骨代谢则是一个平衡状态,由成骨细胞、破骨细胞的功能与数量来维持骨量的相对稳定。这个平衡状态一旦被打破,破骨大于成骨时,则表现出骨质疏松。骨质疏松主要表现为骨密度与骨量的下降,骨质疏松所致骨折可产生剧痛、残疾甚至会造成死亡,并且产生巨额的经济负担。骨质疏松影响着约40%的绝经期后女性,而且随着年龄的增长,此项数据还有上升的趋势。近年来,随着骨质疏松的发病率不断升高,它已经成为一个全球的健康问题,全世界每年有890万例骨质疏松继发骨折发生,由于其较高的发病率和流行趋势以及骨质疏松导致骨折的严重后果,世界卫生组织(WHO)将其列入主要公共健康问题。我国是世界上老年人口数量最多的国家之一,同时,我国也拥有世界上最多的骨质疏松患者。随着人口老龄化的加剧,老年性疾病特别是骨质疏松的发病率也逐年上升。根据WHO预测,至2050年,全球一半以上骨质疏松性髋部骨折病症将出现在亚洲,我国约有9000万骨质疏松患者,我国骨质疏松患者将增至2亿以上,我国也将骨质疏松作为国家重点攻关的三大老年疾病之一。近年来多项研究发现,骨质疏松的病因包括:(1)血脂异常如血浆总胆固醇(TC)、低密度脂蛋白胆固醇(LDLC)水平升高导致骨密度下降,细胞内胆固醇平衡失调影响成骨细胞和破骨细胞的分化,与骨质疏松的发病密切相关。高脂血症能影响成骨细胞、破骨细胞及骨母细胞生成及活性,加剧骨质疏松病程;(2)随着年龄的增长,人体内的胶原蛋白逐渐流失,三重螺旋分子结构遭到严重破坏,钙盐无法有效沉积在胶原蛋白基质上形成坚硬的骨骼,骨矿物质流失增多,致使骨代谢异常,骨胶原肽可降低减少骨量的丢失速度;(3)维生素K摄入不足及衰老造成的内源性K2转化偏低,将严重影响骨钙素的羧化及钙在骨骼的矿化活性,从而有损骨骼健康,诱发骨质疏松。
肠道菌群对骨代谢具有重要调控作用,其可以通过影响钙吸收、调节免疫系统而影响破骨细胞数量与功能,调节肠道激素分泌,影响骨代谢。益生菌能够通过多种途径抑制骨吸收,促进骨形成及矿化,益生元通过直接或间接作用促进骨形成,抑制骨吸收,增加骨密度,改善骨微结构,保护骨骼健康。
全谷物因为保留了其糠层而富含维生素、膳食纤维等营养成分和酚类等植物活性物质,全谷物富含膳食纤维和多种活性成分,这些物质不能被小肠消化吸收利用,能够在大肠处被肠道菌群利用使其增殖并产生代谢物,从而改善有益菌的生长环境,促进肠道内有益菌的增殖,改善肠道菌群结构,保护肠屏障功能,促进肠蠕动,减少肠道间有害物质的停留从而对慢性疾病的发生起到预防作用。适当增加主食中全谷物的摄入比例对预防慢性疾病具有重要作用。
目前针对骨质疏松人群的营养补充剂主要补充钙制剂、维生素和钙的复合制剂等,主要通过促进钙的吸收来治疗骨质疏松。而老年骨质疏松人群伴常有高脂血症及钙营养吸收不良等症状,目前尚缺乏针对骨质疏松的病因,结合老年骨质疏松人群体质特征的全谷物营养食品。
发明内容
为了解决上述技术问题,本发明提供一种预防骨质疏松的全谷物营养粉及其制备方法,旨在结合老年骨质疏松人群伴有高脂血症及钙吸收不良等症状,以全谷物为基质,添加火麻脱脂粉、葛根粉、矿物质、维生素及益生元、益生菌等营养元素,获得针对老年骨质疏松人群的全谷物食品,通过增加钙离子吸收、转换,调节血脂、肠道菌群,益于老年骨质疏松人群的健康。
本发明是这样实现的,一种预防骨质疏松的全谷物营养粉,按质量百分比计,包括如下组分:全谷物粉40-60%、火麻脱脂粉10-15%、葛根粉5-8%、黑芝麻粉5-10%、微量元素混合粉1-2%、鱼骨胶原蛋白肽粉2-3%、维生素混合粉1-2%、益生菌微胶囊3-5%、益生元3-5%、木糖醇5-8%、麦芽糊精3-5%。
进一步地,按重量份计,所述全谷物包括2份小麦和1份玉米、1份燕麦、1份荞麦、1份小米中的至少1种。

本发明还提供了上述预防骨质疏松的全谷物营养粉的制备方法,包括如下步骤:
1)选料:优选颗粒饱满、无病害虫及机械损伤、无腐烂的全谷物;
2)清洗:将全谷物于清水中清洗5-10min,去掉残杂,沥水后于65-75℃烘干;
3)粉碎:使用粉碎机将清洗后的全谷物粉碎成60-80目颗粒;
4)一次挤压膨化:将步骤3)得到的全谷物颗粒与葛根粉、火麻脱脂粉混合在一起得混合料,并使混合料含水分为20-30%,调整双螺旋杆挤压膨化机参数为螺杆转速200-300r/min,膨化温度130-150℃,对物料进行挤压膨化,然后在55℃的恒温箱中干燥3-4h,干燥粉碎;
5)二次挤压膨化:调质使一次挤压膨化后的物料水分含量为15-25%,进行二次挤压,工艺条件为:膨化温度130-150℃,螺杆转速200-300r/min,收集挤出物,55-60℃的恒温箱中干燥3-4h,粉碎后密封保存;
6)取黑芝麻粉、微量元素混合粉、鱼骨胶原蛋白肽粉、维生素混合粉、益生元加入到步骤5)制备的三种物质的混合粉中,再放入三维混合罐中进行混合;
7)向步骤6)得到的混合粉中加入麦芽糊精、木糖醇和益生菌微胶囊,混合均匀得成品。

与现有技术相比,本发明的优点在于:
1、营养均衡、口感细腻、味道独特,且在加工过程中仅脱去种子外面的谷壳,最大限度保留了谷物的糊粉层、胚芽和胚根,减少加工过程中营养成份的流失,获得针对老年骨质疏松人群的全谷物食品,营养均衡及健康养生,同时容易携带,食用方便;
2、以全谷物营养粉为原料,同时添加火麻脱脂粉、胶原蛋白肽粉,使混合的食物使蛋白质、维生素等营养元素含量更加丰富,提高混合蛋白质的生物价,实现低脂、营养均衡的目的;
3、将全谷物、火麻脱脂粉与葛根粉混合,通过两次挤压膨化,改善全谷物和葛粉在食用过程中冲调性,提高感官品质,同时对膳食纤维改性,发挥其对益生菌的定植作用,促进肠道内有益菌的增殖,改善肠道菌群结构,增加钙离子吸收、转换,增强骨密度;
4、针对骨质疏松的病因,结合老年骨质疏松人群的体质特征,将全谷物与“药食同源之中药”的葛根有机结合起来,利用全谷物和葛根“酚类”活性物质的健康效应,调节机体功能;
5、调节肠道菌群,利用益生菌提高钙的利用率,促进维生素D3吸收,产生维生素K2及维生素B,减少胆固醇的吸收,适合老年骨质疏松人群食用。
具体实施方式
为了使本发明的目的、技术方案及优点更加清楚明白,下面结合实施例,对本发明进行进一步详细说明。应当理解,此处所描述的具体实施例仅仅用于解释本发明,并不用于限定本发明。
本发明选用的主要成分具有如下的功能特点:
全谷物是由小麦、玉米、燕麦、荞麦、小米的种子混合,谷物籽粒完整,未经精细化加工,保留了完整谷粒所具备的胚乳、胚芽、麸皮组成及其天然营养成分的谷物,保留了其糠层而富含维生素、膳食纤维等营养成分和酚类等植物活性物质。中国居民膳食指南推荐了每天的全谷物摄入量,全谷物富含膳食纤维和多种活性成分,这些物质不能被小肠消化吸收利用,能够在大肠处被肠道菌群利用使其增殖并产生代谢物,适当增加主食中全谷物的摄入比例对预防慢性疾病具有重要作用。
火麻脱脂粉由火麻仁经低温压榨脱脂后,经挤压后产生小分子量短肽,这些蛋白短肽可促进矿物质被人体吸收利用。
葛根含有葛根素、葛根素木糖试、金雀异黄素等异黄酮类化合物是葛根的主要有效成份,具有降血脂、降血糖、抗衰老、抗疲劳、增强机体免疫力等多种生理功能;葛根素使血清中钙磷比适合的骨形成、骨钙含量和骨密度明显增加,并能促进成骨细胞增值分化的同时,也对破骨细胞产生抑制作用;葛根中的纤维素不被人和动物肠道吸收,可以促进双歧杆菌及其它肠道有益菌群的增殖。
胶原蛋白肽能促进成骨细胞增殖、分化和骨基质矿化,减少破骨细胞的骨吸收,增加骨密度、避免骨吸收,增加Ⅰ型胶原蛋白和粘多糖产生,从而预防和治疗骨质疏松症;而且其富含人体需要的甘氨酸、脯氨酸、羟脯氨酸等氨基酸,具有调节脂代谢紊乱、调节肠道微生态及与钙金属元素螯合以及免疫调节等多种活性。
益生菌能调节骨代谢通路增加骨密度,抑制炎症反应减少骨吸收、促进成骨细胞活性、抑制破骨细胞活性,帮助骨骼矿化,增加骨骼中钙含量,促进骨骼健康。
益生元是一类不能被人体消化的食物成分,可改善肠道菌群环境,更好的促进益生菌的增殖,改善肠道菌群环境,促进钙离子吸收、对骨转换具有一定影响、改善骨强度,还能增强其他益于骨骼健康制剂的作用。
维生素D3是维护骨骼健康重要的营养素,饮食中摄入充足维生素D3,是预防和治疗骨质疏松症的基础,其能通过骨骼、肠道、肾脏和甲状旁腺调节钙平衡和骨代谢,维持钙平衡及减少骨量丢失。
维生素K2能促进钙被人体有效的吸收,将“肠钙”转化为“血钙”,维生素K2摄入不足是导致中老年骨质疏松及骨折的独立风险因素。如果维生素K2摄入不足及衰老造成的内源性K2转化偏低,致使中老年人体组织中K2浓度显著下降,从而诱发钙紊乱疾病如骨质疏松等。
黑芝麻含有丰富的矿物质和微量元素,尤其是钙含量非常丰富(黑芝麻中含钙接近8g/kg),膳食纤维的含量也相当丰富,而且黑芝麻香味浓郁在本发明中起到了增香的作用。
实施例1、
一种预防骨质疏松的全谷物营养粉,按质量百分比计,包括如下组分:全谷物粉(按重量份包括2份小麦和1份玉米)40%、火麻脱脂粉15%、葛根粉8%、黑芝麻粉7%、微量元素混合粉(按重量份包括钙35份,钾21份,磷19份,镁9份)2%、鱼骨胶原蛋白肽粉3%、维生素混合粉(按重量份包括维生素A 0.05份,维生素C 60份,维生素D3 15份,维生素E 15份、维生素Bl 0.6份,维生素B20.6份,维生素B6 1.2份,维生素B12 0.004份,维生素K2粉0.5份、烟酸5份)2%,益生菌微胶囊(植物乳杆菌45份,长双歧杆菌35份,双歧杆菌25份,保加利亚乳杆菌20份)5%、益生元为(低聚果糖30份、菊粉5份、低聚半乳糖10份)5%、木糖醇8%、麦芽糊精5%。
上述的预防骨质疏松的全谷物营养粉的制备方法,包括如下步骤:
1)选料:优选颗粒饱满、无病害虫及机械损伤、无腐烂的全谷物;
2)清洗:将全谷物于清水中清洗5-10min,去掉残杂,沥水后于65-75℃烘干;
3)粉碎:使用粉碎机将清洗后的全谷物粉碎成60-80目颗粒;
4)一次挤压膨化:将步骤3)得到的全谷物颗粒与葛根粉、火麻脱脂粉混合在一起得混合料,并使混合料含水分为20%,调整双螺旋杆挤压膨化机参数为螺杆转速200r/min,膨化温度130℃,对物料进行挤压膨化,然后在55℃的恒温箱中干燥3-4h,干燥粉碎;
5)二次挤压膨化:调质使一次挤压膨化后的物料水分含量为15%,进行二次挤压,工艺条件为:膨化温度130℃,螺杆转速200r/min,收集挤出物,55℃的恒温箱中干燥3-4h,粉碎后密封保存;
6)混合干粉:取黑芝麻粉、微量元素混合粉、鱼骨胶原蛋白肽粉、维生素混合粉、益生元加入到步骤5)制备的三种物质的混合粉中,再放入三维混合罐中进行混合;
7)向步骤6)得到的混合粉中加入麦芽糊精、木糖醇和益生菌微胶囊,混合均匀得成品。
实施例2、
一种预防骨质疏松的全谷物营养粉,按质量百分比计,包括如下组分:全谷物粉(全谷物包括2份小麦和1份玉米、1份燕麦、1份荞麦)50%、火麻脱脂粉11%、葛根粉8%、黑芝麻粉8%、微量元素混合粉(按重量份包括钙60份,钾40份,磷8份,镁2份)2%、鱼骨胶原蛋白肽粉3%、维生素混合粉(按重量份包括维生素A 0.25份,维生素C 70份,维生素D3 20份,维生素E15份、维生素Bl 0.6份,维生素B20.1份,维生素B6 0.2份,维生素B12 0.0005份,维生素K2粉1.2份、烟酸1份)2%,益生菌微胶囊(植物乳杆菌55份,长双歧杆菌45份,双歧杆菌25份,保加利亚乳杆菌15份)5%、益生元为(低聚果糖40份、菊粉10份、低聚半乳糖10份)3%、木糖醇5%、麦芽糊精3%。

5)二次挤压膨化:调质使一次挤压膨化后的物料水分含量为25%,进行二次挤压,工艺条件为:膨化温度150℃,螺杆转速300r/min,收集挤出物,60℃的恒温箱中干燥3-4h,粉碎后密封保存;
6)混合干粉:取黑芝麻粉、微量元素混合粉、鱼骨胶原蛋白肽粉、维生素混合粉、益生元加入到步骤5)制备的三种物质的混合粉中,再放入三维混合罐中进行混合;
7)向步骤6)得到的混合粉中加入麦芽糊精、木糖醇和益生菌微胶囊,混合均匀得成品。
本次实验使用清洁级SD雌性大鼠48只,体质量180-220g,饲养条件为:25摄氏度,55%的湿度,12小时昼夜间期。大鼠随机分成6组,分别对应命名为正常组、模型组、补钙组(普通鼠粮加入135mg/kg碳酸钙,800U的D3/kg)、实施例1组、实施例2组和实施例3组。其中对照组:5只SD大鼠给予灌生理盐水8m1/kg·d;模型组、补钙鼠粮组、实施例1、2、3组:预饲养1周后,用维甲酸80mg/kg·d灌胃15d造模,检查骨密度确认骨质疏松造模成功后。按照分组连续喂养90天,试验结束前12h禁食,麻醉后取血液处死,完整的取出左侧股骨备用。将采集的血液放在37℃水浴锅中恒温20min,4℃冷藏过夜后离心(10min,4000r/min),分离出血清,全自动生化分析仪测定血脂相关指标、血清钙、血清碱性磷酸酶、骨钙素含量;股骨剔除附着软组织和残肉,使用双能X线骨密度分析仪进行骨密度检测。
