Abstract
本发明公开了一种铁皮石斛挂面,其包括重量占比10‑19份铁皮石斛超微粉、40‑49份高筋面粉、1份调味料和30‑40份水。本发明的铁皮石斛面条味道鲜美,易于消化,既保持了原料固有香味与口感,且具有光滑的外观和较好的光泽度,富有铁皮石斛的药用价值,且具有添加了营养价值高的火麻油和丰富矿物质的水,复合营养。而且煮食方便,适用于现在的都市社会人。

技术领域
本发明涉及食品技术领域,具体涉及一种铁皮石斛挂面及其制作方法。
背景技术
石斛又名万丈须、吊兰、林兰、金钗华等,茎直立,肉质状肥厚,稍扁的圆柱形,长10-60厘米,粗达1.3厘米,是药用植物,性味甘淡微咸,寒,归胃、肾,肺经,益胃生津,滋阴清热,用于阴伤津亏,口干烦渴,食少干呕,病后虚热,目暗不明,石斛花姿优美,玲珑可爱,花色鲜艳,气味芳香,被誉为“四大观赏洋花”之一。
铁皮石斛又名黑节草、云南铁皮,属微子目,兰科多年生附生草本植物,茎直立,圆柱形,长9-35厘米,粗2-4毫米,萼片和花瓣黄绿色,近相似,长圆状披针形,长约1.8厘米,宽4-5毫米,花期3-6月,具有独特的药用价值,其茎入药,属补益药中的补阴药,具有益胃生津,滋阴清热,健脾开胃,养肝明目,养颜,抗衰老,润肤,生津止渴的功效。
秦汉时期的《神农本草经》中记载铁皮石斛“主伤中、除痹、下气、补五脏虚劳羸瘦、强阴、久服厚肠胃”,《道藏》更是将铁皮石斛列为“中华九大仙草”之首,李时珍在《本草纲目》中评价铁皮石斛“强阴益精,厚肠胃,补内绝不足,平胃气,长肌肉,益智除惊,轻身延年”,《本草思辨录》中记载,铁皮石斛对热病,伤津,口渴舌燥,病后虚热,胃病,干呕,舌光少苔有治疗作用,当代医学证明,铁皮石斛中含有丰富的多糖及总氨基酸及钙、镁、锌、铁、锰、硒、铜、铬、镍微量元素,其干品中多糖含量占五分之一,这种多糖具有增长丁细胞、B细胞、NK细胞和巨噬细胞功能的作用,对癌症病人具有明显增强T细胞免疫功能的作用,可以提高人体的免疫力,以防御外界病原因子的侵袭和清除体内衰老死伤、突变细胞,借以维持机体的生理。
但是,传统的食用方法存在几个问题:鲜吃不利于存储,煎汤、入膳、浸酒耗时且需要一定的烹饪技巧,磨粉泡茶口味单调。
如专利申请号为:201410733846.6的《一种铁皮石斛面条》将新鲜铁皮石斛加入打浆机打碎成糊状,过滤,取铁皮石斛汁;将面粉、铁皮石斛汁、天然食用胶、食盐水混合拌合成面团;将面团进行熟化,经熟化后的面团送压合片、切条、经干、冷却、灭菌即得本发明面条;原料由以下重量配比制成:面粉58-68份,铁皮石斛汁5-9份,天然食用胶0.5-3份,食盐水25-40份。
可见,现有技术中,将铁皮石斛作为原料来制备面条时,是将铁皮石斛与面粉进行简单混合,制备成面团后,再将其熟化压片,切片而得,其仅仅只是为了得到一种具有铁皮石斛功效的、含有铁皮石斛药用价值的铁皮石斛面条,使得制备的铁皮石斛的功效单一,营养结构单一,口感单一,品质较差。
发明内容
本发明的目的是要解决上述技术问题,提供了一种铁皮石斛挂面,其食用方便,且保留铁皮石斛的营养成分,并加入多种营养物质,有益健康。
本发明解决该技术问题所采用的技术方案是:
一种铁皮石斛挂面,其包括重量占比10-19份铁皮石斛超微粉、40-49份高筋面粉、1份调味料和30-40份水。
进一步,所述水为矿物质水。
具体地,所述矿物质水含有镁、钠、钾、钙和锌。
进一步,所述调味料包括食用油,食用油占0.2-0.8份。
具体地,所述食用油为火麻油。
具体地,所述铁皮石斛超微粉选自仿野生种植4年生的铁皮石斛为原材料制得的铁皮石斛超微粉。
进一步,所述调味料包括食用盐,食用盐占0.2-0.8份。
本发明还提供了一种铁皮石斛挂面的制备方法,步骤为:按重量占比取10-19份铁皮石斛超微粉、40-49份高筋面粉、1份调味料和30-40份水,并将其混合拌合成面团备用;将所述面团熟化,经熟化后的面团送压合片、切条、干燥、冷却、灭菌即得。
具体地,所述熟化过程为,将和好的面团放入封闭容器中,放置30±5min,保持面团的温度和湿度相同。
具体地,所述干燥过程为,采用自然干燥,使面条的水分含量降至13~14%,易于保存。
与现有技术相比,具有如下积极效果:
1、本发明的铁皮石斛面条味道鲜美,易于消化,既保持了原料固有香味与口感,且具有光滑的外观和较好的光泽度,富有铁皮石斛的药用价值,且具有添加了营养价值高的火麻油和丰富矿物质的水,复合营养。而且煮食方便,适用于现在的都市社会人。
2、本发明特意采用了火麻油,火麻油为火麻仁榨取的油品。火麻仁又叫大麻仁或麻仁,为桑科植物大麻的干燥成熟果实。其味甘、性平,入脾、胃,能润燥滑肠,滋养补虚。火麻仁含有丰富的蛋白质、不饱和脂肪酸,还有卵磷脂、亚麻酸、维生素及钙、铁矿物等人体必需的微量元素。有润肠胃、滋阴补虚、助消化、明目保肝、祛病益寿之功效,且对便秘、高血压和高胆固醇等疾病有特殊的疗效,而且火麻是唯一能够溶于水的油料。
火麻油含有人体细胞必需的10种氨基酸,β-胡萝卜素、叶绿素、叶酸、植酸、烟酸、卵磷脂、植物甾醇类等营养素,其中不饱和脂肪酸含量达到最高,亚油酸和α-亚麻酸的比例均衡,达到2.4:1,符合世界卫生组织规定营养科学要求的小于4:1的比例。火麻油含有ω-6和ω-3脂肪酸,以及含有相对高的植物甾醇。
通过富含镁、钠、钾、钙和锌的矿物质水糅合火麻油与铁皮石斛,使火麻油与铁皮石斛中的有效成分石斛碱和石斛多糖能够发生协同作用,进而使得石斛碱和石斛多糖功效得到显著的增强,提高面条的保健效果和营养价值。
3、本发明的铁皮石斛提取物以新鲜铁皮石斛为原料,先进行冷冻干燥及低温超微粉碎获得铁皮石斛超微粉,省去传统铁皮石斛的烘干工序,有效成分不易被破坏,铁皮石斛的有效成分更容易被人体吸收,生物利用度更高,并且提取过程很温和,避免了铁皮石斛有效成分的分解,所得的提取物杂质含量较少,大大提高了提取物中石斛多糖和石斛碱的纯度和含量,提高了对铁皮石斛的利用率,实现了对铁皮石斛的合理开发利用。
下面结合实施例对本发明作进一步说明。
具体实施方式
实施例一
实施例一的铁皮石斛挂面,通过以下步骤制作:
首先,选取仿野生种植4年生的铁皮石斛制得的铁皮石斛超微粉、高筋面粉、火麻油、食用盐以及富含镁、钠、钾、钙和锌的矿物质水为原材料;
然后,称取1kg铁皮石斛超微粉、4kg高筋面粉、0.02kg火麻油、0.02kg食用盐和3kg矿物质水,并将所有原材料混合拌合成面团备用;
接着,将所述面团熟化:将和好的面团放入封闭容器中,放置30±5min,保持面团的温度和湿度相同;
最后,经熟化后的面团送压合片、切条、自然干燥、冷却、灭菌即得。
其中,所述干燥所得面条的水分含量降至13~14%,易于保存。
实施例二
实施例二的铁皮石斛挂面,通过以下步骤制作:
首先,选取仿野生种植4年生的铁皮石斛制得的铁皮石斛超微粉、高筋面粉、火麻油、食用盐以及富含镁、钠、钾、钙和锌的矿物质水为原材料;
然后,称取1.5kg铁皮石斛超微粉、4.9kg高筋面粉、0.05kg火麻油、0.03kg食用盐和4kg矿物质水,并将所有原材料混合拌合成面团备用;
接着,将所述面团熟化:将和好的面团放入封闭容器中,放置30±5min,保持面团的温度和湿度相同;
最后,经熟化后的面团送压合片、切条、自然干燥、冷却、灭菌即得。
其中,所述干燥所得面条的水分含量降至13~14%,易于保存。
实施例三
实施例三的铁皮石斛挂面,通过以下步骤制作:
首先,选取仿野生种植4年生的铁皮石斛制得的铁皮石斛超微粉、高筋面粉、火麻油、食用盐以及富含镁、钠、钾、钙和锌的矿物质水为原材料;
然后,称取1.9kg铁皮石斛超微粉、4.5kg高筋面粉、0.08kg火麻油、0.05kg食用盐和3.5kg矿物质水,并将所有原材料混合拌合成面团备用;
接着,将所述面团熟化:将和好的面团放入封闭容器中,放置30±5min,保持面团的温度和湿度相同;
最后,经熟化后的面团送压合片、切条、自然干燥、冷却、灭菌即得。
其中,所述干燥所得面条的水分含量降至13~14%,易于保存。
实施例四
实施例四的铁皮石斛挂面,通过以下步骤制作:
首先,选取仿野生种植4年生的铁皮石斛制得的铁皮石斛超微粉、高筋面粉、火麻油、食用盐以及富含镁、钠、钾、钙和锌的矿物质水为原材料;
然后,称取1.2kg铁皮石斛超微粉、4.7kg高筋面粉、0.07kg火麻油、0.08kg食用盐和3.8kg矿物质水,并将所有原材料混合拌合成面团备用;
接着,将所述面团熟化:将和好的面团放入封闭容器中,放置30±5min,保持面团的温度和湿度相同;
最后,经熟化后的面团送压合片、切条、自然干燥、冷却、灭菌即得。
其中,所述干燥所得面条的水分含量降至13~14%,易于保存。
本发明并不局限于上述实施方式,如果对本发明的各种改动或变型不脱离本发明的精神和范围,倘若这些改动和变型属于本发明的权利要求和等同技术范围之内,则本发明也意图包含这些改动和变型。

1.一种铁皮石斛挂面,其特征在于:包括重量占比10-19份铁皮石斛超微粉、40-49份高筋面粉、1份调味料和30-40份水。
2.如权利要求1所述铁皮石斛挂面,其特征在于:所述水为矿物质水。
3.如权利要求2所述铁皮石斛挂面,其特征在于:所述矿物质水含有镁、钠、钾、钙和锌。
4.如权利要求1所述铁皮石斛挂面,其特征在于:所述调味料包括食用油,食用油占0.2-0.8份。
5.如权利要求4所述铁皮石斛挂面,其特征在于:所述食用油为火麻油。
6.如权利要求1-5任一项所述铁皮石斛挂面,其特征在于:所述铁皮石斛超微粉选自仿野生种植4年生的铁皮石斛为原材料制得的铁皮石斛超微粉。
7.如权利要求4所述铁皮石斛挂面,其特征在于:所述调味料还包括食用盐,食用盐占0.2-0.8份。
8.一种铁皮石斛挂面的制备方法,其特征在于,步骤为:按重量占比取10-19份铁皮石斛超微粉、40-49份高筋面粉、1份调味料和30-40份水,并将其混合拌合成面团备用;将所述面团熟化,经熟化后的面团送压合片、切条、干燥、冷却、灭菌即得。
9.如权利要求8所述铁皮石斛挂面的制备方法,其特征在于:所述熟化过程为,将和好的面团放入封闭容器中,放置30±5min。
10.如权利要求8所述铁皮石斛挂面的制备方法,其特征在于:所述干燥过程为,采用自然干燥,使面条的水分含量降至13~14%。
