Abstract
本发明公开一种纤维素酶制剂果蔬汁,包括以下几种原料:纤维素酶10‑15%、酶制剂8‑12%、果蔬提取汁50‑65%、白开水15‑35%、食品添加剂1‑5%;通过在果蔬汁中添加酶制剂加入酶解30‑45min能够部分破坏蔬果肉颗粒细胞膜的半透膜,增加细胞膜对物质的通透性,使蔬果肉颗粒与外部果汁的密度相近,增加了蔬果肉颗粒的悬浮稳定性,减小了蔬果汁中沉淀物的产生,提高了果蔬汁的口感与外观。

技术领域
本发明涉及食品加工技术领域,具体涉及一种纤维素酶制剂果蔬汁。
背景技术
蔬汁是蔬菜瓜果榨的汁,富含抗氧化物,通常,企业对果蔬汁可以理解为以水果、蔬菜为基料,通过加糖、酸、香精、色素等调制的产品,称为果蔬汁饮料。新鲜水果蔬菜汁能有效为人体补充维生素以及钙、磷、钾、镁等矿物质,可以调整人体功能协调,增强细胞活力以及肠胃功能,促进消化液分泌、消除疲劳。从食品工艺学的角度出发,一般认为果蔬汁是指:以新鲜或冷藏果蔬(也有一些采用干果)为原料,经过清洗、挑选后,采用物理的方法如压榨、浸提、离心等方法得到的果蔬汁液,称为果蔬汁。
原味果蔬汁是由果蔬经榨取或其他方法制得的汁液,其中不含任何色素、调料等添加剂,制得的果蔬汁,但是这样的果蔬汁中的蔬果肉颗粒悬浮稳定差,蔬果汁中沉淀物较多,其口感与外观较差。
发明内容
本发明的目的就在于解决上述问题,而提供一种纤维素酶制剂果蔬汁。
本发明通过以下技术方案来实现上述目的,一种纤维素酶制剂果蔬汁,包括以下几种原料:纤维素酶、酶制剂、果蔬提取汁、白开水、食品添加剂;
其质量配比为:纤维素酶10-15%、酶制剂8-12%、果蔬提取汁50-65%、白开水15-35%、食品添加剂1-5%。
优选的,所述食品添加剂包括矿物质、维生素、食用色素、甜味剂、酸味剂。
优选的,所述果蔬提取汁由新鲜果蔬鲜榨提取。
优选的,所述果蔬提取汁为苹果汁、菠萝汁、芒果汁、荔枝汁、橙汁、西番莲汁、芦笋汁、菠菜汁、番茄、青椒汁、南瓜汁、胡萝卜汁中的一种或多种。
优选的,所述酶制剂是由果胶酶、淀粉酶、蛋白酶与纤维素酶混合而成。
本发明的有益效果是:
通过在果蔬汁中添加酶制剂加入酶解30-45min能够部分破坏蔬果肉颗粒细胞膜的半透膜,增加细胞膜对物质的通透性,使蔬果肉颗粒与外部果汁的密度相近,增加了蔬果肉颗粒的悬浮稳定性,减小了蔬果汁中沉淀物的产生,提高了果蔬汁的口感与外观。

本实施例中,一种纤维素酶制剂果蔬汁,包括以下几种原料:纤维素酶、酶制剂、果蔬提取汁、白开水、食品添加剂;
其质量配比为:纤维素酶10-15%、酶制剂8-12%、果蔬提取汁50-65%、白开水15-35%、食品添加剂1-5%。
所述食品添加剂包括矿物质、维生素、食用色素、甜味剂、酸味剂。
所述果蔬提取汁由新鲜果蔬鲜榨提取。
所述果蔬提取汁为苹果汁、菠萝汁、芒果汁、荔枝汁、橙汁、西番莲汁、芦笋汁、菠菜汁、番茄、青椒汁、南瓜汁、胡萝卜汁中的一种或多种。
所述酶制剂是由果胶酶、淀粉酶、蛋白酶与纤维素酶混合而成。

1.一种纤维素酶制剂果蔬汁,其特征在于,包括以下几种原料:纤维素酶、酶制剂、果蔬提取汁、白开水、食品添加剂;
其质量配比为:纤维素酶10-15%、酶制剂8-12%、果蔬提取汁50-65%、白开水15-35%、食品添加剂1-5%。
2.根据权利要求1所述的一种纤维素酶制剂果蔬汁,其特征在于:所述食品添加剂包括矿物质、维生素、食用色素、甜味剂、酸味剂。
3.根据权利要求1所述的一种纤维素酶制剂果蔬汁,其特征在于:所述果蔬提取汁由新鲜果蔬鲜榨提取。
4.根据权利要求1所述的一种纤维素酶制剂果蔬汁,其特征在于:所述果蔬提取汁为苹果汁、菠萝汁、芒果汁、荔枝汁、橙汁、西番莲汁、芦笋汁、菠菜汁、番茄、青椒汁、南瓜汁、胡萝卜汁中的一种或多种。
5.根据权利要求1所述的一种纤维素酶制剂果蔬汁,其特征在于:所述酶制剂是由果胶酶、淀粉酶、蛋白酶与纤维素酶混合而成。
