技术领域
本发明涉及火腿肠领域,尤其涉及到一种五香火腿。
背景技术
火腿是人们喜欢的熏制肉类食品,市场需求量非常大,但传统的火腿肠大多是由干制的羊肠衣糊制而成,容易爆裂、掉头和破损,产品的破损率极高,且产品经蒸煮后,破损率难以控制。而西方所制的火腿肠,普遍采用注射料方式,但其注射料水采用亚硝酸盐,虽然提高了出品率,但口感及营养较差。
发明内容
本发明的目的在于克服现有技术的不足,提供一种五香火腿,是一种即食腊肉火腿食品的加工工艺,能够使得上述配方制成的食品风味更加接近传统腊肉的风味,能长期保留风味,且有效提高了火腿肠的品质,提高了火腿肠的营养成分,还具有肉香浓烈、风味独特、肉质爽口。
为实现上述目的,本发明所提供的技术方案为:一种五香火腿,其特征在于,由以下按照重量份的原料组成:猪肉15-20份、猪皮7-8份、鸡肉13-15份、面粉12-16份、黄油10-18份、食品添加剂0.02-0.04份、淀粉3-5份、香酱8-12份。
