Abstract
本发明公开了一种鹿肉药膳点心,其特征在于,由以下的原料制成:鹿肉500‑1000g,竹实30‑60g,大枫子8‑24g,黄芪20‑40g,牛膝1‑10g,天麻10‑30g,鬼针草10‑40g,白藜10‑30g,丹皮15‑25g,八仙草9‑18g,旱半夏5‑20g,蜈蚣1‑6条,葛根9‑18g,余量为面皮。可缓解湿热症、改善皮表炎症、抗癌又稳压降压。

技术领域
本发明涉及一种功能性保健食品,具体的说是一种鹿肉药膳点心。
背景技术
鹿肉是人们公认的营养丰富,并且具有保健作用的食物。据《现代本草纲目》记载,鹿肉补五脏,调血脉,主治虚劳羸瘦,产后无乳,鹿肉能壮元阳、补气血、益精髓、强筋骨,鹿肉低脂肪、高蛋白,含人体所需要的多种氨基酸,是食物中的佳品。 中药对于调理身体有着很好的效果,中药相对西药毒副作用小,适合长期使用。对于需要长期治疗的疾病,中药有着西药不可比拟的优势。在中医学、烹饪学和营养学理论指导下,严格按照药膳配方,将中药与某些具有药用价值的食物相配伍,采用我国独特的饮食烹调技术和现代科学方法制作而成美味食品。由于药膳的使用需要因证用膳、因时而异、因人用膳、因地而异。药膳中材料的配伍也有很多禁忌,这给需要通过药膳调理的人群造成了很大的困难,鹿肉是人们喜食的一种日常肉类, 蛋白质含量高 ,而脂肪含量低,味道鲜美,但还没有一种可缓解湿热症、改善皮表炎症、抗癌又稳压降压的鹿肉点心。
发明内容
为了解决上述技术问题,本发明的目的在于提供一种制作方便、符合人们饮食习惯、成本低廉、无副作用的可缓解湿热症、改善皮表炎症、抗癌又稳压降压的鹿肉点心。
本发明采用的技术方案如下: 一种鹿肉药膳点心由以下的原料制成:鹿肉500-1000g,竹实30-60g,大枫子8-24g,黄芪20-40g,牛膝1-10g,天麻10-30g,鬼针草10-40g,白藜10-30g,丹皮15-25g,八仙草9-18g,旱半夏5-20g,蜈蚣1-6条,葛根9-18g,余量为面皮。
制备方法:(1)将鹿肉,竹实,大枫子,黄芪,牛膝,天麻,鬼针草,白藜,丹皮,八仙草,旱半夏,蜈蚣,葛根用5-10倍量的水加热,煮沸30-50min,冷却肉汤备用;
(2)将步骤1的鹿肉捞出并切碎末, 掺入步骤1的适量肉汤搅打成肉泥;
(3)将适量比例的步骤2制得的肉泥放入面皮中,将面皮收边,制成鹿肉点心即可。
其中各配伍原料的作用阐述如下:
竹实,别名竹米(《本草别说》),为禾本科竹类植物的颖果,性味归经,甘,平,涩入脾、胃经。主治:益气;下积。
大枫子:为大枫子科植物大枫子的成熟种子。性味与归经:辛,热,有毒。入肺,肝经,有祛风燥湿,攻毒杀虫的功效。主治麻风,外治梅疮,疥癣,手背皲裂等症。
黄芪,又名绵芪,其有增强机体免疫功能、保肝、利尿、抗衰老、抗应激、降压和较广泛的抗菌作用。有抗癌的作用,能提高免疫功能,抗疲劳,扩张血管,改善皮肤血液循环,降低血压。
牛膝,性味:苦、甘、酸,平。治疗虚火牙痛,脚气水肿;熟用,补肝肾,强腰膝;治腰膝酸痛,肝肾亏虚,跌打瘀痛。归经:归肝、肾经。功效:逐瘀通经,补肝肾,强筋骨,利尿通淋,引血下行。
天麻,性味:甘,平,无毒。气平,味苦。入脾、肾、肝、胆、心经。功效:息风,定惊。治眩晕眼黑,头风头痛,肢体麻木,半身不遂,语言蹇涩,小儿惊痫动风,消痈肿,下支满,疝,下血。有稳压降压作用,利腰膝,强筋力。
鬼针草,性温,味苦,无毒,全草均可入药,具有清热、解毒、散瘀、消肿等功效,近年发现,该药对血压具有良好的双相调节作用,高血压病人可使血压降低,血压偏低者用药后可使血压升至正常。性味:味甘、淡、苦,性微寒。归经:肝、肺、大肠经。
白藜,全草可入药,性凉味甘、平、有小毒,具有祛湿、解毒的功效,治疗疮疡、肿毒、疥癣、风瘙等症,有降压、稳压作用,对中老年缺钙者也有一定保健功能。
丹皮:味苦、辛,性微寒。归心、肝、肾经。有清热凉血,活血化瘀的功效,用于温毒发斑.吐血衄血,夜热早凉,无汗骨蒸,经闭痛经,痈肿疮毒,跌扑伤痛。
八仙草:又名锯子草、拉拉藤、飞扬藤,味茜草科拉拉藤属植物猪殃殃或粗叶拉拉藤的全草。药性:全草纤细,易破碎,表面灰绿或绿褐色,气微,味辛、味苦,性微寒。成分:含生物碱,果实含大麦芽胺,加利果酸等;粗叶拉拉藤地上部分含车叶草苷,维生素C。根据现代药理研究发现,该药具有抑菌、抗癌、清热解毒、利尿通淋、消肿止痛的功效,用于痈疽肿毒,阑尾炎,感冒发热,尿血等。
旱半夏,别名老鸹眼、水玉、地文、三步跳、麻玉果等,块茎入药,能燥湿化痰,降逆止呕,生用消疖肿;主治咳嗽痰多、恶心呕吐;外用治急性乳腺炎、急慢性化脓性中耳炎。
蜈蚣,具有祛风,定惊,攻毒,散结之效。治中风,惊痫,破伤风,百日咳,瘰疬,结核,癥积瘤块,疮疡肿毒,风癣,白秃,痔漏,烫伤。
葛根,归经:脾经;胃经。性味:甘;辛;凉。功效:解肌退热;发表透诊;生津止渴;升阳止泻,调和药性。主治外感发热、头项强痛、麻疹初起、疹出不畅、温病口渴、消渴、泄泻、痢疾、高血压、冠心病。
本发明的优点和效果在于:
1、防治兼宜,效果显著
既可治病,又可强身防病,这是有别于药物治疗的特点之一。鹿肉点心多是平和之品,但其防冶疾病和健身养生的效果却是比较显著的。中老年慢性疾病患者用后不仅能显著改善各种症状,而且可使高脂血症者血脂下降,并可使免疫功能得到改善。
2、良药可口,服食方便
由于中药汤剂多有苦味,故民间有“良药苦口”之说。有些人,特别是儿童多畏其苦而拒绝服药。而药膳使用的多为药、食两用之品,且有食品的色、香、 味等特性;即使加入了部分药材,由于注意了药物性味的选择,并通过与食物 的调配及精细的烹调,仍可制成美味可口的药膳,故谓“良药可口,服食方便”。
此鹿肉点心饮用后可缓解湿热症、改善皮表炎症、抗癌又稳压降压。 同时,本发明的制作方法采用各种成分直接入配方,保持原汁原味原药性,能够最大限度发挥各成分的有效作用,制备工艺简单,可适合于家庭应用,亦可适合工厂化大规模生产。
具体实施方式
以下结合实施例对本发明作进一步的说明。
实施例1
由以下的原料制成:鹿肉500g,竹实30g,大枫子8g,黄芪20g,牛膝1g,天麻10g,鬼针草10g,白藜10g,丹皮15g,八仙草9g,旱半夏5g,蜈蚣1条,葛根9g,余量为面皮。
实施例2
由以下的原料制成:鹿肉1000g,竹实60g,大枫子24g,黄芪40g,牛膝10g,天麻30g,鬼针草40g,白藜30g,丹皮25g,八仙草18g,旱半夏20g,蜈蚣6条,葛根18g,余量为面皮。
实施例3
由以下的原料制成:鹿肉600g,竹实40g,大枫子10g,黄芪25g,牛膝3g,天麻15g,鬼针草15g,白藜15g,丹皮18g,八仙草10g,旱半夏10g,蜈蚣2条,葛根12g,余量为面皮。
实施例4
由以下的原料制成:鹿肉900g,竹实50g,大枫子15g,黄芪35g,牛膝8g,天麻25g,鬼针草30g,白藜25g,丹皮23g,八仙草15g,旱半夏15g,蜈蚣5条,葛根16g,余量为面皮。
实施例5
由以下的原料制成:鹿肉750g,竹实42.8,大枫子12.5g,黄芪29.6g,牛膝4.8g,天麻20.5g,鬼针草23.6g,白藜19.8g,丹皮19.4g,八仙草12.6g,旱半夏12.4g,蜈蚣3条,葛根13.8g,余量为面皮。
包括如下步骤:
(1)将鹿肉,竹实,大枫子,黄芪,牛膝,天麻,鬼针草,白藜,丹皮,八仙草,旱半夏,蜈蚣,葛根用5-10倍量的水加热,煮沸30-50min,冷却肉汤备用;
(2)将步骤1的鹿肉捞出并切碎末, 掺入步骤1的适量肉汤搅打成肉泥;
(3)将适量比例的步骤2制得的肉泥放入面皮中,将面皮收边,制成鹿肉点心即可。
上述实施例中,均可加入适量配料,配料包括幼砂糖、盐、味精、食醋、鸡粉中的一种或一种以上。
将患有肘部皮炎并有高血压的35-60岁的顾客分为5组(每组10人),分别使用实施例1-5的组方制备成的点心,每天食用一次,食用7至20天治愈皮炎,且血压恢复正常。顾客反映口感好,食用后精神状态好,上述5种实施例均对肘部皮炎病症起到缓解作用。
对实施例1-5所得进行口味评分实验,经过5组(每组10人)感官评价,有42人表示与普通点心相比更喜欢实施例点心的味道,有3人表示不喜欢实施例点心的味道,其余5人评价实施例点心的味道与普通点心相差不大,可见,本实施例因具有独特的风味,大部分人表示喜欢,接受程度良好。

1.一种鹿肉药膳点心,其特征在于,由以下的原料制成:鹿肉500-1000g,竹实30-60g,大枫子8-24g,黄芪20-40g,牛膝1-10g,天麻10-30g,鬼针草10-40g,白藜10-30g,丹皮15-25g,八仙草9-18g,旱半夏5-20g,蜈蚣1-6条,葛根9-18g, 余量为面皮。
