一种补肾、缓解防治失眠养生型酸枣膏的加工工艺,将新鲜的酸枣用水浸提两次,得到酸枣浸提汁;将酸枣烘干磨碎后,进行焙炒,细滤至80目,得到酸枣全果粉;将酸枣全果粉,枸杞用乙醇水溶液混合均匀浸提,得到酸枣水醇提取液;将酸枣浸提汁和酸枣水醇提取液混合,加入果糖粉、红糖和蜂蜜,加热搅拌溶解,过120目筛,浓缩,得到酸枣膏。优点是:工艺和配方的科学合理,产品深褐色粘稠液体,糊香枣味浓郁,冷热饮皆宜,不但口味好,食用方便,而且对心脑血管的保健,对睡眠的改善,有非常好的食疗效果。

本发明涉及一种补肾、缓解防治失眠养生型酸枣膏的加工工艺。
背景技术
目前,市场上的酸枣膏产品有两种类型,一种是酸枣汁加糖浓缩型产品,可谓营养型酸枣膏冲调饮品;另一种是适量酸枣汁复配添加剂型产品,可谓风味型酸枣膏冲调产品。
酸枣是一种天然野生果品,酸枣肉营养十分丰富,富含果糖、葡萄糖、氨基酸,多种矿物质盐,有机酸和维生素,特别是VC含量极高,是桔子的10倍。而酸枣更大的经济价值是酸枣仁的药用价值。是健脑安神改善睡眠的重要药材。
发明内容
本发明要解决的技术问题是提供一种补肾、缓解防治失眠养生型酸枣膏的加工工艺,该工艺基于酸枣食药同源的属性,消费者对健康养生食品的需要,对心脑血管的保健,对睡眠的改善,有非常好的食疗效果的酸枣糕食品,口味好,食用方便,受大众喜爱。
本发明的技术解决方案:
一种补肾、缓解防治失眠养生型酸枣膏的加工工艺,其具体步骤是:
(1)酸枣浸提汁的制备
将新鲜的酸枣清洗后,沥干;按照重量份数计,将酸枣1份和水3份-5份煮沸后,煮浸并搅拌30分钟,经过80目网过滤,保留一次煮浸液,将滤渣加入水中煮沸,煮浸并搅拌30分钟,所述滤渣与水的质量比为1:3,经过80目网过滤,保留二次煮浸液,将两次煮浸液(一次煮浸液和二次煮浸液)混合加热至85℃,经过80目网过滤,得到酸枣浸提汁;
(2)酸枣全果粉的制备
将酸枣烘干后,进行破碎打粉至40目,然后进行焙炒,细滤至80目,得到酸枣全果粉;
(3)酸枣水醇提取液制备
按照重量分数计,将酸枣全果粉2份,枸杞1份和乙醇水溶液7份混合均匀浸提,所述乙醇溶液的质量浓度为70%,每两天搅拌一次,10天后固液分离,得到酸枣水醇提取液;
(4)调配过滤
按照重量份数计,将200份酸枣浸提汁和20份酸枣水醇提取液混合,加入300份果糖粉、80份红糖和20份蜂蜜,在85℃下加热搅拌到彻底溶解,过120目筛,得到酸枣混合液;
(5)浓缩
将酸枣混合液用真空浓缩锅中,真空抽掉混合液中的乙醇和部分水份,使产品浓缩至水份含量为20%-25%,将浓缩的液经过120目筛过滤,温度提升到80℃时,灌装,得到酸枣膏。
进一步的,所述乙醇水溶液的浓度为50%-70%。
进一步的,所述乙醇水溶液的浓度为70%。
本发明的有益效果:
工艺和配方的科学合理,基于酸枣食药同源的属性,以及消费者对健康养生食品的需要进行配方,产品深褐色粘稠液体,糊香枣味浓郁,用水冲调5倍后,口感甜酸微苦涩,冷热饮皆宜,不但口味好,食用方便,而且对心脑血管的保健,对睡眠的改善,有非常好的食疗效果。
具体实施方式
实施例1
(1)酸枣浸提汁的制备
将新鲜的酸枣清洗后,沥干;将酸枣1kg和水3kg煮沸后,煮浸并搅拌30分钟,经过80目网过滤,保留一次煮浸液,将0.5kg滤渣加入1.5kg水中煮沸,煮浸并搅拌30分钟,经过80目网过滤,保留二次煮浸液,将两次煮浸液(一次煮浸液和二次煮浸液)混合加热至85℃,经过80目网过滤,得到酸枣浸提汁;
(2)酸枣全果粉的制备
将酸枣烘干后,进行破碎打粉至40目,然后进行焙炒,细滤至80目,得到酸枣全果粉;
(3)酸枣水醇提取液制备
将酸枣全果粉2kg、枸杞1kg和乙醇水溶液7kg混合均匀浸提,每两天搅拌一次,10天后固液分离,得到酸枣水醇提取液;

将酸枣混合液用真空浓缩锅中,真空抽掉混合液中的乙醇和部分水份,使产品浓缩至水份含量为25%,将浓缩的液经过120目筛过滤,温度提升到80℃时,灌装,得到酸枣膏。
酸枣膏的感观指标:深褐色粘稠液体,糊香枣味浓郁,用水冲调5倍后,口感甜酸微苦涩,冷热饮皆宜。理化指标:可溶性固形物≥75%,果糖葡萄糖≥60%,总酸≥1.0%,乙醇含量<1%。

(5)浓缩
将酸枣混合液用真空浓缩锅中,真空抽掉混合液中的乙醇和部分水份,使产品浓缩至水份含量为22%,将浓缩的液经过120目筛过滤,温度提升到80℃时,灌装,得到酸枣膏。
酸枣膏的感观指标:深褐色粘稠液体,糊香枣味浓郁,用水冲调5倍后,口感甜酸微苦涩,冷热饮皆宜。理化指标:可溶性固形物≥75%,果糖葡萄糖≥60%,总酸≥1.0%,乙醇含量<1%。

1.一种补肾、缓解防治失眠养生型酸枣膏的加工工艺,其特征是:具体步骤是:
(1)酸枣浸提汁的制备
将新鲜的酸枣清洗后,沥干;按照重量份数计,将酸枣1份和水3份-5份煮沸后,煮浸并搅拌30分钟,经过80目网过滤,保留一次煮浸液,将滤渣加入水中煮沸,煮浸并搅拌30分钟,所述滤渣与水的质量比为1:3,经过80目网过滤,保留二次煮浸液,将两次煮浸液混合加热至85℃,经过80目网过滤,得到酸枣浸提汁;
(2)酸枣全果粉的制备
将酸枣烘干后,进行破碎打粉至40目,然后进行焙炒,细滤至80目,得到酸枣全果粉;
(3)酸枣水醇提取液制备
按照重量分数计,将酸枣全果粉2份,枸杞1份和乙醇水溶液7份混合均匀浸提,每两天搅拌一次,10天后固液分离,得到酸枣水醇提取液;
(4)调配过滤
按照重量份数计,将200份酸枣浸提汁和20份酸枣水醇提取液混合,加入300份果糖粉、80份红糖和20份蜂蜜,在85℃下加热搅拌到彻底溶解,过120目筛,得到酸枣混合液;
(5)浓缩
