本发明属于茉莉花茶制备领域,具体公开了一种有机茉莉花茶生产工艺。
背景技术
茉莉花茶(Jasmine Tea),又叫茉莉香片,属于花茶,茶胚多为绿茶,成品将茉莉花去除,亦属于绿茶的一种,已有1000多年历史。世界茉莉花茶发源地为福建福州,其茶香与茉莉花香交互融合,有“窨得茉莉无上味,列作人间第一香”的美誉,茉莉花茶是花茶的大宗产品,产区辽阔,产量高,品种丰富;但是,目前有机茉莉花茶的产量较少,因为茉莉花盛开期虫害较严重,按照有机农业的标准治理有一定的难度。其次,茉莉花要按照有机农业方式进行栽培管理,种植过程中不得使用任何人工合成的化学物质,再者,有机茉莉花茶中茉莉花的含量不能超过5%,农药残留量要低于最低检测限量。
发明内容
基于此,本发明提供一种有机茉莉花茶生产工艺,本方法制备的有机茉莉花茶,纯天然,无农药、无化学药品污染,香气独特陈香,滋味醇厚,有利于身体健康。
本发明的技术方案如下:
一种有机茉莉花茶生产工艺,包括以下步骤:
(1)有机茉莉花的种植:使用有机方法种植茉莉花,施加农家肥,不添加化学类农药和化肥,根部施加中草药防虫剂,枝叶处喷洒生物菌剂预防病虫害;
(2)有机茉莉花的采摘:预先标记上述有机茉莉花中花蕾大、无虫病、质量好的茉莉花蕾,待上述标记的茉莉花蕾开始吐香时2-4天内采摘;
(3)有机茉莉花的养花:采摘后,用通气的箩筐装花,装运时不要紧压,不能让茉莉花堆发热,将新鲜有机茉莉花蕾放置在28~32℃的室内进行养花,通过收堆和摊放反复多次操作促进95%鲜花呈虎爪形开放时使用;
(4)窨制;将步骤3所得的茉莉鲜花粉碎成小块后和茶胚按照重量比1:1~1:3混合,一层茶胚一层茉莉鲜花的方式进行堆积成茶堆,每层茶胚厚度为5-7cm;每层茉莉鲜花的厚度为3-4cm;每茶堆的高度为70-90cm,窨制温度为31~35℃,相对湿度80-90%,窨制36-72h;
(5)起花:用起花机,把茶胚和茉莉花分开,使茶胚中茉莉花的质量低于5%;
(6)复窨:重复步骤4和5,重复次数1-3次;
(7)烘干:将步骤6得到的茶胚放入真空干燥机中,真空度0.05-0.1Mpa,温度180-200℃烘干至含水量低于3-4%,得所述有机茉莉花茶。
进一步的,所述茉莉花的品种为横县群体种。
进一步的,所述步骤1中的农家肥按湿重质量百分比包括以下组分:人畜粪便50%、腐烂植物13%、大豆渣15%、食用菌渣12%、酵母粉5%、蚯蚓粪5%。
进一步的,所述步骤1中的中草药防虫剂按干重质量百分比包括以下组分:艾草30%、雄黄20%、辣蓼草15%、虎头辣椒10%、除虫菊15%、甘草5%、藿香5%。

(7)烘干:将步骤6得到的茶胚放入真空干燥机中,真空度0.075Mpa,温度190℃烘干至含水量低于3.5%,得所述有机茉莉花茶。

本发明公开了一种有机茉莉花茶生产工艺,从茉莉花原料就控制其品质,纯天然绿色种植,不添加化肥和农药,利用天然农家肥施肥,并利用中草药防虫剂,防治茉莉花根部的病虫害,利用每周喷洒生物菌剂,防治枝叶和花蕾处的病虫害,对茉莉白绢病、茉莉花叶螟、朱砂叶螨病虫均有良好防治效果,无农药残留,不易出现耐药性,所制得的茉莉花茶香气独特陈香,滋味醇厚,有利于身体健康。
具体实施方式
一种有机茉莉花茶生产工艺,包括以下步骤:
(1)有机茉莉花的种植:使用有机方法种植茉莉花,施加农家肥,不添加化学类农药和化肥,根部施加中草药防虫剂,枝叶处喷洒生物菌剂预防病虫害;优选的,所述茉莉花的品种为横县群体种;优选的,所述农家肥按湿重质量百分比包括以下组分:人畜粪便50%、腐烂植物13%、大豆渣15%、食用菌渣12%、酵母粉5%、蚯蚓粪5%;优选的,所述中草药防虫剂按干重质量百分比包括以下组分:艾草30%、雄黄20%、辣蓼草15%、虎头辣椒10%、除虫菊15%、甘草5%、藿香5%;优选的,所述生物菌剂以干菌质量百分比计包括以下组分:细黄链霉菌25%、铜绿假单胞菌20%、光合细菌15%、苏云金芽胞杆菌15%、地衣芽孢杆菌15%、哈茨木霉菌10%;优选的,喷洒生物菌剂的方法为,每周喷洒一次;
(2)有机茉莉花的采摘:预先标记上述有机茉莉花中花蕾大、无虫病、质量好的茉莉花蕾,待上述标记的茉莉花蕾开始吐香时2-4天内采摘;
(3)有机茉莉花的养花:采摘后,用通气的箩筐装花,装运时不要紧压,不能让茉莉花堆发热,将新鲜有机茉莉花蕾放置在28~32℃的室内进行养花,通过收堆和摊放反复多次操作促进95%鲜花呈虎爪形开放时使用;
(4)窨制;将步骤3所得的茉莉鲜花粉碎成小块后和茶胚按照重量比1:1~1:3混合,一层茶胚一层茉莉鲜花的方式进行堆积成茶堆,每层茶胚厚度为5-7cm;每层茉莉鲜花的厚度为3-4cm;每茶堆的高度为70-90cm,窨制温度为31~35℃,相对湿度80-90%,窨制36-72h;优选的,所述茶胚为绿茶茶胚、黄茶茶胚或者乌龙茶茶胚;
(5)起花:用起花机,把茶胚和茉莉花分开,使茶胚中茉莉花的质量低于5%;
(6)复窨:重复步骤4和5,重复次数1-3次;
(7)烘干:将步骤6得到的茶胚放入真空干燥机中,真空度0.05-0.1Mpa,温度180-200℃烘干至含水量低于3-4%,得所述有机茉莉花茶;优选的,所述机茉莉花茶中茉莉花的含量低于5%,无农药残留。

除非另有说明,以下实施例中使用的原料和试剂均为市售商品,或者可以通过已知方法制备。
实施例1
一种有机茉莉花茶生产工艺,包括以下步骤:
(1)有机茉莉花的种植:使用有机方法种植茉莉花,施加农家肥,不添加化学类农药和化肥,根部施加中草药防虫剂,枝叶处喷洒生物菌剂预防病虫害;所述茉莉花的品种为横县群体种;优选的,所述农家肥按湿重质量百分比包括以下组分:人畜粪便50%、腐烂植物13%、大豆渣15%、食用菌渣12%、酵母粉5%、蚯蚓粪5%;所述中草药防虫剂按干重质量百分比包括以下组分:艾草30%、雄黄20%、辣蓼草15%、虎头辣椒10%、除虫菊15%、甘草5%、藿香5%;所述生物菌剂以干菌质量百分比计包括以下组分:细黄链霉菌25%、铜绿假单胞菌20%、光合细菌15%、苏云金芽胞杆菌15%、地衣芽孢杆菌15%、哈茨木霉菌10%;喷洒生物菌剂的方法为,每周喷洒一次;
(2)有机茉莉花的采摘:预先标记上述有机茉莉花中花蕾大、无虫病、质量好的茉莉花蕾,待上述标记的茉莉花蕾开始吐香的第2天采摘;
(3)有机茉莉花的养花:采摘后,用通气的箩筐装花,装运时不要紧压,不能让茉莉花堆发热,将新鲜有机茉莉花蕾放置在28℃的室内进行养花,通过收堆和摊放反复多次操作促进95%鲜花呈虎爪形开放时使用;
(4)窨制;将步骤3所得的茉莉鲜花粉碎成小块后和茶胚按照重量比1:1混合,一层茶胚一层茉莉鲜花的方式进行堆积成茶堆,每层茶胚厚度为5cm;每层茉莉鲜花的厚度为3cm;每茶堆的高度为70cm,窨制温度为31℃,相对湿度80%,窨制36h;所述茶胚为绿茶茶胚;
(5)起花:用起花机,把茶胚和茉莉花分开,使茶胚中茉莉花的质量低于5%;
(6)复窨:重复步骤4和5,重复次数1-3次;
(7)烘干:将步骤6得到的茶胚放入真空干燥机中,真空度0.05Mpa,温度180℃烘干至含水量低于3%,得所述有机茉莉花茶;所述机茉莉花茶中茉莉花的含量低于5%,无农药残留。
经检测,上述有机茉莉花茶中茉莉花的含量低于5%,农药残留未测得。
实施例2
一种有机茉莉花茶生产工艺,包括以下步骤:

(5)起花:用起花机,把茶胚和茉莉花分开,使茶胚中茉莉花的质量低于5%;
(6)复窨:重复步骤4和5,重复次数2次;
(7)烘干:将步骤6得到的茶胚放入真空干燥机中,真空度0.075Mpa,温度190℃烘干至含水量低于3.5%,得所述有机茉莉花茶;所述机茉莉花茶中茉莉花的含量低于5%,无农药残留。
经检测,上述有机茉莉花茶中茉莉花的含量低于5%,农药残留未测得。
实施例3
一种有机茉莉花茶生产工艺,包括以下步骤:
(1)有机茉莉花的种植:使用有机方法种植茉莉花,施加农家肥,不添加化学类农药和化肥,根部施加中草药防虫剂,枝叶处喷洒生物菌剂预防病虫害;所述茉莉花的品种为横县群体种;所述农家肥按湿重质量百分比包括以下组分:人畜粪便50%、腐烂植物13%、大豆渣15%、食用菌渣12%、酵母粉5%、蚯蚓粪5%;所述中草药防虫剂按干重质量百分比包括以下组分:艾草30%、雄黄20%、辣蓼草15%、虎头辣椒10%、除虫菊15%、甘草5%、藿香5%;所述生物菌剂以干菌质量百分比计包括以下组分:细黄链霉菌25%、铜绿假单胞菌20%、光合细菌15%、苏云金芽胞杆菌15%、地衣芽孢杆菌15%、哈茨木霉菌10%;喷洒生物菌剂的方法为,每周喷洒一次;

(4)窨制;将步骤3所得的茉莉鲜花粉碎成小块后和茶胚按照重量比1:3混合,一层茶胚一层茉莉鲜花的方式进行堆积成茶堆,每层茶胚厚度为7cm;每层茉莉鲜花的厚度为4cm;每茶堆的高度为90cm,窨制温度为35℃,相对湿度90%,窨制72h;所述茶胚为乌龙茶茶胚;
(5)起花:用起花机,把茶胚和茉莉花分开,使茶胚中茉莉花的质量低于5%;
(6)复窨:重复步骤4和5,重复次数3次;
(7)烘干:将步骤6得到的茶胚放入真空干燥机中,真空度0.1Mpa,温度200℃烘干至含水量低于4%,得所述有机茉莉花茶。
经检测,上述有机茉莉花茶中茉莉花的含量低于5%,农药残留未测得。

Claims (9)
1.一种有机茉莉花茶生产工艺,其特征在于,包括以下步骤:
(1)有机茉莉花的种植:使用有机方法种植茉莉花,施加农家肥,不添加化学类农药和化肥,根部施加中草药防虫剂,枝叶处喷洒生物菌剂预防病虫害;
(2)有机茉莉花的采摘:预先标记上述有机茉莉花中花蕾大、无虫病、质量好的茉莉花蕾,待上述标记的茉莉花蕾开始吐香时2-4天内采摘;
(3)有机茉莉花的养花:采摘后,用通气的箩筐装花,装运时不要紧压,不能让茉莉花堆发热,将新鲜有机茉莉花蕾放置在28~32℃的室内进行养花,通过收堆和摊放反复多次操作促进95%鲜花呈虎爪形开放时使用;
(4)窨制;将步骤3所得的茉莉鲜花粉碎成小块后和茶胚按照重量比1:1~1:3混合,一层茶胚一层茉莉鲜花的方式进行堆积成茶堆,每层茶胚厚度为5-7cm;每层茉莉鲜花的厚度为3-4cm;每茶堆的高度为70-90cm,窨制温度为31~35℃,相对湿度80-90%,窨制36-72h;
(5)起花:用起花机,把茶胚和茉莉花分开,使茶胚中茉莉花的质量低于5%;
(6)复窨:重复步骤4和5,重复次数1-3次;
(7)烘干:将步骤6得到的茶胚放入真空干燥机中,真空度0.05-0.1Mpa,温度180-200℃烘干至含水量低于3-4%,得所述有机茉莉花茶。
2.根据权利要求1所述的一种有机茉莉花茶生产工艺,其特征在于,所述茉莉花的品种为横县群体种。

4.根据权利要求1所述的一种有机茉莉花茶生产工艺,其特征在于,所述步骤1中的中草药防虫剂按干重质量百分比包括以下组分:艾草30%、雄黄20%、辣蓼草15%、虎头辣椒10%、除虫菊15%、甘草5%、藿香5%。
5.根据权利要求1所述的一种有机茉莉花茶生产工艺,其特征在于,所述步骤1中的生物菌剂以干菌质量百分比计包括以下组分:细黄链霉菌25%、铜绿假单胞菌20%、光合细菌15%、苏云金芽胞杆菌15%、地衣芽孢杆菌15%、哈茨木霉菌10%。
6.根据权利要求1所述的一种有机茉莉花茶生产工艺,其特征在于,所述步骤1中的喷洒生物菌剂的方法为,每周喷洒一次。
7.根据权利要求1所述的一种有机茉莉花茶生产工艺,其特征在于,所述步骤4中的茶胚为绿茶茶胚、黄茶茶胚或者乌龙茶茶胚。
8.根据权利要求1所述的一种有机茉莉花茶生产工艺,其特征在于,所述步骤7中的有机茉莉花茶中茉莉花的含量低于5%,无农药残留。
9.根据权利要求1-8任一项所述的有机茉莉花茶生产工艺,其特征在于,包括以下步骤:
(1)有机茉莉花的种植:使用有机方法种植茉莉花,施加农家肥,不添加化学类农药和化肥,根部施加中草药防虫剂,枝叶处喷洒生物菌剂预防病虫害;
(2)有机茉莉花的采摘:预先标记上述有机茉莉花中花蕾大、无虫病、质量好的茉莉花蕾,待上述标记的茉莉花蕾开始吐香时第3天采摘;
