Abstract
本发明提供一种葛根复合饼干组合物及其制备方法,所述组合物包括野葛根淀粉、野葛根氧化淀粉、野葛根黄酮提取物、野葛根多糖提取物、野葛根多肽提取物,野葛根膳食纤维、罗汉果粉;所述复合饼干的制备包括面团制备、切片、饼坯制备、烤制等步骤;该复合饼干可作为肾病综合症、糖尿病患者及尿毒症早中期患者的补充膳食,可有效改善症状,提高病人生活质量。

技术领域
本发明涉及一种食品组合物及其制备方法,具体涉及一种葛根复合饼干组合物及其制备方法,属于中药保健食品技术领域。
背景技术
健康产业是一种有巨大市场潜力的新兴产业。以保健食品、功能性饮品、健康用品产销为主体的传统保健品产业是中国健康产业六大基本产业群体之一。随着经济快速发展和居民生活水平的提高,健康成为了焦点话题,而当前由于工业、农业污染的严重,人类对健康营养的索求己转移到营养保健品、绿色食品。健康越来越受到国人的关注和重视,如今它已成为我国经济产业中一大“朝阳产业”。
葛根为我国传统药食两用植物,采挖自豆科植物野葛(Pueraria lobata(Willd.)Ohwi(Fabaceae))的干燥根,产地遍布我国南北各地,现已人工栽培。依据传统理论,葛根具有解表退热、生津止渴之功效。
葛根的主要成分为葛根淀粉、葛根多糖、葛根多肽、纤维素和黄酮类化合物。葛根淀粉是葛根的主要成分,新鲜的葛根中含葛根淀粉约20%-25%,葛根淀粉营养独特,是一种药食兼优的绿色保健食品。葛根淀粉具有清热解毒、滋补营养、防暑降温、养颜护肤、清除体内垃圾之功效,对风火牙疼、口腔溃疡、咽喉肿痛、热咳、高热、头痛、疤疹、皮肤瘤痒、痔疮、热痢、泄泻、醉酒、前列腺炎等有明显疗效,对预防和治疗高血压、高血脂、冠心病、心绞痛、糖尿病、癌症等有特殊功效。葛根多糖具有增强人体免疫、抵抗衰老等功能。葛根黄酮对缺氧心肌具有保护作用,能明显降低缺血心肌的耗氧量,保护心脏免受缺血再港灌注所致的超微结构损伤,葛根黄酮还具有活血化瘀、改善微循环、扩张冠状动脉和脑血管、降低心肌耗氧量等作用。
罗汉果,别名假苦瓜、金不换等。罗汉果是药食两用的材料,性凉味甘,有清热润肺、化痰止咳、润肠通便的功效。
肾病、尿毒症病人时常出现恶心、呕吐、疲乏、瘙痒、口渴、心衰、免疫力低等症状,糖尿病人因为之前长期的高糖饮食使眼、肾、心脏、血管受到慢性损伤,从而出现多饮、多尿、多食、口渴、体重减轻等症状。发明人在长期的中药保健食品技术研究中,经过不断的筛选和配方试验,从多年生野葛根中经现代化的生物分离技术分别提取纯化到野葛根淀粉、野葛根氧化淀粉、野葛根黄酮、野葛根多糖、野葛根多肽,将这些成分与野葛根膳食纤维、罗汉果粉进行科学配伍开发保健食品。野葛根淀粉除具有营养功能外还富含多种微量元素;野葛根氧化淀粉能有效吸附尿氮素、肌酐,而且在体内代谢缓慢,不会引起糖尿病人的血糖升高;野葛根黄酮可改善微循环、扩张冠状动脉血管、减慢心率、降低心肌耗氧量、抗血栓素、提高高密度脂蛋白含量、修护化学性肝损伤、生津止渴、降血脂等作用;野葛根多糖具有抗感染、抑菌、抗肿瘤、抗病毒、增加免疫等功效;野葛根多肽通过小肠吸收,能防血栓、延缓衰老、提高机体抗肿瘤能力。罗汉果味甘,入肺、肾经,有消暑生津、润肺、滑肠通便,清咽止渴等功能。野葛根和罗汉果都属于药食同源中药材,将其上述各类有效成分经过科学提取、纯化制备得到,将它们进行科学合理的配伍,制备成一种复合饼干,可作为肾病综合症、糖尿病患者及尿毒症早中期患者的补充膳食,能有效改善症状,提高病人生活质量。
发明内容
本发明的目的是提供一种葛根复合饼干组合物,其包括野葛根淀粉、野葛根氧化淀粉、野葛根黄酮提取物、野葛根多糖提取物、野葛根多肽提取物,野葛根膳食纤维和罗汉果粉。
进一步地,所述葛根复合饼干组合物包括如下重量份的各组分:野葛根淀粉份5~15、野葛根氧化淀粉1~3份、野葛根黄酮提取物0.1~1份、野葛根多糖提取物5~15份、野葛根多肽提取物5~15份、野葛根膳食纤维1~3份、罗汉果粉0.1~1份。
在一实施方案中,所述葛根复合饼干组合物包括如下重量份的各组分:野葛根淀粉10份、野葛根氧化淀粉2份、野葛根黄酮提取物0.5份、野葛根多糖提取物10份、野葛根多肽提取物10份、野葛根膳食纤维2份、罗汉果粉0.5份。
更进一步地,所述葛根复合饼干组合物还包括如下重量份的各组分:小麦面粉20~60份、食用油2~10份、糖10~30份、蛋液10~30份、苏打粉0.2~1.5份、食盐0.2~1.0份。
在一实施方案中,所述葛根复合饼干组合物包括如下重量份的各组分:野葛根淀粉10份、野葛根氧化淀粉2份、野葛根黄酮提取物0.5份、野葛根多糖提取物10份、野葛根多肽提取物10份、野葛根膳食纤维2份、罗汉果粉0.5份、小麦面粉40份、食用油6份、糖20份、蛋液20份、苏打粉1份、食盐0.5份。
本发明的另一目的是提供一种葛根复合饼干的制备方法,其包括以下步骤:
(1)先用50~100℃水溶解糖、食盐,得糖盐水,备用;
(2)将野葛根淀粉、野葛根氧化淀粉、野葛根黄酮提取物、野葛根多糖提取物、野葛根多肽提取物,野葛根膳食纤维、罗汉果粉、小麦面粉、苏打粉混合,加入食用油、蛋液和步骤(1)制得的糖盐水,在80~150rpm下搅拌5~20min,于0~20℃下放置15~30min,形成生面团;
(3)将步骤(2)所形成的生面团辊压成3~5mm的薄面片,并将薄面片反复折叠辊压5~20次,使面片厚薄均匀、形态平整、表面光滑、质地细腻;
(4)将步骤(3)制成的薄面片用各种形状的模具制成饼坯,整齐摆放在涂好油的烤盘内;
(5)将步骤(4)制成的饼坯放入烤箱,面火温度170~210℃,底火温度130~180℃烤制4~30min至饼干呈金黄色为止,于室温冷却至15~20℃即得成品。
本发明葛根复合饼干具有用作肾病综合症、糖尿病患者及尿毒症早中期患者补充膳食的用途。
本发明野葛根淀粉采用如下方法制备:鲜野葛根经清洗后粉碎,得葛根浆液,浆液经离心分离除去纤维,得淀粉浆液,淀粉浆液经脱水、烘干,即得野葛根淀粉。
本发明野葛根氧化淀粉和野葛根多肽提取物采用CN201911418101.X中提供的方法制备,本发明野葛根多糖提取物采用CN202010101046.8中提供的方法制备。
本发明野葛根黄酮采用醇回流法制备:用浓度70%-95%、6-10倍药材重量的甲醇或乙醇回流提取2-3次,过滤,滤液浓缩后即得野葛根黄酮浸膏。
本发明野葛根膳食纤维采用酶法制备:将野葛根渣(制备野葛根淀粉时离心分离出的纤维)充分粉碎后与水混合,依次加入复合淀粉酶(α-淀粉酶与β-淀粉酶,二者比例为1∶3(w/w))、蛋白酶和脂肪酶处理,分步水解其中的非膳食纤维成分;复合淀粉酶处理时的水解温度为70±2℃,水解时间为1.5小时,复合淀粉酶与野葛根渣的重量比例为1∶500;蛋白酶处理时的水解温度为50±2℃,水解时间为1小时,蛋白酶与野葛根渣的重量比例为1∶250;脂肪酶处理时的水解温度为55±2℃,水解时间为2小时,脂肪酶与野葛根渣的重量比例为1∶350;三步酶解后进行灭酶、洗涤后得到葛根膳食纤维粗品,然后用2-10%的过氧化氢溶液脱色,再通过清洗、烘干、粉碎步骤,即制得野葛根膳食纤维。
本发明复合饼干组合物中的糖为生产饼干常用的糖类,包括白砂糖、绵白糖、糖粉、红糖、木糖醇等,若制备“无糖”型饼干则选用木糖醇。
将本发明葛根复合饼干给予肾病综合症患者、糖尿病患者以及尿毒症早中期患者作为补充膳食长期食用,收到了积极的辅助治疗效果,有效地改善了症状,提高了病人的生活质量。
本发明葛根复合饼干组合物具有如下有益效果:
(1)以药食两用中药材野葛根和罗汉果中具有多重保健功能的野葛根淀粉、野葛根氧化淀粉、野葛根黄酮、野葛根多糖、野葛根多肽、罗汉果粉为配伍主要原料,对人体无任何毒副作用,由此制作的葛根复合饼干可作为肾病综合症、糖尿病患者及尿毒症早中期患者的补充膳食,能有效改善症状,提高病人生活质量;
(2)制得的葛根复合饼干色泽自然,香味浓郁,滋味柔和,口感清爽;
(3)实现了野葛根中各类有效成分的综合利用,提高了附加值,且制作工艺简单,易于工业化生产。
具体实施方式
下面结合具体实施方式对本发明的上述发明内容作进一步的详细描述。但不应将此理解为本发明上述主题的范围仅限于下述实施例。在不脱离本发明上述技术思想情况下,根据本领域普通技术知识和惯用手段,做出各种替换和变更,均应包括在本发明的范围内。
实施例1葛根复合饼干的制备
配方:野葛根淀粉100Kg,野葛根氧化淀粉20Kg,野葛根黄酮提取物5Kg,野葛根多糖提取物100Kg,野葛根多肽提取物100Kg,野葛根膳食纤维20Kg,罗汉果粉5Kg,小麦面粉400Kg,食用油60Kg,木糖醇200Kg,蛋液200Kg,苏打粉10Kg,食盐5Kg。
制备步骤:
(1)先用50~100℃水400Kg溶解木糖醇、食盐,得糖盐水,备用;
(2)将野葛根淀粉、野葛根氧化淀粉、野葛根黄酮提取物、野葛根多糖提取物、野葛根多肽提取物,野葛根膳食纤维、罗汉果粉、小麦面粉、苏打粉混合,加入食用油、蛋液和步骤(1)制得的糖盐水,在80~150rpm下搅拌5~20min,于0~20℃下放置15~30min,形成生面团;
(3)将步骤(2)所形成的生面团辊压成3~5mm的薄面片,并将薄面片反复折叠辊压5~20次,使面片厚薄均匀、形态平整、表面光滑、质地细腻;
(4)将步骤(3)制成的薄面片用各种形状的模具制成饼坯,整齐摆放在涂好油的烤盘内;
(5)将步骤(4)制成的饼坯放入烤箱,面火温度170~210℃,底火温度130~180℃烤制4~30min至饼干呈金黄色为止,于室温冷却至15~20℃即得成品。
实施例2葛根复合饼干的制备
配方:野葛根淀粉50Kg,野葛根氧化淀粉30Kg,野葛根黄酮提取物10Kg,野葛根多糖提取物50Kg,野葛根多肽提取物150Kg,野葛根膳食纤维10Kg,罗汉果粉10Kg,小麦面粉200Kg,食用油100Kg,白砂糖100Kg,蛋液300Kg,苏打粉2Kg,食盐10Kg。
制备步骤:
(1)先用50~100℃水300Kg溶解白砂糖、食盐,得糖盐水,备用;
(2)将野葛根淀粉、野葛根氧化淀粉、野葛根黄酮提取物、野葛根多糖提取物、野葛根多肽提取物,野葛根膳食纤维、罗汉果粉、小麦面粉、苏打粉混合,加入食用油、蛋液和步骤(1)制得的糖盐水,在80~150rpm下搅拌5~20min,于0~20℃下放置15~30min,形成生面团;
(3)将步骤(2)所形成的生面团辊压成3~5mm的薄面片,并将薄面片反复折叠辊压5~20次,使面片厚薄均匀、形态平整、表面光滑、质地细腻;
(4)将步骤(3)制成的薄面片用各种形状的模具制成饼坯,整齐摆放在涂好油的烤盘内;
(5)将步骤(4)制成的饼坯放入烤箱,面火温度170~210℃,底火温度130~180℃烤制4~30min至饼干呈金黄色为止,于室温冷却至15~20℃即得成品。
实施例3葛根复合饼干的制备
配方:野葛根淀粉150Kg,野葛根氧化淀粉10Kg,野葛根黄酮提取物1Kg,野葛根多糖提取物150Kg,野葛根多肽提取物50Kg,野葛根膳食纤维30Kg,罗汉果粉1Kg,小麦面粉600Kg,食用油20Kg,红糖300Kg,蛋液100Kg,苏打粉15Kg,食盐2Kg。
制备步骤:
(1)先用50~100℃水470Kg溶解红糖、食盐,得糖盐水,备用;
(2)将野葛根淀粉、野葛根氧化淀粉、野葛根黄酮提取物、野葛根多糖提取物、野葛根多肽提取物,野葛根膳食纤维、罗汉果粉、小麦面粉、苏打粉混合,加入食用油、蛋液和步骤(1)制得的糖盐水,在80~150rpm下搅拌5~20min,于0~20℃下放置15~30min,形成生面团;
(3)将步骤(2)所形成的生面团辊压成3~5mm的薄面片,并将薄面片反复折叠辊压5~20次,使面片厚薄均匀、形态平整、表面光滑、质地细腻;
(4)将步骤(3)制成的薄面片用各种形状的模具制成饼坯,整齐摆放在涂好油的烤盘内;
(5)将步骤(4)制成的饼坯放入烤箱,面火温度170~210℃,底火温度130~180℃烤制4~30min至饼干呈金黄色为止,于室温冷却至15~20℃即得成品。
实施例4葛根复合饼干的制备
配方:野葛根淀粉80Kg,野葛根氧化淀粉25Kg,野葛根黄酮提取物8Kg,野葛根多糖提取物80Kg,野葛根多肽提取物130Kg,野葛根膳食纤维15Kg,罗汉果粉8Kg,小麦面粉300Kg,食用油80Kg,绵白糖150Kg,蛋液250Kg,苏打粉6Kg,食盐8Kg。
制备步骤:
(1)先用50~100℃水370Kg溶解绵白糖、食盐,得糖盐水,备用;
(2)将野葛根淀粉、野葛根氧化淀粉、野葛根黄酮提取物、野葛根多糖提取物、野葛根多肽提取物,野葛根膳食纤维、罗汉果粉、小麦面粉、苏打粉混合,加入食用油、蛋液和步骤(1)制得的糖盐水,在80~150rpm下搅拌5~20min,于0~20℃下放置15~30min,形成生面团;
(3)将步骤(2)所形成的生面团辊压成3~5mm的薄面片,并将薄面片反复折叠辊压5~20次,使面片厚薄均匀、形态平整、表面光滑、质地细腻;
(4)将步骤(3)制成的薄面片用各种形状的模具制成饼坯,整齐摆放在涂好油的烤盘内;
(5)将步骤(4)制成的饼坯放入烤箱,面火温度170~210℃,底火温度130~180℃烤制4~30min至饼干呈金黄色为止,于室温冷却至15~20℃即得成品。
实施例5葛根复合饼干的制备
配方:野葛根淀粉130Kg,野葛根氧化淀粉15Kg,野葛根黄酮提取物3Kg,野葛根多糖提取物120Kg,野葛根多肽提取物80Kg,野葛根膳食纤维25Kg,罗汉果粉3Kg,小麦面粉500Kg,食用油40Kg,糖粉280Kg,蛋液150Kg,苏打粉12Kg,食盐4Kg。
制备步骤:
(1)先用50~100℃水440Kg溶解糖粉、食盐,得糖盐水,备用;
(2)将野葛根淀粉、野葛根氧化淀粉、野葛根黄酮提取物、野葛根多糖提取物、野葛根多肽提取物,野葛根膳食纤维、罗汉果粉、小麦面粉、苏打粉混合,加入食用油、蛋液和步骤(1)制得的糖盐水,在80~150rpm下搅拌5~20min,于0~20℃下放置15~30min,形成生面团;
(3)将步骤(2)所形成的生面团辊压成3~5mm的薄面片,并将薄面片反复折叠辊压5~20次,使面片厚薄均匀、形态平整、表面光滑、质地细腻;
(4)将步骤(3)制成的薄面片用各种形状的模具制成饼坯,整齐摆放在涂好油的烤盘内;
(5)将步骤(4)制成的饼坯放入烤箱,面火温度170~210℃,底火温度130~180℃烤制4~30min至饼干呈金黄色为止,于室温冷却至15~20℃即得成品。
本发明各实施例制备得的葛根复合饼干呈金黄色,色泽均匀,外形完整,花纹清晰,厚薄基本均匀,不收缩、不变形、不起泡,断面结构呈多孔状,细密,无大孔洞,香味浓郁、无异味,口感松脆细腻,不黏牙。
典型病例:
张某,男,61岁,患糖尿病、糖尿病肾病4年,长期口服二甲双胍、注射胰岛素,但仍然周身肿胀,面色萎黄无华,腹胀纳差,常感全身乏力,食用本发明实施例1制得的葛根复合饼干(每天约500g)2-3周后,症状得到逐步改善,继续食用该复合饼干2周后,全身症状明显好转,化验血糖、血脂、肾功能,血清蛋白等都得到了明显的改善。
韦某某,男,37岁,尿毒症中期患者,一直服用海昆肾喜胶囊、开同等药物治疗,并于家中间断服用中药治疗,病情仍无改善,身困乏力症状重,食用本发明实施例4制得的葛根复合饼干(每天约500g)30天后,精神好转,浮肿明显减轻,蛋白从3个“+”减少到(+–),总蛋白(TP)从56.3g/L(参考值60.0-83.0)降至65.6g/L,白蛋白(ALB)从27.4g/L(参考值35-55)升至39.8g/L,尿素(BUN)从23.29mol/L(参考值3.38-8.57)降至6.25mol/L,血肌酐从387umol/L(参考正常值45-84umol/L)降至102umol/L;继续坚持食用本发明葛根复合饼干半年后,精神体力大好,多次检查尿蛋白定量1.0g左右,水肿消失,尿量正常,食欲增强,精神好转,脸色渐渐红润起来,再无感冒症状。

1.一种葛根复合饼干组合物,其特征在于,其包括野葛根淀粉、野葛根氧化淀粉、野葛根黄酮提取物、野葛根多糖提取物、野葛根多肽提取物,野葛根膳食纤维和罗汉果粉。
2.根据权利要求1所述的葛根复合饼干组合物,其特征在于,其包括如下重量份的各组分:野葛根淀粉5~15份、野葛根氧化淀粉份1~3、野葛根黄酮提取物0.1~1份、野葛根多糖提取物5~15份、野葛根多肽提取物5~15份、野葛根膳食纤维1~3份、罗汉果粉0.1~1份。
3.根据权利要求2所述的葛根复合饼干组合物,其特征在于,其包括如下重量份的各组分:野葛根淀粉10份、野葛根氧化淀粉2份、野葛根黄酮提取物0.5份、野葛根多糖提取物10份、野葛根多肽提取物10份、野葛根膳食纤维2份、罗汉果粉0.5份。
4.根据权利要求1~3任一项所述的葛根复合饼干组合物,其特征在于,其还包括如下重量份的各组分:小麦面粉20~60份、食用油2~10份、糖10~30份、蛋液10~30份、苏打粉0.2~1.5份、食盐0.2~1.0份。
5.根据权利要求4所述的葛根复合饼干组合物,其特征在于,其包括如下重量份的各组分:野葛根淀粉10份、野葛根氧化淀粉2份、野葛根黄酮提取物0.5份、野葛根多糖提取物10份、野葛根多肽提取物10份、野葛根膳食纤维2份、罗汉果粉0.5份、小麦面粉40份、食用油6份、糖20份、蛋液20份、苏打粉1份、食盐0.5份。
6.一种葛根复合饼干的制备方法,其特征在于,包括以下步骤:
(1)先用50~100℃水溶解糖、食盐,得糖盐水,备用;
(2)将野葛根淀粉、野葛根氧化淀粉、野葛根黄酮提取物、野葛根多糖提取物、野葛根多肽提取物,野葛根膳食纤维、罗汉果粉、小麦面粉、苏打粉混合,加入食用油、蛋液和步骤(1)制得的糖盐水,在80~150rpm下搅拌5~20min,于0~20℃下放置15~30min,形成生面团;
(3)将步骤(2)所形成的生面团辊压成3~5mm的薄面片,并将薄面片反复折叠辊压5~20次,使面片厚薄均匀、形态平整、表面光滑、质地细腻;
(4)将步骤(3)制成的薄面片用各种形状的模具制成饼坯,整齐摆放在涂好油的烤盘内;
(5)将步骤(4)制成的饼坯放入烤箱,面火温度170~210℃,底火温度130~180℃烤制4~30min至饼干呈金黄色为止,于室温冷却至15~20℃即得成品。
7.权利要求1-6中任一项所述的葛根复合饼干组合物在用作肾病综合症、糖尿病患者及尿毒症早中期患者补充膳食中的用途。
