,进一步提高和改善黑芝麻和桑叶的营养保健效果,“乙癸同源”,肝肾同补。在本发明所述高钙黑芝麻丸中,桑叶和魔芋复配能够促进肠道健康;能够降低机体高蛋白饮食蛋白质消化酶的活性,减轻机体负担。魔芋中含大量的葡萄甘露聚糖具有强大的膨胀力,有超过任何一种植物胶的粘韧度,即可填充胃肠,消除饥饿感,又因所含热量微乎其微,故可控制体重,达到减肥健美的目的。菊芋能够促进益生菌大量繁殖,保护肠道的健康;可以改善肠道蠕动功能,能够使大便变软并且快速的排出,减少毒素在肠道内停留的时间,从而减少毒素的产生,对便秘的患者有很好的改善作用;还能够促进体内能量的消耗,能够达到减肥瘦身的目的;能够降低血糖值,淡化血糖的浓度;菊粉等低聚糖不能被小肠消化吸收,进入大肠后被微生物发酵产生短链脂肪酸,使得肠道pH下降,有利于钙的溶解吸收。本申请加入的蛋壳是天然生物补钙原料,与本发明其他原料组合食用时,易于消化吸收。
具体实施方式
本发明提供了一种高钙黑芝麻丸,包括按照重量份数计的如下原料:黑芝麻30-60份、蜂蜜20-50份、菊芋10-20份、魔芋5-10份、桑叶5-10份、鸡蛋壳1-5份。
本发明对于上述各原料的来源没有特殊限定,采用本领域常规市售产品均可,其中桑叶优选的为春天采摘的嫩桑叶,蜂蜜优选的为土蜂蜜。
在本发明中,菊芋的重量份数优选为13-17份,更优选为14-15份,菊芋中的低聚糖不能被小肠消化吸收,进入大肠后被微生物发酵产生短链脂肪酸,使得肠道pH下降,有利于钙的溶解吸收。
黑芝麻中含有蛋黄素,胆碱,肌糖可防止人体发胖,性味:甘,平,归肝、肾、大肠经,益精血,补肝肾,润肠燥,用于精血亏虚,耳鸣耳聋,头晕眼花,病后脱发,须发早白,肠燥便秘,有健胃、保肝、促进红细胞生长的作用;同时可以增加体内黑色素,有利于头发生长。黑芝麻还含有大量的脂肪和蛋白质,还含有糖类、维生素A、维生素E、卵磷脂、钙、铁、铬等营养成分,其含钙量800mg/100g左右,是公认的高钙食品。在发明中,黑芝麻的重量份数优选为40-50份,更优选为42-48份。
桑叶,性味:甘、苦,寒,归肺、肝经,疏散风热,清肺润燥,清肝明目。桑叶中含有丰富的氨基酸、纤维素、维生素、矿物质以及多种生理活性物质,具有降血糖、降血压、降血脂、延缓衰老等多种保健功能。含钙量1600mg/100g左右,是名副其实的药食同源的高钙食品。在发明中,桑叶的重量份数优选为6-9份,更优选为7-8份。
魔芋性味:寒,辛,宽肠通便,化痰软坚,活血化瘀,解毒消肿,降血糖,降血压,魔芋中含量最大的葡萄甘露聚糖具有强大的膨胀力,有超过任何一种植物胶的粘韧度,即可填充胃肠,消除饥饿感,又因所含热量微乎其微,故可控制体重,达到减肥健美的目的。在发明中,魔芋的重量份数优选为6-9份,更优选为7-8份。
鸡蛋壳是经过天然自然形成,含碳酸钙83-85%,蛋白质15-17%,并含有多种微量元素(锌、铜、锰、铁、硒等),其中对人体有害的重金属元素铅、砷的含量极其低,均小于1PPM,是天然的生物补钙原料。在发明中,鸡蛋壳的重量份数优选为2-4份,更优选为3份。本发明鸡蛋壳的用量不会影响机体的消化吸收,若鸡蛋壳的添加量不合适,则会降低胃酸浓度,影响消化吸收。
本发明将鸡蛋壳与魔芋配伍,魔芋中含量最大的葡萄甘露聚糖具有强大的膨胀力,有超过任何一种植物胶的粘韧度,即可填充胃肠,使钙离子缓慢释放,不会使血钙快速升高;将鸡蛋壳与菊芋配伍,菊芋中的低聚糖不能被小肠消化吸收,进入大肠后被微生物发酵产生短链脂肪酸,使得肠道pH下降,有利于钙的溶解吸收。单纯用蛋壳补钙会造成便秘,不容易吸收。
本发明还提供了一种上述高钙黑芝麻丸的制备方法,包括如下步骤:将黑芝麻九蒸九晒后,150-165℃烘烤15-30min,磨细至2-10μm,得黑芝麻粉;将桑叶蒸制,晒干,粉碎过筛得桑叶粉;将魔芋微波热风干燥,粉碎过筛得魔芋粉;将菊芋喷雾干燥,粉碎过筛得菊芋粉;去除鸡蛋壳的内衣,粉碎过筛得鸡蛋壳粉;将黑芝麻粉、桑叶粉、魔芋粉、菊芋粉、鸡蛋壳粉与蜂蜜混合,制丸。
在本发明中,所述九蒸九晒的方式优选为将黑芝麻与5wt%-15wt%的水混合,110℃-120℃蒸30-60min后,20℃-35℃晒6-10h;重复9次上述步骤。本发明所述水优选的为纯净水,所述水的用量优选为8wt%-12wt%,更优选为9wt%-11wt%。本发明蒸黑芝麻时优选的蒸制方式为高压锅蒸,高压锅蒸时温度优选为114℃-116℃,蒸的时间优选为35-55min,更优选为40-50min。蒸完之后晒,所述晒的温度优选为25℃-30℃,更优选为27℃-28℃,所述晒的时间优选为7-9h,更优选为8h。重复进行上述与水混合、蒸、晒的步骤,重复9次,即得本申请所述九蒸九晒的黑芝麻。本领域传统九蒸九晒是直接取黑芝麻隔水蒸,黑芝麻的导热系数小,铺的太厚,短时间无法蒸透,蒸出的黑芝麻含水量不到5%,本发明在守正的基础上,给晒干的黑芝麻喷入5wt%-15wt%的纯净水,使导热系数从0.205J/(m.s.k)提高到0.411J/(m.s.k),用高压锅蒸,通过电子显微镜观察,本发明蒸出的黑芝麻,皮肉分离,易于磨细,而且经试验验证本发明的蒸晒工艺制备的黑芝麻更易消化吸收,蒸晒后的黑芝麻精胺酸含量提高,精胺酸含量从2468mg/100g,提高到5983mg/100g,精氨酸具有促进血流量的作用,使补肾效果更好。
本发明在制备获得桑叶粉的过程中,对于蒸制的具体方式没有特殊限定,优选的为用隔水竹笼蒸汽蒸,蒸制的时间优选为0.5-1.5h,更优选为0.9-1.1h。蒸完之后晒干,晒干的温度优选为18℃-30℃,更优选为22℃-26℃。晒干后粉碎过筛即得桑叶粉,其总黄酮量从3.71mg/g提高到4.82mg/g,本发明对于粉碎的具体方式没有特殊限定,采用本领域常规粉碎方式即可,优选的粉碎后过200目筛,保证了营养成分的完整性。
本发明在制备获得魔芋粉的过程中,优选的先将魔芋切片,然后进行微波联合热风进行分程干燥:先用微波干燥到水分含量为35-45%,再用热风干燥至水分含量为10-20%。本发明对于微波干燥和热风干燥的设备没有特殊要求,采用本领域常规市售产品均可。在本发明中,所述微波干燥结束时的水分含量优选为37-43%,更优选为39-41%,所述热风干燥结束时的水分含量优选为12-18%,更优选为14-16%。微波干燥时,微波的功率优选为750-850W,更优选为780-820W,热风干燥时,热风干燥的温度优选为60-70℃,更优选为63-67℃,热风干燥的速率优选为70-90m3/h,更优选为75-85m3/h。作为本发明最优选的实施例,魔芋粉经由如下步骤制备所得,先用微波功率800W处理7mm厚装载量为15.38kg/m2的魔芋片进行第一程干燥到水分含量为40%,再用65℃热风进行速率为80m3/h的第二程干燥至水分含量为15%。干燥后粉碎过筛即得魔芋粉,本发明对于粉碎的具体方式没有特殊限定,采用本领域常规粉碎方式即可,优选的粉碎后过200目筛。本发明所述魔芋粉的制备方法可使魔芋粉的黏度和多酚氧化酶活性达到最佳。
本发明在制备获得菊芋粉的过程中,对于喷雾干燥的具体方式没有特殊限定,采用本领域常规喷雾干燥的方式均可,而且本发明对于粉碎的具体方式没有特殊限定,采用本领域常规粉碎方式即可,优选的粉碎后过200目筛。
本发明在制备获得鸡蛋壳粉的过程中,优选的将鸡蛋壳清洗灭菌后,去除鸡蛋壳的内衣,粉碎过筛后得鸡蛋壳粉。本发明对于灭菌的具体方式没有特殊限定,采用本领域常规灭菌方式均可。本发明对于粉碎的具体方式没有特殊限定,采用本领域常规粉碎方式即可,优选的粉碎后过400目筛。本发明提供的鸡蛋壳粉碎粒径,便于胃酸与之发生化学反应,生成离子钙,及时进入血液运送至全身。
获得黑芝麻粉、桑叶粉、魔芋粉、菊芋粉、鸡蛋壳粉后,优选的混合方式为用V型混料机将桑叶粉、魔芋粉、菊芋粉、鸡蛋壳粉混匀,得混合粉,将蜂蜜和黑芝麻混匀后再与混合粉混匀。本发明对于制丸的具体方式没有特殊限定,采用本领域常规制丸方式均可,优选的采用双螺杆挤出机挤出,切段,搓成丸的方式。
下面结合实施例对本发明提供的技术方案进行详细的说明,但是不能把它们理解为对本发明保护范围的限定。

准确称取洗净晒干的黑芝麻30g,喷入2.4g的纯净水,用高压锅110℃蒸46min后,在20℃-25℃的太阳下晒7h;再喷入2.4g的纯净水,用高压锅110℃蒸46min后,在20℃-25℃的太阳下晒7h,循环此步骤共9次;160℃烘烤20min,磨细至2μm得黑芝麻粉;
准确称取菊芋20g,喷雾干燥后研磨粉碎,过200目筛,得菊芋粉;
准确称取春天采摘的嫩桑叶10g,用隔水竹笼蒸汽蒸0.5h,蒸完后在18℃条件下晒干,研磨粉碎过200目筛,得桑叶粉;
准确称取魔芋10g,切成7mm厚片,先用功率800W、装载量15.38kg/m2的微波对魔芋片进行第一程干燥至水分含量为40%,再用65℃热风进行速率为80m3/h的第二程干燥至水分含量为15%,干燥后粉碎过200目筛,得魔芋粉;
准确称取5g鸡蛋壳,清洗灭菌,去除鸡蛋壳的内衣后,磨细粉碎过400目筛,得鸡蛋壳粉;

准确称取菊芋18g,喷雾干燥后研磨粉碎,过200目筛,得菊芋粉;
准确称取春天采摘的嫩桑叶5g,用隔水竹笼蒸汽蒸1.5h,蒸完后在30℃条件下晒干,研磨粉碎过200目筛,得桑叶粉;

实施例4
准确称取洗净晒干的黑芝麻50g,喷入5.5g的纯净水,用高压锅114℃蒸46min后,在24℃-28℃的太阳下晒8h;再喷入5.5g的纯净水,用高压锅114℃蒸46min后,在24℃-28℃的太阳下晒8h,循环此步骤共9次;160℃烘烤20min,磨细至5μm得黑芝麻粉;
准确称取菊芋13g,喷雾干燥后研磨粉碎,过200目筛,得菊芋粉;
准确称取春天采摘的嫩桑叶6g,用隔水竹笼蒸汽蒸1.1h,蒸完后在26℃条件下晒干,研磨粉碎过200目筛,得桑叶粉;
准确称取魔芋7g,切成7mm厚片,先用功率800W、装载量15.38kg/m2的微波对魔芋片进行第一程干燥至水分含量为40%,再用65℃热风进行速率为80m3/h的第二程干燥至水分含量为15%,干燥后粉碎过200目筛,得魔芋粉;
准确称取3g鸡蛋壳,清洗灭菌,去除鸡蛋壳的内衣后,磨细粉碎过400目筛,得鸡蛋壳粉;
用V型混料机将桑叶粉、魔芋粉、菊芋粉、鸡蛋壳粉混匀,得混合粉,准确称取土蜂蜜50g,与上述黑芝麻粉混匀,再与混合粉混匀,放入双螺杆挤出机中挤出,切段,搓成丸。
实施例5
将实施例1-4所得的黑芝麻丸与本领域芝麻丸市售样品1和2的含钙量进行对比,其中测定钙含量的方法采用食品安全国家标准GB 5009.92-2016第三法,食品中钙的测定,结果如表1所示。

由表1可以看出,本发明的黑芝麻丸钙含量显著高于市售样品1和2,属于高钙食品。而且由于黑芝麻的钙含量大约是800mg/100g,加工制造成丸需要添加蜂蜜、黑米等,所以本领域已有的黑芝麻丸成品的钙含量小于800mg/100g,本申请黑芝麻丸的含钙量远高于本领域已有黑芝麻成品的含钙量。
实施例6
本发明的高钙黑芝麻丸经数百例消费者食用验证,具有补钙,更易消化吸收,营养保健效果好,减肥健美,改善便秘症状的作用。以下为本发明部分典型事例:
1、陈某,男,85岁,2015年3月大腿骨折,由于不符合手术条件,在医院保守治疗2个月,回家坚持不间断服用本发明高钙黑芝麻丸,没有其他治疗,正常吃饭饮食,2016年1月可以拄双拐行走,2019年5月可以不用拐杖行走,并且头发根部变黑,现在大部分头发变黑。
2、刘某,女,36岁,2019年体检骨质疏松,缺钙,服用高钙黑芝麻丸一年,2020年12体检,没有骨质疏松。
3、李某,女,52岁,小腿经常抽筋,服用一年,小腿抽筋现象消失。
4、蔡某,女,48岁,习惯性口腔溃疡,失眠,感觉疲惫,服用高钙黑芝麻丸一年,口腔溃疡和眼疲劳症状有所改善,睡眠质量有所提高,免疫力也有所提高,现在能跑半程马拉松且不觉得疲惫。
5、李某,男,62岁,多年便秘,服用本发明高钙黑芝麻丸半年,彻底改善了便秘的隐疾。

Claims (10)
1.一种高钙黑芝麻丸,其特征在于,包括按照重量份数计的如下原料:黑芝麻30-60份、蜂蜜20-50份、菊芋10-20份、魔芋5-10份、桑叶5-10份、鸡蛋壳1-5份。
2.根据权利要求1所述高钙黑芝麻丸,其特征在于,所述桑叶为春天采摘的嫩桑叶。
3.一种权利要求1或2所述高钙黑芝麻丸的制备方法,其特征在于,包括如下步骤:将黑芝麻九蒸九晒后,150-165℃烘烤15-30min,磨细至2-10μm,得黑芝麻粉;将桑叶蒸制,晒干,粉碎过筛得桑叶粉;将魔芋微波热风干燥,粉碎过筛得魔芋粉;将菊芋喷雾干燥,粉碎过筛得菊芋粉;去除鸡蛋壳的内衣,粉碎过筛得鸡蛋壳粉;将蜂蜜与黑芝麻粉以及桑叶粉、魔芋粉、菊芋粉、鸡蛋壳粉混合,制丸。
4.根据权利要求3所述制备方法,其特征在于,所述九蒸九晒具体为:将黑芝麻与5wt%-15wt%的水混合,110℃-120℃蒸30-60min后,20℃-35℃晒6-10h;重复9次上述步骤。
5.根据权利要求3所述制备方法,其特征在于,所述桑叶蒸制的时间为0.5-1.5h,晒干的温度为18℃-30℃。
6.根据权利要求3所述制备方法,其特征在于,所述微波热风干燥具体为:先用微波干燥到水分含量为35-45%,再用热风干燥至水分含量为10-20%。
7.根据权利要求6所述制备方法,其特征在于,所述微波的功率为750-850W。
8.根据权利要求6所述制备方法,其特征在于,所述热风干燥的温度为60-70℃,所述热风干燥的速率为70-90m3/h。
9.根据权利要求3所述制备方法,其特征在于,所述桑叶粉、魔芋粉和菊芋粉过筛的目数为200目。
10.根据权利要求3所述制备方法,其特征在于,所述鸡蛋壳粉过筛的目数为400目。
