技术领域
本发明属于食品科学技术领域,具体涉及一种止腹泻的益生菌凝胶糖果及其制备方法。
背景技术
腹泻是一种常见症状,俗称“拉肚子”,是指排便次数明显超过平日习惯的频率,粪质稀薄,水分增加,每日排便量超过200g,或含未消化食物或脓血、黏液。腹泻常伴有排便急迫感、肛门不适、失禁等症状。正常人每日大约有9L液体进入胃肠道,通过肠道对水分的吸收,最终粪便中水分约100-200ml。若进入结肠的液体量超过结肠的吸收能力或(和)结肠的吸收容量减少,就会导致粪便中水分排出量增加,便产生腹泻,依严重程度不同,可分为急性及慢性腹泻。
腹泻的发生,主要是致病菌感染后造成了肠道菌群失衡,从而导致肠道吸收功能紊乱,保水性降低。通过服用益生菌及具有肠道微生物调节功能的植物提取物组合,尤其是可以产生细菌素、以及抗菌物质的益生菌,能够很好地抑制肠道有害菌。通过调节肠道中有益菌的平衡,改善肠道免疫系统,从而提高免疫系统能力,以有效缓解腹泻症状。
目前,还没有出现一种止腹泻的益生菌产品,使人们更便捷、更容易地接受,以有效补充能够抑制肠道有害菌、及调节肠道微生态协同的有益菌。
发明内容
为了克服上述技术缺陷,本发明的第一目的是提供了一种止腹泻的益生菌凝胶糖果,服用方便,通过长期服用,能够改变肠道微生物的组成,平衡肠道菌群,改善肠道健康,从而达到预防和治疗腹泻的作用。
为了解决上述问题,本发明按以下技术方案予以实现的:
一种止腹泻的益生菌凝胶糖果,包含以下质量份的原料组分:
100份益生菌冻干粉组合物、1-100份植物干燥粉或提取物、1-30份功能性低聚糖、1-10份乳糖、1-10份水溶性膳食纤维;
所述益生菌冻干粉组合物包含鼠李糖乳杆菌冻干粉、罗伊氏乳杆菌冻干粉、瑞士乳杆菌冻干粉、唾液乳杆菌冻干粉、植物乳杆菌冻干粉、嗜酸乳杆菌冻干粉、干酪乳杆菌冻干粉中的至少一种,以及长双歧杆菌冻干粉、青春双歧杆菌冻干粉、乳双歧杆菌冻干粉中的至少一种;其中,所述益生菌冻干粉组合物至少包含所述植物乳杆菌冻干粉和所述乳双歧杆菌冻干粉。
鼠李糖乳杆菌、罗伊氏乳杆菌、瑞士乳杆菌、唾液乳杆菌、植物乳杆菌、嗜酸乳杆菌、干酪乳杆菌、长双歧杆菌、青春双歧杆菌、乳双歧杆菌是一种常用于酸奶、发酵乳制品及膳食补充剂的益生菌,被列入卫生部公布的《可用于食品的菌种名单》(卫办监督发[2010]65号),可保持肠道的菌群平衡。长双歧杆菌和干酪乳杆菌在发酵过程中可产生胞外多糖,作为一种大分子聚合物,胞外多糖具有一定的粘性和持水性,胞外多糖也是一种有效免疫因子,具有显著调节免疫力的作用。补充多样性的双歧杆菌组合,提高肠道双歧杆菌种类和丰度,对于过敏具有显著调节作用。很多乳杆菌菌株能够产生多种细菌素,对于肠道致病菌有特定性抑制作用,补充具有较强细菌素产生能力的益生菌,能够有效缓解腹泻症状。

鼠李糖乳杆菌属于乳杆菌属,是人体正常菌群之一,具有下下显著功能:1)平衡肠道菌群,改善胃肠道功能。益生菌只有黏附于宿主的肠上皮细胞,进而定植、繁殖,才能发挥其维护微生态群落结构及功能平衡,保护生物屏障作用,鼠李糖乳杆菌可以耐胆酸和暂时有效黏附于肠道中;2)增强肠道黏膜屏障。研究表明鼠李糖乳杆菌对于腺病毒引起的腹泻具有明显预防效果;3)预防和治疗腹泻。研究表明即使是在宿主患急性胃炎期间,鼠李糖乳杆菌仍能促进肠道菌落的平衡;4)提高机体免疫力。通过鼠李糖乳杆菌等乳酸菌与血液中细胞因子的反应,能够抑制食物中革兰氏阴性致病菌引起的免疫功能失调,起到预防和治疗结肠炎的作用;5)结合并排除毒素;6)减少受感染的几率;7)减少食物过敏的产生,加速过敏后的恢复过程;8)预防龋齿。此外,鼠李糖乳杆菌还具有一些自身优势:如耐胃酸、耐胆汁、可定植于人体肠道、最终产品保质期内活菌数保持恒定等。
植物乳杆菌是乳酸菌的一种,植物乳杆菌通过产生有机酸、细菌素、过氧化氢和双乙酰等多种抑菌物质,具有促进营养物质吸收等多种功能,能改善调节肠道微生物菌群的平衡,增加机体的免疫力。加入植物乳杆菌主要有以下几点作用:1)植物乳杆菌通过与病原菌对营养素的竞争,一直病原菌,调节肠道微生态平衡,形成生物学屏障。同时,其代谢产物乳酸和细菌素具有抑制其它有害菌在肠道内增殖的作用,维持和保证菌群最佳优势组合及这种组合的稳定,阻止了致病菌的定植和入侵,抑制致病菌和有害微生物的生长及其毒素的黏附;2)植物乳杆菌对革兰氏阳性和革兰氏阴性致病菌均有抑制作用,植物乳杆菌能够抑制大肠杆菌和沙门氏菌对Caco-2细胞的黏附,从而阻止其在肠道内的定植;3)植物乳杆菌具有良好的肠道黏附特性。植物乳杆菌与致病菌对甘露糖特异性受体的竞争,减少了致病菌对人体细胞的黏附,从而保护宿主免于感染;4)植物乳杆菌具有降低血清胆固醇水平。
干酪乳杆菌属于乳杆菌属,是革兰氏阳性菌,具有良好的耐酸及胆汁抗性,可降低血浆胆固醇,增强宿主对微生物病原体的非特异性抵抗力,加快清除肠道内病原体,治疗肠道菌群紊乱和增强肠道透性,从而防止食物过敏和急性腹泻。此外,干酪乳杆菌还可使抗低密度氧化脂抗体和淋巴细胞增加,使粒细胞的噬菌作用明显增强,对宿主进行免疫调节,防止肿瘤的产生。由于能够在人体肠道内稳定存活并具有众多的医疗保健功能,干酪乳杆菌作为益生菌被广泛应用于功能性食品。
青春双歧杆菌是一种益生菌,可治疗慢性腹泻,还有抗衰老等作用。通过用青春双歧杆菌和慢性腹泻患者临床观察研究表明,在服药两周后,患者大便次数、形状正常,临床症状消失。青春双歧杆菌能够扶植肠道中的原籍菌,使机体定植抗力升高,有利于拮抗致病菌和条件致病菌的定植。
乳双歧杆菌具有对胃酸和胆汁的耐受性,通过胃肠道可以存活,并能维持健康的胃肠道菌群。乳双歧杆菌具备瞬时定植在肠道黏膜表面、固定在这些位置的能力,并从而增加了发挥其有益健康功效的可能性。研究已经表明乳双歧杆菌能够改善肠道功能,能够通过产生抗菌物质以及黏膜粘附的竞争来抑制重要的胃肠道病原体,防止腹泻,并能够减少抗生素的副作用,例如抗生素相关性腹泻。在免疫功能方面,乳双歧杆菌能够与免疫细胞相互作用,提高机体对常见呼吸道感染的抵抗力,同时降低急性呼吸道感染的发病率。

功能性低聚糖在人体肠道内没有水解它们的酶系统,因而它们不被消化系统吸收而直接进入大肠内优先为双歧杆菌所利用,是双歧杆菌的增殖因子,具有改善肠道菌落结构等生理作用。
进一步的,所述水溶性膳食纤维包含抗性糊精、菊粉中的至少一种。
抗性糊精由淀粉加工而成,是将焙烤糊精的难消化成分用工业技术提取处理并精炼而成的一种低热量葡聚糖,水溶液黏度很低,并且黏度值随着剪切速率和温度变化而引起的变化微小,抗性糊精具有热量低、耐热、耐酸、耐冷冻等特点。抗性糊精已于2008年年底由“公众营养改善微生态项目”确认为益生元产品,其目标是增加益生元制品在中国的使用,以改善肠道菌落失调。
菊粉是一种天然的水溶性膳食纤维,几乎不能被胃酸水解和消化,只有在结肠被有益微生物利用,从而改善肠道环境。菊粉可以减少食物在胃肠的停留时间,以及增加粪便量,有效地治疗便秘。同时还可以增强肠的蠕动功能,排出臭味气体,从而恢复肠的健康。同时菊粉还可以作为鼠李糖乳杆菌、植物乳杆菌、干酪乳杆菌、青春双歧杆菌、乳双歧杆菌等的增长因子,改善人体菌群分布,促进健康。
为了解决上述问题,本发明的第二目的是提供了一种止腹泻的益生菌凝胶糖果的制备方法,该方法操作简便、易于制造。

S1、配料:配备包含以下质量份的原料组分:100份益生菌冻干粉组合物、1-100份植物干燥粉或提取物、1-30份功能性低聚糖、1-10份乳糖、1-10份水溶性膳食纤维;所述益生菌冻干粉组合物包含鼠李糖乳杆菌冻干粉、罗伊氏乳杆菌冻干粉、瑞士乳杆菌冻干粉、唾液乳杆菌冻干粉、植物乳杆菌冻干粉、嗜酸乳杆菌冻干粉、干酪乳杆菌冻干粉中的至少一种,以及长双歧杆菌冻干粉、青春双歧杆菌冻干粉、乳双歧杆菌冻干粉中的至少一种;其中,所述益生菌冻干粉组合物至少包含所述植物乳杆菌冻干粉和所述乳双歧杆菌冻干粉;
S2、混料:将步骤S1所得原料在温度小于50℃下搅拌30-60min,得到混合原料;
S3、将步骤S2所得混合原料溶于植物油中,得到混合液;
S4、将步骤S3所得混合液于明胶中凝结成型,得到益生菌凝胶糖果。
进一步的,在步骤S4中,每500mg所述混合液添加260-300mg所述明胶,即得到每粒质量为760-800mg的益生菌凝胶糖果。
进一步的,每粒所述益生菌凝胶糖果含活菌数为5-50×1010CFU。
与现有技术相比,本发明的有益效果是:

(2)本发明所述的止腹泻的益生菌凝胶糖果,每次服用3-6粒,服用10-60天,可以有效地改善腹泻症状。
(3)本发明提供的一种止腹泻的益生菌凝胶糖果的制备方法,操作简便、易于制造,所制备的每粒益生菌凝胶糖果含活菌数为5-50×1010CFU。

S2、混料:将步骤S1所得原料在温度小于50℃下搅拌30min,得到混合原料;温度高于50℃会破坏菌的活性,搅拌时间低于30min会导致搅拌不够均匀;
S3、将步骤S2所得混合原料溶于植物油中,得到混合液;

效果试验例
1、感官评价:
表1感官评定结果
注:感官评价为10人小组评定结果。
2、微生物的限量检测:

注:其它理化指标均达到产品质量要求。
3、止腹泻效果的试验:
选取120名具有腹泻的人,男女各60人,进行测评,排除妊娠与哺乳期的妇女,排除有其它严重疾病者,受试者知情并签署知情同意书。
测试方式:将120名受试者随机分成6组,每组20名,分别试用实施例1-5制得的止腹泻的益生菌凝胶糖果辅助治疗,以及1组使用市面上的益生菌产品辅助治疗的对照例。服用方法:每天服用6粒,持续2个月。
测试指标:收集受试者测试之前的腹泻频率,记录改善腹泻情况的受试者人数,得到的结果如表3所示。

由表3可以看出,腹泻受试者服用实施例1-5的止腹泻的益生菌凝胶糖果后,通过益生菌的调节,腹泻情况均得到有效改善,随着服用周期的延长,腹泻情况改善者占受试者比例均逐渐增加,而对照例的只有少量的增长,说明实施例1-5制备的止腹泻的益生菌凝胶糖果能有效改善腹泻情况。
以上所述,仅是本发明的较佳实施例而已,并非对本发明作任何形式上的限制,故凡是未脱离本发明技术方案内容,依据本发明的技术实质对以上实施例所作的任何修改、等同变化与修饰,均仍属于本发明技术方案的范围内。
Claims (10)
1.一种止腹泻的益生菌凝胶糖果,其特征在于,包含以下质量份的原料组分:
100份益生菌冻干粉组合物、1-100份植物干燥粉或提取物、1-30份功能性低聚糖、1-10份乳糖、1-10份水溶性膳食纤维;
所述益生菌冻干粉组合物包含鼠李糖乳杆菌冻干粉、罗伊氏乳杆菌冻干粉、瑞士乳杆菌冻干粉、唾液乳杆菌冻干粉、植物乳杆菌冻干粉、嗜酸乳杆菌冻干粉、干酪乳杆菌冻干粉中的至少一种,以及长双歧杆菌冻干粉、青春双歧杆菌冻干粉、乳双歧杆菌冻干粉中的至少一种;其中,所述益生菌冻干粉组合物至少包含所述植物乳杆菌冻干粉和所述乳双歧杆菌冻干粉。
2.根据权利要求1所述的止腹泻的益生菌凝胶糖果,其特征在于:所述益生菌冻干粉组合物包含所述鼠李糖乳杆菌冻干粉、所述植物乳杆菌冻干粉、所述干酪乳杆菌冻干粉、所述青春双歧杆菌冻干粉、所述乳双歧杆菌冻干粉;其中,所述鼠李糖乳杆菌冻干粉、所述植物乳杆菌冻干粉、所述干酪乳杆菌冻干粉、所述青春双歧杆菌冻干粉、所述乳双歧杆菌冻干粉的质量份数比值为:(1-5):(1-5):(1-5):(1-5):(1-5)。
3.根据权利要求2所述的止腹泻的益生菌凝胶糖果,其特征在于:所述鼠李糖乳杆菌冻干粉、所述植物乳杆菌冻干粉、所述干酪乳杆菌冻干粉、所述青春双歧杆菌冻干粉、所述乳双歧杆菌冻干粉的质量份数比值为:1:3:2:1:3。
4.根据权利要求1所述的止腹泻的益生菌凝胶糖果,其特征在于,包含以下质量份的原料组分:
100份益生菌冻干粉组合物、50份植物干燥粉或提取物、15份功能性低聚糖、5份乳糖、8份水溶性膳食纤维。
5.根据权利要求1所述的止腹泻的益生菌凝胶糖果,其特征在于:所述植物干燥粉包含橙皮粉。
6.根据权利要求1所述的止腹泻的益生菌凝胶糖果,其特征在于:所述功能性低聚糖包含低聚半乳糖、低聚果糖、水苏糖中的至少一种。
7.根据权利要求1所述的止腹泻的益生菌凝胶糖果,其特征在于:所述水溶性膳食纤维包含抗性糊精、菊粉中的至少一种。
8.一种根据权利要求1~7任一项所述的止腹泻的益生菌凝胶糖果的制备方法,其特征在于,包括以下步骤:
S1、配料:配备包含以下质量份的原料组分:100份益生菌冻干粉组合物、1-100份植物干燥粉或提取物、1-30份功能性低聚糖、1-10份乳糖、1-10份水溶性膳食纤维;所述益生菌冻干粉组合物包含鼠李糖乳杆菌冻干粉、罗伊氏乳杆菌冻干粉、瑞士乳杆菌冻干粉、唾液乳杆菌冻干粉、植物乳杆菌冻干粉、嗜酸乳杆菌冻干粉、干酪乳杆菌冻干粉中的至少一种,以及长双歧杆菌冻干粉、青春双歧杆菌冻干粉、乳双歧杆菌冻干粉中的至少一种;其中,所述益生菌冻干粉组合物至少包含所述植物乳杆菌冻干粉和所述乳双歧杆菌冻干粉;
S2、混料:将步骤S1所得原料在温度小于50℃下搅拌30-60min,得到混合原料;
S3、将步骤S2所得混合原料溶于植物油中,得到混合液;
S4、将步骤S3所得混合液于明胶中凝结成型,得到益生菌凝胶糖果。
9.根据权利要求8所述的止腹泻的益生菌凝胶糖果的制备方法,其特征在于:在步骤S4中,每500mg所述混合液添加260-300mg所述明胶,即得到每粒质量为760-800mg的益生菌凝胶糖果。
10.根据权利要求9所述的止腹泻的益生菌凝胶糖果的制备方法,其特征在于:每粒所述益生菌凝胶糖果含活菌数为5-50×1010CFU。
