Abstract
本发明公开了一种油渣小分子肽的生物制备方法,包含:玉米粉1‑10份、核桃粉1‑10份、结晶果糖1‑10份、蛋清粉1‑10份、蛋黄粉1‑10份以及山楂粉1‑10份;S1:收集花生油渣进行脱脂处理,得到脱脂油渣,将花生脱脂油渣粉碎研磨得到粉末;S2:将S1中的花生油渣脱脂粉末进行酶解处理得到酶解液,将酶解液升温至70℃,进行灭酶处理,然后对酶解液进行冷却、离心处理,最后取上清液;S3:对S2中的上清液进行过滤以及压缩处理后得到小分子肽溶液,本发明涉及食品技术领域。本技术方案提供一种复合型小分子肽产品,该产品中加入了玉米粉、核桃粉、结晶果糖、蛋清粉、蛋黄粉、山楂粉,从而有效的帮助人体更快的吸收。

技术领域
本发明涉及食品技术领域,具体为一种油渣小分子肽的生物制备方法。
背景技术
小分子活性肽是介于氨基酸与蛋白质之间一种生化物质,它比蛋白质分子量小,又比氨基酸分子量大,是一个蛋白质的片段。
两个以上的氨基酸之间以肽键相连,形成的“氨基酸链”或“氨基酸串”就叫做肽。其中,10-15个以上氨基酸组成的肽被称为多肽,而由2至9个氨基酸组成的就叫做寡肽,由2至15个氨基酸组成的就叫做小分子肽或小肽。
目前生产的小分子肽产品大多数为单一性原材,导致身体摄入不均衡,并且不利于人体消化。
发明内容
针对现有技术的不足,本发明提供了一种油渣小分子肽的生物制备方法,解决了目前生产的小分子肽产品大多数为单一性原材,导致身体摄入不均衡,并且不利于人体消化的技术问题。
为实现以上目的,本发明通过以下技术方案予以实现:一种油渣小分子肽的生物制备方法,包含:玉米粉1-10份、核桃粉1-10份、结晶果糖1-10份、蛋清粉1-10份、蛋黄粉1-10份以及山楂粉1-10份;
S1:收集花生油渣进行脱脂处理,得到脱脂油渣,将花生脱脂油渣粉碎研磨得到粉末;
S2:将S1中的花生油渣脱脂粉末进行酶解处理得到酶解液,将酶解液升温至70℃,进行灭酶处理,然后对酶解液进行冷却、离心处理,最后取上清液;
S3:对S2中的上清液进行过滤以及压缩处理后得到小分子肽溶液;
S4:将S3中的小分子肽溶液进行烘干,得到小分子肽粉末;
S5:在S3中得到的小分子肽粉末加入玉米粉、核桃粉、结晶果糖、蛋清粉、蛋黄粉、山楂粉搅拌混合搅拌后得到复合粉。
优选的,所述S2中所述酶解处理包括以下步骤
A1:第一次酶解:向花生油渣脱脂粉末中加入碱性蛋白酶进行酶解,酶解结束后将溶液升温至85℃,恒温10min进行灭酶处理,冷却至室温;
A2:第二次酶解:向S1中冷却后的溶液加入中性蛋白酶进行酶解,酶解结束后即可得到酶解液。
优选的,所述SS2中恒温放置10~20min进行灭酶处理。
优选的,所述步骤A1中酶解温度为50~55℃,其中pH值为8.0~10.0,酶解时间为2~3h。
优选的,所述步骤A2中酶解温度为45~50℃,pH值为7.0,酶解时间为2~3h。

本发明提供了一种油渣小分子肽的生物制备方法。具备以下有益效果,本技术方案提供一种复合型小分子肽产品,该产品中加入了玉米粉、核桃粉、结晶果糖、蛋清粉、蛋黄粉、山楂粉,从而有效的帮助人体更快的吸收。

下面对本发明实施例中的技术方案进行清楚、完整地描述,显然,所描述的实施例仅仅是本发明一部分实施例,而不是全部的实施例。基于本发明中的实施例,本领域普通技术人员在没有做出创造性劳动前提下所获得的所有其他实施例,都属于本发明保护的范围。
本发明提供一种技术方案:一种油渣小分子肽的生物制备方法,包含:玉米粉1-10份、核桃粉1-10份、结晶果糖1-10份、蛋清粉1-10份、蛋黄粉1-10份以及山楂粉1-10份;
S1:收集花生油渣进行脱脂处理,得到脱脂油渣,将花生脱脂油渣粉碎研磨得到粉末;
S2:将S1中的花生油渣脱脂粉末进行酶解处理得到酶解液,将酶解液升温至70℃,进行灭酶处理,然后对酶解液进行冷却、离心处理,最后取上清液;
S3:对S2中的上清液进行过滤以及压缩处理后得到小分子肽溶液;
S4:将S3中的小分子肽溶液进行烘干,得到小分子肽粉末;
S5:在S3中得到的小分子肽粉末加入玉米粉、核桃粉、结晶果糖、蛋清粉、蛋黄粉、山楂粉搅拌混合搅拌后得到复合粉。
优选的,所述S2中所述酶解处理包括以下步骤
A1:第一次酶解:向花生油渣脱脂粉末中加入碱性蛋白酶进行酶解,酶解结束后将溶液升温至85℃,恒温10min进行灭酶处理,冷却至室温;
A2:第二次酶解:向S1中冷却后的溶液加入中性蛋白酶进行酶解,酶解结束后即可得到酶解液。
优选的,所述SS2中恒温放置10~20min进行灭酶处理。

实施例:
本技术方案主要包含以下原材:玉米粉1-10份、核桃粉1-10份、结晶果糖1-10份、蛋清粉1-10份、蛋黄粉1-10份以及山楂粉1-10份;
大豆粉不但具有大豆蛋白质含量高,不饱和脂肪酸含量较高等特点,还具有抗衰老、健脑等保健功效,是一种营养价值较高的食物;
核桃中所含的精氨酸、油酸、抗氧化物质等对保护心血管,预防冠心病、中风、老年痴呆等是颇有裨益的;
山楂消食积,散瘀血,驱绦虫。治肉积,症瘕,痰饮,痞满,吞酸,泻痢,肠风,腰痛,疝气产后儿枕痛,恶露不尽,小儿乳食停滞。消食健胃,行气散瘀。用于肉食积滞、胃烷胀满、泻痢腹痛、瘀血经闭、产后瘀阻、心腹刺痛、疝气疼痛、高血脂症;
花生中含有25%~35%的蛋白,主要有水溶性蛋白和盐溶性蛋白,水溶性蛋白又称为乳清蛋白,占花生蛋白的10%左右,盐溶性蛋白占花生蛋白的90%。盐溶性蛋白主要包括花生球蛋白和伴花生球蛋白,花生球蛋白是由两个亚基组成的二聚体,伴生花生球蛋白由6到7个亚基组成。花生中的蛋白与动物性蛋白营养差异不大,而且不含胆固醇,花生蛋白的花生蛋白的生物价为58,蛋白效价为1.7,其营养价值在植物性蛋白质中仅次于大豆蛋白;
花生果实还含脂肪、糖类、维生素A、维生素B6、维生素E、维生素K,以及矿物质钙、磷、铁等营养成分,含有8种人体所需的氨基酸及不饱和脂肪酸,含卵磷脂、胆碱、胡萝卜素、粗纤维等物质。花生含有一般杂粮少有的胆碱、卵磷脂,可促进人体的新陈代谢、增强记忆力,可益智、抗衰老、延寿。
具体制备方法如下:
收集花生油渣进行脱脂处理,得到脱脂油渣,将花生脱脂油渣粉碎研磨得到粉末,将S中的花生油渣脱脂粉末进行酶解处理得到酶解液,将酶解液升温至70℃,进行灭酶处理,然后对酶解液进行冷却、离心处理,最后取上清液,对S2中的上清液进行过滤以及压缩处理后得到小分子肽溶液,将S3中的小分子肽溶液进行烘干,得到小分子肽粉末,在S3中得到的小分子肽粉末加入玉米粉、核桃粉、结晶果糖、蛋清粉、蛋黄粉、山楂粉搅拌混合搅拌后得到复合粉。
作为优选方案,更进一步的,所述S2中所述酶解处理包括以下步骤
A1:第一次酶解:向花生油渣脱脂粉末中加入碱性蛋白酶进行酶解,酶解结束后将溶液升温至85℃,恒温10min进行灭酶处理,冷却至室温;
A2:第二次酶解:向S1中冷却后的溶液加入中性蛋白酶进行酶解,酶解结束后即可得到酶解液。

Claims (5)
1.一种油渣小分子肽的生物制备方法,其特征在于,包含:玉米粉1-10份、核桃粉1-10份、结晶果糖1-10份、蛋清粉1-10份、蛋黄粉1-10份以及山楂粉1-10份;
S1:收集花生油渣进行脱脂处理,得到脱脂油渣,将花生脱脂油渣粉碎研磨得到粉末;
S2:将S1中的花生油渣脱脂粉末进行酶解处理得到酶解液,将酶解液升温至70℃,进行灭酶处理,然后对酶解液进行冷却、离心处理,最后取上清液;
S3:对S2中的上清液进行过滤以及压缩处理后得到小分子肽溶液;
S4:将S3中的小分子肽溶液进行烘干,得到小分子肽粉末;
S5:在S3中得到的小分子肽粉末加入玉米粉、核桃粉、结晶果糖、蛋清粉、蛋黄粉、山楂粉搅拌混合搅拌后得到复合粉。
2.根据权利要求1所述的一种油渣小分子肽的生物制备方法,其特征在于,所述S2中所述酶解处理包括以下步骤
A1:第一次酶解:向花生油渣脱脂粉末中加入碱性蛋白酶进行酶解,酶解结束后将溶液升温至85℃,恒温10min进行灭酶处理,冷却至室温;
A2:第二次酶解:向S1中冷却后的溶液加入中性蛋白酶进行酶解,酶解结束后即可得到酶解液。
3.根据权利要求1所述的一种油渣小分子肽的生物制备方法,其特征在于,所述SS2中恒温放置10~20min进行灭酶处理。
4.根据权利要求2所述的一种油渣小分子肽的生物制备方法,其特征在于,所述步骤A1中酶解温度为50~55℃,其中pH值为8.0~10.0,酶解时间为2~3h。
