本发明公开了一种香菇热泵除湿‑微波真空干燥的方法,其特征在于,选择大小一致、无病虫害的新鲜香菇,放入复合抑制剂溶液中浸泡,取出晾干,均匀的单层平摊在网状托盘上,调节热泵干燥设备的风温、风速、湿度、装载量,将托盘平放在设备中心处干燥处理后,再将装香菇的托盘置于微波真空干燥箱中,调整微波功率、装载量、真空度进行干燥;将干燥处理后的干香菇装入包装袋中,抽真空,封口高温密封,最后置于通风干燥处储存。

技术领域
本发明涉及食用菌种植领域,具体涉及一种香菇热泵除湿-微波真空干燥的方法。
背景技术
香菇属担子菌门、伞菌纲、伞菌目、光茸菌科、香菇属。香菇味道鲜美,营养丰富,香气宜人,香菇不仅具有较高的营养价值,而且还具有独特的医疗保健功能,是低脂肪、高蛋白的营养保健食品。本发明将热泵干燥技术及微波真空干燥技术应用于香菇干制品加工生产中,为实现香菇热泵干燥的产业化生产提供理论支持。
发明内容
本发明主要解决的技术问题是提供一种香菇热泵除湿-微波真空干燥的方法,依照该方法制备的干香菇收缩率低、复水性能好、品质优、储存性能好。
本发明所要解决的技术问题采用以下的技术方案来实现:
一种香菇热泵除湿-微波真空干燥的方法,其特征在于,按以下步骤进行:
选择大小一致、无病虫害的新鲜香菇,放入复合抑制剂溶液中浸泡28-32min后,取出晾干,均匀的单层平摊在网状托盘上,调节热泵干燥设备的风温为53-55℃、风速为2-3m/s、湿度为35-40%、装载量为1100-1200g条件下,将托盘平放在设备中心处干燥处理3-4h后,再将装香菇的托盘置于微波真空干燥箱中,调整微波功率为2600-2700W、装载量为165-175g、真空度为-90kPa的条件下进行干燥,至香菇含水率≤13%;
将干燥处理后的干香菇装入包装袋中,抽真空,封口高温密封,最后置于通风干燥处储存。
其中,复合抑制剂溶液为0.1-0.11mg/mL的L-半胱氨酸、0.1-0.11mg/mL的谷氨酸、0.1-0.12mg/mL的抗坏血酸混合而成。
本发明的反应机理及有益效果如下:
将可食用保鲜剂L-半胱氨酸、谷氨酸、抗坏血酸混合制成复合抑制剂溶液,将新鲜香菇在其中浸泡处理,可抑制香菇中的甲醛含量;将浸泡处理过的新鲜香菇先经热泵干燥处理再经微波真空干燥,该工艺技术消耗的能量小,香菇中粗脂肪、粗蛋白、总糖和维生素C的保留率高,所得干香菇收缩率低、复水性能好、品质优、储存性能好。

本发明所要解决的技术问题采用以下的技术方案来实现:
一种香菇热泵除湿-微波真空干燥的方法,其特征在于,按以下步骤进行:
选择大小一致、无病虫害的新鲜香菇,放入复合抑制剂溶液中浸泡28min后,取出晾干,均匀的单层平摊在网状托盘上,调节热泵干燥设备的风温为53-55℃、风速为3m/s、湿度为40%、装载量为1100g条件下,将托盘平放在设备中心处干燥处理4h后,再将装香菇的托盘置于微波真空干燥箱中,调整微波功率为2600W、装载量为165g、真空度为-90kPa的条件下进行干燥,至香菇含水率≤13%;
将干燥处理后的干香菇装入包装袋中,抽真空,封口高温密封,最后置于通风干燥处储存。
其中,复合抑制剂溶液为0.1mg/mL的L-半胱氨酸、0.1mg/mL的谷氨酸、0.1mg/mL的抗坏血酸混合而成。

1.一种香菇热泵除湿-微波真空干燥的方法,其特征在于,选择大小一致、无病虫害的新鲜香菇,放入复合抑制剂溶液中浸泡,取出晾干,均匀的单层平摊在网状托盘上,调节热泵干燥设备的风温、风速、湿度、装载量,将托盘平放在设备中心处干燥处理后,再将装香菇的托盘置于微波真空干燥箱中,调整微波功率、装载量、真空度进行干燥;将干燥处理后的干香菇装入包装袋中,抽真空,封口高温密封,最后置于通风干燥处储存。
2.根据权利要求1所述的一种香菇热泵除湿-微波真空干燥的方法,其特征在于,香菇热泵除湿、微波真空干燥技术如下:
