本发明还提供一种健脾开胃的百合山药糕的制备方法,包括以下步骤:
(1)选料:选取无霉变、色斑的鲜百合;山药挑选温县铁棍山药;选当年新山楂,挑出坏果,机器去核;其余物料均选自道地药材产地出产的原料;
(2)清洗:将百合剥皮、切片,与去核山楂一同用纯净水超声震动5~10分钟进行清洗,去除表面浮土和泥垢,山药流水冲洗干净后去皮备用,陈皮置于0.2~0.5%的NaCl溶液中浸泡4~6min后捞出,沥水备用;
(3)蒸熟:将百合放入蒸箱,中火蒸煮8~12分钟,得到熟百合;将山药和茯苓放入高压罐,加压大火蒸制15~25分钟后转入常压,得到熟山药和茯苓,放置室温下待冷却备用;
(4)打浆:饴糖加入适量纯净水,以40~60℃的温水浴将饴糖溶解,得到饴糖溶液;将步骤(3)得到的熟百合、熟山药、熟茯苓、步骤(2)得到的山楂、陈皮与炒麦芽一同放入胶体球磨机,加入饴糖溶液,进行15~25分钟的打浆,将打浆后的混合浆料熬煮,时间15~25分钟,待流动性液体消失时关火,得到浓缩百合山药膏备用;
(5)成型:将步骤(4)得到的浓缩百合山药膏倒入冷却盘中进行冷却,冷却成型后切块得百合山药膏初料;
(6)烘干和包装:将步骤(5)中切好的百合山药膏初料放入烘干机,烘干至百合山药膏初料的含水量为25~40%时,得到百合山药糕;将成品经巴氏灭菌后,在无菌包装生产线进行打包密封,包装完成和质检合格后,即得到百合山药糕的成品。

(4)打浆:饴糖加入适量纯净水,以40~60℃的温水浴将饴糖溶解,得到饴糖溶液;将步骤(3)得到的熟百合、熟山药、熟茯苓、步骤(2)得到的山楂、陈皮与炒麦芽一同放入胶体球磨机,加入饴糖溶液,进行15~25分钟的打浆,将打浆后的混合浆料熬煮,时间15~25分钟,待流动性液体消失时关火,得到浓缩百合山药膏备用;
(5)成型:将步骤(4)得到的浓缩百合山药膏倒入冷却盘中进行冷却,冷却成型后切为4*1*0.5cm小块,得百合山药膏初料;
(6)烘干和包装:将步骤(5)中切好的百合山药膏初料放入烘干机,烘干至百合山药膏初料的含水量为25~40%时,得到百合山药糕;将成品经巴氏灭菌后,在无菌包装生产线进行打包密封,包装完成和质检合格后,即得到百合山药糕的成品。

除非另有说明,以下实施例中使用的原料和试剂均为市售商品,或者可以通过已知方法制备。
实施例1
本发明提供一种健脾开胃的百合山药糕,按重量份数计,其配方包括鲜百合60份、山药30份、炒麦芽12份、茯苓9份、山楂10份、饴糖6份、陈皮5份。
本发明还提供一种健脾开胃的百合山药糕的制备方法,包括以下步骤:
(1)选料:选取无霉变、色斑的鲜百合;山药挑选温县铁棍山药;选当年新山楂,挑出坏果,机器去核;其余物料均选自道地药材产地出产的原料;
(2)清洗:将百合剥皮、切片,与去核山楂一同用纯净水超声震动5分钟进行清洗,去除表面浮土和泥垢,山药流水冲洗干净后去皮备用,陈皮置于0.2的NaCl溶液中浸泡4min后捞出,沥水备用;
(3)蒸熟:将百合放入蒸箱,中火蒸煮8分钟,得到熟百合;将山药和茯苓放入高压罐,加压1.5KPa,大火蒸制15分钟后转入常压,得到熟山药和茯苓,放置室温下待冷却备用;

实施例2
本发明提供一种健脾开胃的百合山药糕,按重量份数计,包括鲜百合80份、山药50份、炒麦芽20份、茯苓18份、山楂15份、饴糖12份、陈皮8份。
本发明还提供一种健脾开胃的百合山药糕的制备方法,包括以下步骤:
(1)选料:选取无霉变、色斑的鲜百合;山药挑选温县铁棍山药;选当年新山楂,挑出坏果,机器去核;其余物料均选自道地药材产地出产的原料;

(4)打浆:饴糖加入适量纯净水,以60℃的温水浴将饴糖溶解,得到饴糖溶液;将步骤(3)得到的熟百合、熟山药、熟茯苓、步骤(2)得到的山楂、陈皮与炒麦芽一同放入胶体球磨机,加入饴糖溶液,进行25分钟的打浆,将打浆后的混合浆料熬煮,时间25分钟,待流动性液体消失时关火,得到浓缩百合山药膏备用;
(5)成型:将步骤(4)得到的浓缩百合山药膏倒入冷却盘中进行冷却,冷却成型后切为4*1*0.5cm小块,得百合山药膏初料;
(6)烘干和包装:将步骤(5)中切好的百合山药膏初料放入烘干机,烘干至百合山药膏初料的含水量为30%时,得到百合山药糕;将成品经巴氏灭菌后,在无菌包装生产线进行打包密封,包装完成和质检合格后,即得到百合山药糕的成品。
实施例3
本发明提供一种健脾开胃的百合山药糕,按重量份数计,包括鲜百合70份、山药40份、炒麦芽18份、茯苓10份、山楂13份、饴糖10份、陈皮7份。
本发明还提供一种健脾开胃的百合山药糕的制备方法,包括以下步骤:
(1)选料:选取无霉变、色斑的鲜百合;山药挑选温县铁棍山药;选当年新山楂,挑出坏果,机器去核;其余物料均选自道地药材产地出产的原料;
(2)清洗:将百合剥皮、切片,与去核山楂一同用纯净水超声震动8分钟进行清洗,去除表面浮土和泥垢,山药流水冲洗干净后去皮备用,陈皮置于0.3%的NaCl溶液中浸泡5min后捞出,沥水备用;
(3)蒸熟:将百合放入蒸箱,中火蒸煮10分钟,得到熟百合;将山药和茯苓放入高压罐,加压为1.8KPa,大火蒸制20分钟后转入常压,得到熟山药和茯苓,放置室温下待冷却备用;
(4)打浆:饴糖加入适量纯净水,以50℃的温水浴将饴糖溶解,得到饴糖溶液;将步骤(3)得到的熟百合、熟山药、熟茯苓、步骤(2)得到的山楂、陈皮与炒麦芽一同放入胶体球磨机,加入饴糖溶液,进行20分钟的打浆,将打浆后的混合浆料熬煮,时间20分钟,待流动性液体消失时关火,得到浓缩百合山药膏备用;
(5)成型:将步骤(4)得到的浓缩百合山药膏倒入冷却盘中进行冷却,冷却成型后切为4*1*0.5cm小块,得百合山药膏初料;
(6)烘干和包装:将步骤(5)中切好的百合山药膏初料放入烘干机,烘干至百合山药膏初料的含水量为35%时,得到百合山药糕;将成品经巴氏灭菌后,在无菌包装生产线进行打包密封,包装完成和质检合格后,即得到百合山药糕的成品。

1.一种健脾开胃的百合山药糕,其特征在于,所述百合山药糕包括鲜百合、山药、炒麦芽、茯苓、山楂、饴糖、陈皮。
2.根据权利要求1所述的一种健脾开胃的百合山药糕,其特征在于,按重量份数计,所述鲜百合50~90份、山药20~60份、炒麦芽10~25份、茯苓8~20份、山楂8~20份、饴糖5~15份、陈皮2~10份。

选料:选取无霉变、色斑的鲜百合;山药挑选温县铁棍山药;选当年新山楂,挑出坏果,机器去核;其余物料均选自道地药材产地出产的原料;
(2)清洗:将百合剥皮、切片,与去核山楂一同用纯净水超声震动5~10分钟进行清洗,去除表面浮土和泥垢,山药流水冲洗干净后去皮备用,陈皮置于0.2~0.5%的NaCl溶液中浸泡4~6min后捞出,沥水备用;
(3)蒸熟:将百合放入蒸箱,中火蒸煮8~12分钟,得到熟百合;将山药和茯苓放入高压罐,加压大火蒸制15~25分钟后转入常压,得到熟山药和茯苓,放置室温下待冷却备用;
