本发明提供了一种复合功能饮料,复合功能饮料由以下重量份数组分组成,50‑70份大豆分离蛋白降解肽、1‑3份玉米油、10‑30份天然植物提取物、0.1‑0.3份柠檬酸、0.1‑0.3份大豆卵磷脂、1‑3份B族维生素、1‑3份无机盐、0.5‑1份抗坏血酸和36‑51份纯净水,复合功能饮料制备方法包括:(1)调配:90℃下按加入大豆分离蛋白降解肽、玉米油、天然植物提取物、柠檬酸、大豆卵磷脂、B族维生素、无机盐混合物、抗坏血酸和纯净水,于胶体磨中胶磨5min,得到混合饮料;(2)后处理:将上述步骤中的混合饮料依次经过于85℃、0.01mPa下真空脱气,80℃、15mPa下均质30min,杀菌、封盖和冷却,得到成品,本发明制备的复合功能饮料宜作为代餐或者辅食,营养丰富全面,且能够快速补充能量,缓解体力疲劳,适宜各类人群食用。

技术领域
本发明涉及食品加工技术领域,具体涉及一种复合功能饮料及其制备方法。
背景技术
大豆分离蛋白是以低温大豆粕为原料生产的一种全价蛋白类食品添加剂。其中蛋白质含量在90%以上,氨基酸近20种,并含有人体必需氨基酸。其营养丰富,不含胆固醇,是植物蛋白中为数不多的可替代动物蛋白的品种之一。大豆分离蛋白可用于饮料、营养食品、发酵食品等食品行业中。选择特定的酶将大豆分离蛋白水解成人体易于吸收的小分子多肽,添加具有抗氧化功能的天然植物提取物,同时添加大豆卵磷脂、维生素、矿物质、微量元素等人体必需的营养物质。本品主要特点是营养全面、低脂、易被人体快速吸收,具有抗氧化、增强免疫力、快速缓解体力疲劳等功效,适用于各类人群营养物质的补充。
发明内容
针对现有技术的不足,本发明提供了一种复合功能饮料及其制备方法,为实现以上目的,本发明通过以下技术方案予以实现:
一种复合功能饮料,所述复合功能饮料由以下重量份数组分组成,50-70份大豆分离蛋白降解肽、1-3份玉米油、10-30份天然植物提取物、0.1-0.3份柠檬酸、0.1-0.3份大豆卵磷脂、1-3份B族维生素、1-3份无机盐、0.5-1份抗坏血酸和36-51份纯净水。
优选地,上述天然植物提取物由松花粉提取物、蓝莓提取物和葡萄籽提取物按重量比1:1:1混合而成。
优选地,上述松花粉提取物的制备方法如下,
(3a)筛选粒径小于60目的松花粉粉末,溶解在碳酸氢钠溶液中脱油;
(3b)将脱油处理后的松花粉粉末置于恒温干燥箱进中进行干燥;
(3c)将1份干燥后的松花粉干粉与50份水在25℃、20MPa下均质后,再转移至37℃恒温培养箱300rpm震荡24h,得到固液混合液;
(3d)将固液混合溶液4000rpm离心10min,取上层清液;再次以8000rpm离心30min,取上清。将上清液冻干,得到松花粉提取物。
优选地,上述蓝莓提取物的制备方法如下:
(4a)1份蓝莓与50份水在25℃、20MPa下均质后,37℃恒温静置2h。
(4b)取所述蓝莓固液混合物进行离心操作,先2000rpm离心8min,取上清液5000rpm离心25min,将最终得到的上清液冻干,得到蓝莓提取物。
优选地,上述葡萄籽提取物的制备方法如下,
(5a)葡萄籽粉碎,过40目筛,经脱脂,再用50%醇溶剂在50℃下回流提取5次,每次20min,合并提取液,浓缩,干燥,即得。
优选地,上述B族维生素由维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、生物素和泛酸按重量比1:1:1:1:1:1:1混合而成。
优选地,上述无机盐混合物由硫酸亚铁和硫酸锌按照1:1的比例混合而成。
上述复合功能饮料的制备方法包括如下步骤,
(1)调配:90℃下按加入大豆分离蛋白降解肽、玉米油、天然植物提取物、柠檬酸、大豆卵磷脂、B族维生素、无机盐混合物、抗坏血酸和纯净水,于胶体磨中胶磨5min,得到混合饮料;
(2)后处理:将上述步骤中的混合饮料依次经过于85℃、0.01mPa下真空脱气,80℃、15mPa下均质30min,杀菌、封盖和冷却,得到成品。
本发明的有益效果为:
本发明以大豆分离蛋白降解肽为主要原料,添加维生素B族、玉米油、无机盐、松花粉提取物、蓝莓提取物和葡萄籽提取物,制备得到营养全面的复合功能饮料;本发明提供的复合功能饮料脂肪含量低,不会引起肥胖且不会导致胆固醇升高;植物蛋白营养健康,易于吸收,松花粉提取物、蓝莓提取物和葡萄籽提取物具有较强的抗氧化能力、增强免疫力的功效,补充人体所必须的蛋白质同时还能够防止心脑血管疾病。本品宜作为代餐或者辅食,营养丰富全面,且能够快速补充能量,缓解体力疲劳,适宜各类人群食用。

本发明提供了一种复合功能饮料,复合功能饮料由以下重量份数组分组成,50份大豆分离蛋白降解肽、1份玉米油、3.3份松花粉提取物、3.3份蓝莓提取物、3.3份葡萄籽提取物天然植物提取物、0.1份柠檬酸、0.1份大豆卵磷脂、0.125份维生素B1、0.125份维生素B2、0.125份维生素B6、0.125份维生素B12、0.125份烟酸、0.125份叶酸、0.125份生物素和0.125份泛酸、0.5份硫酸亚铁、0.5份硫酸锌无机盐、0.5份抗坏血酸和36份纯净水。
其中,松花粉提取物的制备方法如下,
(3a)筛选粒径小于60目的松花粉粉末,溶解在碳酸氢钠溶液中脱油;
(3b)将脱油处理后的松花粉粉末置于恒温干燥箱进中进行干燥;
(3c)将1份干燥后的松花粉干粉与50份水在25℃、20MPa下均质后,再转移至37℃恒温培养箱300rpm震荡24h,得到固液混合液;

本发明提供了一种复合功能饮料,复合功能饮料由以下重量份数组分组成,70份大豆分离蛋白降解肽、3份玉米油、10份松花粉提取物、10份蓝莓提取物、10份葡萄籽提取物、0.3份柠檬酸、0.3份大豆卵磷脂、0.375份维生素B1、0.375份维生素B2、0.375份维生素B6、0.375份维生素B12、0.375份烟酸、0.375份叶酸、0.375份生物素、0.375份泛酸、1.5份硫酸亚铁、1.5份硫酸锌无机盐、1份抗坏血酸和51份纯净水。
其中,松花粉提取物的制备方法如下,
(3a)筛选粒径小于60目的松花粉粉末,溶解在碳酸氢钠溶液中脱油;
(3b)将脱油处理后的松花粉粉末置于恒温干燥箱进中进行干燥;
(3c)将1份干燥后的松花粉干粉与50份水在25℃、20MPa下均质后,再转移至37℃恒温培养箱300rpm震荡24h,得到固液混合液;
(3d)将固液混合溶液4000rpm离心10min,取上层清液;再次以8000rpm离心30min,取上清。将上清液冻干,得到松花粉提取物。
其中,蓝莓提取物的制备方法如下:

实施例3:
本发明提供了一种复合功能饮料,复合功能饮料由以下重量份数组分组成,60份大豆分离蛋白降解肽、2份玉米油、7份松花粉提取物、7份蓝莓提取物、7份葡萄籽提取物0.2份柠檬酸、0.2份大豆卵磷脂、0.25份维生素B1、0.25份维生素B2、0.25份维生素B6、0.25份维生素B12、0.25份烟酸、0.25份叶酸、0.25份生物素、0.25份泛酸、1份硫酸亚铁、1份硫酸锌无机盐、0.75份抗坏血酸和44份纯净水。
其中,松花粉提取物的制备方法如下,
(3a)筛选粒径小于60目的松花粉粉末,溶解在碳酸氢钠溶液中脱油;
(3b)将脱油处理后的松花粉粉末置于恒温干燥箱进中进行干燥;
(3c)将1份干燥后的松花粉干粉与50份水在25℃、20MPa下均质后,再转移至37℃恒温培养箱300rpm震荡24h,得到固液混合液;
(3d)将固液混合溶液4000rpm离心10min,取上层清液;再次以8000rpm离心30min,取上清。将上清液冻干,得到松花粉提取物。
其中,蓝莓提取物的制备方法如下:
(4a)1份蓝莓与50份水在25℃、20MPa下均质后,37℃恒温静置2h。

本发明提供了一种复合功能饮料,复合功能饮料由以下重量份数组分组成,55份大豆分离蛋白降解肽、1.5份玉米油、6份松花粉提取物、6份蓝莓提取物、6份葡萄籽提取物天然植物提取物、0.15份柠檬酸、0.15份大豆卵磷脂、0.2份维生素B1、0.2份维生素B2、0.2份维生素B6、0.2份维生素B12、0.2份烟酸、0.2份叶酸、0.2份生物素、0.2份泛酸、0.7份硫酸亚铁、0.7份硫酸锌无机盐、0.6份抗坏血酸和40份纯净水。
其中,松花粉提取物的制备方法如下,
(3a)筛选粒径小于60目的松花粉粉末,溶解在碳酸氢钠溶液中脱油;
(3b)将脱油处理后的松花粉粉末置于恒温干燥箱进中进行干燥;
(3c)将1份干燥后的松花粉干粉与50份水在25℃、20MPa下均质后,再转移至37℃恒温培养箱300rpm震荡24h,得到固液混合液;
(3d)将固液混合溶液4000rpm离心10min,取上层清液;再次以8000rpm离心30min,取上清。将上清液冻干,得到松花粉提取物。
其中,蓝莓提取物的制备方法如下:

本发明提供了一种复合功能饮料,复合功能饮料由以下重量份数组分组成,65份大豆分离蛋白降解肽、2.5份玉米油、8份松花粉提取物、8份蓝莓提取物、8份葡萄籽提取物天然植物提取物、0.25份柠檬酸、0.25份大豆卵磷脂、0.3份维生素B1、0.3份维生素B2、0.3份维生素B6、0.3份维生素B12、0.3份烟酸、0.3份叶酸、0.3份生物素、0.3份泛酸、1.3份硫酸亚铁、1.3份硫酸锌无机盐、0.8份抗坏血酸和48份纯净水。
其中,松花粉提取物的制备方法如下,
(3a)筛选粒径小于60目的松花粉粉末,溶解在碳酸氢钠溶液中脱油;
(3b)将脱油处理后的松花粉粉末置于恒温干燥箱进中进行干燥;
(3c)将1份干燥后的松花粉干粉与50份水在25℃、20MPa下均质后,再转移至37℃恒温培养箱300rpm震荡24h,得到固液混合液;
(3d)将固液混合溶液4000rpm离心10min,取上层清液;再次以8000rpm离心30min,取上清。将上清液冻干,得到松花粉提取物。

1.一种复合功能饮料,其特征在于,所述复合功能饮料由以下重量份数组分组成,50-70份大豆分离蛋白降解肽、1-3份玉米油、10-30份天然植物提取物、0.1-0.3份柠檬酸、0.1-0.3份大豆卵磷脂、1-3份B族维生素、1-3份无机盐、0.5-1份抗坏血酸和36-51份纯净水。
2.根据权利要求1所述的复合功能饮料,其特征在于,所述天然植物提取物由松花粉提取物、蓝莓提取物和葡萄籽提取物按重量比1:1:1混合而成。
3.根据权利要求1或者2所述的复合功能饮料,其特征在于,所述松花粉提取物的制备方法如下,
(3a)筛选粒径小于60目的松花粉粉末,溶解在碳酸氢钠溶液中脱油;
(3b)将脱油处理后的松花粉粉末置于恒温干燥箱进中进行干燥;
(3c)将1份干燥后的松花粉干粉与50份水在25℃、20MPa下均质后,再转移至37℃恒温培养箱300rpm震荡24h,得到固液混合液;
(3d)将固液混合溶液4000rpm离心10min,取上层清液;再次以8000rpm离心30min,取上清。将上清液冻干,得到松花粉提取物。
4.根据权利要求1或2所述的复合功能饮料,其特征在于,所述蓝莓提取物的制备方法如下:
(4a)1份蓝莓与50份水在25℃、20MPa下均质后,37℃恒温静置2h。
(4b)取所述蓝莓固液混合物进行离心操作,先2000rpm离心8min,取上清液5000rpm离心25min,将最终得到的上清液冻干,得到蓝莓提取物。
5.根据权利要求1或2所述的复合功能饮料,其特征在于,所述葡萄籽提取物的制备方法如下,
(5a)将葡萄籽粉碎,过40目筛,经脱脂,再用50%醇溶剂在50℃下回流提取5次,每次20min,合并提取液,浓缩,干燥,即得。
6.根据权利要求1或2所述的复合功能饮料,其特征在于,所述B族维生素由维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、生物素和泛酸按重量比1:1:1:1:1:1:1:1混合而成。
7.根据权利要求1或2所述的复合功能饮料,其特征在于,所述无机盐混合物由硫酸亚铁和硫酸锌按照1:1的比例混合而成。
8.一种如权利要求1所述的复合功能饮料的制备方法,其特征在于,其制备方法包括如下步骤,
(1)调配:90℃下按加入大豆分离蛋白降解肽、玉米油、天然植物提取物、柠檬酸、大豆卵磷脂、B族维生素、无机盐混合物、抗坏血酸和纯净水,于胶体磨中胶磨5min,得到混合饮料;
(2)后处理:将上述步骤中的混合饮料依次经过于85℃、0.01mPa下真空脱气,80℃、15mPa下均质30min,杀菌、封盖和冷却,得到成品。
