本发明涉及食品加工技术领域,尤其是一种苹果香蕉面包。
背景技术
水果面包是一种方便的食品,在中国越来越受到人们的欢迎,人们通常将水果面包作为早餐的主食之一,现有苹果香蕉面包是在面粉中加入食用香精、奶油、菌种等混合均匀,然后加入水揉成团发酵后成型高温烘焙而成。现有的水果面包制作方法存在着1、品种少、风味单一且营养不均衡,缺少一种妇女保健且喜食的水果面包;2、烘焙过程中高温下香精耐热性差易分解,香味易挥发;3、水果面包中的添加物多是化学合成品,经常食用不利于人们的身体健康的问题。
发明内容
本发明所要解决的技术问题是提供一种天然营养丰富,软甜可口,具有理气解郁、活血散淤、调经止痛且延缓衰老功效的苹果香蕉面包。
为解决上述技术问题,本发明采用的技术方案如下:一种苹果香蕉面包,其特征在于:包括以下步骤:
(1)水果面包采用下列重量份的原料:面粉12-25份,红枣粉14-25份,蛋白质粉12-28份,鸡蛋12-25份,盐12-25份,奶粉12-25份,酸奶11-26份,奶精12-25份,黄油12-25份,酵母12-25份,苹果15-30份,葡萄干20-25份,香蕉10-15份;
(2)将奶精和黄油搅拌6分钟,加入鲜奶、鸡蛋、盐搅拌3分钟,得到混合料;
(3)将面粉、红枣粉、蛋白质粉和奶粉过筛,再和酵母一起加入到混合料中,搅拌3分钟后制成面团;
(4)将步骤(3)所得的面团放入醒发箱,温度为12-33℃、湿度为50-90%,醒发1-2小时,体积至原来体积的2-3倍,按所需形状分割成型为水果面包团;
(5)将步骤(4)所得的水果面包团放入烤炉,温度为上火170℃,下火190℃烘烤,时间为15分钟即得。
有益效果:本发明提供了一种天然营养丰富,软甜可口,具有理气解郁、活血散淤、调经止痛且延缓衰老功效的苹果香蕉面包。

下面结合具体实施例对本发明做进一步的解释说明,但本发明并不局限于这些实施例。
实施例1:
一种苹果香蕉面包,其特征在于:包括以下步骤:
(1)水果面包采用下列重量份的原料:面粉14份,红枣粉17份,蛋白质粉16份,鸡蛋22份,盐16份,奶粉16份,鲜奶12份,奶精22份,黄油23份,酵母24份;
(2)将奶精和黄油搅拌6分钟,加入鲜奶、鸡蛋、盐搅拌3分钟,得到混合料;
(3)将面粉、红枣粉、蛋白质粉和奶粉过筛,再和酵母一起加入到混合料中,搅拌3分钟后制成面团;
(4)将步骤(3)所得的面团放入醒发箱,温度为20℃、湿度为55%,醒发1小时,体积至原来体积的3倍,按所需形状分割成型为水果面包团;
(5)将步骤(4)所得的水果面包团放入烤炉,温度为上火170℃,下火190℃烘烤,时间为15分钟即得。
实施例2:
一种苹果香蕉面包,其特征在于:包括以下步骤:
(1)水果面包采用下列重量份的原料:面粉16份,红枣粉17份,蛋白质粉16份,鸡蛋22份,盐16份,奶粉16份,鲜奶12份,奶精22份,黄油23份,酵母24份;
(2)将奶精和黄油搅拌6分钟,加入鲜奶、鸡蛋、盐搅拌3分钟,得到混合料;
(3)将面粉、红枣粉、蛋白质粉和奶粉过筛,再和酵母一起加入到混合料中,搅拌3分钟后制成面团;
(4)将步骤(3)所得的面团放入醒发箱,温度为20℃、湿度为67%,醒发1小时,体积至原来体积的3倍,按所需形状分割成型为水果面包团;
(5)将步骤(4)所得的水果面包团放入烤炉,温度为上火170℃,下火190℃烘烤,时间为15分钟即得。
