Abstract

本发明公开了一种新鲜果渣固体发酵制造蛋白饲料的方法,它属于微生物发酵制造蛋白饲料的技术领域。它将果汁厂水果榨汁后所剩的新鲜果渣,经高蛋白高活性酵母生产用菌液、尿素搅拌均匀,固体发酵24~48小时后,经干燥、成型等工艺形成蛋白颗粒饲料。本发明变废为宝,提供一种质优价廉的微生物发酵蛋白饲料,它适合处理果汁厂高糖新鲜果渣使用。

Description

果渣固体发酵生产蛋白饲料的方法
本发明涉及一种利用微生物固体发酵生产蛋白饲料的方法,尤其是一种将新鲜果渣经微生物固体发酵后,转化成蛋白饲料的生产工艺方法。
本发明中的“果渣”是指水果经果汁厂榨汁后所剩的过果渣,其主要成分为水分及粗纤维和糖,其含糖量很高(约10~25%),而蛋白质却很低(仅约1~2%),由于水果种类及采摘期不同PH值差别很大约3~7。但不包括秸杆类植物,如甘蔗等,也不包括含糖量低于8%的果渣,如椰渣、杏仁渣、莲藕渣等。
榨汁厂一般是在水果成熟期季节性大规模生产,由于生产季节温度高,新鲜果渣含水量大,果渣产量又很大,短短几个小时,果渣即变质腐烂,因而极难处理、保存。
目前,国内外对果汁厂果渣处理有如下方法:(1)  将菠萝渣、梨渣作为废弃物丢掉或掩埋。(2)  将苹果渣作为垃圾或肥料处理。(3)  少量苹果渣用于提取果胶、食用纤维、,制造活性炭。(4)  少量苹果渣通过微生物发酵生产酒精、食醋、柠檬酸、
沼气。(5) 少量苹果渣烘干后作为饲料喂养牛、羊。
上述第一种方法和第二种方法果渣处理量占总量70%以上,第三、四种方法,由于工艺技术、生产成本等原因未见有大规模生产的报道;第五种方法,由于苹果渣蛋白含量仅为1~2%,主要是能量型饲料,必须加配大量其它成份,用量很少。
本发明的目的就是要将新鲜果渣经微生物固体发酵转化成蛋白饲料,既解决了大量果渣腐烂带来的环境污染问题,又将其变成质优价廉的蛋白饲料。
本发明是这样实现的:(1) 先将适合在果渣中生长,其菌体蛋白含量为40%以上的
高蛋白高活性酵母菌(市售),经试管培养、摇瓶培养、
种子罐培养、按10%接种量接入发酵罐液体培养24小
时后,成为生产用菌液。(2) 由于水果种类及采摘期不同,果渣的PH值分布很大,
例如成熟期的苹果果渣PH5.5,而未成熟的苹果果渣则
PH3.5~4,菠萝果渣PH3~3.5,所以应用众所周知的
方法,将果渣的PH值调至5.5,例如加入磷酸二氢钾
(KH2PO4)重质碳酸钙(CaCO3)等。(3) 以果渣重量计数量为1~5%的上述生产用菌液和1~5%的
尿素与由果汁厂榨汁后的新鲜果渣搅拌均匀,然后发酵
24~32小时,发酵温度为25~32℃;当果渣含糖量降至
5%以下,而粗蛋白含量升至15~30%,发酵即结束。(4) 将步骤(3)得到的发酵产物,用干燥机干燥使其水份
含量小于13%以下。(5) 将干燥后的果渣送入成型机挤压成型为所需的颗粒形
状,即成为蛋白颗粒饲料。
以上处理方法适用于果汁厂榨汁后未经任何加工的新鲜果渣,或将新鲜果渣烘干或用其他防腐方法处理后的果渣。
所述的高蛋白高活性酵母菌试管培养温度为25~30℃,培养时间为48小时;摇瓶培养温度为25~28℃,转速为150~250转/分钟,培养时间12~24小时,种子罐在搅拌条件下,发酵温度25~28℃中培养12~24小时,发酵罐培养温度为25~28℃,培养时间为24~36小时。
所述生产菌液含高蛋白高活性酵母活菌数为106~109个/ml。
本发明生产的蛋白饲料,无任何化学添加剂成份,具有天然水果发酵香味,蛋白含量达20%左右,并含有多种氨基酸、维生素和微量元素,牲畜适口性强,是一种质优价廉的营养蛋白饲料。
实施例1:(1) 发酵处理新鲜苹果渣20吨,其主要成分是:碳水化合物
约20%,果胶2~4%,粗纤维6~10.5%,蛋白质
1.03~1.82%,脂肪0.82~1.43%,含水量50~70%,PH5.5。(2) 添加材料:活菌数为106~109个/ml的高蛋白高活性酵母
菌液、尿素。(3) 制法:
A、将高蛋白高活性酵母菌种(市售),接入1000ml摇瓶,温度25~28℃,速度200转/分钟,培养18小时后接入1吨种子罐,间歇式搅拌,温度25~28℃,培养20小时后接入10吨发酵罐间歇式搅拌,温度25~28℃培养24小时后镜检,每毫升发酵液含活菌数达106~109个/ml,即为成熟生产菌液。
B、按果渣重量计数量为1~5%生产用菌液和1~5%的尿素掺入果汁厂榨汁后的新鲜苹果渣中,搅拌均匀后,在温度为25~30℃堆积发酵24~32小时。检测苹果渣总糖含量在5%以下,粗蛋白含量在18~20%以上,发酵即完成。
C、发酵完成后,苹果渣含水量为40~70%,经干燥机干燥水份至13%以下,即可用挤压成型机将苹果渣蛋白饲料挤压成型为所需的形状、大小颗粒,经称量、包装,即成为果渣蛋白饲料。(4)苹果渣蛋白饲料成分为:
①  粗蛋白含量:18--30%
②  粗纤维含量:15--25%
③  灰      份:<6%
④  总      糖:<6%
⑤  水      份:<13%
实施例2:(1)、发酵处理新鲜菠萝渣20吨,其主要成份是:碳水化合物20-26%,粗纤维8-10%,蛋白质1.2-2%,脂肪0.7-1.3%,含水量50-70%,PH3.5。(2)、添加材料:A、  活菌数为106~109个/ml的高蛋白活性酵母菌液;B、  尿素C、  重质碳酸钙:(CaCO3)磷酸二氢钾:(KH2PO4)(3)制法:
A、将高蛋白高活性酵母菌种(市售),接入1000ml摇瓶,温度25~28℃,速度200转/分钟,培养18小时后接入1吨种子罐,间歇式搅拌,温度25~28℃培养20小时后接入10吨发酵罐间歇式搅拌,温度25~28℃培养24小时后,镜检每毫升发酵液含活菌数达106~109个/ml,即为成熟生产菌液。
B、按果渣重量计数量为1~5%生产用菌液和1~5%的尿素掺入果汁厂榨汁后的新鲜菠萝渣中,并掺入磷酸二氢钾15公斤、重质碳酸钙40公斤,搅拌均匀后,在温度25~30℃堆积发酵32~48小时。检测菠萝渣总糖含量降至5%以下,粗蛋白含量升至18~20%以上,发酵即完成。(4)、菠萝渣蛋白饲料成分为:
①粗蛋白含量:  20--30%
②粗纤维含量:  15--25%
③灰      份:  <6%
④总      糖:  <6%
⑤水      份:  <13%
利用本发明处理新鲜果渣,工艺简单,所选用的是成熟的工业化成套设备,处理果渣量大。所生产的产品,营养价值高,牲畜适口性强,无化学添加剂成份,适合各类家畜的喂养,解决了目前果汁厂处理果渣的污染难题,企业又能增加可观的利润,具有显著的环境效益、经济效益和社会效益。本发明适合于各类果汁厂高糖新鲜果渣的处理转化,治理其对环境的污染。

Claims (5)

1、一种利用果汁厂榨汁后的新鲜果渣通过微生物固体发酵生产蛋白饲料的方法,其特征在于该方法依次包括如下步骤:
(1)将菌体蛋白含量为40%以上的高蛋白高活性酵母
   菌,经试管培养、摇瓶培养、种子罐培养,按10%
   接种量接入发酵罐液体培养24小时后成为生产
   用菌液;
(2)将所述果渣的PH值调至5.5;
(3)将以果渣重量计数量为1~5%的所述生产用菌液
   和1~5%的尿素与果汁厂榨汁后的新鲜果渣搅
   拌均匀,然后发酵24~48小时,发酵温度为
   25~32℃;
(4)将上述步骤(3)得到的发酵产物干燥后,经成
   型挤压机挤压成型为颗粒饲料。
2、根据权利要求1所述的方法,其特征在于:高蛋白高活性酵母菌试管培养温度为25~30℃,培养时间为48小时;摇瓶培养温度为25~28℃,转速为150~250转/分钟,培养时间12~24小时,种子罐在搅拌条件下,发酵温度为25~28℃中培养12~24小时,发酵罐培养温度为25~28 ℃,培养时间为24~36小时。
3、根据权利要求1所述的方法,其特征在于:所述生产菌液含高蛋白高活性酵母活菌数为106~109个/ml。
4、根据权利要求1所述的方法,其特征在于:所述果渣是果汁厂榨汁后未经任何加工的新鲜果渣,或将新鲜果渣烘干或用其他防腐方法处理后的果渣。
5、根据权利要求1所述的方法,其特征在于:在所述步骤(4)中所述发酵产物干燥后,其水份含量应小于13%。
