一种绿豆淀粉食品的制作方法,涉及保健食品加工技术领域。其特征在于,由下述重量份的原料组成:水50份、糖浆10份、绿豆淀粉35份、中药粉3份、高油酸葵花籽油2份。所述的水优选使用工艺水,工艺水≤10毫克/升以碳酸钙计,PH6.0‑7.0,浑浊度(散射浑浊单位)≤1.0NTU。所述中药粉的生产步骤如下:按下述重量份称取麦冬10份、玉竹10份、枸杞10份;将上述原料用5‑8倍量的水提取,将提取液喷雾干燥,得到中药粉。本发明的有益效果是:食用方便,将产品在80℃以上的热水冲泡1‑2分钟,产品会保持良好的弹性和嚼劲,不易回生。具有润肺滋阴的保健功效,适宜容易上火、口干舌燥、大便干结的人群食用。

技术领域
本发明属于食品加工技术领域,具体涉及一种绿豆淀粉食品的制作方法。
背景技术
目前现有的淀粉制品,以适量糖浆黏合生淀粉,采用设备或人工滚圆,滚圆后进行真空或非真空包装,包装好后置于低温冷藏,以防止霉变。食用前,需把淀粉制品煮熟以后食用,且煮熟后如果不及时食用,存放时间8小时左右后淀粉会老化、回生,不能再食用,且不具有润肺滋阴的保健功效。
发明内容
为了克服如上所述的问题,本发明提供一种绿豆淀粉食品的制作方法,以弥补其不足。
本发明解决其技术问题所采取的技术方案是:一种绿豆淀粉食品的制作方法,其特征在于,由下述重量份的原料组成:水50份、糖浆10份、绿豆淀粉35份、中药粉3份、高油酸葵花籽油2份。所述的水优选使用工艺水,工艺水≤10毫克/升以碳酸钙计,PH6.0-7.0,浑浊度(散射浑浊单位)≤1.0NTU。所述中药粉的生产步骤如下:(1)按下述重量份称取麦冬10份、玉竹10份、枸杞10份;(2)将上述原料用5-8倍量的水提取,将提取液喷雾干燥,得到中药粉。其生产步骤如下:(1)将绿豆淀粉、中药粉混合,搅拌均匀,得到混合粉,备用;(2)在蒸炼机中加入水,混入的糖浆,混合粉通过振动筛加入蒸炼机中,边加混合粉边搅拌,加料完成后在65-70℃的条件下搅拌、蒸炼,时间20-30分钟,当面团具有一定的硬度指标为Brookfield质构仪400-500(102N/M2)后即达到合适的糊化程度,可停止搅拌,得到面团,备用;(3)通过制丸机将预糊化好的面团进行分割、滚圆(直径约为8毫米),得到珍珠果,备用;(4)为防止珍珠果表面的混合粉粘连在一起,将在珍珠果表面均匀涂抹一层高油酸葵花籽油,得到抛光珍珠果,备用;(5)将抛光珍珠果按要求分小袋包装,置于灭菌釜中进行高温灭菌,灭菌条件控制在120-130℃,压力0.15-0.20MPa,灭菌时间4-6分钟,即得一种绿豆淀粉食品;(6)灭菌后的一种绿豆淀粉食品可常温存放,食用时,将一种绿豆淀粉食品在80℃以上的热水冲泡1-2分钟,即可食用。
上述中药的功效作用是:麦冬:润肺止咳,生津养胃;玉竹:养阴润燥,生津止渴;枸杞:补肾益精,养肝明目。
本发明的有益效果是:食用方便,将产品在80℃以上的热水冲泡1-2分钟,产品会保持良好的弹性和嚼劲,不易回生。具有润肺滋阴的保健功效,适宜容易上火、口干舌燥、大便干结的人群食用。

2.根据权利要求1所述的一种绿豆淀粉食品的制作方法,其特征在于,所述的水优选使用工艺水,工艺水≤10毫克/升以碳酸钙计,PH6.0-7.0,浑浊度(散射浑浊单位)≤1.0NTU。
3.根据权利要求1所述的一种绿豆淀粉食品的制作方法,其特征在于,所述中药粉的生产步骤如下:(1)按下述重量份称取麦冬10份、玉竹10份、枸杞10份;(2)将上述原料用5-8倍量的水提取,将提取液喷雾干燥,得到中药粉。
