Abstract
本发明涉及一种茶叶土豆及其制作方法,属于食品加工技术领域。该茶叶土豆包括下列重量份的原料食材:土豆2~4份、茶叶0.1~0.3份、花椒叶0.1~0.2份、韭菜0.2~0.5份、油0.2~0.4份、盐适量、水适量。其制作方法包括原料准备、翻炒、焖制等步骤。本发明配方及工艺独特,制作方法简单,采用茶叶、韭菜、花椒叶对土豆进行炒制后再焖制,不但增加了土豆的风味、丰富了土豆的营养、改善了土豆的口感,由于茶叶与韭菜、花椒叶的共同作用,使土豆风味独特;该方法制作出的土豆颜色金黄发亮、营养丰富、香味浓郁持久、味道鲜美、口感粉糯、令人回味无穷,该茶叶土豆既可作为菜肴也可作为主食进行食用。

技术领域
本发明涉及一种茶叶土豆及其制作方法,属于食品加工技术领域。
背景技术
土豆,又叫马铃薯,其含有丰富营养成分,一般新鲜土豆中含淀粉9~20%、蛋白质1.5~2.3%、脂肪0.1~1.1%、粗纤维0.6~0.8%;100g土豆中所含的营养成分为:能量318千焦、钙5~8mg、磷15~40mg、铁0.4mg~0.8mg、钾200~340mg,碘0.8~1.2,胡萝卜素12~30mg,硫胺素0.03~0.08mg,核黄素0.01~0.04mg,尼克酸0.4~1.1mg;土豆还含有葡萄糖、果糖和蔗糖等。据研究,土豆的蛋白质营养价值很高,其品质相当于鸡蛋的蛋白质,容易消化、吸收,优于其他作物的蛋白质。而且土豆的蛋白质含有18种氨基酸,包括人体不能合成的各种必需氨基酸。高度评价土豆的营养价值,是与其块茎含有高品位的蛋白质和必需氨基酸的赖氨酸、色氨酸、组氨酸、精氨酸、苯丙氨酸、缬氨酸、亮氨酸、异亮氨酸和蛋氨酸的存在是分不开的。土豆含有多种维生素和无机盐。食用土豆有益于健康与维生素的作用是分不开的。特别是维生素C可防止坏血病,刺激造血机能等,在日常吃的大米、白面中是没有的,而土豆可提供大量的维生素c。土豆中还含有维生素A(胡萝卜素)、维生素B1(硫胺素)、维生素B2(核黄素)、维生素pp(烟酸)、维生素E(生育酚)、维生素B3(泛酸)、维生素B6(吡哆醇)、维生素M(叶酸)和生物素H等,对人体健康都是有益的。此外,土豆中的无机盐如钙、磷、铁、钾、钠、锌,锰等,也是对人的健康和幼儿发育成长不可缺少的元素。
土豆可作为蔬菜制作佳肴,亦可作为主粮。作为蔬菜时,主要有以下几种做法:1、将其切丝或切片,进行炒制;2、将其切成块状,进行炖制;3、将其先用清水煮熟,剥皮后捣烂成土豆泥,与配料进行炒制;4、将其先用清水煮熟,剥皮后切成块状,进行烩制。作为主粮时,一般做法就是将其用清水煮熟剥皮即食。上述方法制作出的土豆风味不够独特,营养不够丰富,口感平淡,吃后不会给人留下深刻的印象。
发明内容
为了克服现有技术中存在的不足,本发明的目的在于提供一种茶叶土豆,该茶叶土豆风味独特、营养丰富、颜色金黄发亮、香味浓郁、鲜美可口、口感极好、吃后令人回味无穷,让人久久不忘。
本发明的另一目的是提供本发明所述的茶叶土豆的制作方法。
为了实现上述目的,本发明采用以下技术方案:一种茶叶土豆,包括下列重量份的原料食材:土豆2~4份、茶叶0.1~0.3份、花椒叶0.1~0.2份、韭菜0.2~0.5份、油0.2~0.4份、盐适量、水适量。
上述技术方案中,优选土豆3份、茶叶0.2份、花椒叶0.15份、韭菜0.35份、油0.3份、盐适量、水适量。
上述技术方案中,优选地,还包括0.1份重量份的辣椒粉。
上述技术方案中,优选地,所述花椒叶为新鲜的嫩花椒叶。
上述技术方案中,优选地,所述油为猪油。
上述技术方案中,优选地,所述茶叶为新鲜嫩茶叶。
本发明所述的茶叶土豆,其制作方法如下:
1)原料准备:按配比称取各原料成份;将土豆皮刮掉,清洗干净后将土豆切成长为3~5cm、宽为2~3cm、厚为2~3cm的块状结构,备用;将茶叶、花椒叶清洗干净,备用;将韭菜清洗干净,切成长为3~5cm的截状,备用;
2)翻炒:将油放入油锅内,开火进行加热,待油锅冒青烟时将备用土豆倒入油锅内进行翻炒3~8min,当土豆表面有5mm左右厚度颜色变成半透明状时,将茶叶、花椒叶、韭菜、食盐一并加入油锅内,再进行翻炒5~10min;
3)焖制:向油锅内加入适量水后,用锅盖盖住油锅,焖制15~30min后,用筷子插试土豆,土豆中部粉糯时,即可出锅食用。
上述制作方法的步骤3)中,水的用量以正好淹没最上层土豆表面为宜。
本发明所述的茶叶土豆,当其含有辣椒时,其制作方法如下:
1)原料准备:按配比称取各原料成份;将土豆皮刮掉,清洗干净后将土豆切成长为3~5cm、宽为2~3cm、厚为2~3cm的块状结构,备用;将茶叶、花椒叶清洗干净,备用;将韭菜清洗干净,切成长为3~5cm的截状,备用;
2)翻炒:将油放入油锅内,开火进行加热,待油锅冒青烟时将备用土豆倒入油锅内进行翻炒3~8min,当土豆表面有5mm左右厚度颜色变成半透明状时,将茶叶、花椒叶、韭菜、食盐、辣椒粉一并加入油锅内,再进行翻炒5~10min;
3)焖制:向油锅内加入适量水后,用锅盖盖住油锅,焖制15~30min后,用筷子插试土豆,土豆中部粉糯时,即可出锅食用。
上述技术方案中,茶叶中含有茶多酚、茶多糖、咖啡碱、蛋白质、氨基酸、维生素、矿物质等多种营养和药理成分,茶叶通过烹饪后其营养成分可以进入土豆中,不仅可以直接补充矿物质、维生素、氨基酸等营养素,而且可以摄入茶多酚等抗氧化活性物质,对机体产生综合的生理调节作用。
花椒叶不但具备花椒的性能和味道,而且具有花椒所不具有的香味,其焖制出的土豆不但具有一定的麻感,而且味道清香,口感极好。
韭菜,主要营养成分有维生素C、维生素B1、维生素B2、尼克酸、胡萝卜素、碳水化合物及矿物质。韭菜还含有丰富的纤维素,每100克韭菜含1.5克纤维素,比大葱和芹菜都高,可以促进肠道蠕动、预防大肠癌的发生,同时又能减少对胆固醇的吸收,起到预防和治疗动脉硬化、冠心病等疾病的作用。采用韭菜与花椒叶、茶叶焖制土豆,不但增加了土豆的营养,而且使土豆风味独特,制作出的茶叶土豆味道纯正,口感好,香味浓郁。
与现有技术相比较,本发明由于采用了上述技术方案,具有以下有益效果:本发明配方及工艺独特,制作方法简单易行,采用茶叶、韭菜、花椒叶对土豆进行炒制后再焖制,不但增加了土豆的风味、丰富了土豆的营养、在改善土豆口感的同时能使土豆散发出纯正的土豆味道(能真正吃出土豆的香味),而且其焖制出的土豆颜色更加金黄发亮,由于茶叶与韭菜、花椒叶的共同作用,使土豆风味独特;该方法制作出的土豆颜色金黄发亮、营养丰富、香味浓郁持久、味道鲜美、口感粉糯、令人回味无穷,该茶叶土豆既可作为菜肴也可作为主食进行食用。
具体实施方式
下面结合具体实施例对本发明作进一步的说明:
实施例1
一种茶叶土豆,包括下列重量份的原料食材:新鲜土豆2份、新鲜嫩茶叶0.3份、新鲜嫩花椒叶0.1份、小韭菜0.5份、猪油0.2份、盐适量、水适量;其制作方法如下:
1)原料准备:按配比称取各原料成份;将土豆皮刮掉,清洗干净后将土豆切成长为3cm、宽为2cm、厚为2cm的块状结构,备用;将茶叶、花椒叶清洗干净,备用;将韭菜清洗干净,切成长为3cm的截状,备用;
2)翻炒:将油放入油锅内,开火进行加热,待油锅冒青烟时将备用土豆倒入油锅内进行翻炒3min,当土豆表面有5mm左右厚度颜色变成半透明状时,将茶叶、花椒叶、韭菜、食盐一并加入油锅内,再进行翻炒10min;
3)焖制:向油锅内加入水,使水正好淹没最上层土豆表面,用锅盖盖住油锅,焖制15min后,用筷子插试土豆,土豆中部粉糯时,即可出锅食用。
实施例2
一种茶叶土豆,包括下列重量份的原料食材:土豆3份、新鲜茶叶0.2份、新鲜的嫩花椒叶0.15份、韭菜0.35份、猪油0.3份、辣椒粉0.1份、盐适量、水适量;其制作方法如下:
1)原料准备:按配比称取各原料成份;将土豆皮刮掉,清洗干净后将土豆切成长为4cm、宽为4cm、厚为3cm的块状结构,备用;将茶叶、花椒叶清洗干净,备用;将韭菜清洗干净,切成长为4cm的截状,备用;
2)翻炒:将油放入油锅内,开火进行加热,待油锅冒青烟时将备用土豆倒入油锅内进行翻炒5min,当土豆表面有5mm左右厚度颜色变成半透明状时,将茶叶、花椒叶、韭菜、辣椒粉、食盐一并加入油锅内,再进行翻炒8min;
3)焖制:向油锅内加入水,使水正好淹没最上层土豆表面,用锅盖盖住油锅,焖制22min后,用筷子插试土豆,土豆中部粉糯时,即可出锅食用。
实施例3
一种茶叶土豆,包括下列重量份的原料食材:土豆4份、茶叶0.1份、花椒叶0.2份、韭菜0.2份、纯菜籽油0.4份、盐适量、水适量;其制作方法如下:
1)原料准备:按配比称取各原料成份;将土豆皮刮掉,清洗干净后将土豆切成长为5cm、宽为3cm、厚为3cm的块状结构,备用;将茶叶、花椒叶清洗干净,备用;将韭菜清洗干净,切成长为5cm的截状,备用;
2)翻炒:将油放入油锅内,开火进行加热,待油锅冒青烟时将备用土豆倒入油锅内进行翻炒8min,当土豆表面有5mm左右厚度颜色变成半透明状时,将茶叶、花椒叶、韭菜、食盐一并加入油锅内,再进行翻炒5min;
3)焖制:向油锅内加入水,使水正好淹没最上层土豆表面,用锅盖盖住油锅,焖制30min后,用筷子插试土豆,土豆中部粉糯时,即可出锅食用。

1.一种茶叶土豆,其特征在于,包括下列重量份的原料食材:土豆2~4份、茶叶0.1~0.3份、花椒叶0.1~0.2份、韭菜0.2~0.5份、油0.2~0.4份、盐适量、水适量。
2.如权利要求1所述的茶叶土豆,其特征在于,包括下列重量份的原料食材:土豆3份、茶叶0.2份、花椒叶0.15份、韭菜0.35份、油0.3份、盐适量、水适量。
3.如权利要求1或2所述的茶叶土豆,其特征在于,还包括0.1份重量份的辣椒粉。
4.如权利要求1或2所述的茶叶土豆,其特征在于,所述花椒叶为新鲜的嫩花椒叶。
5.如权利要求1或2所述的茶叶土豆,其特征在于,所述油为猪油。
6.如权利要求1或2所述的茶叶土豆,其特征在于,所述茶叶为新鲜嫩茶叶。
7.如权利要求1或2所述的茶叶土豆,其特征在于,其制作方法如下:
1)原料准备:按配比称取各原料成份;将土豆皮刮掉,清洗干净后将土豆切成长为3~5cm、宽为2~3cm、厚为2~3cm的块状结构,备用;将茶叶、花椒叶清洗干净,备用;将韭菜清洗干净,切成长为3~5cm的截状,备用;
2)翻炒:将油放入油锅内,开火进行加热,待油锅冒青烟时将备用土豆倒入油锅内进行翻炒3~8min,当土豆表面有5mm左右厚度颜色变成半透明状时,将茶叶、花椒叶、韭菜、食盐一并加入油锅内,再进行翻炒5~10min;
