背景技术
医学专家将肥胖定义为一种常见的、明显的、复杂的代谢失调症,是一个可以影响整个机体正常功能的生理过程。青少年肥胖不仅是一个独立的慢性病,还会导致患高血压、脂肪肝、糖尿病、血脂紊乱、高胰岛素血脂、脑垂体后叶脂肪化等疾病,阻碍促性腺激素和生长激素生成,从而严重危害青少年的身心健康。对生殖发育、性发育成熟、智力水平、心理健康、寿命等产生重大、有些甚至是不可逆的影响。我国青少年超重与肥胖检出率持续增加,肥胖对青少年身心健康的影响受到社会的高度重视。
随着人们生活水平的不断提高,人们对高蛋白、高脂肪的食物消费量大增,对谷物、蔬菜和水果的摄入量较低,家长对青少年宠溺导致对孩子的饮食没有节制,青少年常见的偏食、挑食、厌食引起营养结构的失衡,成为导致青少年肥胖的主要因素。许多家长任由孩子挑食,转而购买各种补药给孩子补充营养,并使用各种减肥产品,严重违背青少年生长发育规律,造成青少年健康的巨大损害。因此,找到科学合理地调整青少年膳食结构、防治青少年肥胖的方法刻不容缓。

为了解决上述问题,本发明提供了一种山药胡萝卜复合饮料及其制备方法,严格根据青少年生长发育规律,有针对性地补充青少年生长发育所需的全面营养物质,调节胃肠道机能,促进消化液分泌,改善青少年因挑食、偏食、厌食导致的营养结构失衡,帮助消化,调节青少年体内脂质代谢,清除青少年体内多余脂质,保持青少年生长发育的强健体魄。

优选地,所述陈皮挥发油-环糊精包合物的制备方法为:取陈皮粉碎过100目筛,加10倍量蒸馏水浸泡1h,然后蒸馏提取10h,取提取液,按料液比为1:80加入由β-环糊精和水按1:10的比例组成的混合液,在30℃下进行包合反应1.5h,然后于-4℃冷藏24h,抽滤,取沉淀于40℃烘箱中干燥,即得陈皮挥发油-环糊精包合物。
本发明还提供一种山药胡萝卜复合饮料的制备方法,包括如下步骤:
(1)取山药洗净,削皮,切成0.5cm小块,在由0.5%柠檬酸、0.15%维生素C、0.4%氯化钠组成的护色液中浸泡5min,取出,加入2倍量的水用胶体磨胶磨3次,成山药浆液,加热至80℃保持15min后,加入0.006mg/mLα-淀粉酶,在80℃下酶解20min,然后加热至沸腾保持10min灭酶,取酶解液经4000r/min离心15min,取上清液即为山药汁;
(2)取胡萝卜洗净,削皮,切成0.5cm小块,在由0.5%柠檬酸、0.15%维生素C、0.4%氯化钠组成的护色液中浸泡30min,取出,再用0.5%柠檬酸溶液煮沸15min,加入1倍量水放入榨汁机中榨汁,取榨汁液用胶体磨胶磨成胡萝卜汁;
(3)将陈皮苷和陈皮挥发油-环糊精包合物混合,加入1倍量水溶解后用胶体磨胶磨至粒度为2~5μm,加入山药汁和胡萝卜汁,搅拌均匀成混匀液;
(4)取黄原胶和CMC-Na,加入15~20mL水加热至完全溶解后,加入步骤(3)的混合汁中搅拌均匀,再加入柠檬酸、麦芽低聚糖、蛋白糖、抗坏血酸、复合维生素、矿物质,搅拌均匀成饮料;
(5)将调配好的饮料在25MPa,65℃下均质,然后加热至85℃趁热灌装,封口;
(6)将灌装好的饮料加热至100℃灭菌10min,冷却至室温,得到山药胡萝卜复合饮料。
本发明所述各主要功效成分作用机理如下:
山药含有丰富的淀粉、蛋白质、皂苷、粘液质、糖蛋白、粗纤维、果胶、淀粉酶、多种微量元素等多种成分,具有增强免疫、调整肠胃等功能。
胡萝卜含有大量的胡萝卜素、钙、磷、铁等人体必需的营养成分,其中胡萝卜素在人体内转化为维生素A,维生素A具有保护视力,预防眼疾,防止人体皮肤粗糙,降低血压和血脂的功效,可提高机体免疫力,预防癌变和心血管疾病。
陈皮含有挥发油、橙皮苷、维生素B、C等成分,其所含挥发油、橙皮苷对胃肠道平滑肌有温和的刺激作用,能促进消化液的分泌和消除肠道积气,增加食欲,还能降低胆固醇,具有开胃健脾,帮助吸收和促进消化的功效。
将山药、胡萝卜进行复配,富含含大量而全面的青少年生长发育所需的营养物质,能够促进青少年的生长发育,陈皮苷、陈皮挥发油复配能够促进青少年对营养物质的吸收,帮助消化,增加食欲,改善挑食、偏食、厌食导致的营养失衡问题,从而达到营养均衡的状态。
本发明具备以下有益效果:
1、本发明将经处理后的山药汁、胡萝卜汁复配后添加至复合饮料中,制得的复合饮料含丰富的淀粉、蛋白质、皂苷、糖蛋白、粗纤维、果胶、钙、磷、铁等青少年生长发育所需的多种营养物质,能够充分全面地为青少年补充营养,符合青少年生理代谢规律,有助于青少年保护视力与增强免疫力。
2、本发明采用醇提法提取陈皮苷,制得的陈皮苷具有显著的开胃健脾的作用,添加至复合饮料中,制得的复合饮料能够调节青少年胃肠道功能,增强青少年胃肠道对营养物质和功效成分的吸收效率,改善青少年因挑食、偏食、厌食导致的营养结构失衡问题。
3、本发明采用水提法提取陈皮挥发油,选用β-环糊精饱和制成陈皮挥发油-环糊精包合物,使陈皮挥发油能更稳定地发挥生物活性,添加至复合饮料中,制得的复合饮料能够帮助青少年提高食欲,调节青少年体内的脂质代谢,清除青少年机体多余的脂质,有助于防治青少年肥胖,维持青少年生长发育健康。

实施例1
一种山药胡萝卜复合饮料,由以下重量份的原材料组成:山药汁30份、胡萝卜汁10份、麦芽低聚糖8份、蛋白糖0.1份、陈皮苷0.5份、陈皮挥发油-环糊精包合物0.5份、柠檬酸0.1份、CMC-Na0.075份、黄原胶0.075份、抗坏血酸0.02份、复合维生素0.15份、矿物质0.2份、水至100份。
所述复合维生素由以下重量份的原材料组成:维生素D0.01~0.05份、维生素B10.005~0.01份、维生素B20.001~0.005份、维生素B60.01~0.05份、维生素E0.15~0.2份。
所述矿物质由以下重量份的原材料组成:乳酸钙0.02~0.05份、氯化钠0.1~0.2份、氯化钾0.05~0.08份、磷酸二氢钾0.02~0.1份、磷酸二氢钠0.01~0.05份、硫酸镁0.02~0.05份。
所述陈皮苷的制备方法为:取陈皮按料液比为1:35加入75%乙醇,在85℃下提取2.5h,过滤,合并提取液,旋转蒸发浓缩至原体积的1/5,取浓缩液置于4℃冰箱中冷却过夜,经4000r/min离心15min,取沉淀在60℃真空干燥,研磨成粉,得到陈皮苷粗品,取0.1g陈皮苷粗品用10mL95%乙醇搅拌洗涤20min,放入4℃冰箱中冷却后,经5500r/min离心3min,取沉淀用95%乙醇重复洗涤2次后,再用蒸馏水洗涤1次,最后经5500r/min离心3min,取沉淀于60℃真空干燥,得到陈皮苷。
所述陈皮挥发油-环糊精包合物的制备方法为:取陈皮粉碎过100目筛,加10倍量蒸馏水浸泡1h,然后蒸馏提取10h,取提取液,按料液比为1:80加入由β-环糊精和水按1:10的比例组成的混合液,在30℃下进行包合反应1.5h,然后于-4℃冷藏24h,抽滤,取沉淀于40℃烘箱中干燥,即得陈皮挥发油-环糊精包合物。
上述一种山药胡萝卜复合饮料的制备方法,包括以下步骤:
(1)取山药洗净,削皮,切成0.5cm小块,在由0.5%柠檬酸、0.15%维生素C、0.4%氯化钠组成的护色液中浸泡5min,取出,加入2倍量的水用胶体磨胶磨3次,成山药浆液,加热至80℃保持15min后,加入0.006mg/mLα-淀粉酶,在80℃下酶解20min,然后加热至沸腾保持10min灭酶,取酶解液经4000r/min离心15min,取上清液即为山药汁;
(2)取胡萝卜洗净,削皮,切成0.5cm小块,在由0.5%柠檬酸、0.15%维生素C、0.4%氯化钠组成的护色液中浸泡30min,取出,再用0.5%柠檬酸溶液煮沸15min,加入1倍量水放入榨汁机中榨汁,取榨汁液用胶体磨胶磨成胡萝卜汁;
(3)将陈皮苷和陈皮挥发油-环糊精包合物混合,加入1倍量水溶解后用胶体磨胶磨至粒度为2~5μm,加入山药汁和胡萝卜汁,搅拌均匀成混匀液;
(4)取黄原胶和CMC-Na,加入15~20mL水加热至完全溶解后,加入步骤(3)的混合汁中搅拌均匀,再加入柠檬酸、麦芽低聚糖、蛋白糖、抗坏血酸、复合维生素、矿物质,搅拌均匀成饮料;
(5)将调配好的饮料在25MPa,65℃下均质,然后加热至85℃趁热灌装,封口;
(6)将灌装好的饮料加热至100℃灭菌10min,冷却至室温,得到山药胡萝卜复合饮料。
实施例2
一种山药胡萝卜复合饮料,由以下重量份的原材料组成:山药汁35份、胡萝卜汁11份、麦芽低聚糖9份、蛋白糖0.2份、陈皮苷0.65份、陈皮挥发油-环糊精包合物0.65份、柠檬酸0.12份、CMC-Na0.085份、黄原胶0.085份、抗坏血酸0.03份、复合维生素0.18份、矿物质0.25份、水至100份。
实施例3

由表可知,通过实施例1与对比例1的对比可知,在本发明制备的复合饮料中添加陈皮苷,可将饮料中的蛋白质、氨基酸和各种微量元素的含量提高45.7%、23.3%和62.6%;通过实施例1与对比例2的对比可知,在本发明制备的复合饮料中添加陈皮挥发油-环糊精包合物,可将饮料中的蛋白质、氨基酸和各种微量元素的含量提高36%、26%和60.6%。
综上可知,在本发明制备的复合饮料中加入陈皮苷和陈皮挥发油-环糊精包合物,可提供大量人体所需的营养物质以及必需的营养成分,能够促进青少年的生长发育。
试验例2
随机选择70名群众进行感官评价,随机分成7组,每组10人,以上人群分别食用本发明实施例1-5和对比例1-2制备的运动饮料;选择10名食用普通饮料的实验者作为对照组。评价标准如下表2,评价结果如下表3所示:

由上表3可知,通过实施例1与对照组的对比可知,陈皮的香气更加受人们的喜爱,本发明制备的复合饮料的感官评分明显更高,说明本发明制备的饮料受大部分人群的欢迎,具有一定的市场价值。
以上所述实施例仅表达了本发明的几种实施方式,其描述较为具体和详细,但并不能因此而理解为对本发明专利范围的限制。应当指出的是,对于本领域的普通技术人员来说,在不脱离本发明构思的前提下,还可以做出若干变形和改进,这些都属于本发明的保护范围。
Claims (10)
1.一种山药胡萝卜复合饮料,其特征在于,由以下重量份的原材料组成:山药汁30~45份、胡萝卜汁10~15份、麦芽低聚糖8~12份、蛋白糖0.1~0.5份、陈皮苷0.5~1份、陈皮挥发油-环糊精包合物0.5~1份、柠檬酸0.1~0.2份、CMC-Na 0.075~0.1份、黄原胶0.075~0.1份、抗坏血酸0.02~0.05份、复合维生素0.15~0.25份、矿物质0.2~0.35份、水至100份。
2.根据权利要求1所述的一种山药胡萝卜复合饮料,其特征在于,由以下重量份的原材料组成:山药汁35~40份、胡萝卜汁11~14份、麦芽低聚糖9~11份、蛋白糖0.2~0.4份、陈皮苷0.65~0.85份、陈皮挥发油-环糊精包合物0.65~0.85份、柠檬酸0.12~0.18份、CMC-Na0.085~0.09份、黄原胶0.085~0.09份、抗坏血酸0.03~0.04份、复合维生素0.18~0.22份、矿物质0.25~0.3份、水至100份。
3.根据权利要求2所述的一种山药胡萝卜复合饮料,其特征在于,由以下重量份的原材料组成:山药汁37.5份、胡萝卜汁12.5份、麦芽低聚糖10份、蛋白糖0.3份、陈皮苷0.75份、陈皮挥发油-环糊精包合物0.75份、柠檬酸0.15份、CMC-Na 0.0875份、黄原胶0.0875份、抗坏血酸0.035份、复合维生素0.2份、矿物质0.275份、水至100份。
4.根据权利要求1~3任一项所述的一种山药胡萝卜复合饮料,其特征在于,所述复合维生素由以下重量份的原材料组成:维生素D0.01~0.05份、维生素B10.005~0.01份、维生素B20.001~0.005份、维生素B60.01~0.05份、维生素E 0.15~0.2份。
5.根据权利要求4所述的一种山药胡萝卜复合饮料,其特征在于,所述复合维生素由以下重量份的原材料组成:维生素D 0.03份、维生素B10.0075份、维生素B20.003份、维生素B60.03份、维生素E 0.175份。
6.根据权利要求1~3任一项所述的一种山药胡萝卜复合饮料,其特征在于,所述矿物质由以下重量份的原材料组成:乳酸钙0.02~0.05份、氯化钠0.1~0.2份、氯化钾0.05~0.08份、磷酸二氢钾0.02~0.1份、磷酸二氢钠0.01~0.05份、硫酸镁0.02~0.05份。
7.根据权利要求6所述的一种山药胡萝卜复合饮料,其特征在于,所述矿物质由以下重量份的原材料组成:乳酸钙0.035份、氯化钠0.15份、氯化钾0.065份、磷酸二氢钾0.06份、磷酸二氢钠0.03份、硫酸镁0.035份。
8.根据权利要求1~3任一项所述的一种山药胡萝卜复合饮料,其特征在于,所述陈皮苷的制备方法为:取陈皮按料液比为1:35加入75%乙醇,在85℃下提取2.5h,过滤,合并提取液,旋转蒸发浓缩至原体积的1/5,取浓缩液置于4℃冰箱中冷却过夜,经4000r/min离心15min,取沉淀在60℃真空干燥,研磨成粉,得到陈皮苷粗品,取0.1g陈皮苷粗品用10mL95%乙醇搅拌洗涤20min,放入4℃冰箱中冷却后,经5500r/min离心3min,取沉淀用95%乙醇重复洗涤2次后,再用蒸馏水洗涤1次,最后经5500r/min离心3min,取沉淀于60℃真空干燥,得到陈皮苷。
9.根据权利要求1~3任一项所述的一种山药胡萝卜复合饮料,其特征在于,所述陈皮挥发油-环糊精包合物的制备方法为:取陈皮粉碎过100目筛,加10倍量蒸馏水浸泡1h,然后蒸馏提取10h,取提取液,按料液比为1:80加入由β-环糊精和水按1:10的比例组成的混合液,在30℃下进行包合反应1.5h,然后于-4℃冷藏24h,抽滤,取沉淀于40℃烘箱中干燥,即得陈皮挥发油-环糊精包合物。
10.一种制备如权利要求1~9任一项所述的一种山药胡萝卜复合饮料的方法,其特征在于,包括以下步骤:
(1)取山药洗净,削皮,切成0.5cm小块,在由0.5%柠檬酸、0.15%维生素C、0.4%氯化钠组成的护色液中浸泡5min,取出,加入2倍量的水用胶体磨胶磨3次,成山药浆液,加热至80℃保持15min后,加入0.006mg/mLα-淀粉酶,在80℃下酶解20min,然后加热至沸腾保持10min灭酶,取酶解液经4000r/min离心15min,取上清液即为山药汁;
(2)取胡萝卜洗净,削皮,切成0.5cm小块,在由0.5%柠檬酸、0.15%维生素C、0.4%氯化钠组成的护色液中浸泡30min,取出,再用0.5%柠檬酸溶液煮沸15min,加入1倍量水放入榨汁机中榨汁,取榨汁液用胶体磨胶磨成胡萝卜汁;
(3)将陈皮苷和陈皮挥发油-环糊精包合物混合,加入1倍量水溶解后用胶体磨胶磨至粒度为2~5μm,加入山药汁和胡萝卜汁,搅拌均匀成混匀液;
(4)取黄原胶和CMC-Na,加入15~20mL水加热至完全溶解后,加入步骤(3)的混合汁中搅拌均匀,再加入柠檬酸、麦芽低聚糖、蛋白糖、抗坏血酸、复合维生素、矿物质,搅拌均匀成饮料;
(5)将调配好的饮料在25MPa,65℃下均质,然后加热至85℃趁热灌装,封口;
(6)将灌装好的饮料加热至100℃灭菌10min,冷却至室温,得到山药胡萝卜复合饮料。
