Abstract
本发明公开了一种降脂运动饮料及其制备方法,由以下重量份的原材料组成:桑叶黄酮0.8~1份、葡萄籽浸提物0.8~1份、海盐0.5~1份、维生素B12 0.01~0.06份、维生素C 0.03~0.3份、维生素B6 0.01~0.07份、木糖醇2~4份、柠檬酸1~2份、柠檬酸钠0.05~0.1份、氯化钾0.01~0.05份、氯化钠0.01~0.05份、硫酸镁0.03~0.05份、水溶性膳食纤维3~5份、葡萄5~7份、水200~300份。本发明配合青少年的消化机能与生理代谢特点,提高青少年机体的抗氧化能力,有助于增强青少年免疫力,保证青少年肝脏发育完善,有针对性地平衡青少年的膳食结构,抑制青少年体脂积累,有效减少青少年肥胖率,维持青少年健康体魄。

技术领域
本发明涉及功能饮料技术领域,具体涉及一种降脂运动饮料及其制备方法。
背景技术
随着社会经济的不断发展,人们生活水平提高,青少年营养过剩的现象越来越严重。青少年肥胖表现为体重增加、大量脂肪沉积,使身体负担和耗氧量过大,导致身体笨重、行动迟缓、活动能力差。另外,肥胖还会导致青少年过早出现高血压、高血脂异常及糖代谢异常,青少年糖尿病的发病率也越发升高,甚至还会影响青少年的智力发展,形成脂肪脑,影响脑力运动。
肥胖症是很严峻的青少年健康问题,且越来越受到人们的重视。为了降低青少年的肥胖率,青少年运动时间和精力投入增加,而肥胖青少年由于体力不支,在体育运动中容易出现头晕、虚脱等症状。运动饮料能够为运动者及时补充流失的能量,促使运动者快速恢复体能,但是市面上的运动饮料大多数含糖量高,或者营养成分含量缺乏针对性,不能完全满足青少年生长发育的需求。青少年处于生长发育的重要时期,如何能够合适有效地预防青少年肥胖的发生,降低肥胖青少年体脂,成为亟待解决的问题。
发明内容
为了解决上述问题,本发明提供了一种降脂运动饮料及其制备方法,配合青少年的消化机能与生理代谢特点,提高青少年机体的抗氧化能力,有助于增强青少年免疫力,保证青少年肝脏发育完善,有针对性地平衡青少年的膳食结构,抑制青少年体脂积累,有效减少青少年肥胖率。
本发明可以通过以下技术方案来实现:
一种降脂运动饮料,由以下重量份的原材料组成:桑叶黄酮0.8~1 份、葡萄籽浸提物0.8~1份、海盐0.5~1份、维生素B12 0.01~0.06 份、维生素C 0.03~0.3份、维生素B6 0.01~0.07份、木糖醇2~4份、柠檬酸1~2份、柠檬酸钠0.05~0.1份、氯化钾0.01~0.05份、氯化钠 0.01~0.05份、硫酸镁0.03~0.05份、水溶性膳食纤维3~5份、葡萄5~7份、水200~300份。
优选地,一种降脂运动饮料,由以下重量份的原材料组成:桑叶黄酮0.85~0.95份、葡萄籽浸提物0.85~0.95份、海盐0.65~0.85份、维生素B12 0.02~0.05份、维生素C0.13~0.20份、维生素B6 0.03~0.05 份、木糖醇2.5~3.5份、柠檬酸1.2~1.8份、柠檬酸钠0.055~0.095份、氯化钾0.015~0.045份、氯化钠0.015~0.045份、硫酸镁0.035~0.045份、水溶性膳食纤维3.5~4.5份、葡萄5.5~6.5份、水230~270份。
优选地,一种降脂运动饮料,由以下重量份的原材料组成:桑叶黄酮0.9份、葡萄籽浸提物0.9份、海盐0.75份、维生素B12 0.035 份、维生素C 0.165份、维生素B6 0.04份、木糖醇3份、柠檬酸1.5 份、柠檬酸钠0.075份、氯化钾0.03份、氯化钠0.03份、硫酸镁0.04 份、水溶性膳食纤维4份、葡萄6份、水250份。
优选地,所述桑叶黄酮的制备方法为:a.取200g桑叶粉,加入 5000mL去离子水,于60℃、120r/min震荡提取3次,每次1h,合并滤液,滤液在55℃下真空浓缩至原体积的1/10,加入无水乙醇使乙醇体积分数达到60%,在4℃下静置24h,过滤,将滤液真空浓缩至原体积的1/5,于55℃下真空干燥48h,得桑叶黄酮粗提物;b.取15g 桑叶黄酮粗提物,以300mL去离子水溶解,加入等体积乙酸乙酯,充分震荡6h,静置30min后萃取液和萃余液,重复萃取3次,将萃取液真空浓缩至干,于55℃下真空干燥48h,得乙酸乙酯萃取物;c. 用去离子水将乙酸乙酯萃取物稀释至黄酮浓度为6.0mg/mL,通过已处理好的AB-8大孔树脂,先用水洗脱3~6倍个柱体积后,再用40~80%乙醇洗脱3~6倍柱体积,收集乙醇洗脱液,将洗脱液于55℃下真空浓缩并干燥48h,即得桑叶黄酮。
优选地,所述葡萄籽浸提物的制备方法为:取葡萄籽干燥粉碎,过30目筛,按料液比为1:2.5加入正己烷脱脂2次,每次30min,按料液比为1:20加入70%乙醇浸提3次并离心,合并上清液,于45℃下旋蒸浓缩至原体积的1/5,浓缩液于真空冷冻干燥4h,得葡萄籽浸提物。
本发明还提供一种降脂运动饮料的制备方法,包括如下步骤:
(5)将葡萄洗净去皮去核,加入30mL水榨成葡萄汁;
(6)将步骤(1)所得的葡萄汁中加入海盐、维生素B12、维生素C、维生素B6、柠檬酸、柠檬酸钠、氯化钾、氯化钠、硫酸镁,混合均匀,得混合液;
(7)将步骤(2)所得的混合液和桑叶黄酮、葡萄籽浸提物、木糖醇、柠檬酸、水溶性膳食纤维混合,加入10~20mL水加热至完全溶解,用水定容至1L,得饮料半成品;
(8)将步骤(3)所得的饮料半成品在16.7~20.6MPa下均质,于50℃下真空脱气1h,80℃下灌装,100℃下灭菌30min,即得本发明制备的降脂运动饮料。
本发明所述各主要功效成分作用机理如下:
桑叶中主要的黄酮类成分为芦丁、紫云英苷等,对胰脂肪酶的活性有很好的抑制作用,具有极强的抗氧化、清除人体氧化自由基的功能,抑制血清脂质增加以及抑制动脉粥样硬化形成等作用。
葡萄籽中提取的多酚类成分对脂肪酶有明显的抑制作用,其活性成分还有调节血脂、抗氧化、增强免疫力、保护肝脏等多种保健功能,对运动后引起的血糖水平升高有很好的降低效果,起到良好的降脂降血糖作用。
水溶性膳食纤维能有效使肠道中的益茵活性化,促进益菌大量繁殖,创造肠道的健康生态,还能提高饮料中膳食纤维含量,可使摄入的热能减少,对青少年因持续运动期间或之后过度摄入运动饮料会导致卡路里摄入过多,而引起的肥胖具有预防作用,在肠道内营养的消化吸收也下降,最终使体内脂肪消耗而起减肥作用。
本发明具备以下有益效果:
1、本发明使用乙醇萃取法提取桑叶黄酮,使所得黄酮具有有显著的抗氧化性和对脂肪酶的抑制作用,添加至运动饮料中,使制得的饮料能控制脂质在青少年体内的积累,有助于减少青少年肥胖的发生;
2、本发明采用乙醇浸提法提取葡萄籽浸提物,使所得葡萄籽浸提物具有调节血脂、抗氧化的作用,添加至运动饮料中,使制得的运动饮料具有对青少年显著的降脂降血糖的作用,能够调节青少年运动后的血糖水平,提高青少年运动后体脂的消耗速率和加快青少年运动后的体能恢复;
3、本发明根据青少年生长发育规律,将科学合理配比的柠檬酸钠、氯化钾、氯化钠、硫酸镁、维生素C、维生素B12、维生素B6 等无机盐和维生素添加至饮料中,能够及时为青少年补充日常所消耗的营养物质;
4、本发明特别地选用水溶性膳食纤维,与桑叶黄酮、葡萄籽浸提物以及其他营养物质复配制成运动饮料,使制得的运动饮料能够针对青少年肠道特点,活化青少年的消化系统,增加功效成分和营养成分的吸收效率,减少脂肪的累积量,达到预防肥胖和降脂健美的效果,维持青少年的健康体魄。

为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例,进一步阐述本发明。
实施例1
一种降脂运动饮料,由以下重量份的原材料组成:桑叶黄酮0.8 份、葡萄籽浸提物0.8份、海盐0.5份、维生素B12 0.01份、维生素C 0.03份、维生素B6 0.01份、木糖醇2份、柠檬酸1份、柠檬酸钠 0.05份、氯化钾0.01份、氯化钠0.01份、硫酸镁0.03份、水溶性膳食纤维3份、葡萄5份、水200份。
所述桑叶黄酮的制备方法为:a.取200g桑叶粉,加入5000mL去离子水,于60℃、120r/min震荡提取3次,每次1h,合并滤液,滤液在55℃下真空浓缩至原体积的1/10,加入无水乙醇使乙醇体积分数达到60%,在4℃下静置24h,过滤,将滤液真空浓缩至原体积的 1/5,于55℃下真空干燥48h,得桑叶黄酮粗提物;b.取15g桑叶黄酮粗提物,以300mL去离子水溶解,加入等体积乙酸乙酯,充分震荡 6h,静置30min后萃取液和萃余液,重复萃取3次,将萃取液真空浓缩至干,于55℃下真空干燥48h,得乙酸乙酯萃取物;c.用去离子水将乙酸乙酯萃取物稀释至黄酮浓度为6.0mg/mL,通过已处理好的 AB-8大孔树脂,先用水洗脱3~6倍个柱体积后,再用40~80%乙醇洗脱3~6倍柱体积,收集乙醇洗脱液,将洗脱液于55℃下真空浓缩并干燥48h,即得桑叶黄酮。
所述葡萄籽浸提物的制备方法为:取葡萄籽干燥粉碎,过30目筛,按料液比为1:2.5加入正己烷脱脂2次,每次30min,按料液比为1:20加入70%乙醇浸提3次并离心,合并上清液,于45℃下旋蒸浓缩至原体积的1/5,浓缩液于真空冷冻干燥4h,得葡萄籽浸提物。
上述一种降脂运动饮料的制备方法,包括以下步骤:
(1)将葡萄洗净去皮去核,加入30mL水榨成葡萄汁;
(2)将步骤(1)所得的葡萄汁中加入海盐、维生素B12、维生素C、维生素B6、柠檬酸、柠檬酸钠、氯化钾、氯化钠、硫酸镁,混合均匀,得混合液;
(3)将步骤(2)所得的混合液和桑叶黄酮、葡萄籽浸提物、木糖醇、柠檬酸、水溶性膳食纤维混合,加入10~20mL水加热至完全溶解,用水定容至1L,得饮料半成品;
(4)将步骤(3)所得的饮料半成品在16.7~20.6MPa下均质,于50℃下真空脱气1h,80℃下灌装,100℃下灭菌30min,即得本发明制备的降脂运动饮料。
实施例2
一种降脂运动饮料,由以下重量份的原材料组成:桑叶黄酮0.85 份、葡萄籽浸提物0.85份、海盐0.65份、维生素B12 0.02份、维生素C 0.13份、维生素B6 0.03份、木糖醇2.5份、柠檬酸1.2份、柠檬酸钠0.055份、氯化钾0.015份、氯化钠0.015份、硫酸镁0.035份、水溶性膳食纤维3.5份、葡萄5.5份、水230份。
实施例3
一种降脂运动饮料,由以下重量份的原材料组成:桑叶黄酮0.9 份、葡萄籽浸提物0.9份、海盐0.75份、维生素B12 0.035份、维生素C 0.165份、维生素B6 0.04份、木糖醇3份、柠檬酸1.5份、柠檬酸钠0.075份、氯化钾0.03份、氯化钠0.03份、硫酸镁0.04份、水溶性膳食纤维4份、葡萄6份、水250份。
实施例4
一种降脂运动饮料,由以下重量份的原材料组成:桑叶黄酮0.95 份、葡萄籽浸提物0.95份、海盐0.85份、维生素B12 0.05份、维生素C0.20份、维生素B60.05份、木糖醇3.5份、柠檬酸1.8份、柠檬酸钠0.095份、氯化钾0.045份、氯化钠0.045份、硫酸镁0.045份、水溶性膳食纤维4.5份、葡萄6.5份、水270份。
实施例5
一种降脂运动饮料,由以下重量份的原材料组成:桑叶黄酮1份、葡萄籽浸提物1份、海盐1份、维生素B120.06份、维生素C 0.3份、维生素B6 0.07份、木糖醇4份、柠檬酸2份、柠檬酸钠0.1份、氯化钾0.05份、氯化钠0.05份、硫酸镁0.05份、水溶性膳食纤维5份、葡萄7份、水300份。
对比例1
与实施例1的区别在于,原料配方中没有添加桑叶黄酮,具体为:葡萄籽浸提物0.8份、海盐0.5份、维生素B12 0.01份、维生素C 0.03 份、维生素B6 0.01份、木糖醇2份、柠檬酸1份、柠檬酸钠0.05份、氯化钾0.01份、氯化钠0.01份、硫酸镁0.03份、水溶性膳食纤维3份、葡萄5份、水200份。
对比例2
与实施例1的区别在于,原料配方中没有添加葡萄籽浸提物,具体为:桑叶黄酮0.8份、海盐0.5份、维生素B12 0.01份、维生素C 0.03 份、维生素B6 0.01份、木糖醇2份、柠檬酸1份、柠檬酸钠0.05份、氯化钾0.01份、氯化钠0.01份、硫酸镁0.03份、水溶性膳食纤维3份、葡萄5份、水200份。
功效验证
试验例1
选择70只健康小鼠进行实验,体重18-22g,体脂均超过正常值,随机分成7组,每组10只,每组小鼠每天进行45min游泳训练,训练周期2个月,在小鼠的每天训练后,分别灌喂本发明实施例1-5和对比例1-2制备的运动饮料50ml。分别对小鼠实验前后进行胰脂肪酶活性检测。实验结果如下表1和图1所示:

由上表图可知,通过实施例1与对比例1的对比可以发现,在本发明制备的饮料中添加桑叶黄酮,可将小鼠体内胰脂肪酶活性的抑制率提高21.6%;通过实施例1与对比例2的对比可以发现,在本发明制备的饮料中添加葡萄籽浸提物,可将小鼠体内胰脂肪酶活性的抑制率提高20.4%。
结果表明,在本发明制备的饮料中加入桑叶黄酮和葡萄籽浸提物,可有效抑制小鼠体内胰脂肪酶的活性,起到良好的降脂作用。
试验例2
选择70只SD大鼠进行实验,体重150-200g,随机分成7组,每组10只,每组小鼠每天进行45min游泳训练,训练周期3个月,在小鼠的每天训练后,分别灌喂本发明实施例1-5和对比例1-2制备的运动饮料25ml。实验结束后测其超氧化物歧化酶(SOD)、过氧化氢酶(CAT)及抑制自由基·OH能力。实验结果如下表2所示:

由上表可知,通过实施例1与对比例1的对比可以发现,在本发明制备的饮料中添加桑叶黄酮,可将小鼠体内的超氧化物歧化酶 (SOD)、过氧化氢酶(CAT)及抑制自由基·OH能力分别提高23.8%、 13.2%及5.4%;通过实施例1与对比例2的对比可以发现,在本发明制备的饮料中添加葡萄籽浸提物,可将小鼠体内的超氧化物歧化酶 (SOD)、过氧化氢酶(CAT)及抑制自由基·OH能力分别提高26.3%、 18.4%及7.2%。
综上可知,本发明制备的运动饮料,可有效小鼠体内的超氧化物歧化酶(SOD)、过氧化氢酶(CAT)及抑制自由基·OH能力,具有极强的抗氧化、清除人体氧化自由基的功能;有效恢复因血脂升高时过多脂质沉积于血管内皮,使内皮产生的抗氧化酶含量下降,机体清除自由基的能力下降的能力,起到消脂减肥的作用。
以上所述实施例仅表达了本发明的几种实施方式,其描述较为具体和详细,但并不能因此而理解为对本发明专利范围的限制。应当指出的是,对于本领域的普通技术人员来说,在不脱离本发明构思的前提下,还可以做出若干变形和改进,这些都属于本发明的保护范围。

4.根据权利要求1~3任一项所述的一种降脂运动饮料,其特征在于,所述桑叶黄酮的制备方法为:
a.取200g桑叶粉,加入5000mL去离子水,于60℃、120r/min震荡提取3次,每次1h,合并滤液,滤液在55℃下真空浓缩至原体积的1/10,加入无水乙醇使乙醇体积分数达到60%,在4℃下静置24h,过滤,将滤液真空浓缩至原体积的1/5,于55℃下真空干燥48h,得桑叶黄酮粗提物;
b.取15g桑叶黄酮粗提物,以300mL去离子水溶解,加入等体积乙酸乙酯,充分震荡6h,静置30min后萃取液和萃余液,重复萃取3次,将萃取液真空浓缩至干,于55℃下真空干燥48h,得乙酸乙酯萃取物;
c.用去离子水将乙酸乙酯萃取物稀释至黄酮浓度为6.0mg/mL,通过已处理好的AB-8大孔树脂,先用水洗脱3~6倍个柱体积后,再用40~80%乙醇洗脱3~6倍柱体积,收集乙醇洗脱液,将洗脱液于55℃下真空浓缩并干燥48h,即得桑叶黄酮。
5.根据权利要求1~3任一项所述的一种降脂运动饮料,其特征在于,所述葡萄籽浸提物的制备方法为:取葡萄籽干燥粉碎,过30目筛,按料液比为1:2.5加入正己烷脱脂2次,每次30min,按料液比为1:20加入70%乙醇浸提3次并离心,合并上清液,于45℃下旋蒸浓缩至原体积的1/5,浓缩液于真空冷冻干燥4h,得葡萄籽浸提物。
6.一种制备如权利要求1~5任一项所述降脂运动饮料的方法,其特征在于,包括以下步骤:
(1)将葡萄洗净去皮去核,加入30mL水榨成葡萄汁;
(2)将步骤(1)所得的葡萄汁中加入海盐、维生素B12、维生素C、维生素B6、柠檬酸、柠檬酸钠、氯化钾、氯化钠、硫酸镁,混合均匀,得混合液;
(3)将步骤(2)所得的混合液和桑叶黄酮、葡萄籽浸提物、木糖醇、柠檬酸、水溶性膳食纤维混合,加入10~20mL水加热至完全溶解,用水定容至1L,得饮料半成品;
(4)将步骤(3)所得的饮料半成品在16.7~20.6MPa下均质,于50℃下真空脱气1h,80℃下灌装,100℃下灭菌30min,即得本发明制备的降脂运动饮料。
