本发明涉及可避免乳糖不耐受和为乳糖不耐受人群提供营养的营养粉,属于功能性食品技术领域。
背景技术
随着人们生活水平的提高,人们已经从以前的吃饱逐渐向吃好转变,追求营养的均衡与全面,营养粉作为一种营养成分丰富的食品,越来越受到人们的喜爱和推崇。
乳糖是动物乳汁中的一种特有的双糖,不能被人体直接吸收,需要经过乳糖酶水解成半乳糖和葡萄糖,而亚洲人由于没有日常饮用乳的习惯,导致很大一部分人群体内缺乏乳糖酶,所以,这群人饮食含有乳糖的营养粉等食品后,乳糖会保留在肠腔中,造成等渗性水潴留和结肠细菌发酵分解乳糖,产生多种气体及短链脂肪酸,从而形成腹胀、腹鸣、排气增多、腹泻、腹痛等症状。对于“乳糖不耐症”人群,特别是婴幼儿群体(由于婴幼儿的肠道功能还未发育完善,饮食含有乳糖的食物极易引起腹泻),更是不能饮食含有乳糖的营养粉。但是现有的营养粉一般均含有乳糖或含有少量的乳糖,以致于不耐受乳糖人群误食后,出现不耐受反应,因此,亟需一种完全没有乳糖的营养粉。
现今,随着人们的不合理饮食以及能量摄入量的增大,高血压已经成为困扰人们身心健康的疾病之一,高血压是一种以动脉压升高为特征,可伴有心脏、血管、脑和肾脏等器官功能性或器质性改变的全身性疾病,它有原发性高血压和继受性高血压之分,其病因可分为遗传和环境两个方面。
现代社会竞争激烈、节奏快、压力大,并且伴随着环境的不断恶化,导致人们的肠胃消化吸收功能逐渐降低,而且高血压等疾病却频繁发生。
因此,亟需一种营养全面均衡、不含乳糖、具有促进肠胃消化吸收及降血压功能的可避免乳糖不耐受和为乳糖不耐受人群提供营养的营养粉。
发明内容
为了弥补现有技术的不足,本发明提供了一种营养全面均衡、不含乳糖、具有促进肠胃消化吸收及降血压功能的可避免乳糖不耐受和为乳糖不耐受人群提供营养的营养粉,以解决现有技术中存在的问题。
本发明是通过如下技术方案实现的:
可避免乳糖不耐受和为乳糖不耐受人群提供营养的营养粉,包括如下重量份的组分:
葡萄糖浆 12-18份、大豆油 2-3份、玉米油 1-2份、椰子油 1-2份、葵花籽油 1-3份、中碳链脂肪MCT 2-5份、酪朊酸钠 1-4份、单双甘油脂肪酸 1-3份、磷酸氢二钾 2-4份、麦芽糊精 7-15份、浓缩乳清蛋白粉 10-15份、低聚异麦芽糖 4-10份、二十二碳六烯酸 2-6份、花生四烯酸 3-7份、复合维生素 10-17份、牛磺酸 3-5份、复合矿物质 10-16份。
进一步优化地,所述复合维生素包括维生素A 0.5-1.5份、维生素D 1-1.5份、维生素E 0.5-2份、维生素C 0.4-1.2份、维生素B1 1-1.3份、维生素B2 0.5-1.5份、维生素B6 1-2份、维生素B12 0.2-1.2份、烟酸 1-2份、D-泛酸钙 0.5-2份、叶酸 1-3份。
进一步优化地,所述复合矿物质包括磷酸氢钙 1.5-5份、碳酸镁 1.5-4.5份、硫酸亚铁 2-5.5份、硫酸锌 1.5-4.5份。
进一步优化地,葡萄糖浆 15份、大豆油 2.5份、玉米油 1.5份、椰子油 1份、葵花籽油 2份、中碳链脂肪MCT 3份、酪朊酸钠 3份、单双甘油脂肪酸 2份、磷酸氢二钾 3份、麦芽糊精 10份、浓缩乳清蛋白粉 12份、低聚异麦芽糖 8份、二十二碳六烯酸 4份、花生四烯酸 5份、维生素A 1份、维生素D 1份、维生素E 1份、维生素C 1份、维生素B1 1.2份、维生素B2 1份、维生素B6 1.5份、维生素B12 0.8份、烟酸 1.5份、D-泛酸钙 1.5份、叶酸 2份、牛磺酸 4份、磷酸氢钙 3份、碳酸镁 3份、硫酸亚铁 3.5份、硫酸锌 3份。
上述可避免乳糖不耐受和为乳糖不耐受人群提供营养的营养粉的制备方法,包括如下步骤:
1)包埋,将所述浓缩乳清蛋白粉加水溶解,加入所述麦芽糊精,充分混匀后进行包埋;
2)干燥,将步骤1)制得的产物在50-90℃下干燥,干燥后过筛;
3)混合,将步骤2)制得的产物与剩余其他成分充分混合;
4)灭菌、包装,将步骤3)制得的产物进行灭菌、包装。
本发明配方的成分分析:
葡萄糖浆:是一种以淀粉为原料在酶或酸的作用产生的一种淀粉糖浆,主要成份为葡萄糖、麦芽糖、麦芽三糖、麦芽四糖及四糖以上等,又称为液体葡萄糖,葡麦糖浆,不含有乳糖。
大豆油:味甘辛,性热,微毒;具有驱虫、润肠的作用;可治肠道梗阻、大便秘结不通,还有涂解多种疮疥毒瘀等。大豆油的脂肪酸构成较好,它含有丰富的亚油酸,有显著的降低血清胆固醇含量,预防心血管疾病的功效,大豆中还含有多量的维生素E、维生素D以及丰富的卵磷脂,对人体健康均非常有益。大豆油的人体消化吸收率高达98%,所以大豆油是一种营养价值很高的优良食用油。
玉米油:又叫粟米油、玉米胚芽油,它是从玉米胚芽中提炼出的油。玉米胚芽脂肪含量在17%~45%之间,大约占玉米脂肪总含量的80%以上。玉米油中的脂肪酸特点是不饱和脂肪酸含量高达80%~85%;玉米油以富含维生素E为主要特色。常吃不仅能美容,而且还能降低血液中胆固醇的含量,可防治动脉硬化及冠心病。
椰子油:取自椰子肉(干),为白色或淡黄色脂肪。椰子肉(干)含油65%-74%、水分4%-7%。椰子油是日常食物中唯一由中链脂肪酸组成的油脂,进而能提高新陈代谢的效率。椰子油是我们日常食物中唯一由中链脂肪酸组成的油脂,中链脂肪分子比其他食物的长链脂肪分子小,易被人体消化吸收,食疗椰子油的的消化无需动用人体胰消化酶系统,对身体的酶和荷尔蒙系统施加很小的压力。
葵花籽油:含有甾醇、维生素、亚油酸等多种对人类有益的物质,其中天然维生素E含量在所有主要植物油中含量最高;而亚油酸含量可达70%左右。葵花籽油能降低血清中胆固醇水平,降低甘油三酯水平,有降低血压的作用。
中碳链脂肪MCT:是一种极易被人和动物机体吸收的营养素,应用在那些对传统的长碳链脂肪酸吸收障碍的人群和动物中,用于治疗消化疾病,增加机体恢复功能。
酪朊酸钠:是牛乳中主要蛋白质酪蛋白的钠盐,是一种安全无害的增稠剂和乳化剂,因为酪蛋白酸钠含有人体所需的各种氨基酸,营养价值很高,也可作为营养强化剂食用。
单双甘油脂肪酸:不但可以做乳化剂,而且,也有增稠或是稳定剂的功能。
磷酸氢二钾:可应用于配制面食制品用碱水的原料、发酵用剂、调味剂、膨松剂、乳制品的温和碱性剂、酵母食料,有时会被加入到奶茶粉中。也可用作饲料添加剂。
麦芽糊精:原料是含淀粉质的玉米、大米等,也可以是精制淀粉,如玉米淀粉、小麦淀粉、木薯淀粉等,其主要成分为糊精并含有多聚糖、四糖或四糖以上的低聚糖,还含少量的麦芽糖和葡萄糖,但是,不含乳糖。
浓缩乳清蛋白粉:增强免疫功能,有利于心血管系统的健康,提供婴儿的儿童母乳化的功能食品,有利于肌肉健壮和增强体力、提高运动效果,改善精神面貌、提高工作和学习效率,增强骨骼,有利于保健最佳体重,为乳糖不耐症、酪蛋白和谷蛋白过敏者提供优质蛋白,减少皮肤皱纹和光老化,促进伤口愈合,延年益寿。
低聚异麦芽糖:它与我们日常所说的糖是有区别的,我们日常食用的如蔗糖,属于多糖,能被人体消化、代谢,人体的肠道中没有水解异麦芽低聚糖的酶解系统,因此,低聚异麦芽糖不被消化吸收,而是直接进入大肠内优先为双歧杆菌所利用。所以,像低聚异麦芽糖类的功能性低聚糖,由于不影响血糖,同时具有甜味和一定的保健功能,日渐成为糖尿病人的优选甜味添加剂。
二十二碳六烯酸(DHA):具有辅助脑细胞发育、抗衰老、改善血液循环和降血脂的作用。
花生四烯酸(ARA):是一种液态Omega-6必需脂肪酸,它对前列腺素,血栓素和白三烯的生产,以及婴儿脑发育具有重要的作用。
维生素A、维生素D、维生素E、维生素C、维生素B1、维生素B2、维生素B6、维生素B12、烟酸、D-泛酸钙以及叶酸:维生素是维持身体健康所必需的一类有机化合物,这类物质在体内既不是构成身体组织的原料,也不是能量的来源,而是一类调节物质,在物质代谢中起重要作用。
牛磺酸:具有如下功效,促进婴幼儿脑组织和智力发育,提高神经传导和视觉机能,防止心血管病,影响脂类的吸收,改善内分泌状态,增强人体免疫,影响糖代谢,抑制白内障的发生发展,维持正常生殖功能,牛磺酸防治缺铁性贫血有明显效果,它不仅可以促进肠道对铁的吸收,还可增加红细胞膜的稳定性;牛磺酸还是人体肠道内双歧菌的促生因子,优化肠道内细菌群结构。
磷酸氢钙、碳酸镁、硫酸亚铁、硫酸锌,可为机体提供丰富的钙离子、铁离子、锌离子与镁离子等矿物质元素。
本发明的优点:
1.利用配方中相应的成分,完全规避了乳糖,如此,使该营养粉适用于乳糖不耐受人群,避免其因乳糖不耐受引起的腹泻、腹胀。
2.该配方中既含有植物性蛋白,也含有动物性蛋白,充分利用了动植物蛋白的互补原理,促进了蛋白的吸收与利用,具有较高的营养价值。
3.本发明,以葡萄糖浆、麦芽糊精、低聚异麦芽糖为糖类来源,以大豆油、玉米油、椰子油、葵花籽油及中碳链脂肪MCT为脂类来源,以酪朊酸钠、浓缩乳清蛋白粉为蛋白质来源,并辅以单双甘油脂肪酸、磷酸氢二钾、二十二碳六烯酸(DHA)、花生四烯酸(ARA)与牛磺酸的调节作用,以及各类维生素及矿物质,不但确保了该配方营养成分的多样性和全面性,而且,通过上述成分的相互配合及协同作用,还使其具有促进肠胃消化、吸收及降血压的突出功效。
4.该营养粉的制备方法简单便捷,采用包埋的方式,可较大限度地保存营养成分,防止其变质流失。
综上,本发明具有多样的营养种类和全面的营养成分,确保了食用者的营养供给;能够适用于乳糖不耐受人群,避免了其因乳糖不耐受而引起腹泻、腹胀;还具有促进肠胃消化、吸收及降血压的功能,适于广泛推广应用。
具体实施方式
为能清楚说明本发明技术方案的技术特点,下面通过具体实施例,对本发明进行详细阐述。
实施例1
(1)称量:葡萄糖浆 12kg、大豆油 2kg、玉米油 1kg、椰子油 1kg、葵花籽油 1kg、中碳链脂肪MCT 2kg、酪朊酸钠 1kg、单双甘油脂肪酸 1kg、磷酸氢二钾 2kg、麦芽糊精 7kg、浓缩乳清蛋白粉 10kg、低聚异麦芽糖 4kg、二十二碳六烯酸 2kg、花生四烯酸 3kg、维生素A0.5kg、维生素D 1kg、维生素E 0.5kg、维生素C 0.4kg、维生素B1 1kg、维生素B2 0.5kg、维生素B6 1kg、维生素B12 0.3kg、烟酸 1kg、D-泛酸钙 0.5kg、叶酸 1kg、牛磺酸 3kg、磷酸氢钙 1.5kg、碳酸镁 1.5kg、硫酸亚铁 2kg、硫酸锌 1.5kg。
(2)包埋,将所述浓缩乳清蛋白粉加水溶解,加入所述麦芽糊精,充分混匀后进行包埋;
(3)干燥,将步骤(2)制得的产物在55℃下干燥,干燥后过筛;
(4)混合,将步骤(3)制得的产物与剩余成分充分混合;
(5)灭菌、包装,将步骤(4)制得的产物进行灭菌、包装。
实施例2
(1)称量:葡萄糖浆 18kg、大豆油 3kg、玉米油 2kg、椰子油 2kg、葵花籽油 3kg、中碳链脂肪MCT 5kg、酪朊酸钠 4kg、单双甘油脂肪酸 3kg、磷酸氢二钾 4kg、麦芽糊精 13kg、浓缩乳清蛋白粉 13kg、低聚异麦芽糖 9kg、二十二碳六烯酸 6kg、花生四烯酸 7kg、维生素A1.5kg、维生素D 1.5kg、维生素E 2kg、维生素C 1.2kg、维生素B1 1.3kg、维生素B2 1.5kg、维生素B6 2kg、维生素B12 1kg、烟酸 2kg、D-泛酸钙 2kg、叶酸 3kg、牛磺酸 5kg、磷酸氢钙5kg、碳酸镁 4.5kg、硫酸亚铁 5.5kg、硫酸锌 4.5kg。
(2)包埋,将所述浓缩乳清蛋白粉加水溶解,加入所述麦芽糊精,充分混匀后进行包埋;
(3)干燥,将步骤(2)制得的产物在80℃下干燥,干燥后过筛;
(4)混合,将步骤(3)制得的产物与剩余成分充分混合;
(5)灭菌、包装,将步骤(4)制得的产物进行灭菌、包装。
实施例3
(1)称量:葡萄糖浆 15kg、大豆油 2.5kg、玉米油 1.5kg、椰子油 1kg、葵花籽油 2kg、中碳链脂肪MCT 3kg、酪朊酸钠 3kg、单双甘油脂肪酸 2kg、磷酸氢二钾 3kg、麦芽糊精10kg、浓缩乳清蛋白粉 12kg、低聚异麦芽糖 8kg、二十二碳六烯酸 4kg、花生四烯酸 5kg、维生素A 1kg、维生素D 1kg、维生素E 1kg、维生素C 1kg、维生素B1 1.2kg、维生素B2 1kg、维生素B6 1.5kg、维生素B12 0.8kg、烟酸 1.5kg、D-泛酸钙 1.5kg、叶酸 2kg、牛磺酸 4kg、磷酸氢钙 3kg、碳酸镁 3kg、硫酸亚铁 3.5kg、硫酸锌 3kg。
(2)包埋,将所述浓缩乳清蛋白粉加水溶解,加入所述麦芽糊精,充分混匀后进行包埋;
(3)干燥,将步骤(2)制得的产物在70℃下干燥,干燥后过筛;
(4)混合,将步骤(3)制得的产物与剩余成分充分混合;
(5)灭菌、包装,将步骤(4)制得的产物进行灭菌、包装。
测试试验一
为了更好地检验本发明配方的功能效果,发明人将上述实施例1、实施例2及实施例3制得的营养粉进行了临床观察研究,具体情况如下:
自社会上选取乳糖不耐受人员120例,年龄均在50-65岁之间,其中35例患有高血压,随机分为4组,其中,第一组为30人,8人患有高血压,第二组为30人,9人患有高血压,第三组为30人,9人患有高血压,第四组为30人,9人患有高血压。
服用方法:每天早晚各冲泡饮用一包营养粉,每包20g,3周为一个疗程。
试验方法:第一组饮用实施例1制得的营养粉,第二组饮用实施例2制得的营养粉,第三组饮用实施例3制得的营养粉,第四组不饮用营养粉,作为空白对照,经过一个疗程后,得到表1数据。

从表1可知,服用本发明营养粉的第一组、第二组和第三组中的高血压患者,其收缩压和舒张压均有较大幅度的下降,而没有服用本发明营养粉的第四组中的高血压患者均没有明显地好转,由此可得,本发明中的营养粉具有较好的降血压功效。
由于所选人群均为乳糖不耐受群体,所以,在试验过程中,第一组、第二组、第三组以及第四组中的人员均没有服用其他含有乳糖的食物,服用营养粉的第一组、第二组、第三组以及作为对照的第四组均没有出现腹胀、腹泻等不耐受反应。由此可说明,本发明中的营养粉完全不含有乳糖,可较好地适于乳糖不耐受群体。
并且,在试验中及试验后,第一组、第二组以及第三组中的多数人均反映,其饮食量及消化速度均有明显地提高,而第四组中的人员却没有人反映。如此则有力地说明本发明中的营养粉还具有促进肠胃消化吸收的功能。
测试试验二
为检验本发明中的营养粉在婴幼儿群体上的食用价值,发明人特别针对婴幼儿群体进行了一次对照临床试验。
选取12个月至18个月的健康婴幼儿40名,随机划分为四个小组,每个小组10名,在其各自家长的看护下,进行本试验,第一组的10名婴幼儿饮用实施例1制得的营养粉,第二组的10名婴幼儿饮用实施例2制得的营养粉,第三组的10名婴幼儿饮用实施例3制得的营养粉,第四组的10名婴幼儿饮用市场上的同类营养粉,作为对照组。
饮用方法:每天早晚各冲泡饮用一次营养粉,每次5g,饮用15天。
饮用15天后,得到表2所述的试验数据。

自表2中可得,饮用本发明营养粉的第一组、第二组与第三组均没有发生乳糖不耐受反应,而饮用市场上的同类营养粉的第四组发生了4例乳糖不耐受反应。相比于现有市场上的营养粉,本发明的营养粉完全不含乳糖,可完全适于婴幼儿群体,防止其发生腹胀、腹泻等乳糖不耐受反应。从该试验也可以看出,本发明营养粉对于婴幼儿群体具有非常高的实用性价值。
自测试试验一与测试试验二可得,本发明营养粉不但适于成年群体饮用,更适于婴幼儿群体饮用,具有营养全面均衡、不含乳糖、促进肠胃消化吸收及降血压的功能特点,适于广泛推广应用。
本发明未详述之处,均为本技术领域技术人员的公知技术。最后说明的是,以上实施例仅用以说明本发明的技术方案而非限制,尽管参照较佳实施例对本发明进行了详细说明,本领域的普通技术人员应当理解,可以对本发明的技术方案进行修改或者等同替换,而不脱离本发明技术方案的宗旨和范围,其均应涵盖在本发明的权利要求范围当中。
Claims (4)
1.可避免乳糖不耐受和为乳糖不耐受人群提供营养的营养粉,其特征在于,包括如下重量份的组分:
葡萄糖浆 12-18份、大豆油 2-3份、玉米油 1-2份、椰子油 1-2份、葵花籽油 1-3份、中碳链脂肪MCT 2-5份、酪朊酸钠 1-4份、单双甘油脂肪酸 1-3份、磷酸氢二钾 2-4份、麦芽糊精 7-15份、浓缩乳清蛋白粉 10-15份、低聚异麦芽糖 4-10份、二十二碳六烯酸 2-6份、花生四烯酸 3-7份、复合维生素 10-17份、牛磺酸 3-5份、复合矿物质 10-16份。
2.根据权利要求1所述的可避免乳糖不耐受和为乳糖不耐受人群提供营养的营养粉,其特征在于,
所述复合维生素包括维生素A 0.5-1.5份、维生素D 1-1.5份、维生素E 0.5-2份、维生素C 0.4-1.2份、维生素B1 1-1.3份、维生素B2 0.5-1.5份、维生素B6 1-2份、维生素B120.2-1.2份、烟酸 1-2份、D-泛酸钙 0.5-2份、叶酸 1-3份。
3.根据权利要求1所述的可避免乳糖不耐受和为乳糖不耐受人群提供营养的营养粉,其特征在于,
所述复合矿物质包括磷酸氢钙 1.5-5份、碳酸镁 1.5-4.5份、硫酸亚铁 2-5.5份、硫酸锌 1.5-4.5份。
4.根据权利要求1所述的可避免乳糖不耐受和为乳糖不耐受人群提供营养的营养粉,其特征在于,包括如下重量份的组分:
