Abstract
本发明涉及一种改善阴虚体质的食品及其制备工艺,属于药食同源类配方与食品技术领域。具体涉及一种功能性改善亚健康偏颇体质的代餐粉,是一种能改善阴虚体质的食品及制备工艺。代餐粉含有基质粉及体质粉。基质粉为提供营养、改善口感的五谷杂粮,体质粉为改善阴虚体质的药食同源类。在一个或多个具体实施方式中,基质粉包含糙米、大豆蛋白粉、大豆膳食纤维、薏米、燕麦、小麦胚芽。体质粉包含玉竹、桑葚、莲子、百合、乌梅、枸杞、陈皮。

技术领域
本公开属于药食同源类配方与食品技术领域。涉及一种功能性改善亚健康偏颇体质的代餐粉,具体涉及的是一种能改善阴虚体质的食品及制备工艺。
背景技术
世界卫生组织(WHO)提出亚健康是一组临床症状,特征是体虚困乏、易感疲劳、失眠、休息质量不高、注意力不集中,甚至不能正常生活和工作、情绪不稳定、抵抗力差等,是人的身心处于疾病和健康之间的一种健康低质状态。中医理论认为亚健康状态是机体的阴阳气血偏离平衡但未形成显著的疾病状态,即为亚健康。在我国,有大量处于亚健康状态的人群,其中相当比例为30岁到59岁的中年人群。亚健康是疾病的前期,如不及时干预及治疗,其中半数以上可能会发展为高血压、冠心病、糖尿病等器质性疾病。
体质是个体在其生长发育过程中形成的形体结构与机能方面的特殊性,在一定程度上反映了机体阴阳气血盛衰的禀赋特点,在病理上表现为对某些疾病的易感性及病变转归的倾性。在受到某种致病因素的刺激后,是否形成亚健康状态,形成后能否发病,或是能够自行向愈,很大程度上取决于体质类型。病理性体质是亚健康状态的物质基础,反映了亚健康形成的内在机制,是亚健康发生的内因;亚健康状态则是病理体质的表现特征和外显形式。从整体的平衡观出发,运用辨证论治思想指导下的辨质论治恢复“阴平阳秘”的状态,是调理亚健康的有效手段。
阴虚体质是偏颇体质中的一种。阴虚质形体特征为清瘦、面红;临床表现的主项为:手足心热、易口燥咽干、口渴喜冷饮、大便干燥、睡眠差;副项为面色潮红、两眼干涩、视物模糊、皮肤偏干无光泽、眩晕耳鸣、小便短赤、脉细弦或数;心理表现:多性情急躁、外向好动、活泼;对外界环境适应能力表现为不耐热邪、不耐燥邪、耐冬不耐夏。阴虚体质的形成有一部分是先天而成,另后天因素中情绪影响是形成因素之一。长期的不良情绪积蓄于心理,得不到宣泄,郁结成火,内耗阴精产生阴虚;饮食辛辣也有影响。长期使用这类刺激性食物,容易造成内火旺盛,形成阴虚体质。阴虚体质多见于女性。由于女性特殊生理特点,要经历经、带、胎、产、乳,消耗大量阴血,所以易形成阴虚体质。
目前,用于改善阴虚体质的技术通常分为以下两类:
1)中药组合(CN103638298A、CN102379420A等):此类产品口感差,服用不方便。另外药物作用效果虽强,但相对而言毒副作用也比较明显,不适合作为调节体质的长期干预手段。
2)保健品(CN102586064A、CN103948029A、CN103039998A、CN103976107A、CN104605357A等):此类产品多以酒、茶及饮料的等液体形式出现,在配方中采用一定比例的性质较温和的中药。消费者必须安排并花费专门的时间和精力来食用这些产品。
由于中药汤剂多有苦味,故民间有“良药苦口”之说,而且必须安排并花费专门的时间和精力来食用;而以酒、茶及饮料的等液体形式的保健品虽然口味相较中药汤剂有了改善,但口感仍然不佳,且食用仍然相对不便。因此发明一种能将药食同源中药配方结合常见食物以及功能性食品资源组合,制备成色、香、味俱全、营养均衡和易于保存、方便快捷的食品很有必要。
发明内容
阴虚体质是形成亚健康并驱使其向某类疾病状态转变的一种相对稳定的个性特征,需要长期使用对应偏性的药物或食物进行改善,但药物副作用大,药食同源性食物口感不佳,难以坚持。本公开将药食同源中药配方结合常见食物以及功能性食品资源组合,制备成色、香、味俱全、营养均衡和易于保存、方便快捷的代餐粉,提高使用者的依从性和规律性,达到长期的温和稳固的阴虚体质改善效果,使之趋于健康状态的平和体质。本公开集食疗、调理、预防三重功效于一体。
“药食同源”是对人类健康有着极大价值与贡献的中国传统医学的核心传承部分。利用不同食物的寒热温凉(四气)来温和调节人体的阴阳平衡,有着极为突出的优点:一、药有三分毒,长期使用药物会产生毒副作用,而食物则相对安全,极少产生毒副作用;二、食物作为人体所必需的营养来源,依从性高。在传承千年的中医理论指导下,让处于亚健康阴虚体质的人吃对食物,调节机体阴阳平衡,趋于平和体质。
改善亚健康阴虚体质的代餐粉须具备以下特点:
1.首先是营养均衡、口感良好的食品,具有高膳食纤维、优质蛋白、低饱和脂肪酸和低热量等绿色优质食品的特点;
2.在中医理论的指导下,具有滋阴、清热、生津、养血的作用,以补充和纠正阴虚体质中内耗阴精及虚火内生的特征。
阴虚体质由于体内津液精血等阴液亏少,以阴虚内热等表现为主要特征的体质状态,因此开发一种将药食同源中药配方结合常见食物以及功能性食品资源组合,制备成色、香、味俱全、营养均衡和易于保存、方便快捷的代餐粉,提高使用者的依从性和规律性,达到长期的温和稳固的阴虚体质改善效果的产品是很必要的。
为解决上述问题,本公开包含基质粉及体质粉。基质粉为提供营养、改善口感的五谷杂粮,体质粉为改善阴虚体质的药食同源类。
在本公开的一个或多个具体实施方式中,基质粉包含糙米、大豆蛋白粉、大豆膳食纤维、薏米、燕麦、小麦胚芽。体质粉包含玉竹、桑葚、莲子、百合、乌梅、枸杞、陈皮。
优选基质粉包含糙米5-10份(以下均为质量份数),大豆蛋白粉5-10份,大豆膳食纤维2-6份,薏米5-10份,燕麦5-10份,小麦胚芽4-8份;体质粉包含玉竹2-4份,桑葚2-4份,莲子2-4份,百合2-4份,乌梅2-4份,枸杞2-4份,陈皮2-4份。
或者,基质粉包含糙米5-10份,大豆蛋白粉5-10份,大豆膳食纤维2-6份,薏米5-10份,燕麦5-10份,小麦胚芽4-8份;体质粉包含玉竹9-15份,桑葚9-15份,莲子4-8份,百合4-8份,乌梅9-15份,枸杞9-15份,陈皮9-15份。
在本公开的一个或多个具体实施方式中,代餐粉制作时将糙米、薏米、燕麦、小麦胚芽、玉竹、桑葚、莲子、百合、乌梅、枸杞、陈皮超细粉碎成粉,高温熟化,混匀。高温熟化后加入大豆蛋白粉、大豆膳食纤维,混匀。
或者,代餐粉制作时将糙米、薏米、燕麦、小麦胚芽、莲子、百合超细粉碎成粉;将玉竹、桑葚、乌梅、枸杞、陈皮加入水中煎煮至少一次,合并滤液后浓缩至0.5-1倍,将滤液喷到上述细粉中。高温熟化后,加入大豆蛋白粉、大豆膳食纤维,混匀。

制作时将糙米、薏米、燕麦、小麦胚芽、玉竹、桑葚、莲子、百合、乌梅、枸杞、陈皮超细粉碎成粉,高温熟化,加入前述大豆蛋白粉、大豆膳食纤维,混匀。
或者,在本公开的一个或多个具体实施方式中,本公开的组合物包括以重量计的下列组分(以1人份计):
基质粉:糙米5-10g,大豆蛋白粉5-10g,大豆膳食纤维2-6g,薏米5-10g,燕麦5-10g,小麦胚芽4-8g;

制作将糙米、薏米、燕麦、小麦胚芽、莲子、百合超细粉碎成粉;将玉竹、桑葚、乌梅、枸杞、陈皮加入适量水煎煮至少一次,每次1-1.5个小时,合并滤液后浓缩至0.5-1倍,将滤液喷到上述细粉中。高温熟化后,加入前述大豆蛋白粉、大豆膳食纤维,混匀。
制备所得的配餐或代餐粉,消费者可以每天早餐用温水、温牛奶或是果汁搅拌冲服,或者揉入面粉制成馒头、包子、饼干等作为点心食用。
也可以将本公开的配餐或代餐粉制成固状食品(例如类似米饭、厚粥等)、半流汁食品(例如薄粥等)或者流汁食品(例如饮料等)等形式食用。
依据现代营养学研究,早、中、晚餐占据全天总量的30%,40%,30%左右。正常成年人一天所需热量约为1500-2000千卡,早餐大概在450-600千卡。本配方每100g含350-420千卡,其中优质蛋白质约占30%,脂肪占10%,碳水化合物占60%左右,并含10-15%的膳食纤维。本食疗配餐含优质蛋白、低脂、膳食纤维及碳水化合物,并且体质粉中所含药食同源之中药不仅具有多糖、黄酮类等药理活性成分,更含有丰富的氨基酸、维生素和矿物质。推荐早餐以温水或牛奶冲配一袋,再搭配所喜爱的主食,可形成营养均衡、口味丰富的绿色优质早餐。或者可冲配2包,不需搭配其他主食即可形成营养均衡、快捷方便的早餐。
依据中医养生理论及中医临床实践。本配方中所含基质粉优选五谷杂粮,其中糙米、薏米、小麦胚芽、燕麦阴阳平补、健脾养胃。
所含体质粉中,枸杞滋补肝肾、益精明目;玉竹养阴润燥、生津止渴;桑葚滋阴养血、生津润肠。三味药为君药,共奏滋阴、清热、生津、养血的作用,以补充和纠正阴虚体质中内耗阴精及虚火内生的特征。莲子健脾益肾、养心安神;百合养阴润肺、清心安神。两味药共为臣药,助君药行养心润肺、安神助眠之功。乌梅生津,是为佐药,归肝、脾、肺、大肠经;陈皮理气健脾,助药力达并使全方补而不滞。在中医临床实践方面,本配方所用之君药及臣药均为阴虚症候使用频率最高的药物之一,并且全方仅7味药,均为药食同源,组方配伍精简,深合中医理论。
依据中医药现代药理学研究。根据《中医健康管理服务规范》第4部分中医健康状态跟踪服务,阴虚体质常规检测项目为大便常规、内分泌激素、匹兹堡睡眠质量指数等,并且流行病学调查显示阴虚体质在老年人、妇女及经常熬夜的人群中出现较多。现代药理学研究显示,枸杞中的有效成分枸杞多糖具有清除羟自由基,并能抑制自发或由羟自由基引发的脂质过氧化反应,延缓衰老以及保肝和降血糖血脂的作用。玉竹富含维生素A类物质和粘液质,具有美容护肤的作用,玉竹煎剂具有强心安神降脂、提高免疫力的作用;桑葚有补充胃液缺乏、刺激肠蠕动、调节免疫力、美容和延缓衰老的作用。
为适应大多数食用者的口味或喜好,可以进一步加入调味剂、食用香精、食用色素等,例如蔗糖、三氯蔗糖、木糖醇、食用盐、味精、糖桂花、苋红等。也可以进一步加入益生菌等既具有保健功能又兼具调解口味功能的食材。
本公开选择上述药材进行配伍并与其他食材进行配合,可使其彼此功效产生协同作用,具有滋阴降火、补而不滞的作用,可用于改善阴虚体质,使其阴液充足,抵抗力强,预防疾病发生。

基质粉:糙米6g,大豆蛋白粉8g,大豆膳食纤维4g,薏米7g,燕麦6g,小麦胚芽5g;
体质粉:玉竹2g,桑葚2g,莲子4g,百合3g,乌梅4g,枸杞2g,陈皮4g。
制作时将糙米、薏米、燕麦、小麦胚芽、玉竹、桑葚、莲子、百合、乌梅、枸杞、陈皮超细粉碎成粉,高温熟化,再添加大豆蛋白粉、大豆膳食纤维,混匀。
实施例2:

本公开的一种阴虚体质食疗配餐或代餐品及制备方法包括如下步骤:
称取原料糙米500份(以下均为质量份数),大豆蛋白粉500份,大豆膳食纤维200份,薏米500份,燕麦500份,小麦胚芽400份,玉竹300份,桑葚300份,莲子300份,百合300份,乌梅300份,枸杞300份,陈皮300份。
将糙米、薏米、燕麦、小麦胚芽、玉竹、桑葚、莲子、百合、乌梅、枸杞、陈皮超微粉碎后,100摄氏度高温加温1-2小时熟化。
加入大豆蛋白粉、大豆膳食纤维,混匀,分装成35-40g/袋。
按照以上制备方法所制备的配餐,消费者可以每天早餐用温水、温牛奶或是果汁搅拌冲服,或者揉入面粉制成馒头、包子、饼干等作为点心食用。
实施例8:
本公开的一种阴虚体质食疗配餐或代餐品及制备方法包括如下步骤:
称取原料糙米500(以下均为质量份数),大豆蛋白粉500份,大豆膳食纤维200份,薏米500份,燕麦500份,小麦胚芽400份,玉竹900份,桑葚900份,莲子300份,百合300份,乌梅900份,枸杞900份,陈皮900份。
将糙米、薏米、燕麦、小麦胚芽、莲子、百合超细粉碎成粉;
将玉竹、桑葚、乌梅、枸杞、陈皮加入5份水煎煮2次,每次约1.5个小时,合并2次滤液后浓缩至0.8倍,将滤液喷到上述细粉中。
高温熟化后,加入大豆蛋白粉、大豆膳食纤维,混匀,分装成35-40g/袋。
按照以上制备方法所制备的配餐,消费者可以每天早餐用温水、温牛奶或是果汁搅拌冲服,或者揉入面粉制成馒头、包子、饼干等作为点心食用。
实施例9(代餐粉功效研究):
按照实施例5在上海市徐家汇消费者体验中心进行功效检验。
基质粉36g:糙米5g,大豆蛋白粉10g,大豆膳食纤维2g,薏米5g,燕麦10g,小麦胚芽4g;体质粉34.5g:玉竹15g,桑葚9g,莲子8g,百合4g,乌梅15g,枸杞9g,陈皮9g。制作将糙米、薏米、燕麦、小麦胚芽、莲子、百合超细粉碎成粉;将玉竹、桑葚、乌梅、枸杞、陈皮加入5倍水煎煮2次,每次约1.5个小时,合并2次滤液后浓缩至0.5倍,将滤液喷到上述细粉中。高温熟化后,加入大豆蛋白粉、大豆膳食纤维,加入调味剂混匀,40g每袋进行无菌真空分装。
首次按照《中医体质分类与判定》标准(总计67条)进行体质辨识,入选标准:
1.偏颇体质中阴虚质转化得分大于或等于40分;
2.其他类型偏颇体质转化得分均小于阴虚体质转化得分;
3.经中医师诊断符合阴虚标准的;
4.无严重疾病者;
5.非孕妇及6岁内儿童。
总共纳入42人,入组人群特点:
干预方法为早餐用温开水冲服代餐粉2袋,共干预2个月,采用微信公众号采集所需信息,包括:食用次数记录、阴虚体质量化积分(每2周)、大便指数自测(每周)、匹兹堡睡眠质量指数(每2周)。
结果显示:
1.阴虚质转化分与大便指数自测及匹茨堡睡眠质量指数具有显著相关性。阴虚质转化分越高(越严重),则大便指数及匹兹堡睡眠质量指数越高(越差)。阴虚质转化分与大便指数的相关系数为0.95,与睡眠指数的相关系数为0.89。
2.配餐粉的服用依从性较高。以每周食用5次及5次以上为标准,42人中,有35人平均每周服用次数均达到5次以上,依从性为83%以上。
3.每周服用5次及5次以上的35人中,以服用前后自身为对照,在服用2周后,大便指数自测显著降低,在服用6周后,睡眠指数显著降低,服用8周后,轻型(小于60分)阴虚体质转化得分显著降低,重型(大于60分)阴虚体质转化得分有降低趋势。

1.一种改善阴虚体质的食品,其特征在于包含:基质粉和体质粉;其中所述基质粉包含糙米、大豆蛋白粉、大豆膳食纤维、薏米、燕麦、小麦胚芽,所述体质粉包含玉竹、桑葚、莲子、百合、乌梅、枸杞、陈皮。
2.根据权利要求1所述的食品,其特征在于以质量份数计所述基质粉包含糙米5-10份,大豆蛋白粉5-10份,大豆膳食纤维2-6份,薏米5-10份,燕麦5-10份,小麦胚芽4-8份;所述体质粉包含玉竹2-4份,桑葚2-4份,莲子2-4份,百合2-4份,乌梅2-4份,枸杞2-4份,陈皮2-4份。
3.根据权利要求1所述的食品,其特征在于以质量份数计所述基质粉包含糙米5-10份,大豆蛋白粉5-10份,大豆膳食纤维2-6份,薏米5-10份,燕麦5-10份,小麦胚芽4-8份;所述体质粉包含玉竹9-15份,桑葚9-15份,莲子4-8份,百合4-8份,乌梅9-15份,枸杞9-15份,陈皮9-15份。
4.根据权利要求1-3任意一项所述的食品,其特征在于所述食品的形式是固状、半流汁状或者流汁状。
5.一种改善阴虚体质的食品的制备方法,其特征在于包含以下步骤:
(1)将糙米、薏米、燕麦、小麦胚芽、玉竹、桑葚、莲子、百合、乌梅、枸杞、陈皮超细粉碎成粉;
(2)高温熟化,并混匀;
(3)加入大豆蛋白粉、大豆膳食纤维,并混匀。

7.根据权利要求5所述的制备方法,其特征在于:以质量份数计糙米5-10份,大豆蛋白粉5-10份,大豆膳食纤维2-6份,薏米5-10份,燕麦5-10份,小麦胚芽4-8份,玉竹9-15份,桑葚9-15份,莲子4-8份,百合4-8份,乌梅9-15份,枸杞9-15份,陈皮9-15份。
8.一种改善阴虚体质的食品的制备方法,其特征在于包含以下步骤:
(1)将糙米、薏米、燕麦、小麦胚芽、莲子、百合超细粉碎成粉;
(2)将玉竹、桑葚、乌梅、枸杞、陈皮加入水中煎煮至少一次,合并滤液后浓缩至0.5-1倍,将滤液喷到步骤(1)所得细粉中;
(3)高温熟化;
(4)加入大豆蛋白粉、大豆膳食纤维,并混匀。
9.根据权利要求8所述的制备方法,其特征在于:以质量份数计糙米5-10份,大豆蛋白粉5-10份,大豆膳食纤维2-6份,薏米5-10份,燕麦5-10份,小麦胚芽4-8份,玉竹2-4份,桑葚2-4份,莲子2-4份,百合2-4份,乌梅2-4份,枸杞2-4份,陈皮2-4份。
10.根据权利要求8所述的制备方法,其特征在于:以质量份数计糙米5-10份,大豆蛋白粉5-10份,大豆膳食纤维2-6份,薏米5-10份,燕麦5-10份,小麦胚芽4-8份,玉竹9-15份,桑葚9-15份,莲子4-8份,百合4-8份,乌梅9-15份,枸杞9-15份,陈皮9-15份。
