Abstract

本发明属于食品科学技术领域,具体涉及一种改善便秘的益生菌凝胶糖果及其制备方法。
背景技术
便秘是指大便次数减少,一般每周少于3次,伴排便困难、粪便干结。便秘是临床上常见的症状,多长期持续存在,症状扰人,影响生活质量,病因多样,以肠道疾病最为常见。
近年来,由于生活节奏加快、饮食因素、药物作用等因素导致的功能性便秘的发生率不断升高,饮食过于精细、缺乏运动、长期出差、精神压力过大等都会引起便秘。便秘会使皮肤暗淡无光泽形成痤疮、色斑,导致精神不振,烦躁不安,腹部疼痛,长期便秘还可能引起肛肠并发症,甚至会导致直肠癌、结肠癌。
便秘的发生,主要是致病菌感染后造成了肠道菌群失衡,从而导致肠道吸收功能紊乱,保水性降低。通过服用益生菌及具有肠道微生物调节功能的植物提取物组合,尤其是可以产生细菌素、以及抗菌物质的益生菌,能够很好地抑制肠道有害菌。通过调节肠道中有益菌的平衡,改善肠道免疫系统,从而提高免疫系统能力,以有效缓解便秘症状。
目前,还没有出现一种改善便秘的益生菌产品,使人们更便捷、更容易地接受,以有效补充能够抑制肠道有害菌、及调节肠道微生态协同的有益菌。
发明内容
为了克服上述技术缺陷,本发明的第一目的是提供了一种改善便秘的益生菌凝胶糖果,服用方便,通过长期服用,能够改变肠道微生物的组成,平衡肠道菌群,改善肠道健康,从而达到长期改善便秘的目的。
为了解决上述问题,本发明按以下技术方案予以实现的:
一种改善便秘的益生菌凝胶糖果,包含以下质量份的原料组分:
100份益生菌冻干粉组合物、1-100份植物干燥粉或提取物、1-30份功能性低聚糖、1-10份乳糖、1-10份水溶性膳食纤维;
所述益生菌冻干粉组合物包含罗伊氏乳杆菌冻干粉、嗜酸乳杆菌冻干粉、瑞士乳杆菌冻干粉、唾液乳杆菌冻干粉、植物乳杆菌冻干粉、鼠李糖乳杆菌冻干粉、干酪乳杆菌冻干粉中的至少一种,以及婴儿双歧杆菌冻干粉、短双歧杆菌冻干粉、长双歧杆菌冻干粉、乳双歧杆菌冻干粉中的至少一种;其中,所述益生菌冻干粉组合物至少包含所述嗜酸乳杆菌冻干粉和所述婴儿双歧杆菌冻干粉。
罗伊氏乳杆菌、嗜酸乳杆菌、瑞士乳杆菌、唾液乳杆菌、鼠李糖乳杆菌、植物乳杆菌、干酪乳杆菌、婴儿双歧杆菌、短双歧杆菌、长双歧杆菌、乳双歧杆菌是一种常用于酸奶、发酵乳制品及膳食补充剂的益生菌,被列入卫生部公布的《可用于食品的菌种名单》(卫办监督发[2010]65号),可保持肠道的菌群平衡。长双歧杆菌和干酪乳杆菌在发酵过程中可产生胞外多糖,作为一种大分子聚合物,胞外多糖具有一定的粘性和持水性,胞外多糖也是一种有效免疫因子,具有显著调节免疫力的作用。补充多样性的双歧杆菌组合,提高肠道双歧杆菌种类和丰度,对于过敏具有显著调节作用。很多乳杆菌菌株能够产生多种细菌素,对于肠道致病菌有特定性抑制作用,补充具有较强细菌素产生能力的益生菌,能够有效缓解便秘症状。

瑞士乳杆菌是革兰氏阳性细菌中的一种,瑞士乳杆菌细胞表面覆盖了一层由单个蛋白亚基或糖蛋白组成的单层晶格结构,其能够抑制肠道中病菌侵染、提高对病原菌的抗病力、调节机体免疫能力和改善胃肠道正常菌群等益生作用。瑞士乳杆菌还能通过间接乳蛋白产生酪蛋白磷酸肽具有促进人体对钙、铁等物质的吸收,提高生物利用率的生理功能,同时还能起到增强睡眠的作用,瑞士乳杆菌细胞壁肽聚糖可被溶菌酶水解,释放出具有催眠活性的细胞酰肽。
嗜酸乳杆菌属于乳杆菌属,是人体肠道中重要微生物,与人体健康息息相关,当其达到一定数量时,可以起到健康促进效果。1)生物屏障保护作用:嗜酸乳杆菌于肠黏膜上皮细胞相互作用、密切结合构成了生物学屏障;同时,通过其自身及其代谢物与其它细菌之间的相互作用,调整菌群之间的关系,维持和保证菌群最佳优势组合以及这种组合的稳定,阻止了致病菌的定植和入侵,拮抗致病菌和有害微生物的生长及其毒素的粘附;2)营养作用:乳酸菌发酵后产生的乳酸,可提高胃内食物的预消化,提高钙、磷、铁的利用率和维生素D的吸收;提高人体肠内β-半乳糖苷酶的活性,促进奶质中乳糖的吸收,从而缓解乳糖不耐症;能分泌蛋白酶,促进蛋白质的消化和吸收;3)抗癌作用:腐败性细菌作用于食物成分和胆汁酸盐类,能生成亚硝酸基化合物、胆固醇及胆汁酸的代谢物、氨基酸代谢物(酚类、吲哚、硫酸氢)等有机致癌物质,与这些致癌物质有关的肠内细菌酶有β葡萄糖醛酸酶、巯基还原酶、偶氮还原酶等。嗜酸乳杆菌能改善肠道菌群,抑制致癌物质的产生,同时,嗜酸乳杆菌及其代谢物活化了免疫功能,抑制癌细胞的形成和增殖;4)增强机体免疫力:嗜酸乳杆菌在肠道内定植,相当于自然免疫,能激活机体巨噬活性,诱发特异性和非特异性免疫反应,提高抗感染的能力;5)延缓机体衰老:人的衰老与肠内有害细菌产生的氨、胺、硫化氢、吲哚、酚、粪臭等有害腐败产物有很大关系。嗜酸乳杆菌代谢产生的乳酸抑制了这些腐败物,使机体衰老的过程变得缓慢。
长双歧杆菌可以治疗便秘,其主要用于功能性便秘这一症状。引起功能性便秘一般来说与肠道菌失调密切相关,多半互为因果。成其是肠道外籍菌(或过路菌)等腐败菌增加,其产生相应有毒代谢产物如胺、酚、吲哚类等物质,通过调整肠道正常菌群,恢复肠道平衡,使腐败菌数量大大减少,而其有毒代谢物质吸收减少,从而使便秘症状得以缓解。尤其补充长双歧杆菌等原籍菌,其产生乙酸和乳PH值为2.8-3.1,使肠道呈酸性,其结果能控制由有害菌引起的异常发酵,并且刺激肠蠕动,从而减少水分的过度吸收而缓解便秘症状,还可以复活机体免疫功能,有利于调整内分泌,恢复肠道蠕动功能从而改善便秘。
婴儿双歧杆菌在母乳喂养儿肠道内大量存在,对婴幼儿有许多好处,如营养、免疫及抗感染作用,并且还具有抗过敏、抗肿瘤、调节肠道功能及改善营养等作用。在临床上,婴儿双歧杆菌具有调节肠道功能紊乱的作用,可以预防和改善便秘等症状。婴儿双歧杆菌能够保护身体不受病原菌的感染,其能够制造出乙酸和乳酸,使肠道内的PH值偏向强酸性,因此可以抑制病原菌的繁殖,防止人体受到感染;其能够抑制肠内腐败的情况,蛋白质在肠内被有害菌分解时,会形成胺、氨、吲哚、硫酸氢等腐败物质,当这些物质被人体吸收时,会引起便秘,婴儿双歧杆菌能够抑制有害菌,从而引致肠内腐败的情况,以改善便秘。

抗性糊精由淀粉加工而成,是将焙烤糊精的难消化成分用工业技术提取处理并精炼而成的一种低热量葡聚糖,水溶液黏度很低,并且黏度值随着剪切速率和温度变化而引起的变化微小,抗性糊精具有热量低、耐热、耐酸、耐冷冻等特点。抗性糊精已于2008年年底由“公众营养改善微生态项目”确认为益生元产品,其目标是增加益生元制品在中国的使用,以改善肠道菌落失调。
菊粉是一种天然的水溶性膳食纤维,几乎不能被胃酸水解和消化,只有在结肠被有益微生物利用,从而改善肠道环境。菊粉可以减少食物在胃肠的停留时间,以及增加粪便量,有效地治疗便秘。同时还可以增强肠的蠕动功能,排出臭味气体,从而恢复肠的健康。同时菊粉还可以作为瑞士乳杆菌、嗜酸乳杆菌、长双歧杆菌、婴儿双歧杆菌等的增长因子,改善人体菌群分布,促进健康。
为了解决上述问题,本发明的第二目的是提供了一种改善便秘的益生菌凝胶糖果的制备方法,该方法操作简便、易于制造。
为了解决上述问题,本发明按以下技术方案予以实现的:
一种改善便秘的益生菌凝胶糖果的制备方法,包括以下步骤:
S1、配料:配备包含以下质量份的原料组分:100份益生菌冻干粉组合物、1-100份植物干燥粉或提取物、1-30份功能性低聚糖、1-10份乳糖、1-10份水溶性膳食纤维;所述益生菌冻干粉组合物包含罗伊氏乳杆菌冻干粉、嗜酸乳杆菌冻干粉、瑞士乳杆菌冻干粉、唾液乳杆菌冻干粉、植物乳杆菌冻干粉、鼠李糖乳杆菌冻干粉、干酪乳杆菌冻干粉中的至少一种,以及婴儿双歧杆菌冻干粉、短双歧杆菌冻干粉、长双歧杆菌冻干粉、乳双歧杆菌冻干粉中的至少一种;其中,所述益生菌冻干粉组合物至少包含所述嗜酸乳杆菌冻干粉和所述婴儿双歧杆菌冻干粉;
S2、混料:将步骤S1所得原料在温度小于50℃下搅拌30-60min,得到混合原料;
S3、将步骤S2所得混合原料溶于植物油中,得到混合液;
S4、将步骤S3所得混合液于明胶中凝结成型,得到益生菌凝胶糖果。
进一步的,在步骤S4中,每500mg所述混合液添加260-300mg所述明胶,即得到每粒质量为760-800mg的益生菌凝胶糖果。
进一步的,每粒所述益生菌凝胶糖果含活菌数为5-50×1010CFU。
与现有技术相比,本发明的有益效果是:
(1)本发明提供的一种改善便秘的益生菌凝胶糖果,其包含以下质量份的原料组分:100份益生菌冻干粉组合物、1-100份植物干燥粉或提取物、1-30份功能性低聚糖、1-10份乳糖、1-10份水溶性膳食纤维;其中,益生菌冻干粉组合物至少包含嗜酸乳杆菌冻干粉和婴儿双歧杆菌冻干粉。该改善便秘的益生菌凝胶糖果安全无毒副作用,不仅携带方便,能够更便捷、更容易地服用,而且各原料配合科学,通过长期服用,能够改变肠道微生物的组成,平衡肠道菌群,改善肠道健康,从而达到长期改善便秘的目的。
(2)本发明所述的改善便秘的益生菌凝胶糖果,每次服用3-6粒,服用10-60天,可以有效地改善便秘症状。
(3)本发明提供的一种改善便秘的益生菌凝胶糖果的制备方法,操作简便、易于制造,所制备的每粒益生菌凝胶糖果含活菌数为5-50×1010CFU。

具体实施方式
以下结合附图对本发明的优选实施例进行说明,应当理解,此处所描述的优选实施例仅用于说明和解释本发明,并不用于限定本发明。
本发明公开了一种改善便秘的益生菌凝胶糖果,包含以下质量份的原料组分:100份益生菌冻干粉组合物、1-100份植物干燥粉或提取物、1-30份功能性低聚糖、1-10份乳糖、1-10份水溶性膳食纤维;益生菌冻干粉组合物包含罗伊氏乳杆菌冻干粉、嗜酸乳杆菌冻干粉、瑞士乳杆菌冻干粉、唾液乳杆菌冻干粉、植物乳杆菌冻干粉、鼠李糖乳杆菌冻干粉、干酪乳杆菌冻干粉中的至少一种,以及婴儿双歧杆菌冻干粉、短双歧杆菌冻干粉、长双歧杆菌冻干粉、乳双歧杆菌冻干粉中的至少一种;其中,益生菌冻干粉组合物至少包含嗜酸乳杆菌冻干粉和婴儿双歧杆菌冻干粉。所制得的每粒益生菌凝胶糖果的质量为760-800mg。
各种试验仪器与试剂均为市售商品,均为可通过商业途径购买获得。
实施例1
一种改善便秘的益生菌凝胶糖果,包含以下质量的原料组分:
如图1所示,本实施例还公开了一种改善便秘的益生菌凝胶糖果的制备方法,包括以下步骤:
S1、配料:配备包含以下质量的原料组分:56.82mg瑞士乳杆菌冻干粉、85.23mg嗜酸乳杆菌冻干粉、56.82mg长双歧杆菌冻干粉、85.23mg婴儿双歧杆菌冻干粉、142.1mg橙皮粉、14.2mg水苏糖、14.2mg低聚半乳糖、14.2mg低聚果糖、14.2mg乳糖、8.5mg抗性糊精、8.5mg菊粉;
S2、混料:将步骤S1所得原料在温度小于50℃下搅拌30min,得到混合原料;温度高于50℃会破坏菌的活性,搅拌时间低于30min会导致搅拌不够均匀;
S3、将步骤S2所得混合原料溶于植物油中,得到混合液;
S4、将步骤S3所得混合液于明胶中凝结成型,得到益生菌凝胶糖果;其中,每500mg混合液添加260-300mg明胶,即得到每粒质量为760-800mg的益生菌凝胶糖果;每粒益生菌凝胶糖果含活菌数为2×1011CFU。
实施例2
一种改善便秘的益生菌凝胶糖果,包含以下质量的原料组分:
其制备过程同实施例1,每粒益生菌凝胶糖果的质量为760-800mg,含活菌数为2×1011CFU。

2、微生物的限量检测:

3、改善便秘效果的试验:
选取120名具有长期便秘的人,男女各60人,进行测评,排除妊娠与哺乳期的妇女,排除有其它严重疾病者,受试者知情并签署知情同意书。
测试方式:将120名受试者随机分成6组,每组20名,分别试用实施例1-5制得的改善便秘的益生菌凝胶糖果辅助治疗,以及1组使用市面上的益生菌产品辅助治疗的对照例。服用方法:每天服用6粒,持续2个月。
测试指标:收集受试者测试之前的便秘情况,记录改善便秘情况的受试者人数,得到的结果如表3所示。

由表3可以看出,长期便秘受试者服用实施例1-5的改善便秘的益生菌凝胶糖果后,通过益生菌的调节,便秘情况均得到有效改善,随着服用周期的延长,便秘情况改善者占受试者比例均逐渐增加,而对照例的只有少量的增长,说明实施例1-5制备的改善便秘的益生菌凝胶糖果能有效改善便秘情况。
以上所述,仅是本发明的较佳实施例而已,并非对本发明作任何形式上的限制,故凡是未脱离本发明技术方案内容,依据本发明的技术实质对以上实施例所作的任何修改、等同变化与修饰,均仍属于本发明技术方案的范围内。
Claims (10)
1.一种改善便秘的益生菌凝胶糖果,其特征在于,包含以下质量份的原料组分:
100份益生菌冻干粉组合物、1-100份植物干燥粉或提取物、1-30份功能性低聚糖、1-10份乳糖、1-10份水溶性膳食纤维;
所述益生菌冻干粉组合物包含罗伊氏乳杆菌冻干粉、嗜酸乳杆菌冻干粉、瑞士乳杆菌冻干粉、唾液乳杆菌冻干粉、植物乳杆菌冻干粉、鼠李糖乳杆菌冻干粉、干酪乳杆菌冻干粉中的至少一种,以及婴儿双歧杆菌冻干粉、短双歧杆菌冻干粉、长双歧杆菌冻干粉、乳双歧杆菌冻干粉中的至少一种;其中,所述益生菌冻干粉组合物至少包含所述嗜酸乳杆菌冻干粉和所述婴儿双歧杆菌冻干粉。
2.根据权利要求1所述的改善便秘的益生菌凝胶糖果,其特征在于:所述益生菌冻干粉组合物包含所述瑞士乳杆菌冻干粉、所述嗜酸乳杆菌冻干粉、所述长双歧杆菌冻干粉、所述婴儿双歧杆菌冻干粉;其中,所述瑞士乳杆菌冻干粉、所述嗜酸乳杆菌冻干粉、所述长双歧杆菌冻干粉、所述婴儿双歧杆菌冻干粉的质量份数比值为:(1-5):(1-5):(1-5):(1-5)。
3.根据权利要求2所述的改善便秘的益生菌凝胶糖果,其特征在于:所述瑞士乳杆菌冻干粉、所述嗜酸乳杆菌冻干粉、所述长双歧杆菌冻干粉、所述婴儿双歧杆菌冻干粉的质量份数比值为:2:3:2:3。
4.根据权利要求1所述的改善便秘的益生菌凝胶糖果,其特征在于,包含以下质量份的原料组分:
100份益生菌冻干粉组合物、50份植物干燥粉或提取物、15份功能性低聚糖、5份乳糖、6份水溶性膳食纤维。
5.根据权利要求1所述的改善便秘的益生菌凝胶糖果,其特征在于:所述植物干燥粉包含橙皮粉。
6.根据权利要求1所述的改善便秘的益生菌凝胶糖果,其特征在于:所述功能性低聚糖包含低聚半乳糖、低聚果糖、水苏糖中的至少一种。
7.根据权利要求1所述的改善便秘的益生菌凝胶糖果,其特征在于:所述水溶性膳食纤维包含抗性糊精、菊粉中的至少一种。
8.一种根据权利要求1~7任一项所述的改善便秘的益生菌凝胶糖果的制备方法,其特征在于,包括以下步骤:
S1、配料:配备包含以下质量份的原料组分:100份益生菌冻干粉组合物、1-100份植物干燥粉或提取物、1-30份功能性低聚糖、1-10份乳糖、1-10份水溶性膳食纤维;所述益生菌冻干粉组合物包含罗伊氏乳杆菌冻干粉、嗜酸乳杆菌冻干粉、瑞士乳杆菌冻干粉、唾液乳杆菌冻干粉、植物乳杆菌冻干粉、鼠李糖乳杆菌冻干粉、干酪乳杆菌冻干粉中的至少一种,以及婴儿双歧杆菌冻干粉、短双歧杆菌冻干粉、长双歧杆菌冻干粉、乳双歧杆菌冻干粉中的至少一种;其中,所述益生菌冻干粉组合物至少包含所述嗜酸乳杆菌冻干粉和所述婴儿双歧杆菌冻干粉;
S2、混料:将步骤S1所得原料在温度小于50℃下搅拌30-60min,得到混合原料;
S3、将步骤S2所得混合原料溶于植物油中,得到混合液;
S4、将步骤S3所得混合液于明胶中凝结成型,得到益生菌凝胶糖果。
9.根据权利要求8所述的改善便秘的益生菌凝胶糖果的制备方法,其特征在于:在步骤S4中,每500mg所述混合液添加260-300mg所述明胶,即得到每粒质量为760-800mg的益生菌凝胶糖果。
10.根据权利要求9所述的改善便秘的益生菌凝胶糖果的制备方法,其特征在于:每粒所述益生菌凝胶糖果含活菌数为5-50×1010CFU。
