技术领域
本发明涉及固体饮料技术领域,特别是一种富硒辣木固体饮料及其制备方法。
背景技术
硒作为人体的必需微量元素,在过氧化物的分解和自由基的清除、机体免疫力的调节、有毒元素的拮抗、养肝护肝着重要作用,它能够预防和抑制肿瘤、抗衰老、维持心血管系统正常的结构与功能,预防动脉硬化和冠心病的出现
随着现代生活节奏的加快,人们生活压力的加大,人的身体常常处于"亚键康"状态,专家建议人体摄入硒标准要提高,应以每日240-260微克最为合适,就这个数字看单靠农产品本身的含硒量远远不能满足人体需要。中国营养学会对我国13个省市做过一项调查表明,成人日平均硒摄入量为26-32微克,离中国营养学会推荐的最低限度50微克相距甚远,而且补硒还需要天天补,年年补,中间如果间断的话,效果就基本没了。
因此,富硒的固体饮料被研究出来,但是目前的富硒固体饮料富硒含量不高,制备工艺较为繁琐。
发明内容
本发明的目的在于提供一种富硒辣木固体饮料及其制备方法,该固体饮料不仅富含硒元素,而且制备工艺较为简易。
为达到上述目的,本发明采用的技术方案如下:一种富硒辣木固体饮料,其配料和重量百分比为:辣木80-90%、木糖醇5-10%、麦芽糊精5-10%。
一种如上所述的富硒辣木固体饮料的制备方法,包括以下步骤:
(1)采摘新鲜的富硒辣木叶,进行清洗并干燥;
(2)分别称取清洗干燥后的辣木叶,以及其余配料,各配料的重量百分比为:辣木80-90%、木糖醇5-10%、麦芽糊精5-10%;
(3)把按比例称量的配料混合均匀后放入汽爆机中,通入蒸汽维持压力1-4min后,进行汽爆;收集汽爆后产品,置于托盘中,在真空烘箱中干燥后,机械粉碎;将烘干粉碎后的样品原料用气流粉碎机进行超微破壁处理粉碎,得到原料破壁粉;
(4)浓缩提取;
(5)通过制粒机制成颗粒状;
(6)将整好粒的产品放入50-60℃的烘箱中干燥1-3h,直至产品水分小于3%;
(7)灭菌处理;
(8)进行包装。
优选地,步骤(1)中辣木叶的清洗干燥步骤具体为:对新鲜的富硒辣木叶进行超声清洗,超声功率为200W~1200W,超声温度15℃,超声时间6min~8min;对洗净后的辣木叶进行喷雾干燥处理,喷雾干燥工艺的进风温度为165℃~190℃,出风温度为160℃~175℃。
优选地,所述的灭菌处理采用紫外线,辐射灭菌或臭氧灭菌。
辣木叶富含多种矿物质、维生素和药理活性成分,是药食同源的植物,其营养价值和药用价值已被广泛证实并正被开发利用。辣木被西方科学家誉为是上帝赐给人类的一件珍贵礼物,含有丰富的营养物质,可以满足身体对各种营养素的需要,不仅是发达国家素食者的理想食物,还是贫穷地区人类的天然营养库。Teixeira等研究显示辣木叶粉中含有28.7%的粗蛋白、7.1%的脂肪、44.4%碳水化合物。每100g叶片中含有2.0g钙、282mg铁。另外,辣木叶片中含有17种氨基酸,其中谷氨酸含量最高,占总氨基酸含量的14.52%,另外赖氨酸和苏氨酸含量也比较丰富。辣木叶片中钙的含量是牛奶的4倍,蛋白质的含量是牛奶的3 倍,铁的含量是菠菜的3倍,钾的含量是香蕉的3倍,Vc的含量是柑橘的7倍,维生素A的含量是胡萝卜的4倍。
辣木作为一种功能性植物,一方面,含有多种营养物质,其营养价值与具有“人类营养的微型宝库”之称的螺旋藻相当;另外一方面辣木具有较大的药用价值,可以治疗疼痛、溃疡、高血压、癌症、糖尿病、皮肤感染、各种炎症等多种疾病。此外辣木还具有抗氧化、控制病原微生物、保肝、改善维生素A缺乏症、镇静、抗痉挛和增强SOD酶活性等功能。
辣木叶粉为精选幼嫩辣木叶,经超微粉碎而成,具有全面补充营养,提高免疫力,排毒养颜等功效。辣木叶粉营养丰富而全面,维生素E含量分别是螺旋藻和黄豆粉的70倍和40 倍。辣木叶粉有降血糖、降脂、降压、抗肿瘤、抗氧化、通便、利尿、驱虫、改善睡眠等功效,长期食用可增强人体免疫功能,延缓衰老,预防疾病。
在配料中,辣木含有硒元素,因此制备所得的固体饮料具体富硒特点,实现了养肝护肝、排毒解毒的功效;另外,制备工艺过程采用了气爆粉碎技术,是饮料口感较为润滑细腻。

实施1
一种富硒辣木固体饮料的制备方法,包括以下步骤:
(1)采摘新鲜的富硒辣木叶,对新鲜的富硒辣木叶进行超声清洗,超声功率为500W,超声温度15℃,超声时间6min;对洗净后的辣木叶进行喷雾干燥处理,喷雾干燥工艺的进风温度为165℃,出风温度为160℃;
(2)分别称取清洗干燥后的辣木叶,以及其余配料,各配料的重量百分比为:辣木80%、木糖醇20%、麦芽糊精20%;
(3)把按比例称量的配料混合均匀后放入汽爆机中,通入蒸汽维持压力1min后,进行汽爆;收集汽爆后产品,置于托盘中,在真空烘箱中干燥后,机械粉碎;将烘干粉碎后的样品原料用气流粉碎机进行超微破壁处理粉碎,得到原料破壁粉;
(4)浓缩提取;
(5)通过制粒机制成颗粒状;
(6)将整好粒的产品放入50℃的烘箱中干燥1h,直至产品水分小于3%;

(1)采摘新鲜的富硒辣木叶,对新鲜的富硒辣木叶进行超声清洗,超声功率为1200W,超声温度15℃,超声时间8min;对洗净后的辣木叶进行喷雾干燥处理,喷雾干燥工艺的进风温度为190℃,出风温度为175℃;
(2)分别称取清洗干燥后的辣木叶,以及其余配料,各配料的重量百分比为:辣木90%、木糖醇5%、麦芽糊精5%;
(3)把按比例称量的配料混合均匀后放入汽爆机中,通入蒸汽维持压力4min后,进行汽爆;收集汽爆后产品,置于托盘中,在真空烘箱中干燥后,机械粉碎;将烘干粉碎后的样品原料用气流粉碎机进行超微破壁处理粉碎,得到原料破壁粉;
(4)浓缩提取;
(5)通过制粒机制成颗粒状;
(6)将整好粒的产品放入60℃的烘箱中干燥3h,直至产品水分小于3%;
(7)采用紫外线,辐射灭菌或臭氧灭菌进行灭菌处理;
(8)进行包装。
实施例3
一种富硒辣木固体饮料的制备方法,包括以下步骤:
(1)采摘新鲜的富硒辣木叶,对新鲜的富硒辣木叶进行超声清洗,超声功率为800W,超声温度15℃,超声时间7min;对洗净后的辣木叶进行喷雾干燥处理,喷雾干燥工艺的进风温度为180℃,出风温度为170℃;
(2)分别称取清洗干燥后的辣木叶,以及其余配料,各配料的重量百分比为:辣木85%、木糖醇7%、麦芽糊精8%;
(3)把按比例称量的配料混合均匀后放入汽爆机中,通入蒸汽维持压力3min后,进行汽爆;收集汽爆后产品,置于托盘中,在真空烘箱中干燥后,机械粉碎;将烘干粉碎后的样品原料用气流粉碎机进行超微破壁处理粉碎,得到原料破壁粉;
(4)浓缩提取;
(5)通过制粒机制成颗粒状;
(6)将整好粒的产品放入55℃的烘箱中干燥2h,直至产品水分小于3%;
(7)采用紫外线,辐射灭菌或臭氧灭菌进行灭菌处理;
(8)进行包装。
分别随机取两份实施例1、实施例2、实施例3所制成的产品进行硒含量检测,检测结果如下:
根据GB28050-2011食品安全国家标准中的对于高或富含矿物质相关规定,
对比检测结果,辣木固体饮料颗粒每100g中,硒含量≥30%RNV,因此,本方法制备得到的辣木固体饮料富硒。
Claims (4)
1.一种富硒辣木固体饮料,其特征在于:其配料和重量百分比为:辣木80-90%、木糖醇5-10%、麦芽糊精5-10%。
2.一种如权利要求1所述的富硒辣木固体饮料的制备方法,其特征在于:包括以下步骤:
(1)采摘新鲜的富硒辣木叶,进行清洗并干燥;
(2)分别称取清洗干燥后的辣木叶,以及其余配料,各配料的重量百分比为:辣木80-90%、木糖醇5-10%、麦芽糊精5-10%;
(3)把按比例称量的配料混合均匀后放入汽爆机中,通入蒸汽维持压力1-4min后,进行汽爆;收集汽爆后产品,置于托盘中,在真空烘箱中干燥后,机械粉碎;将烘干粉碎后的样品原料用气流粉碎机进行超微破壁处理粉碎,得到原料破壁粉;
(4)浓缩提取;
(5)通过制粒机制成颗粒状;
(6)将整好粒的产品放入50-60℃的烘箱中干燥1-3h,直至产品水分小于3%;
(7)灭菌处理;
(8)进行包装。
3.根据权利要求2所述的一种富硒辣木固体饮料的制备方法,其特征在于:步骤(1)中辣木叶的清洗干燥步骤具体为:对新鲜的富硒辣木叶进行超声清洗,超声功率为200W~1200W,超声温度15℃,超声时间6min~8min;对洗净后的辣木叶进行喷雾干燥处理,喷雾干燥工艺的进风温度为165℃~190℃,出风温度为160℃~175℃。
4.根据权利要求2所述的一种富硒辣木固体饮料的制备方法,其特征在于:所述的灭菌处理采用紫外线,辐射灭菌或臭氧灭菌。
