技术背景
青橄榄,俗称“青果”因果实尚呈青绿色时即可供鲜食而得名。
青橄榄呈实纺锤形,两端钝尖,长2.5~4cm,直径1~1.5cm。表面棕黄色或黑褐色,有不规则皱纹。果肉灰棕色或棕褐色,质硬。果核梭形,暗红棕色,具纵棱;内分3室,各有种子1粒。果肉味涩,久嚼微甜。
青橄榄含蛋白质、脂肪、碳水化合物、膳食纤维、胡萝卜素、视黄醇当量、维生素B1、维生素B2、尼克酸、维生素C、钙、铁、磷、镁、锌、硒等成分。
青橄榄其味甘涩酸,性平,具有清热解毒,利咽化痰,生津止渴,开胃降气,除烦醒酒之功效,适应于治咽喉肿痛,咳嗽吐血,菌痢,癫痫,暑热烦渴,肠炎腹泻等病症。所以,不论是咳嗽、咽喉肿痛、肠绞痢疾、中暑呕泻,还是脘腹气胀,积食不化嚼食一粒青橄榄,立刻能祛疾开胃,五腑通泰。可解烦渴、鱼蟹中毒。对于无病的人,也能起到保健医疗作用。

发明内容
本发明是在借鉴现有对青橄榄食药兼有的多种成分及食用和药用特性观察认识基础上,加以全面改进提高。本发明以开发青橄榄饮料作为功能性饮品和普通饮品为目的,充分利用青橄榄资源,经加工后,生产出既保留青橄榄成分和特有的甘涩酸味又具有符合大众口味特色的新型青橄榄饮料。
本发明的技术方案
1.一种青橄榄饮料,其特征在于该饮料主要是含有二氧化碳的青橄榄饮料。
2.本发明所述一种青橄榄饮料的制备方法,其特征在于该饮料的制备包括:
(1)青橄榄液的制备:1)挑选优质青橄榄为原料;2)清洗后浸泡在酸性pH 3~4的温水中;3)经粗磨处理后再经胶体磨循环技术处理,磨成鲜青橄榄浆;4)将其稀释至含青橄榄(W/V)0.2%~1.0%的青橄榄液;
(2)加入饮料允许添加的调味剂;
(3)将二氧化碳充入以上制备的青橄榄液中。
本发明的具体实施方式
本发明涉及的是由青橄榄制备而成的含二氧化碳的(W/V)0.5%~2.0%青橄榄的饮料,是通过以下方法来实施的,为此,在其工艺过程中主要步骤为:
1.制备成青橄榄液,其青橄榄在饮料中的终含量(W/V)为0.5%~2.5%。
(1)选取优质的青橄榄;
(2)是在其工艺流程的浸泡阶段才采用在pH3~4、30~40℃的纯净水中浸泡20min;
(3)经粗磨处理后再经胶体磨循环处理3~4次后,细胞断裂破碎,胞壁开始解体液化溶解(视需要可在高压高温(50~60mpa、70~80℃)循环3~4次均质,促使胞壁碎片超细超微化,从而释放出胞壁内的各种组分,在均质完成时,必要时可以进行过滤,溶液中物质颗粒细度平均为超细程度10~20μm,甚至<1μm);
(4)对均质处理后的青橄榄原液,按生产过程中鲜青橄榄的实际使用量将其稀释至含青橄榄(W/V)0.5%~2.0%青橄榄液。
2.添加饮料制备允许添加的调味剂,优选为蜂蜜和/或冰糖。

本发明的积极意义
本发明涉及一种青橄榄饮料。青橄榄具有食药合璧的特点,青橄榄具有青橄榄含蛋白质、脂肪、碳水化合物、膳食纤维、胡萝卜素、视黄醇当量、维生素B1、维生素B2、尼克酸、维生素C、钙、铁、磷、镁、锌、硒等成分;其味甘涩酸,性平,具有清热解毒,利咽化痰,生津止渴,开胃降气,除烦醒酒之功效,适应于治咽喉肿痛,咳嗽吐血,菌痢,癫痫,暑热烦渴,肠炎腹泻等病症。除其药用价值外,青橄榄通过本发明的生产工艺的实施,制成一种具有保健功能的充气健康大众化饮品;发明提供的方法工艺简便,成本低廉,易于实施,适于产业化生产。
实施例
提供的实施例是为更好的说明本发明,不对本发明作出限制。
实施例1
1.刚收获或经过保鲜处理的新鲜青橄榄,如使用灭菌处理的鲜青橄榄作为原料,在以后的操作过程应按无菌操作要求进行。
2.按青橄榄∶纯净水=1∶9(W/V)计算并称取新鲜青橄榄。
3.在30~40℃pH 3~4的纯净水中浸泡30min。
4.经粗磨处理后再经胶体磨循环处理3~4次后,细胞断裂破碎,胞壁开始解体液化溶解(视需要可在高压高温(50~60mpa、70~80℃)循环3~4次均质,促使胞壁碎片超细超微化,从而释放出胞壁内的各种组分,在均质完成时,必要时可以进行过滤,溶液中物质颗粒细度平均为超细程度10~20μm,甚至<1μm);
5.对均质处理后的青橄榄原液,入调配罐(调配:加适量蜂蜜,视需而定,另加入质量百分比为0.5%~1.0%的玉米抗氧化肽,并定容,按饮料最终含鲜青橄榄量(W/V)0.5%计算加灭菌纯净水定容。
6.将所制备的溶液进行超高温瞬时杀菌,杀菌温度138℃,杀菌时间15s,经杀菌的溶液温度降至-2℃后按(W/V)充入二氧化碳(2g/L)后静置后进行无菌灌装,即得青橄榄饮料。
实施例2

2.按青橄榄∶纯净水=1∶9(W/V)计算并称取青橄榄。

4.浸泡后,将其经粗磨处理后再经胶体磨循环3~4次,视需要可增加在压力50~60mpa下进行。
5.入调配罐(调配:加辅料天然甜味剂少许,视需而定,另加入质量百分比为0.5%的玉米抗氧化肽,并定容,按饮料最终含鲜青橄榄量(W/V)2.0%计算加灭菌纯净水定容。
6.经所得溶液进行超高温瞬时杀菌,杀菌温度138℃,杀菌时间15s,经杀菌的溶液温度降至-2℃后按(W/V)充入二氧化碳(2g/L)后静置后进行无菌灌装,即得青橄榄饮料。

1.一种青橄榄饮料,其特征在于该饮料主要是含有二氧化碳的青橄榄饮料。
2.权利要求1所述青橄榄饮料的制备方法,其特征在于该饮料的制备包括:
(1)青橄榄液的制备:1)挑选青橄榄为原料;2)浸泡是在酸性pH 3~4的温水中进行;3)经胶体磨循环技术处理,磨成鲜青橄榄浆;4)将其稀释至含青橄榄(W/V)0.2%~2.0%的青橄榄液;
(2)加入饮料允许添加的调味剂;
(3)将二氧化碳充入以上制备的青橄榄液中。
