背景技术
除了功能用途之外,珠光颜料越来越多地用于增强产品外观,例如在化妆品中,因为吸引人的颜色和效果为观察者和消费者带来愉悦的主观印象。在效果颜料的制备中,例如在用于装饰性化妆品的效果颜料的制备中,对颜料的纯度和品质具有严格的要求。效果颜料由此已经用于食品部门,特别是用于糖果,用于改进颜色效果或者用于赋予颜色。
术语薄饼用于表示薄的饼干,其用于人类食用和用作密封材料,并且其由水和面粉制成。另外,还可以使用淀粉,从而使得薄饼更淡或者更白。向生面团中加入糖浆使得薄饼在烘焙之后更暗。该类型的薄饼用作例如面饼(alter breads)。无麸质薄饼由玉米粉或玉米淀粉和水制成。
由于省略了生面团发酵、膨松剂、蛋白质和糖以及极少麸质形成,薄饼不膨起,而是取而代之地保持为平的,具有生面团似的、但是脆性的特性和中性口味。用少量脂肪作为脱模剂在所谓的薄饼铁模(iron)中烘焙它们,所述薄饼铁模由两个烘焙表面组成,其在火上加热或者是可电加热的。一些薄饼具有光滑的平面,光滑的表面,其他具有带有图案、刻印或绘画(常常是宗教图形)的表面。最后提及的表面通过将雕刻并入烘焙表面中来获得。然而,通过雕刻烘焙表面而施加到薄饼表面的图形和结构常常是难以辨别的。此外,带有/不带有图形的薄饼常常难以从烘焙模具中取出或者在过程中破裂。
尽管薄饼不含有要求的至少10%的最低脂肪或糖含量,德国食品法将它们分类为长寿命烘焙食品,其转而被视为维也纳甜面包(viennoiseries)。
如果染料和/或颜料另外被混入薄饼生面团中,常常还连同甜味剂和香味剂一起混入,则常常使用术语可食用纸。
薄饼通常在150至250℃的温度下和以1至8分钟的烘焙时间生产。然而,不利的是在这些温度下,用于薄饼中的许多天然和合成染料和颜料的着色强度随温度增加而显著下降。因此,染料/颜料通常必须以过量加入到着色薄饼的生产中。在极端的情况下,根本不能实现期望的颜色效果。
或者,考虑在完成的薄饼表面施加染料/颜料以实现着色。然而,由于脆的产品结构,这被证明仅可以困难地进行或者根本不可行。因此,将染料/颜料并入到薄饼生面团中仍然是最为可行的技术替代方案。
发明概述
本发明的目的是在本体中和表面上着色薄饼和可食用纸,而产品结构不被破坏并且着色不受烘焙温度不利影响。同时,着色应当导致带有图案、刻印或绘画(常常是宗教图形)的表面在薄饼或可食用纸着色之后保持清楚可见。
令人惊奇地,已经发现,如果用珠光颜料着色薄饼、可食用纸和类似的烘焙食品,则以上提及的缺点不再存在。珠光颜料耐受200℃或更高的温度而毫无问题,并且为薄饼提供新的光学效果和提高的稳定性,即对断裂的敏感性降低。另外的优点是着色的薄饼在生产过程中可以从烘焙模具中更容易地取出,以及产率由此提高。
发明详述
本发明涉及一种或多种基于薄片状基材的珠光颜料用于着色薄饼、可食用纸和类似的烘焙食品的用途。
已经发现,对于准备烘焙的薄饼,如果在薄饼生面团中存在珠光颜料,则通过使用带有相应雕刻的薄饼烘焙铁模形成的图案和图形在光学上显著更清楚并且对于观察者/消费者更加可见或可识别。连同在薄饼中实现的珠光,结果是对于消费者而言薄饼或可食用纸的视觉吸引力的显著提高。
珠光颜料,特别是干涉颜料,基于已经用一种或多种金属氧化物和/或金属氢氧化物涂覆的薄片状基材。
术语薄片状基材用于表示本领域技术人员已知的所有薄片状基材。用于珠光颜料的合适的基础基材是透明的或半透明的薄片状基材。特别合适的是层状硅酸盐、滑石、高岭土、薄片状氧化铁或氧化铝、玻璃薄片、SiO2薄片、TiO2薄片,薄片状混合氧化物,例如FeTiO3、Fe2TiO5,或其他相当的材料,这取决于用于食品中的各个法规许可。
基础基材的尺寸本身并不关键并且可以与各个预期用途相匹配。通常,薄片状基材的厚度是0.005-10μm,特别是0.05-5μm。在其他两个维度的尺寸通常是1-500μm,优选2-200μm和特别是5-150μm。非常特别优选的珠光颜料的粒度是10-60μm或5-25μm或10-150μm或5-50μm。
优选的珠光颜料基于天然云母薄片、合成云母薄片、SiO2薄片、Al2O3薄片、TiO2薄片、玻璃薄片、Fe2O3薄片,特别是合成云母薄片、天然云母薄片和SiO2薄片(欧盟许可的食品添加剂列表中No.E555或E551)。合成薄片,例如合成云母薄片、SiO2薄片、Al2O3薄片、TiO2薄片和玻璃薄片,可以是掺杂的或未掺杂的。合适的掺杂剂特别是金属氧化物,例如TiO2、ZrO2和SnO2。
所用的珠光颜料是基于薄片状、透明或半透明的基材的颜料,所述基材包括例如层状硅酸盐,例如云母、合成云母、滑石、绢云母或高岭土,或者包括玻璃或其他硅酸盐材料,其涂覆有着色的或无色的金属氧化物,例如TiO2、钛低价氧化物、氮氧化钛、Fe2O3、Fe3O4、SnO2、ZnO和其他金属氧化物,它们单独地或者以混合物的形式在均一的层中或者在依次的层中涂覆。特别优选的基于合成或天然云母薄片的珠光颜料涂覆有一种或多种选自TiO2、Fe2O3和Fe3O4或其混合物的金属氧化物,或者具有由交替的高折射率和低折射率层(例如TiO2-SiO2-TiO2)组成的多层涂层。
此外优选TiO2-和/或Fe2O3-涂覆的SiO2或Al2O3薄片。用一种或多种金属氧化物涂覆SiO2薄片例如可以如WO93/08237(湿化学涂覆)或DE-A19614637(CVD方法)中所述的来进行。
施加到薄片状基材的金属氧化物还优选是适用于人类食用的食品级材料(在欧盟许可的食品添加剂列表中No.E171(TiO2)或E172(氧化铁))。
此外优选具有不同粒度的珠光颜料混合物。如果将具有“小”粒度(例如5-25μm或10-60μm)的珠光颜料与具有“大”粒度(例如10-150μm)的珠光颜料混合,则可以获得特别的效果。
在基础基材上,各个层的厚度,优选一个或多个金属氧化物层的厚度,优选是10-500nm,特别是20-400nm和非常特别优选是30-350nm。
在多层颜料的情况下,其优选在基材表面上具有交替的高折射率和低折射率的层(A)(B)(A),高折射率层(层A)通常具有10-500nm,优选20-400nm和特别是30-350nm的层厚度。低折射率层(层B)的厚度优选是10-500nm,优选20-400nm,特别是30-350nm。
在本申请中高折射率层用于表示折射率≥1.8的层,例如TiO2、Fe2O3或Fe3O4,而低折射率层的折射率<1.8,例如SiO2、Al2O3或AlO(OH)。
珠光颜料可以包含多个相同或不同的层包(layer packages)的组合,但是在多层颜料的情况下,仅用一个层包(A)(B)(A)涂覆基材是优选的。为了提高着色强度,根据本发明的颜料可以包含至多4个层包,尽管在这种情况下在基材上所有层的厚度应当不超过3μm。在基材表面上具有3个或更多个层的多层颜料的情况下,优选向薄片状基材施加奇数个层,每个高折射率层在最内和最外的位置。在序列(A)(B)(A)中三个光学干涉层的结构是特别优选的。合适的高折射率层优选是TiO2、Fe2O3和/或Fe3O4或氧化钛和氧化铁的混合物。在此TiO2可以是金红石形式或锐钛矿形式。
适用于涂层(B)的合适的无色低折射率材料优选是金属氧化物或相应的氧化物水合物,例如SiO2、Al2O3、AlO(OH)、B2O3、MgF2、MgSiO3或所述金属氧化物的混合物,其符合用于食品或药物产品的法规许可。
特别优选的用于食品部门的珠光颜料是云母薄片(合成或天然)或SiO2薄片,其覆盖有厚度为10nm至500nm的金属氧化物层(TiO2或Fe2O3或Fe3O4)。薄片的厚度在200nm至900nm的范围内。取决于所用的薄片和所施加的金属氧化物层的厚度和金属氧化物的类型,该类型的颜料以特别强烈的干涉颜色和/或强的随角异色(color flop)效果为特征。后者是显然的,因为观察者在改变其相对于着色物体的观察位置时感知到不同的颜色。

食品部门已经许可的珠光颜料是可商购获得的,例如可以商标从Merck KGaA商购获得。
珠光颜料可以在制备生面团期间或者之后并入。并入通过常规的混合方法进行,优选通过搅拌装置或慢混合器或使用打蛋器手动进行。然而,也可以使用本领域技术人员已知的其他并入方法。在此没有珠光颜料的团聚发生,这与使用其他食品染料(例如二氧化钛)的情况相反。
基于生面团的总重量,通过使用0.5-10重量%,优选2-8重量%的量的珠光颜料实现了非常好的着色结果。当使用效果颜料,特别是珠光颜料和干涉颜料时,用于补偿由于烘焙温度发生的颜色损失的过量给料(如通常在其他常规染料/颜料的情况下那样)因此是不必要的。
珠光颜料可以单独使用,也可以作为不同珠光颜料的混合物使用。特别地,如果在该类型的混合物中组合两种或更多种具有不同粒度的珠光颜料,则实现在遮盖力和所得光泽效果方面清楚可见的优点。
此外,珠光颜料还可以与其他的天然、合成或人造食品染料或颜料和着色水果以及植物提取物组合。理想地适用于该目的的是例如温度稳定的染料和颜料,例如生物炭E153、胭脂红E120或焦糖E150。还可以使用温度敏感染料,例如甜菜根E162或叶绿素E140。
同样容易可行的是在薄饼生面团中使用珠光颜料连同香味剂和/或甜味剂一起。
在期望的珠光效果方面的最佳结果,取决于所用的颜料—珠光颜料或干涉颜料—可以在仅由水和面粉生产的薄饼生面团中实现。所用的面粉可以是小麦粉和/或玉米粉。生面团组合物本身可以包含10-60重量%的面粉,这取决于配方。然而,在生面团中存在淀粉会破坏光学颜色效果。
所用的珠光颜料在薄饼烘焙过程中不遭受任何温度诱导的颜色损失。同样,所用的装置和薄饼烘焙机器的烘焙表面完全不被珠光颜料着色,这与其他食品染料,特别是可溶性的食品染料不同,这转而显著简化了必须的清洁步骤。将珠光颜料并入薄饼生面团中同样不导致任何香味破坏。
本发明同样涉及着色薄饼和可食用纸以及类似的烘焙食品的生产方法。
以下实施例意在解释本发明,而不对本发明进行限制。除非另有说明,否则百分比是重量百分比。

Claims (13)
1.一种或多种基于薄片状基材的珠光颜料用于着色薄饼、可食用纸和类似的烘焙食品的用途。
2.根据权利要求1的用途,特征在于所述珠光颜料是干涉颜料或多层颜料。
3.根据权利要求1或2的用途,特征在于所述薄片状基材是天然云母薄片、合成云母薄片、滑石、高岭土、玻璃薄片、二氧化硅薄片、二氧化钛薄片、氧化铝薄片或氧化铁薄片。
4.根据权利要求1至3中一项或多项的用途,特征在于所述薄片状基材用一个或多个金属氧化物和/或金属氧化物混合物的层完全涂覆。
5.根据权利要求1至4中一项或多项的用途,特征在于效果颜料选自以下提及的颜料:
天然云母薄片+TiO2
天然云母薄片+Fe2O3
天然云母薄片+Fe3O4
天然云母薄片+TiO2+Fe2O3
天然云母薄片+TiO2+Fe3O4
天然云母薄片+Fe2O3+TiO2

7.根据权利要求1至6中一项或多项的用途,特征在于将所述珠光颜料在薄饼、可食用纸和类似的烘焙食品的生面团的制备期间或之后并入到薄饼、可食用纸和类似的烘焙食品的生面团中。
8.根据权利要求1至7中一项或多项的用途,特征在于使用(i)单个珠光颜料,(ii)其混合物或者(iii)单个珠光颜料连同其他染料和/或颜料的混合物或者(iv)珠光颜料的混合物与其他染料和/或颜料的混合物。
9.根据权利要求1至8中一项或多项的用途,特征在于使用具有不同粒度的珠光颜料的混合物。
10.根据权利要求1至9中一项或多项的用途,特征在于另外使用香味剂和/或甜味剂。
11.着色薄饼、可食用纸和类似的食品的方法,特征在于将一种或多种基于薄片状基材的珠光颜料并入到用于薄饼、可食用纸或类似的烘焙制品的生面团中。
12.根据权利要求10或11的方法,特征在于包含用于生产薄饼、可食用纸和类似的烘焙食品的珠光颜料的生面团不包含任何淀粉。
13.薄饼、可食用纸和类似的烘焙食品,特征在于它们包含一种或多种基于薄片状基材的珠光颜料和任选的其他着色剂。
