本发明涉及食品加工领域,公开了一种含蘑菇维生素D2油的食品,所述食品含有蘑菇维生素D2油,以蘑菇维生素D2油作为所述食品的组成成分,且每个所述食品剂量单位中维生素D2的含量不低于0.5μg;其中所述蘑菇维生素D2油的过氧化值≤15meq/kg、酸价≤3mg/g。所述蘑菇维生素D2油是通过用食用油萃取含有维生素D2的蘑菇粉而制得的。所述食品还含有选自紫苏油、核桃油、亚麻籽油、花生油、橄榄油、ARA油脂、DHA油脂、维生素A和海藻钙中的一种或多种营养素。根据本发明的制备出的产品中的维生素D2相对于含蘑菇粉的产品更易吸收,而且可以避免蘑菇粉产品应用于软胶囊、凝胶糖果时的沉淀与偏心问题、方便于维生素D2滴剂与喷雾剂的生产应用。

技术领域
本发明涉及食品加工领域,具体涉及一种食品,尤其涉及一种含蘑菇维生素D2油的食品。
背景技术
维生素D是人体必需的维生素,缺乏维生素D会导致少儿佝偻病和成年人的软骨病。维生素D可用于维生素D缺乏症、慢性低钙血症、低磷血症、佝偻病及伴有慢性肾功能不全的骨软化症、家族性低磷血症及甲状旁腺功能低下、急、慢性及潜在手术后手足抽搐症及特发性手足抽搐症的治疗。
人体摄取维生素D主要通过食补与日光浴,但通常天然食物中维生素D 含量较低,瘦肉、奶、坚果中含微量的维生素D,而蔬菜、谷物及其制品和水果含有少量或几乎没有维生素D,部分患有皮肤病的人和进行夜生活的人可能无法通过日光浴来补充维生素D。
维生素D家族中的主要成员是维生素D2(麦角钙化醇)和维生素D3(胆钙化醇),维生素D2主要通过植物获取,维生素D3主要通过动物获取,目前常使用的补充维生素D的产品中所含有的维生素大多是从动物中获取的维生素D3。维生素D2和维生素D3的结构相近,代谢产物类似。维生素D3的主要活性代谢产物是骨化三醇,维生素D3的主要活性代谢产物骨化二醇。动物药理学毒理学研究显示,维生素D2与维生素D3对刺激大鼠肠道吸收钙和磷的作用效果无明显差异,其中,维生素D2对大鼠的毒性LD50值为维生素D3约高5-15倍,说明,维生素D2的安全性可能优于维生素D3。
蘑菇中也含有维生素D2,近年来人们已经将蘑菇制成蘑菇粉应用于食品或药品中。但是因为蘑菇粉干燥后,是采用粉碎机粉碎,其颗粒度大小在100目-200目之间,因为蘑菇本身的纤维已经木质化,加上干燥处理,所以产品是一个固态、不能完全溶解的粉末,这使产品只能应用于固态产品中,而且不易于人体的吸收,同时维生素D2是一种脂溶性维生素,自身溶出度较低,通过常规的食用方法不易为人体吸收与利用。
发明内容
本发明的目的是为了克服现有技术存在的蘑菇粉中的维生素D2不易吸收的问题、解决维生素D2自身溶出度较低、吸收率低的问题,提供一种含蘑菇维生素D2油的食品,该食品含有蘑菇维生素D2油,通过蘑菇维生素 D2油将原来蘑菇粉中的维生素D2溶解于食用油中,使人体更易吸收。
为了实现上述目的,本发明提供一种含蘑菇维生素D2油的食品,所述食品含有蘑菇维生素D2油,所述蘑菇维生素D2油中含有维生素D2。
优选地,以蘑菇维生素D2油作为所述食品的组成成分,且每个所述食品剂量单位中维生素D2的含量不低于0.5μg,更优选地,每个所述食品剂量单位中维生素D2含量不低于5μg,进一步优选地,每个所述食品剂量单位中维生素D2含量不低于10μg。
优选地,所述蘑菇维生素D2油的过氧化值≤15meq/kg、酸价≤3mg/g。
优选地,所述蘑菇维生素D2油是通过用食用油萃取含有维生素D2的蘑菇粉制得的。
优选地,所述蘑菇维生素D2油中还添加有抗氧化剂,所述抗氧化剂优选为维生素E、卵磷脂、迷迭香和维生素C钠的一种或多种;优选地,以蘑菇维生素D2油的总量计,所述抗氧化剂的添加量为800-1500ppm。
优选地,食用油是葵花籽油、菜籽油、大豆油、橄榄油、玉米油、花生油、椰子油和茶籽油的一种或多种,所述蘑菇粉与食用油的质量比为1:0.5-30,萃取的温度为10-85℃,时间为8-120h。
优选地,所述含有维生素D2的蘑菇粉通过以下步骤制得:
(1)将富含麦角固醇的蘑菇原料切成蘑菇片后,用紫外线照射8-150min,使所述蘑菇原料产生维生素D2;
(2)将所述蘑菇片粉碎得到所述蘑菇粉,所述蘑菇粉的粒度为80-150 目。
优选地,所述食品还含有选自紫苏油、核桃油、亚麻籽油、花生油、橄榄油、ARA油脂、DHA油脂、维生素A和海藻钙中的一种或多种营养素。
优选地,所述食品为保健品或健康食品,更优选为软胶囊、滴剂、喷雾剂、软糖和凝胶糖果。
通过上述技术方案,可以得到下列优点:
(1)本发明选用蘑菇维生素D2油代替蘑菇粉添加到食品中,由于蘑菇维生素D2油中的维生素D2是溶解在食用油中的,提高了维生素D2自身的溶出度,使食品中的维生素D2更易被人类吸收。
(2)选用含有维生素D2的蘑菇维生素D2油代替蘑菇粉,能够应用于滴剂和喷雾剂的食品中而且不会堵塞喷管,使滴剂和喷雾剂这些剂型的使用更方便。
(3)由于在制备蘑菇维生素D2油的过程中将蘑菇维生素D2油进行了过滤,所以制备出的蘑菇维生素D2油为澄清透明状,能够应用于对透明度有要求的透明软胶囊或凝胶糖果中,使产品的内含物馅料均匀分布,不会产生分层沉淀、偏心现象。
(4)本发明选用植物来源的维生素D2代替动物来源的维生素D3添加到食品中来补充人体所必须的维生素D,确保食品中没有工业化生产时所带来的溶剂残留或有毒副产物的残留等污染物,食品的安全性更高。
(5)本发明将含有维生素D2的蘑菇维生素D2油与海藻钙复合添加进入食品中,不仅可以给人体提供人体所必须的维生素D2,还可以促进人体对钙质的吸收,促进儿童和青少年骨骼的增长,防止老年骨质疏松。

本发明提供一种含蘑菇维生素D2油的食品,所述食品含有蘑菇维生素 D2油,该蘑菇维生素D2油中含有维生素D2,蘑菇维生素D2油的使用量以食品中的维生素D2的含量需要满足人体日常的生理需要的补充量要求来确定。
优选地,以蘑菇维生素D2油作为所述食品的组成成分,且每个所述食品剂量单位中维生素D2的含量不低于0.5μg(即20IU),更优选地,每个所述食品剂量单位中维生素D2的含量不低于5μg(即200IU),进一步优选地,每个所述食品剂量单位中维生素D2的含量不低于10μg(即400IU)。每个所述食品剂量单位表示所述食品最小包装或最小单体的一个量度值,例如在软胶囊、凝胶糖果和软糖中剂量单位为一粒,在滴剂中剂量单位为滴管一次的吸取量,在喷雾剂中剂量单位为喷雾一次的量。
优选地,所述蘑菇维生素D2油的过氧化值≤15meq/kg、酸价≤3mg/g。
优选地,所述蘑菇维生素D2油通过用食用油萃取含有维生素D2的蘑菇粉制得的。
所述含有维生素D2的蘑菇粉可以通过本领域中公开的各种方法制得,也可以商购得到。优选地,所述含有维生素D2的蘑菇粉通过以下步骤制得:
(1)将富含麦角固醇的蘑菇原料切成蘑菇片后,用紫外线照射8-150min,使所述蘑菇原料产生维生素D2;
(2)将所述蘑菇片粉碎得到所述蘑菇粉,所述蘑菇粉的粒度为80-150 目。更优选地,所述紫外线照射为280-315nm的UVB照射和200-280nm的 UVC照射组合。
所述食用油可以为各种适于食用的油脂,优选为植物油,更优选地为葵花籽油、菜籽油、大豆油、橄榄油、玉米油、花生油、椰子油和茶籽油的一种或多种,其中以高油酸葵花籽油作为萃取剂时,对维生素D2的萃取效率最优。
所述萃取的条件只要满足将蘑菇粉中的维生素D2萃取到食用油里即可,优选地,为了确保蘑菇维生素D2油中的维生素D2能够被大量萃取到食用油脂中,所述蘑菇粉与食用油的质量比可以为1:0.5-30,优选为1:1-10。所述萃取的温度可以为10-85℃,优选为35-55℃,时间可以为8-120h,优选为 24-72h。萃取优选在搅拌条件下进行。
由于维生素D2易氧化,所以在利用所述萃取过程中,需要将萃取罐抽真空后通入惰性气体,惰性气体优选为氮气,更优选为纯度为99.9%以上的氮气,通入惰性气体的量为在通入惰性气体后所述萃取罐的罐压为 0.02-0.1MPa。在萃取后,将食用油脂与蘑菇粉通过过滤进行固液分离,过滤方法可以采用压滤或抽滤或其他任何一种过滤方式。
在本发明中,为了使蘑菇维生素D2油中的维生素D2不被氧化,在过滤之后还可以在蘑菇维生素D2油里加入抗氧化剂,所述抗氧化剂为食品常用抗氧化剂,优选为维生素E、卵磷脂、迷迭香和维生素C钠中的一种或多种,所述抗氧化剂最优选为维生素E和卵磷脂。优选地,以蘑菇维生素D2油的总量计,所述抗氧化剂的添加量为800-1500ppm。
所述食品还可以含有其它营养素,为了促进儿童、青少年的脑力发展,可以在上述食品中加入花生四烯酸油脂(ARA油脂)或二十二碳六烯酸油脂(DHA油脂),还可以在所述食品添加紫苏油、核桃油、亚麻籽油、花生油、橄榄油、ARA油脂、DHA油脂、维生素A和海藻钙等营养素,而且蘑菇维生素D2油与海藻钙复合使用可以通过蘑菇维生素D2油中的维生素D2促进人体对海藻钙中钙的吸收。
所述食品可以为各种类型的食品,优选地,所述食品为保健品或健康食品,更优选为软胶囊、滴剂、喷雾剂和凝胶糖果,所述食品还可以是软糖。
所述含有蘑菇维生素D2油的软胶囊的制备方法为:
(1)将水、明胶粉和甘油混合并进行溶胶,得到溶胶混合物;
(2)将蘑菇维生素D2油与其他料液成分混匀形成料液,将所述料液灌注于所述溶胶混合物中,得到软胶囊。
优选的,将所述蘑菇维生素D2油和其他料液成分进行混合的环境温度优选低于25℃,相对湿度小于65%,料液的温度低于30℃,其中,所述混合可以在搅拌的条件下进行70-80min。进一步优选的,还包括将制备得到的料液进行真空脱气处理,从而避免与氧气的过多接触。更进一步优选的,混合得到的料液储存时间不大于2小时,更优选为现用现配,从而缩短料液在空气中的暴露时间,并且储存过程优选在惰性气体的保护下进行,所述惰性气体可以为氮气。
优选的,所述溶胶的温度为60-85℃,更优选为70-77℃,蒸汽压力小于 0.2MPa,时间为40-50min,更优选地,出料时溶胶混合物的温度控制在 58-62℃、出料加压小于0.05MPa,且溶胶混合物经双层袋过滤。为了降低得到的溶胶混合物在空气中的暴露时间,从而降低氧化程度,抑制胶囊的色变,降低过氧化值和酸价,优选的,所述溶胶混合物的储存时间不大于48小时,优选不大于40小时,更优选为现用现配。
上述步骤(2)中,将蘑菇维生素D2油灌注于所述溶胶混合物中的方法可以采用现有技术中制备软胶囊的方法,本发明对此并没有特别的限定。
所述含有蘑菇维生素D2油的凝胶糖果的制备方法与软胶囊制备方法的区别点为在所述溶胶混合物中还加入还原性糖。
所述含有蘑菇维生素D2油的软糖的制备方法采用现有的工艺方法,本发明对此并没有特别的限定。
以下将通过制备例和实施例对本发明进行详细描述。
以下制备例中,蘑菇维生素D2油中维生素D2的含量采用日本日立公司生产的型号为L-7000的高效液相色谱仪按GB 5009.82的方法测得;过氧化值采用GB5009.227-2016方法测得,酸价采用GB5009.229-2016方法测得。
菜籽油、橄榄油、大豆油、高油酸葵花籽油均为中粮公司的市售品;维生素E、迷迭香、维生素C钠均为商购得到;所述紫苏油、核桃油、亚麻籽油、花生油、卵磷脂、花生四烯酸油脂、DHA油脂、维生素A和海藻钙均可通过商购得到,优选为本公司自制;双孢菇、香菇均为山东德泽农业科技有限公司的市售品。
在本发明中所使用的高纯氮是纯度为99.9%以上的氮气。
制备例1
(1)将20kg采收的双孢菇去除培养基异物后,进行清洗得到新鲜双孢菇作为蘑菇原料,将蘑菇原料切成厚度为1.2mm的薄片,采用波长为280nm、照射剂量为1.5J/cm2的UVB对双孢菇原料薄片双面照射120min,再采用波长为200nm、照射剂量为80mJ/cm2的UVC对双孢菇原料薄片双面照射30min,然后将薄片磨粉制得80-150目的蘑菇粉;
(2)将20kg的高油酸葵花籽油采用真空输送的方式投入萃取罐,同时将2kg的蘑菇粉吸入萃取罐,将萃取罐抽真空到0.06MPa的微正压然后通入高纯氮,将蘑菇粉与高油酸葵花籽油搅拌均匀,然后将搅拌物加热到45℃萃取72h,萃取后进行过滤得滤液;
(3)在滤液中加入14.4g维生素E和9.6g卵磷脂作为抗氧化剂,搅拌均匀,降温到25℃,制得蘑菇维生素D2油。
制备例2
(1)将20kg采收的双孢菇去除培养基异物后进行清洗得到新鲜双孢菇作为蘑菇原料,将蘑菇原料切成厚度为1.5mm的薄片,采用波长为300nm、照射剂量为4J/cm2的UVB对双孢菇原料薄片双面照射80min,再采用波长为240nm、照射剂量为100mJ/cm2的UVC对双孢菇原料薄片双面照射25min,然后将切片磨粉制得80-150目的蘑菇粉;
(2)将1kg的菜籽油采用真空输送的方式投入萃取罐,同时将2kg的蘑菇粉吸入萃取罐,将萃取罐抽真空到0.03MPa的微正压然后通入高纯氮,将蘑菇粉和菜籽油搅拌均匀,然后将搅拌物降温到10℃萃取8h,萃取后进行过滤得滤液;
(3)在滤液中加入0.48g维生素E和0.32g迷迭香作为抗氧化剂,搅拌均匀,降温到25℃,制得蘑菇维生素D2油。
制备例3
(1)将20kg采收的香菇去除培养基异物后进行清洗得到新鲜香菇作为蘑菇原料,将蘑菇原料切成厚度为0.8mm的薄片,采用波长为315nm、照射剂量为6.5J/cm2的UVB对香菇原料薄片双面照射8min,再采用波长为 280nm、照射剂量为120mJ/cm2的UVC对香菇原料薄片双面照射20min,然后将切片磨粉制得80-150目的蘑菇粉。
(2)将30kg的大豆油和30kg的橄榄油采用真空输送的方式萃取罐,同时将2kg的蘑菇粉吸入萃取罐,将萃取罐抽真空到0.1MPa的微正压然后通入高纯氮,将蘑菇粉和大豆油、橄榄油搅拌均匀,然后将搅拌物加热到80℃萃取120h,萃取后进行过滤,得滤液。
(3)在滤液中加入90g维生素C钠作为抗氧化剂,搅拌均匀,降温到 25℃,制得蘑菇维生素D2油。
上述制备例所制得的蘑菇维生素D2油的参数如下表所示:

实施例1、软胶囊的制备
(1)溶胶锅在生产前进行15-30min蒸汽杀菌(包括进出料管口),然后将11.88kg的水加热至沸腾吸入溶胶锅内,并开启搅拌,在搅拌的条件下,将5.6kg的甘油、0.64kg的微晶纤维素和11.88kg的明胶粉吸入溶胶锅,搅拌混合,并在75℃、蒸汽压力0.2MPa的条件下溶胶45min,溶胶结束后,待温度降低至约60℃时,将溶胶混合物依次进行过滤和真空脱气,制得溶胶备用,保存时间不超过48小时。
(2)在环境温度低于25℃、相对湿度小于65%的条件下,将16.95kg 的上述制备例1制得的蘑菇维生素D2油加入到配料容器中,将4.25kg花生油、9.5kg亚麻籽油、10.5kg核桃油和8.8kg紫苏油混合后倒入配料器中,搅拌75min后进行真空脱气制得料液备用,保存时间不超过2小时。
(3)在制丸机中将步骤(2)制得的料液灌注到步骤(1)制得的溶胶中并进行压丸。其中,压丸环境温度为20℃,相对湿度为65%,胶皮冷却定型温度10℃,得到的软胶囊的胶皮厚度为0.65-0.8mm,制得每粒软胶囊的胶皮平均重量为300mg、内含物平均重量为500mg,每粒软胶囊中维生素 D2的含量为400IU、亚麻酸含量为57mg。
将得到的软胶囊在湿度为65%、温度为30℃的条件下干燥6h,然后再在湿度为30%、温度为32℃的条件下干燥6h,最后使用食用级石油醚对干燥后的软胶囊进行清洗,得到软胶囊成品,该软胶囊成品的剂量单位为一粒,建议每天服用量为一粒。
实施例2、软胶囊的制备
(1)溶胶锅在生产前进行15-30min蒸汽杀菌,包括进出料管口。然后将11.68kg的水加热至沸腾吸入溶胶锅内,并开启搅拌,在搅拌的条件下,将6kg甘油、0.64kg微晶纤维素和11.68kg明胶粉吸入溶胶锅,搅拌混合,并在75℃、蒸汽压力0.2MPa的条件下溶胶45min。溶胶结束后,待温度降低至约60℃时,将溶胶混合物依次进行过滤和真空脱气,制得溶胶备用,保存时间不超过48小时。
(2)在环境温度低于25℃,相对湿度小于65%的条件下,将8.48kg的上述制备例1中的蘑菇维生素D2油加入到配料容器中,将15kg花生油和 3.02kg橄榄油在配料器中混合,然后加入25mg维生素A和23.5kg海藻钙,搅拌75min后进行真空脱气制得料液备用,保存时间不超过2小时。
(3)在制丸机中将步骤(2)制得的料液注于步骤(1)制得的溶胶并进行压丸。其中,压丸环境温度为20℃,相对湿度为65%,胶皮冷却定型温度10℃。得到的软胶囊的胶皮厚度为0.65-0.8mm,制得每粒软胶囊的胶皮平均重量为300mg、内含物平均重量为500mg,每粒软胶囊中维生素D2的含量为200IU、维生素A的含量为100IU、钙含量为80mg。
将得到的软胶囊在湿度为65%、温度为30℃的条件下干燥6h,然后再在湿度为30%、温度为32℃的条件下干燥6h,最后使用食用级石油醚对干燥后的软胶囊进行清洗,得到软胶囊成品,该软胶囊成品的剂量单位为一粒,建议每天服用量为两粒。
实施例3、凝胶糖果的制备
(1)溶胶锅在生产前进行15-30min蒸汽杀菌,包括进出料管口。然后将6.2kg水加热至沸腾吸入溶胶锅内,并开启搅拌,在搅拌的条件下,将2.9kg 结晶果糖、1.2kg木糖醇、0.6kg微晶纤维素、4.6kg甘油和14.5kg明胶粉吸入溶胶锅,搅拌混合,并在75℃、蒸汽压力0.2MPa的条件下溶胶45min。溶胶结束后,待温度降低至约60℃时,将溶胶混合物依次进行过滤和真空脱气,制得溶胶备用,保存时间不超过48小时。
(2)在环境温度低于25℃,相对湿度小于65%的条件下,将0.226kg 上述制备例2制得的蘑菇维生素D2油加入到配料容器中,将23.2kg DHA油脂、15.574kg花生油和11kg核桃油混合后倒入配料器中,搅拌75min后进行真空脱气制得料液备用,保存时间不超过2小时。
(3)在制丸机中将步骤(2)中制得的料液灌注于步骤(1)制得的溶胶并进行压丸。其中,压丸环境温度为20℃,相对湿度为65%,胶皮冷却定型温度10℃,得到的凝胶糖果的胶皮厚度为0.65-0.8mm,制得每粒凝胶糖果的胶皮平均重量为300mg、内含物平均重量为500mg,每粒凝胶糖果中维生素D2的含量为200IU、DHA的含量为100mg。
将得到的凝胶糖果在湿度为65%、温度为30℃的条件下干燥6h,然后再在湿度为30%、温度为32℃的条件下干燥6h,最后使用食用级石油醚对干燥后的凝胶糖果进行清洗,得到凝胶糖果成品,该凝胶糖果成品的剂量单位为一粒,建议每天服用量为两粒。
实施例4、喷雾剂的制备
在环境温度低于25℃,相对湿度小于65%的条件下,将27.07L上述制备例3中的蘑菇维生素D2油加入到配料容器中,然后加入22.93L核桃油搅拌25min得到混合溶液,将混合溶液装入食品级的聚酯瓶中,每瓶中混合溶液的平均净含量为50mL,而且该聚酯瓶上配套有喷头,所述喷头每次的喷出剂量约为0.5mL,每次喷出的0.5mL混合溶液中维生素D2含量约为400IU,该喷雾剂的剂量单位为喷一次的量,建议每天服用量为喷一次,即0.5mL。
实施例5、滴剂的制备
在环境温度低于25℃,相对湿度小于65%的条件下,将18.39L上述制备例1中的蘑菇维生素D2油加入到配料容器中,然后加入18.7L核桃油和12.91L紫苏油搅拌25min得到混合溶液,将混合溶液装入食品级的聚酯瓶中,每瓶中混合溶液的平均净含量为50mL,而且该聚酯瓶上配套有滴管,所述滴管每次的吸取量约为0.5mL,每次吸取的0.5mL混合溶液中维生素D2含量约为400IU,该滴剂的剂量单位为滴管每次的吸取量,建议每天服用量为滴管吸取一次,即0.5mL。
实施例6、滴剂的制备
在环境温度低于25℃,相对湿度小于65%的条件下,将9.2L上述制备例1中的蘑菇维生素D2油加入到配料容器中,然后加入21.84L核桃油和 18.96L ARA油脂搅拌25min得到混合溶液,将混合溶液装入食品级的聚酯瓶中,每瓶中混合溶液的平均净含量为50mL,而且该聚酯瓶上配套有滴管,所述滴管每次的吸取剂量约为0.5mL,每次吸取的0.5mL混合溶液中维生素 D2含量约为200IU、ARA的含量为75mg,该滴剂的剂量单位为滴管每次的吸取量,建议每天服用量为滴管吸取两次,即1mL。
实施例7、软糖的制备
(1)将2kg琼脂、2kg卡拉胶和5kg白砂糖混合均匀后,加入20kg水,浸泡20min,加热使其充分溶解制得溶胶;
(2)将5kg白砂糖、5kg麦芽糖浆和6.76kg水混合,加热熬煮、搅拌形成糖液,当挑起糖液不易断落时,把步骤(1)制得的溶胶加入到糖液中,搅拌均匀后在温度为104-107℃的条件下熬煮,当体系水分含量降低至22-24%时,停止加热并冷却到70℃,再加入4.24kg制备例1中的蘑菇维生素D2油,搅拌均匀制得糖浆;

Claims (9)
1.一种含蘑菇维生素D2油的食品,其特征在于,所述食品含有蘑菇维生素D2油,所述蘑菇维生素D2油中含有维生素D2。
2.根据权利要求1所述的食品,其特征在于,以蘑菇维生素D2油作为所述食品的组成成分,且每个所述食品剂量单位中维生素D2的含量不低于0.5μg。
3.根据权利要求1或2所述的食品,其特征在于,所述蘑菇维生素D2油的过氧化值≤15meq/kg、酸价≤3mg/g。
4.根据权利要求1或2所述的食品,其特征在于,所述蘑菇维生素D2油是通过用食用油萃取含有维生素D2的蘑菇粉制得的。
5.根据权利要求4所述的食品,其特征在于,所述蘑菇维生素D2油中还添加有抗氧化剂,所述抗氧化剂优选为维生素E、卵磷脂、迷迭香和维生素C钠的一种或多种;更优选地,以蘑菇维生素D2油的总量计,所述抗氧化剂的添加量为800-1500ppm。
6.根据权利要求4所述的食品,其特征在于,所述食用油是葵花籽油、菜籽油、大豆油、橄榄油、玉米油、花生油、椰子油和茶籽油的一种或多种,所述蘑菇粉与食用油的质量比为1:0.5-30,萃取的温度为10-85℃、时间为8-120h。
7.根据权利要求4所述的食品,其特征在于,所述含有维生素D2的蘑菇粉通过以下步骤制得:
(1)将富含麦角固醇的蘑菇原料切成蘑菇片后,用紫外线照射8-150min,使所述蘑菇原料产生维生素D2;
(2)将所述蘑菇片粉碎得到所述蘑菇粉,所述蘑菇粉的粒度为80-150目。
8.根据权利要求1或2所述的食品,其特征在于,所述食品还含有选自紫苏油、核桃油、亚麻籽油、花生油、橄榄油、ARA油脂、DHA油脂、维生素A和海藻钙中的一种或多种营养素。
9.根据权利要求1-8中任意一项所述食品,其特征在于,所述食品为保健品或健康食品,优选为软胶囊、滴剂、喷雾剂、软糖或凝胶糖果。
