Abstract
本发明涉及一种莲藕粉条,由莲藕粉、玉米淀粉、绿豆粉、大豆粉、鸡蛋、食用盐制成。本发明改变了传统粉条的配方,莲藕清热凉血、绿豆清热解毒,鸡蛋是全面的补益营养食品,使得本发明具有清补作用;玉米淀粉黏性较好,使得制备工艺简单。食用盐和其他物料一起,调节粉条的口味。本发明是一种营养丰富,具有清补作用的,口感鲜美的粉条,丰富了莲藕的食用方式。

技术领域
本发明涉及食品加工技术领域,具体涉及一种莲藕粉条。
背景技术
粉条又名粉丝品种繁多, 如绿豆粉丝、 豌豆粉丝、 蚕豆粉丝、 绿豆粉丝, 更多的是淀粉制的粉丝, 如红薯粉丝, 甘薯粉丝、 土豆粉丝等。 粉丝按其开联有粗、 细、 圆、扁及片状等多种, 按其主要用料又有豆类、 薯类、 苕类的不同。 根据各地的制法差异政治家不同的叫法,有的叫粉丝, 有的叫粉条, 还有的叫凉粉, 冬粉等名称, 其实是大同小异的, 制法相差不多。 除大豆以外的豆类淀粉均可制作粉丝, 但以绿豆淀粉制品为最佳。粉丝是淀粉的线状制品,分干湿两种。 湿粉丝在当地鲜销, 干粉丝经水发后食用, 多用作凉拌或做汤, 荤素皆宜,粉丝与粉条性味相同, 就是有粗细之别。
莲藕原产于印度,很早便传入中国。莲藕属木兰亚纲,山龙野目。喜温,不耐阴,不宜缺水,大风。莲藕微甜而脆,可生食也可做菜,而且药用价值相当高,它的根根叶叶,花须果实,无不为宝,都可滋补入药。用莲藕制成粉,能消食止泻,开胃清热,滋补养性,预防内出血,是妇孺童妪、体弱多病者上好的流质食品和滋补佳珍。藕,是莲肥大的地下茎,可作食用。原产地有人说是埃及,亦有人认为原产于中国。莲田主要在沼泽地栽培莲藕,中国湖北盛产莲藕,属于水八仙之一。莲藕全身都是宝 ,营养成分:每百克水分77.9克、蛋白质1.0克、脂肪0.1克、碳水化合物19.8克、热量84千卡、粗纤维0.5克、灰分0.7克、钙19毫克、磷51毫克、铁0.5毫克、胡萝卜素0.02毫克、硫胺素0.11毫克、核黄素0.04毫克、尼克酸0.4毫克、抗坏血酸25毫克。
中医认为莲藕还有以下几种功效:
1.清热凉血:
莲藕生用性寒,有清热凉血作用,可用来治疗热性病症;莲藕味甘多液、对热病口渴、衄血、咯血、下血者尤为有益。
2. 通便止泻、健脾开胃:
莲藕中含有黏液蛋白和膳食纤维,能与人体内胆酸盐,食物中的胆固醇及甘油三酯结合,使其从粪便中排出,从而减少脂类的吸收。莲藕散发出一种独特清香,还含有鞣质,有一定健脾止泻作用,能增进食欲,促进消化,开胃健中,有益于胃纳不佳,食欲不振者恢复健康。
3.益血生肌:
藕的营养价值很高,富含铁、钙等微量元素,植物蛋白质、维生素以及淀粉含量也很丰富,有明显的补益气血,增强人体免疫力作用。故中医称其:“主补中养神,益气力”。
4.止血散瘀:
藕含有大量的单宁酸,有收缩血管作用,可用来止血。藕还能凉血,散血,中医认为其止血而不留瘀,是热病血症的食疗佳品。
绿豆:(Vigna radiata (Linn.) Wilczek.),属于豆科。别名青小豆(因其颜色青绿而得名)、菉豆、植豆等,在中国已有两千余年的栽培史。原产地在印度、缅甸地区。现在东亚各国普遍种植,非洲、欧洲、美国也有少量种植,中国、缅甸等国是绿豆主要的出口国。种子和茎被广泛食用。绿豆清热之功在皮,解毒之功在肉。绿豆汤是家庭常备夏季清暑饮料,清暑开胃,老少皆宜。传统绿豆制品有绿豆糕、绿豆酒、绿豆饼、绿豆沙、绿豆粉皮等。其实绿豆还有一种的颜色,黄色的,这种品质很稀少,目前只在江西鄱阳看到,外表黄色,豆皮比绿色更薄,营养更佳!营养成分每100克绿豆中含有蛋白质23.8克,碳水化合物58.8克,脂肪0.5克,钙80毫克,磷360毫克,铁6.8毫克。还含有胡萝卜素、维生素B1:、维生素B2:、维生素E和尼克酸及多种矿物质元素。绿豆所含蛋白质主要为球蛋白,并含有蛋氨酸、色氨酸、酪氨酸等多种氨基酸;在所含磷脂中有磷脂酰胆碱、磷脂酰乙醇胺、磷脂酰肌醇、磷脂酰甘油,磷脂酰丝氨酸等成分。绿豆的药理作用为降血脂、降胆固醇、抗过敏、抗菌、抗肿瘤、增强食欲、保肝护肾。绿豆粉有显著降脂作用,绿豆中含有一种球蛋白和多糖,能促进动物体内胆固醇在肝脏分解成胆酸,加速胆汁中胆盐分泌和降低小肠对胆固醇的吸收。绿豆的有效成分具有抗过敏作用,可辅助治疗荨麻疹等过敏反应。绿豆对葡萄球菌有抑制作用。绿豆中所含蛋白质、磷脂均有兴奋神经,增进食欲的功能。绿豆含丰富胰蛋白酶抑制剂,可以保护肝脏,减少蛋白分解,减少氮质血症,因而保护肾脏。
大豆:营养成分每100克含蛋白质36.3克,脂肪18.4克,碳水化合物25克,钙367毫克,磷571毫克,铁11毫克,胡萝卜素0.4毫克,硫胺素0.79毫克,核黄素0.25毫克,烟酸2.1毫克。还含有卵磷脂,大豆皂醇A、B、C、D、E等各种物质。大豆有很多食疗作用:1增强机体免疫功能,500克的大豆含蛋白质相当于1000克瘦肉或1500克鸡蛋或6000毫升牛奶的蛋白质含量,同时还含有多种人体必需的氨基酸,对人体组织细胞起到重要的营养作用,可以提高人体免疫功能。2.防止血管硬化,黄豆中的卵磷脂可除掉附在血管壁上的胆固醇,防止血管硬化,预防心血管疾病,保护心脏。大豆中的卵磷脂还具有防止肝脏内积存过多脂肪的作用,从而有效地防治因肥胖而引起的脂肪肝。3.促进骨骼发育,大豆中含有多种矿物质,补充钙质,防止因缺钙引起的骨质疏松,促进骨骼发育,对小儿、老人的骨骼生长极为有利。4.通导大便,大豆中含有的可溶性纤维,既可通便,又可减少胆固醇。5.抗缺铁性贫血,黄豆中的铁不仅含量多,而且易被人体所吸收,对缺铁性贫血有一定疗效。6.降糖,降脂大豆中含有一种抑胰酶的物质,对糖尿病有治疗效果。大豆所含的皂甙有明显的降血脂作用,同时,可抑制体重增加,减少血清、肝中脂质含量和脂肪含量。7.抗氧化及抗衰老作用,大豆皂甙对阿霉素所致血清丙氨酸转氨酶、天冬氨酸转氨酶的升高可显著对抗,对阿霉素所致小鼠死亡有显著保护效果。
因此为了丰富市场品种, 增加不同的营养元素, 提高原材料的选择范围, 针对不同
的人群个性需要, 特提出本申请。
发明内容
本发明所要解决的技术问题在于提供一种营养丰富,具有清补作用的,口感鲜美的粉条。本发明所要解决的技术问题采用以下技术方案来实现:
一种莲藕粉条, 由以下重量份的组分组成:
莲藕粉 20-40、 玉米淀粉20-40、 绿豆粉 3-6、大豆粉3-6 、鸡蛋0.5-1、食用盐0.2-0.5。其制备方法包括以下方法步骤:
1)研磨:将的莲藕粉、 绿豆粉、玉米淀粉、大豆粉及适量水研磨混合, 并过滤除杂, 得到混合粉 ;
2)和面:将鸡蛋、食用盐与混合粉混合在一起送入和面机进行和浆,时间为20-50分钟;
3)制粉条:将上述制粉原料泵入粉条制作机制成条状,并切断,得到熟粉条, 然后进行晒干, 或进入烘干机进行烘干, 所述烘干采用热风干燥法进行烘干, 在50-70℃的温度下烘5-7小时, 然后包装即可;
所述鸡蛋是将鸡蛋去壳取蛋黄和蛋清。

1)研磨:将的莲藕粉、 绿豆粉、玉米淀粉、大豆粉及适量水研磨混合, 并过滤除杂, 得到混合粉 ;
2)和面:将鸡蛋、食用盐与混合粉混合在一起送入和面机进行和浆,时间为20分钟 ;
3)制粉条:将上述制粉原料泵入粉条制作机制成条状,并切断,得到熟粉条, 然后进行晒干, 或进入烘干机进行烘干, 所述烘干采用热风干燥法进行烘干, 在50℃的温度下烘7小时, 然后包装即可;
所述鸡蛋是将鸡蛋去壳取蛋黄和蛋清。

1)研磨:将的莲藕粉、 绿豆粉、玉米淀粉、大豆粉及适量水研磨混合,并过滤除杂, 得到混合粉 ;
2)和面:将鸡蛋、食用盐与混合粉混合在一起送入和面机进行和浆,时间为50分钟 ;
3)制粉条:将上述制粉原料泵入粉条制作机制成条状,并切断,得到熟粉条, 然后进行晒干, 或进入烘干机进行烘干, 所述烘干采用热风干燥法进行烘干, 在70℃的温度下烘7小时, 然后包装即可;
所述鸡蛋是将鸡蛋去壳取蛋黄和蛋清。
实施例3
一种莲藕粉条, 由以下重量份的组分组成:
莲藕粉30kg、 玉米淀粉30kg、 绿豆粉4kg、大豆粉5kg 、鸡蛋0.8kg、食用盐0.4kg。其制备方法包括以下方法步骤:
1)研磨:将的莲藕粉、 绿豆粉、玉米淀粉、大豆粉及适量水研磨混合, 并过滤除杂, 得到混合粉 ;
2)和面:将鸡蛋、食用盐与混合粉混合在一起送入和面机进行和浆,时间为35分钟 ;
3)制粉条:将上述制粉原料泵入粉条制作机制成条状,并切断,得到熟粉条, 然后进行晒干, 或进入烘干机进行烘干, 所述烘干采用热风干燥法进行烘干, 在60℃的温度下烘6小时, 然后包装即可;
所述鸡蛋是将鸡蛋去壳取蛋黄和蛋清。
