玉米营养丰富,其富含的维生素,有助于儿童的生长发育,玉米中谷氨酸的含量丰富,促进大脑智力发育,另外,玉米独有的叶黄素和玉米黄质,是强大的抗氧化剂,能够吸收进入眼睛的有害光线,保护眼睛的感光区域,因此玉米非常适合儿童食用,但是玉米是粗粮,且口感单一,直接食用很难受孩子的欢迎。现在玉米类食品众多,大多以油炸膨化食品为主,例如玉米片、玉米圈等,含有较多糖、油、盐,且有多种添加剂,能够完整保存玉米营养价值的产品较少。中国专利201510505357.X公开了一种腌制的香甜玉米,取新鲜的甜玉米为原料,然后浸没于由凉开水、白糖、辣椒粉、生姜、大蒜果、食用盐等制备而成的腌制液,玉米吸收了腌制液的味道,可当休闲食品、又可当餐桌上的主菜,但此发明的玉米腌制时间长会产生亚硝酸盐,不利于儿童健康,且食用不够方便;如中国专利201410532991.8公开了一种糯玉米休闲食品的制备方法,以鲜糯玉米为原料,将鲜糯玉米漂烫、熟制、真空包装,最后杀菌、冷却,入库贮存,得到产品,但此发明的玉米营养单一,味道单一,缺乏特点,难以吸引儿童的兴趣,也不适合追求新鲜口味的现代人群;因此针对现有产品的不足,发明一种适合儿童口味、营养丰富并且可以长期存放、开袋即食的保鲜玉米棒产品及其制备方法很有市场前景。
发明内容:
本发明的目的在于克服现有技术存在的缺点,寻求设计一种以鲜玉米棒和多种食材为主要原料,按比例混合制成儿童即食玉米棒的制备方法。
为了实现上述目的,本发明涉及的儿童即食玉米棒的制备方法为:
(1)鲜玉米处理:将采集的7-9分成熟的新鲜玉米去掉多余外皮而保留1-2层,并保留须毛,洗净沥干,得鲜玉米棒备用;
(2)辅料制备:按重量组份称取生杏仁、生核桃仁和花椒,将花椒用沸水冲泡,待温度降至60-70℃,放入生杏仁和生核桃仁,浸泡1-1.5小时后,将湿的生杏仁和生核桃仁取出,去皮后平铺在烤盘上,将大葱粘液均匀涂抹在生杏仁和生核桃仁上,放入烤箱中,控温170-180℃,15-20分钟后,完成烘烤,得香烤杏仁和核桃仁;
(3)羊奶去膻:将香烤杏仁和核桃仁磨制成粉末,得坚果粉,将羊奶放入锅中大火煮沸,再加入坚果粉加热至沸腾,冷却至室温,得去膻羊奶;
(4)玉米蒸煮:将鲜玉米棒放入高压锅中,再加入步骤(3)制备的去膻羊奶,大火加热,20-30分钟后停止加热,将玉米棒捞出,得熟玉米;
(5)成品包装:将步骤(4)制备的熟玉米沥干,自然冷却,在无菌环境下对单个玉米棒抽真空密封包装,并放入杀菌锅中杀菌,冷却后迅速放入-20℃冷冻室冷藏;食用时只需将冷藏的玉米棒取出并放入微波炉中加热2-3分钟即可食用,无需再加工,营养健康,奶香味浓郁。
本发明涉及的儿童即食玉米棒的原料重量组份为:鲜玉米棒100-120份,羊奶30-40份,生杏仁5-10份,生核桃仁5-10份,花椒2-3份,大葱粘液2-3份。
本发明涉及的羊奶为新鲜羊奶,营养丰富,易于消化吸收;大葱粘液为鲜大葱清洗干净后经压挤而得到的液体物,能祛除腥膻,产生特殊香气,增进食欲;核桃仁和杏仁富含多种蛋白质和不饱和脂肪酸,具有明目健脑,促进儿童智力发育的功效;制得的玉米棒产品口奶香浓郁淡,香甜松软,营养健康易吸收,非常适合儿童食用。
本发明与现有技术相比,其选用的原料营养丰富,配方科学合理,加工工艺简单,玉米与充分吸收了羊奶与坚果的营养物质,香而不膻,绿色纯天然,食用方便快捷,深受儿童喜爱。
具体实施方式:
下面通过具体实施例对本发明作进一步阐述。
实施例1:
本实施例涉及的儿童即食玉米棒,其原料重量组份为:鲜玉米棒120份,羊奶30份,生杏仁10份,生核桃仁10份,花椒3份,大葱粘液2份;其制备工艺包含下列步骤:
(1)鲜玉米处理:将采集的8分成熟的新鲜玉米去掉多余外皮而保留1-2层,并保留须毛,洗净沥干,得鲜玉米棒备用;
(2)辅料制备:按重量组份称取生杏仁、生核桃仁和花椒,将花椒用沸水冲泡,待温度降至70℃,放入生杏仁和生核桃仁,浸泡1.5小时后,将湿的生杏仁和生核桃仁取出,去皮后平铺在烤盘上,将大葱粘液均匀涂抹在生杏仁和生核桃仁上,放入烤箱中,控温170℃,20分钟后,完成烘烤,得香烤杏仁和核桃仁;
(3)羊奶去膻:将香烤杏仁和核桃仁磨制成粉末,得坚果粉,将羊奶放入锅中大火煮沸,再加入坚果粉加热至沸腾,冷却至室温,得去膻羊奶;
(4)玉米蒸煮:将鲜玉米棒放入高压锅中,再加入步骤(3)制备的去膻羊奶,大火加热,30分钟后停止加热,将玉米棒捞出,得熟玉米;
(5)成品包装:将步骤(4)制备的熟玉米沥干,自然冷却,在无菌环境下对单个玉米棒抽真空密封包装,并放入杀菌锅中杀菌,冷却后迅速放入-20℃冷冻室冷藏;食用时只需将冷藏的玉米棒取出并放入微波炉中加热2分钟即可食用,无需再加工,营养健康,奶香味浓郁。
实施例2:
本实施例与实施例1不同之处在于儿童即食玉米棒中各原料重量组份为:鲜玉米棒100份,羊奶40份,生杏仁5份,生核桃仁5份,花椒2份,大葱粘液3份,制备工艺同实施例1,制得的玉米棒香甜可口,营养健康,羊奶与坚果的混合香味深受儿童喜爱,每天早餐用微波炉加热2-3分钟即可食用,省时省力,是居家旅行必备的快捷食品,而且儿童食用玉米棒,既可以吸收丰富的营养,又可以锻炼咀嚼能力。
实施例3:
本实施例选用实施例1制备的玉米棒产品,制作玉米披萨;将玉米粒剥下备用,称取面粉120克,玉米粒30克,火腿粒30克,洋葱圈30克,番茄酱20克,芝麻10克,酵母2克;现将酵母放入温水中静置5分钟,再将酵母水倒入面粉中,充分搅拌,并揉成面团,盖上保鲜膜,发酵1小时后,将面团擀成圆面片,将番茄酱均匀涂抹在面片上,再洒上其他食材,并轻微压实,将面片放在刷过油的烤盘上,放入烤箱中,中火烤20分钟,即得玉米披萨,外表焦黄,外酥里嫩,口感咸香,营养健康,制作简单,深受孩子和家长的喜爱。

1.一种儿童即食玉米棒的制备方法,其特征在于其制备工艺包含下列步骤:
(1)鲜玉米处理:将采集的7-9分成熟的新鲜玉米去掉多余外皮而保留1-2层,并保留须毛,洗净沥干,得鲜玉米棒备用;
(2)辅料制备:按重量组份称取生杏仁、生核桃仁和花椒,将花椒用沸水冲泡,待温度降至60-70℃,放入生杏仁和生核桃仁,浸泡1-1.5小时后,将湿的生杏仁和生核桃仁取出,去皮后平铺在烤盘上,将大葱粘液均匀涂抹在生杏仁和生核桃仁上,放入烤箱中,控温170-180℃,15-20分钟后,完成烘烤,得香烤杏仁和核桃仁;
