Abstract

本发明属于酒曲制备技术领域,尤其是一种玉兰香酒曲及其制备方法,选用糯米、薏仁、玉兰花瓣、甜叶菊、桑叶、芦荟、薄荷、淫羊藿和陈皮为原料,并对原料的用量进行调控,使得原料之间形成协同的功效,进而达到增食欲、降血糖、降血脂、提高免疫力的作用;对原料选用不同的处理方式,使得原料中的有效成分能够得到较大程度的保留,提升产品附加值;尤其是通过玉兰花瓣的加入,不仅赋予了酒曲玉兰的香味,同时将其与原料中其他成分配伍后,能够有效的治疗感冒、鼻炎的症状,本发明酒曲兼具玉兰花香和酒香,无异味,饮用起来口感爽净,唇齿留香。

技术领域
本发明属于酒曲制备技术领域,尤其是一种玉兰香酒曲及其制备方法。
背景技术
中国有着几千年的酒文化,每到逢年过节的亲朋相聚、婚丧嫁娶、商业谈判、国际交往等都离不开酒;众所周知,酒的香气、口感的优劣等评价,很大一部分是取决于酒曲;而传统的酒曲是以纯小麦或按一定比例配合的大麦、豌豆等为原料,经粉碎加水压制成砖块状曲胚,放置于曲室内依靠自然界带入的各种野生菌在原料上自然培育,获得各种有益于发酵的微生物,培养周期21天,再经风干得到的。
传统的酒曲不仅在配料上都比较单一,而且是靠自然界的多种微生物参与发酵的,因而形成了很多不利于发酵的微生物,通常会出现一房曲好一房曲坏的现象,酒曲质量难以控制;因此,由传统的酒曲酿制得到的白酒会有涩味、口感较差、难以下咽的问题,难以满足人们对白酒营养高、口感好的需求。
发明内容
为解决上述技术问题,本发明提供一种玉兰香酒曲及其制备方法。
具体是通过以下技术方案得以实现的:
一种玉兰香酒曲,原料以重量份计为:糯米600~700份、薏仁300~500份、玉兰花瓣20~30份、甜叶菊30~50份、桑叶5~10份、芦荟5~10份、薄荷2~5份、淫羊藿8~13份、陈皮4~7份。
所述原料以重量份计为:糯米670份、薏仁420份、玉兰花瓣28份、甜叶菊40份、桑叶8份、芦荟6份、薄荷3份、淫羊藿12份、陈皮6份。
上述玉兰香酒曲的制备方法,包括以下步骤:
(1)采摘新鲜的玉兰花瓣,清洗干净后,粉碎得兰花粉;
(2)将糯米和薏仁清洗干净,加入兰花粉,搅拌均匀后置入锅中,加水淹没至混合物表面5~7cm,用武火煮5~10min,然后再采用小火熬煮150~180min,得底料,备用;
(3)将甜叶菊、桑叶和淫羊藿混合均匀,粉碎后,加入其重量8~10倍水加热提取,过滤后得到中药提取液;
(4)将芦荟、薄荷和陈皮混合均匀,放入微波中干燥至水分含量为25~30%,碾压成粉末,得中药粉;
(5)将底料、中药提取液和中药粉混合均匀,加水搅拌均匀制成曲丸,再用竹匾将曲丸放入28~32℃制曲室发酵48h,每隔6h翻一次,待菌丝布满曲丸表面时,通风晾曲至温度降为20~25℃,待水分蒸发含水量低于10%时,即可。
所述玉兰花瓣清洗干净后,粉碎至40~60目,
所述步骤(3)提取温度为40~50℃。
所述步骤(4)干燥温度为90~100℃。
所述步骤(5)发酵过程中加入黑根霉和华根霉。
所述黑根霉和华根霉的重量配比为3:1。
有益效果
本发明选用糯米、薏仁、玉兰花瓣、甜叶菊、桑叶、芦荟、薄荷、淫羊藿和陈皮为原料,并对原料的用量进行调控,使得原料之间形成协同的功效,进而达到增食欲、降血糖、降血脂、提高免疫力的作用;此外,还对工艺的改进,将糯米、薏仁和玉兰花瓣熬煮得到底料,将甜叶菊、桑叶和淫羊藿加热得中药提取液,将芦荟、薄荷和陈皮碾压成分,再将底料、中药提取液和中药粉混合发酵制备成酒曲,对原料选用不同的处理方式,使得原料中的有效成分能够得到较大程度的保留,提升产品附加值;尤其是通过玉兰花瓣的加入,不仅赋予了酒曲玉兰的香味,同时将其与原料中其他成分配伍后,能够有效的治疗感冒、鼻炎等病症;本发明酒曲兼具玉兰花香和酒香,无异味,饮用起来口感爽净,唇齿留香。
具体实施方式
下面结核具体的实施方式来对本发明的技术方案做进一步的限定,但要求保护的范围不仅局限于所作的描述。
实施例1
一种玉兰香酒曲,原料以重量份计为:糯米600g、薏仁300g、玉兰花瓣20g、甜叶菊30g、桑叶5g、芦荟5g、薄荷2g、淫羊藿8g、陈皮4g。
上述玉兰香酒曲的制备方法,包括以下步骤:
(1)采摘新鲜的玉兰花瓣,清洗干净后,粉碎得兰花粉;
(2)将糯米和薏仁清洗干净,加入兰花粉,搅拌均匀后置入锅中,加水淹没至混合物表面5cm,用武火煮5min,然后再采用小火熬煮150min,得底料,备用;
(3)将甜叶菊、桑叶和淫羊藿混合均匀,粉碎后,加入其重量8倍水加热提取,过滤后得到中药提取液;
(4)将芦荟、薄荷和陈皮混合均匀,放入微波中干燥至水分含量为25%,碾压成粉末,得中药粉;
(5)将底料、中药提取液和中药粉混合均匀,加水搅拌均匀制成曲丸,再用竹匾将曲丸放入28℃制曲室发酵48h,每隔6h翻一次,待菌丝布满曲丸表面时,通风晾曲至温度降为20℃,待水分蒸发含水量低于10%时,即可。

实施例2
一种玉兰香酒曲,原料以重量份计为:糯米700g、薏仁500g、玉兰花瓣30g、甜叶菊50g、桑叶10g、芦荟10g、薄荷5g、淫羊藿13g、陈皮7g。
上述玉兰香酒曲的制备方法,包括以下步骤:
(1)采摘新鲜的玉兰花瓣,清洗干净后,粉碎得兰花粉;
(2)将糯米和薏仁清洗干净,加入兰花粉,搅拌均匀后置入锅中,加水淹没至混合物表面7cm,用武火煮10min,然后再采用小火熬煮180min,得底料,备用;
(3)将甜叶菊、桑叶和淫羊藿混合均匀,粉碎后,加入其重量10倍水加热提取,过滤后得到中药提取液;
(4)将芦荟、薄荷和陈皮混合均匀,放入微波中干燥至水分含量为30%,碾压成粉末,得中药粉;
(5)将底料、中药提取液和中药粉混合均匀,加水搅拌均匀制成曲丸,再用竹匾将曲丸放入32℃制曲室发酵48h,每隔6h翻一次,待菌丝布满曲丸表面时,通风晾曲至温度降为25℃,待水分蒸发含水量低于10%时,即可。

实施例3
一种玉兰香酒曲,原料以重量份计为:糯米670g、薏仁420g、玉兰花瓣28g、甜叶菊40g、桑叶8g、芦荟6g、薄荷3g、淫羊藿12g、陈皮6g。
上述玉兰香酒曲的制备方法,包括以下步骤:
(1)采摘新鲜的玉兰花瓣,清洗干净后,粉碎得兰花粉;
(2)将糯米和薏仁清洗干净,加入兰花粉,搅拌均匀后置入锅中,加水淹没至混合物表面6cm,用武火煮10min,然后再采用小火熬煮170min,得底料,备用;
(3)将甜叶菊、桑叶和淫羊藿混合均匀,粉碎后,加入其重量9倍水加热提取,过滤后得到中药提取液;
(4)将芦荟、薄荷和陈皮混合均匀,放入微波中干燥至水分含量为30%,碾压成粉末,得中药粉;
(5)将底料、中药提取液和中药粉混合均匀,加水搅拌均匀制成曲丸,再用竹匾将曲丸放入30℃制曲室发酵48h,每隔6h翻一次,待菌丝布满曲丸表面时,通风晾曲至温度降为24℃,待水分蒸发含水量低于10%时,即可。

所述步骤(4)干燥温度为95℃。
所述步骤(5)发酵过程中加入黑根霉和华根霉。

1.一种玉兰香酒曲,其特征在于,原料以重量份计为:糯米600~700份、薏仁300~500份、玉兰花瓣20~30份、甜叶菊30~50份、桑叶5~10份、芦荟5~10份、薄荷2~5份、淫羊藿8~13份、陈皮4~7份。
2.如权利要求1所述玉兰香酒曲,其特征在于,所述原料以重量份计为:糯米670份、薏仁420份、玉兰花瓣28份、甜叶菊40份、桑叶8份、芦荟6份、薄荷3份、淫羊藿12份、陈皮6份。
3.如权利要求1或2所述玉兰香酒曲的制备方法,其特征在于,包括以下步骤:
(1)采摘新鲜的玉兰花瓣,清洗干净后,粉碎得兰花粉;
(2)将糯米和薏仁清洗干净,加入兰花粉,搅拌均匀后置入锅中,加水淹没至混合物表面5~7cm,用武火煮5~10min,然后再采用小火熬煮150~180min,得底料,备用;
(3)将甜叶菊、桑叶和淫羊藿混合均匀,粉碎后,加入其重量8~10倍水加热提取,过滤后得到中药提取液;
(4)将芦荟、薄荷和陈皮混合均匀,放入微波中干燥至水分含量为25~30%,碾压成粉末,得中药粉;
(5)将底料、中药提取液和中药粉混合均匀,加水搅拌均匀制成曲丸,再用竹匾将曲丸放入28~32℃制曲室发酵48h,每隔6h翻一次,待菌丝布满曲丸表面时,通风晾曲至温度降为20~25℃,待水分蒸发含水量低于10%时,即可。
