背景技术
枸杞子是我国特有的茄科枸杞属植物的果实,具有滋肝补肾、益精明目、增强免疫力的作用。枸杞中功能营养成分可以分为两类,一类是脂溶性营养成分:类胡萝卜素和叶黄素、隐黄质、玉米黄质等类胡萝卜素酯,以及维生素E、亚油酸、亚麻酸等。另一类是水溶性成分:枸杞多糖、黄酮、氨基酸、甜菜碱、甾醇类、矿物质元素、B族维生素、维生素C等。因此对于开发枸杞提取物功能性食品具有重要的意义。
现有技术中,枸杞应用于饮品时,是将枸杞煲粉碎溶解后再将枸杞汤添加到饮品中,这种方式存在以下缺陷:溶解后弃去的枸杞渣同样还含有大量的营养成分,造成营养成分的浪费和流失。因此,需要提供一种枸杞保健饮品的制作方法。

为了克服现有技术中的缺陷,提供一种枸杞保健饮品的制作方法。
本发明通过下述方案实现:
一种枸杞保健饮品的制作方法,所述制备工艺包括下述步骤:
步骤1,枸杞预处理:将可食用的枸杞贮存于-10~-15℃的真空冻库,储存时间为12-24h;
步骤2,清洗:将处理好的枸杞清洗并在20-30℃下晾干1.5-2小时;
步骤3,制备初枸杞浆:将步骤2中的枸杞用胶体磨破碎后过滤得到初枸杞浆和枸杞籽与枸杞果皮混合物;
步骤4,制备第二枸杞浆:将所述枸杞籽与枸杞果皮混合物送入乳化均质机进行破碎,过滤得到第二枸杞浆;
步骤5,提取:在所述第二枸杞浆中加入其重量的0.25%~0.6%的柠檬酸和其重量的0.1%~0.3%L抗坏血酸,在86℃~95℃下用所述浓缩提取液重量的12~18倍水浸提多次,合并滤液得水溶提取液;
步骤6,混合,将所述初枸杞浆和所述水溶提取液混合搅拌0.5-1小时,得到枸杞液;
步骤7,浓缩:采用反渗透法对所述枸杞液进行浓缩,得到固体质量百分比为60%-70%的浓缩提取液;
步骤8,制备饮品:将所述浓缩提取液加入白砂糖、果胶经过均质、灭菌、灌装、冷却后得到所述枸杞保健饮品。
在所述步骤3进行所述过滤操作时,筛网为100-120目筛。
所述浸提次数为两次,第一次用所述浓缩提取液重量的5-8倍水浸提50-70分钟,第二次用所述浓缩提取液中加入其重量的7-10倍水浸提20-40分钟,300-400目滤布过滤。
所述浓缩提取液与白砂糖、果胶的添加比例为:浓缩提取液55%~75%,白砂糖15%~30%,果胶5%~15%。
所述灭菌的过程具体为:将所述浓缩提取液混合物在125~135℃下灭菌5-10分钟;灌装使用的容器经过清洗后用150-200℃蒸汽喷射灭菌。

步骤7,浓缩:采用反渗透法对所述枸杞液进行浓缩,得到固体质量百分比为60%-70%的浓缩提取液;
步骤8,制备饮品:将所述浓缩提取液加入白砂糖、果胶经过均质、灭菌、灌装、冷却后得到所述枸杞保健饮品。
在所述步骤3进行所述过滤操作时,筛网为100-120目筛。
所述浸提次数为两次,第一次用所述浓缩提取液重量的5-8倍水浸提50-70分钟,第二次用所述浓缩提取液中加入其重量的7-10倍水浸提20-40分钟,300-400目滤布过滤。
所述浓缩提取液与白砂糖、果胶的添加比例为:浓缩提取液55%~75%,白砂糖15%~30%,果胶5%~15%。
所述灭菌的过程具体为:将所述浓缩提取液混合物在125~135℃下灭菌5-10分钟;灌装使用的容器经过清洗后用150-200℃蒸汽喷射灭菌。
本发明优选实施例所得产品各项指标见表1。

此枸杞保健饮品具有较好的滋肝补肾、益精明目、增强免疫力的功效。
功能实验:去离子水为A组,实施例1作为B组,实施例2作为C组,实施例3作为D组。
小鼠抗疲劳试验:每组5只,雌雄各半,A组为空白组,B、C和D组为10%浓度的成品为实验组,每天每只喂食10ml相应组别的样品,随意饮食饲养60天。
试验条件:水深30cm,小鼠尾部载重物1.5g铁器,小鼠沉下水底不能再游为计算时间。结果见表2。

根据以上表1和表2所示,此枸杞保健饮品不仅保持了原有枸杞的色泽和口感,并最大限度保留枸杞的营养成份和生理活性物质,使其具有较好的增强免疫力、抗疲劳的功效。
尽管已经对本发明的技术方案做了较为详细的阐述和列举,应当理解,对于本领域技术人员来说,对上述实施例做出修改或者采用等同的替代方案,这对本领域的技术人员而言是显而易见,在不偏离本发明精神的基础上所做的这些修改或改进,均属于本发明要求保护的范围。
Claims (5)
1.一种枸杞保健饮品的制作方法,其特征在于,所述制备工艺包括下述步骤:
步骤1,枸杞预处理:将可食用的枸杞贮存于-10~-15℃的真空冻库,储存时间为12-24h;
步骤2,清洗:将处理好的枸杞清洗并在20-30℃下晾干1.5-2小时;
步骤3,制备初枸杞浆:将步骤2中的枸杞用胶体磨破碎后过滤得到初枸杞浆和枸杞籽与枸杞果皮混合物;
步骤4,制备第二枸杞浆:将所述枸杞籽与枸杞果皮混合物送入乳化均质机进行破碎,过滤得到第二枸杞浆;
步骤5,提取:在所述第二枸杞浆中加入其重量的0.25%~0.6%的柠檬酸和其重量的0.1%~0.3%L抗坏血酸,在86℃~95℃下用所述浓缩提取液重量的12~18倍水浸提多次,合并滤液得水溶提取液;
步骤6,混合:将所述初枸杞浆和所述水溶提取液混合搅拌0.5-1小时,得到枸杞液;
步骤7,浓缩:采用反渗透法对所述枸杞液进行浓缩,得到固体质量百分比为60%-70%的浓缩提取液;
步骤8,制备饮品:将所述浓缩提取液加入白砂糖、果胶经过灭菌、灌装、冷却后得到所述枸杞保健饮品。
2.根据权利要求1所述的一种枸杞保健饮品的制作方法,其特征在于:在所述步骤3进行所述过滤操作时,筛网为100-120目筛。
3.根据权利要求1所述的一种枸杞保健饮品的制作方法,其特征在于:所述浸提次数为两次,第一次用所述浓缩提取液重量的5-8倍水浸提50-70分钟,第二次用所述浓缩提取液中加入其重量的7-10倍水浸提20-40分钟,300-400目滤布过滤。
4.根据权利要求1所述的一种枸杞保健饮品的制作方法,其特征在于,所述浓缩提取液与白砂糖、果胶的添加比例为:浓缩提取液55%~75%,白砂糖15%~30%,果胶5%~15%。
5.根据权利要求1所述的一种枸杞保健饮品的制作方法,其特征在于,所述灭菌的过程具体为:将所述浓缩提取液混合物在125~135℃下灭菌5-10分钟;灌装使用的容器经过清洗后用150-200℃蒸汽喷射灭菌。
