蓝莓属杜鹃花科植物,多年生灌木小浆果果树,因果实呈蓝色,故称为蓝莓。
蓝莓果实中含有丰富的营养成分,具有防止脑神经老化、保护视力、强心、抗癌、软化血管、增强人机体免疫等功能,营养成分高。
其中由于蓝莓富含花青素,具有活化视网膜功效,可以强化视力,防止眼球疲劳而备受瞩目,蓝莓果实中除了常规的糖、酸和Vc外,富含VE、VA、VB、SOD、熊果苷、蛋白质、花青苷、食用纤维以及丰富的K、Fe、Zn、Ca等矿质元素。据报道果实中花青苷色素含量高达163mg/100g,鲜果VE含量9.3L|g/100g鲜果,是其他水果如苹果、葡萄的几倍甚至几十倍。总氨基酸含量0.254%,比氨基酸含量丰富的山楂还高。蓝莓具有极强的药用价值及营养保健功能,是世界粮农组织推荐的五大健康水果之一。

随着人们生活水平的不断提高,消费者对于食品的多样性要求也越来越多,各种各样的功能性年糕也应运而生,包心年糕是各年龄层消费者的喜爱,但现有的包心年糕馅料种类少,且年糕组成单一,不能满足消费者身体对多种营养物质的需求。

本发明的年糕本体中特意降低了糯米粉的用量,使得年糕外皮更容易被消化,更适合老人、小孩等人群的食用。
在一些实施方式中,所述复合蓝莓馅料由70wt%~80wt%蓝莓果酱、10wt%~15wt%苹果果酱和10wt%~15wt%梨果酱制成。
在一些实施方式中,所述保健型年糕本体与复合蓝莓馅料的质量比为1~3:1。
根据本发明的另一个方面,还提供上述保健型蓝莓包心年糕的制备方法,包括以下步骤:
(1)蒸粉:将糯米粉、粳米粉、大麦叶粉和麦芽粉按照比例混合均匀后在100℃热蒸汽中蒸20~30min,然后晾凉得年糕粉;
(2)硬化切粒:分别将蓝莓果酱、苹果果酱和梨果酱放入冷库(-30℃~-10℃)中速冻20~30min使其硬化,将硬化后的蓝莓果酱、苹果果酱和梨果酱切割成粒(粒径以0.05~0.1cm为宜)按比例混匀后得复合蓝莓馅料;
(3)成型:将晾凉的年糕粉和切割混匀后的复合蓝莓馅料分别按照比例放入年糕机中生产定型,制得包裹着复合蓝莓馅料的长条形年糕,即为保健型蓝莓包心年糕。
需要说明的是,现有技术中存在制备包心年糕的年糕机,例如,可以将晾凉的年糕粉和复合蓝莓馅料分别放进芝士年糕机的相应料斗中,利用料斗里的搅龙推力通过管道把年糕粉、复合蓝莓馅料按顺序送进年糕机头进料口,包裹着复合蓝莓馅料的年糕从机头的出料口源源不断的被挤出来,由同步运作的传送带形成一条形状的年糕。
具体实施方式
下面结合实施例对本发明作进一步详细的说明。
实施例1
一种保健型蓝莓包心年糕,包括保健型年糕本体和复合蓝莓馅料,所述保健型年糕本体作为外皮包裹复合蓝莓馅料,其中保健型年糕本体由40wt%糯米粉、30wt%粳米粉、20wt%大麦叶粉和10wt%麦芽粉制成;复合蓝莓馅料由70wt%蓝莓果酱、15wt%苹果果酱和15wt%梨果酱制成,且保健型年糕本体和复合蓝莓馅料的质量比为1:1。
上述保健型蓝莓包心年糕的制备方法为:
(1)蒸粉:将糯米粉、粳米粉、大麦叶粉和麦芽粉按照比例混合均匀后在100℃热蒸汽中蒸20min,然后晾凉得年糕粉;
(2)硬化切粒:分别将蓝莓果酱、苹果果酱和梨果酱放入冷库(-30℃)中速冻20min使其硬化,将硬化后的蓝莓果酱、苹果果酱和梨果酱切割成粒(粒径为0.05cm)按比例混匀后得复合蓝莓馅料;

实施例2
一种保健型蓝莓包心年糕,包括保健型年糕本体和复合蓝莓馅料,所述保健型年糕本体作为外皮包裹复合蓝莓馅料,其中保健型年糕本体由50wt%糯米粉、25wt%粳米粉、15wt%大麦叶粉和10wt%麦芽粉制成;复合蓝莓馅料由75wt%蓝莓果酱、12wt%苹果果酱和13wt%梨果酱制成,且保健型年糕本体和复合蓝莓馅料的质量比为2:1。
上述保健型蓝莓包心年糕的制备方法为:
(1)蒸粉:将糯米粉、粳米粉、大麦叶粉和麦芽粉按照比例混合均匀后在100℃热蒸汽中蒸25min,然后晾凉得年糕粉;
(2)硬化切粒:分别将蓝莓果酱、苹果果酱和梨果酱放入冷库(-25℃)中速冻25min使其硬化,将硬化后的蓝莓果酱、苹果果酱和梨果酱切割成粒(粒径为0.08cm)按比例混匀后得复合蓝莓馅料;
(3)成型:将晾凉的年糕粉和切割混匀后的复合蓝莓馅料按照比例放入年糕机中生产定型,制得包裹着复合蓝莓馅料的长条形年糕,即为保健型蓝莓包心年糕。
实施例3
一种保健型蓝莓包心年糕,包括保健型年糕本体和复合蓝莓馅料,所述保健型年糕本体作为外皮包裹复合蓝莓馅料,其中保健型年糕本体由60wt%糯米粉、20wt%粳米粉、15wt%大麦叶粉和5wt%麦芽粉制成;复合蓝莓馅料由80wt%蓝莓果酱、10wt%苹果果酱和10wt%梨果酱制成,且保健型年糕本体和复合蓝莓馅料的质量比为3:1。
上述保健型蓝莓包心年糕的制备方法为:
(1)蒸粉:将糯米粉、粳米粉、大麦叶粉和麦芽粉按照比例混合均匀后在100℃热蒸汽中蒸30min,然后晾凉得年糕粉;
(2)硬化切粒:分别将蓝莓果酱、苹果果酱和梨果酱放入冷库(-20℃)中速冻30min使其硬化,将硬化后的蓝莓果酱、苹果果酱和梨果酱切割成粒(粒径为0.1cm)按比例混匀后得复合蓝莓馅料;
(3)成型:将晾凉的年糕粉和切割混匀后的复合蓝莓馅料按照比例放入年糕机中生产定型,制得包裹着复合蓝莓馅料的长条形年糕,即为保健型蓝莓包心年糕。

1.一种保健型蓝莓包心年糕,其特征在于,包括保健型年糕本体和复合蓝莓馅料,所述保健型年糕本体作为外皮包裹复合蓝莓馅料,所述保健型年糕本体由糯米粉、粳米粉、大麦叶粉和麦芽粉制成;所述复合蓝莓馅料由蓝莓果酱、苹果果酱和梨果酱制成。
2.根据权利要求1所述的保健型蓝莓包心年糕,其特征在于,所述保健型年糕本体由40wt%~60wt%糯米粉、20wt%~30wt%粳米粉、10wt%~20wt%大麦叶粉和5wt%~10wt%麦芽粉制成。
3.根据权利要求1所述的保健型蓝莓包心年糕,其特征在于,所述复合蓝莓馅料由70wt%~80wt%蓝莓果酱、10wt%~15wt%苹果果酱和10wt%~15wt%梨果酱制成。
4.根据权利要求1所述的保健型蓝莓包心年糕,其特征在于,所述保健型年糕本体与复合蓝莓馅料的质量比为1~3:1。
5.权利要求4所述的保健型蓝莓包心年糕的制备方法,其特征在于,包括以下步骤:
(1)蒸粉:将糯米粉、粳米粉、大麦叶粉和麦芽粉按照比例混合均匀后在100℃热蒸汽中蒸20~30min,然后晾凉得年糕粉;
(2)硬化切粒:分别将蓝莓果酱、苹果果酱和梨果酱放入冷库中速冻20~30min使其硬化,将硬化后的蓝莓果酱、苹果果酱和梨果酱切割成粒按比例混匀后得复合蓝莓馅料;
(3)成型:将晾凉的年糕粉和切割混匀后的复合蓝莓馅料按照比例放入年糕机中生产定型,制得包裹着复合蓝莓馅料的长条形年糕,即为保健型蓝莓包心年糕。
