Abstract
本发明一种海产品的复合保鲜物及其应用。一种海产品的复合保鲜物,包括载体和喷洒在载体上的保鲜液,所述载体与保鲜液的重量比为1:1‑3。保鲜液为包括以下按重量份数计的组分:ε‑聚赖氨酸2.5‑5份、银杏叶提取物12‑30份、葡萄糖氧化酶8‑18份、壳聚糖25‑40份、茶碱3‑8份、氯化钠1‑4份、纳米银0.01‑0.08份、香茅草提取物4‑10份、去离子水65‑78份。该复合保鲜物取材广泛,成本低廉,环保,且杀菌抑菌时间长,易保存,尤其适合用于海产品的长途运输。

技术领域
本发明涉及海产品的保鲜技术领域,具体涉及一种海产品的复合保鲜物及其应用。
背景技术
海产品的种类繁多,如鱼类、虾类、贝类,由于海产品中含有丰富的维生素,微量元素和蛋白质等多种营养成分,深受人们喜爱,尤其是减肥类的人群,多食亦不易发胖。
但是海产品因为生产环境为开放式的,细菌携带多,极易腐败变质,捕捞后和运输过程中如何保鲜始终是难题。现有技术中,海产品的保鲜多采用冷冻方式进行,虽然从温度方面冷控制海产品上的微生物呼吸,但是如果是在运输途中,时间超出预期,即会发现海产品变质的现象,即使未出现变质,口感上大大打折。另外,不管是哪种方式的保鲜,都需要借助保鲜剂来提高效果,因此,研发一种成本低廉,保鲜效果佳的保鲜剂组合物。
发明内容
针对现有技术的不足,本发明的目的在于提供一种海产品的复合保鲜物及其应用,该复合保鲜物取材广泛,成本低廉,环保,且杀菌抑菌时间长,易保存,尤其适合用于海产品的长途运输。
一种海产品的复合保鲜物,包括载体和喷洒在载体上的保鲜液,所述载体与保鲜液的重量比为1:1-3。
作为改进的是,所述载体为麸皮、稻壳或秸秆粉中一种或多种混合而成。
作为改进的是,所述保鲜液为包括以下按重量份数计的组分:ε-聚赖氨酸2.5-5份、银杏叶提取物12-30份、葡萄糖氧化酶8-18份、壳聚糖25-40份、茶碱3-8份、氯化钠 1-4份、纳米银0.01-0.08份、香茅草提取物4-10份、去离子水65-78份。
进一步改进的是,所述保鲜液为包括以下按重量份数计的组分:ε-聚赖氨酸3.5份、银杏叶提取物18份、葡萄糖氧化酶12份、壳聚糖26份、茶碱5份、氯化钠2份、纳米银0.05份、香茅草提取物6份、去离子水70份。
具体地,上述海产品的复合保鲜物的制备方法,称取各组分;再将ε-聚赖氨酸、银杏叶提取物、葡萄糖氧化酶、壳聚糖、茶碱、氯化钠、纳米银、香茅草提取物、去离子水混合,磁力搅拌5-15分钟,得保鲜液;最后将载体浸入保鲜液中(-20)-(-15)℃下冷冻 15-28分钟,即得复合保鲜物。
上述复合保鲜物在生蚝、鱿鱼、牡蛎或螃蟹捕捞或运输上的应用。
与现有技术相比,本发明的一种海产品的复合保鲜物利用废弃的生物质为载体,在载体上浸润保护液,低温冷冻而成。所得保鲜物保存方便,质地轻,快递运输,费用低。另外保鲜液采用天然还原剂如银杏叶提取物和茶碱混合,配合葡萄糖氧化酶和ε-聚赖氨酸,协同提高保鲜剂的抗氧化效果,香茅草提取物和壳聚糖的高效抑菌杀菌效果,从源头上减少细菌的产生,因此所述保鲜液混合后,抑菌效果好,抗氧化能力强,有效降低了海产品变质。

实施例1
一种海产品的复合保鲜物,包括载体和喷洒在载体上的保鲜液,所述载体与保鲜液的重量比为1:1。
所述载体为麸皮。
所述保鲜液为包括以下按重量份数计的组分:ε-聚赖氨酸2.5份、银杏叶提取物12份、葡萄糖氧化酶8份、壳聚糖25份、茶碱3份、氯化钠1份、纳米银0.01份、香茅草提取物4份、去离子水65份。
具体地,上述海产品的复合保鲜物的制备方法,称取各组分;再将ε-聚赖氨酸、银杏叶提取物、葡萄糖氧化酶、壳聚糖、茶碱、氯化钠、纳米银、香茅草提取物、去离子水混合,磁力搅拌5分钟,得保鲜液;最后将载体浸入保鲜液中(-20)℃下冷冻15分钟,即得复合保鲜物。
用此保鲜物用于保鲜运输鱿鱼,对比例为申请号201710114061.4公开的海产品保鲜组合物、保鲜剂和海产品保鲜方法。结果分别为,实施例1保鲜的鱿鱼包装中TVB-N的 5天测定数值加10天测定数值的总和为11.58mg/100g,细菌总数为1.8logcfu/g,弹性好。对比例为15.05mg/100g,细菌总数为2.5logcfu/g,弹性微软。
实施例2
一种海产品的复合保鲜物,包括载体和喷洒在载体上的保鲜液,所述载体与保鲜液的重量比为1:2。
所述载体为麸皮、稻壳或秸秆粉中三种混合而成。
所述保鲜液为包括以下按重量份数计的组分:ε-聚赖氨酸3.5份、银杏叶提取物18份、葡萄糖氧化酶12份、壳聚糖26份、茶碱5份、氯化钠2份、纳米银0.05份、香茅草提取物6份、去离子水70份。
具体地,上述海产品的复合保鲜物的制备方法,称取各组分;再将ε-聚赖氨酸、银杏叶提取物、葡萄糖氧化酶、壳聚糖、茶碱、氯化钠、纳米银、香茅草提取物、去离子水混合,磁力搅拌10分钟,得保鲜液;最后将载体浸入保鲜液中(-15)℃下冷冻15分钟,即得复合保鲜物。
用此保鲜物用于保鲜运输对虾,对比例为申请号201710114061.4公开的海产品保鲜组合物、保鲜剂和海产品保鲜方法。结果分别为,实施例1保鲜的对虾包装中TVB-N的 5天测定数值加10天测定数值的总和为10.64mg/100g,细菌总数为1.6logcfu/g,弹性好。对比例为15.05mg/100g,细菌总数为2.5logcfu/g,弹性微软。
实施例3
一种海产品的复合保鲜物,包括载体和喷洒在载体上的保鲜液,所述载体与保鲜液的重量比为1:3。
所述载体为麸皮、稻壳或秸秆粉。
所述保鲜液为包括以下按重量份数计的组分:ε-聚赖氨酸5份、银杏叶提取物30份、葡萄糖氧化酶18份、壳聚糖40份、茶碱8份、氯化钠4份、纳米银0.08份、香茅草提取物4-10份、去离子水78份。
具体地,上述海产品的复合保鲜物的制备方法,称取各组分;再将ε-聚赖氨酸、银杏叶提取物、葡萄糖氧化酶、壳聚糖、茶碱、氯化钠、纳米银、香茅草提取物、去离子水混合,磁力搅拌15分钟,得保鲜液;最后将载体浸入保鲜液中(-15)℃下冷冻28分钟,即得复合保鲜物。
用此保鲜物用于保鲜运输鲍鱼,对比例为申请号201710114061.4公开的海产品保鲜组合物、保鲜剂和海产品保鲜方法。结果分别为,实施例1保鲜的鲍鱼包装中TVB-N的 5天测定数值加10天测定数值的总和为13.25mg/100g,细菌总数为1.9logcfu/g,弹性好。对比例为15.05mg/100g,细菌总数为2.5logcfu/g,弹性微软。
从上述结果可以看出,本发明采用分体式将保鲜液负载在载体上,通过天然成分的载体来保护海产品,不仅减少了塑料包装产品的添加,降低了运输的成本。
实施例1-3中通过与现有技术的对比,发现本发明保鲜液的保鲜效果好,但保鲜液过多时,保鲜后的海产品检测发现,保鲜液中的多余的部分充当了碳源,为细菌提供了能量来源,反而数量有所增加。因此,合适载体与保鲜液的重量比为1:2。

2.根据权利要求1所述的海产品的复合保鲜物,其特征在于,所述载体为麸皮、稻壳或秸秆粉中一种或多种混合而成。
3.根据权利要求1所述的海产品的复合保鲜物,其特征在于,所述保鲜液为包括以下按重量份数计的组分:ε-聚赖氨酸2.5-5份、银杏叶提取物12-30份、葡萄糖氧化酶8-18份、壳聚糖25-40份、茶碱3-8份、氯化钠1-4份、纳米银0.01-0.08份、香茅草提取物4-10份、去离子水65-78份。
4.根据权利要求3所述的海产品的复合保鲜物,其特征在于,所述保鲜液为包括以下按重量份数计的组分:ε-聚赖氨酸3.5份、银杏叶提取物18份、葡萄糖氧化酶12份、壳聚糖26份、茶碱5份、氯化钠2份、纳米银0.05份、香茅草提取物6份、去离子水70份。
5.基于权利要求1所述的海产品的复合保鲜物在生蚝、鱿鱼、牡蛎或螃蟹捕捞或运输上的应用。
