优选地,所述功能糖包含魔芋膳食纤维、菊芋粉和低聚异麦芽糖。魔芋膳食纤维是常用的代餐食品,几乎无热量,膨胀系数高,其特有的葡甘露聚糖成分不被小肠吸收,可调整肠道健康,缓解便秘,辅助降低血糖血脂等。
更优选地,按质量份数计,所述功能糖包含魔芋膳食纤维10-20份、菊芋粉13-26份和低聚异麦芽糖18-36份。
优选地,所述杂粮粉包含黄豆熟粉、红豆熟粉、黑米熟粉、紫薯粉、大麦熟粉、小麦熟粉、南瓜粉、燕麦熟粉、黑芝麻熟粉和枣粉。杂粮粉营养丰富,可以保护肠胃,也能够有效的排除身体内的毒素,起到护肤作用。
更优选地,按质量份数计,所述杂粮粉包含黄豆熟粉2.5-5份、红豆熟粉2.5-5份、黑米熟粉3.5-7份、紫薯粉2-4份、大麦熟粉2.6-5.2份、小麦熟粉2.4-4.8份、南瓜粉2-4份、燕麦熟粉3-6份、黑芝麻熟粉1-2份和枣粉2-4份。
添加乳清蛋白粉可以使代餐包的口感变得丰满、浓郁且厚重。并且亚麻籽是富含不饱和脂肪酸以及膳食纤维的功能俱佳的成分,而且会增加冲泡后的粘稠度和香气。
优选地,所述酵素粉由原料通过以下步骤制备:
(1)预处理:将原料清洗干净后风力吹干,然后用紫外线照射进行表面杀菌,粉碎后成浆液;
(2)厌氧发酵:以重量含量计,将40%~60%的所述浆液、30%~50%的水和5%~15%的红糖置入密闭容器,添加5%酵母菌液后30℃发酵140~160天,然后过滤得到酵素初液和一次发酵渣;
(3)好氧发酵:向所述酵素初液中添加10%醋酸菌液,并且打开密闭容器,常温发酵50~70天,至乙醇含量低于0.5%且糖度不高于5,然后过滤得到二次发酵液和二次发酵渣;
(4)酵素渣处理:将所述二次发酵渣冷冻干燥,超微粉碎后过200目筛,即得酵素粉。
另一方面还提供上述综合酵素代餐包的制备方法,其包括以下步骤:
将酵素粉、功能糖、杂粮粉中的各成分预先按照比重称重混合,然后根据配方将将酵素粉、功能糖、杂粮粉、乳清蛋白粉和亚麻籽粉按照配方比重称量,然后混合均匀,灭菌、装袋,即得综合酵素代餐包。
本发明相比现有技术具有以下优点:本发明的酵素代餐包体现“酵素”的养生概念和产品风格,同时追求低热量,高膳食纤维的原则;有减肥,降脂,促排便,改善心脑血管健康等功能。并且成分更加丰富,总体热量减少,蛋白类物质的比重高。另外,酵素粉来自于不同品种的水果单独发酵,相比于多品种混合发酵而言,对于不同的水果酵素的含量的把控更准确,单独发酵的各种酵素粉作为最终产品的素材之一,配合起来方便易操作,组合更多样,更容易实现产品功能的多样化。此外,好氧发酵后得到的酵素渣呈浑浊的糊状,富含水果原有的多糖、果胶、纤维素和其他不溶性固形物,以及经过长时间微生物静置发酵分解和转化形成的其他有益成分和微生物酶,营养成分含量较二次发酵液为高,是酵素的精华所在。经过低温冷冻干燥保持了酵素的活性。本发明在酵素粉的基础上,辅以功能糖、杂粮粉、乳清蛋白粉和亚麻籽粉,配合而成的酵素代餐包富含膳食纤维、粗多糖、蛋白质和不饱和脂肪酸,营养和口感俱佳,能够代替常规饮食,为人们生活提供便利。
具体实施方式
下面对本发明的实施例作详细说明,本实施例在以本发明技术方案为前提下进行实施,给出了详细的实施方式和具体的操作过程,但本发明的保护范围不限于下述的实施例。
实施例1酵母菌液和醋酸菌液的制备
取1份糙米加10份水加热煮成米浆,分别加入万分之一含量的固体酵母菌或醋酸菌,30℃恒温室培养3天,即得酵母菌液或醋酸菌液,备用。
实施例2
A.糙米粉、苹果粉和凤梨粉等酵素粉的制备
(1)预处理:
糙米预处理:将市售糙米清洗干净后风力吹干,然后用紫外线照射进行表面杀菌,粉碎后制成糙米浆液。
苹果预处理:将市售苹果清洗干净后风力吹干,然后用紫外线照射进行表面杀菌,粉碎后制成苹果浆液。
凤梨预处理:将市售凤梨清洗干净后风力吹干,然后用紫外线照射进行表面杀菌,粉碎后制成凤梨浆液。
(2)厌氧发酵:
厌氧发酵:将40%糙米、苹果或凤梨浆液、50%水和5%的红糖置入密闭容器,添加5%酵母菌液(由实施例1制备)后30℃发酵150天,然后过滤得到糙米、苹果或凤梨酵素初液和糙米、苹果或凤梨一次发酵渣。
(3)好氧发酵:向上述糙米、苹果或凤梨酵素初液中分别添加10%醋酸菌液(由实施例1制备),并且打开密闭容器,常温发酵60天,至乙醇含量为0.4%且糖度为5,然后过滤得到糙米、苹果或凤梨二次发酵液和二次发酵渣。
(4)酵素渣处理:将上述糙米二次发酵渣冷冻干燥,超微粉碎后过200目筛,即得糙米粉,备用。
将上述苹果二次发酵渣冷冻干燥,超微粉碎后过200目筛,即得苹果粉,备用。
将上述凤梨二次发酵渣冷冻干燥,超微粉碎后过200目筛,即得凤梨粉,备用。
B.综合酵素代餐包的制备
酵素粉:按质量份数计,取糙米粉3份、苹果粉1份和凤梨粉1份,混合均匀。
功能糖、杂粮粉、乳清蛋白粉和亚麻籽粉均为市售原料。
功能糖:按质量份数计,取魔芋膳食纤维10份、菊芋粉13份和低聚异麦芽糖18份,混合均匀。
杂粮粉:按质量份数计,取黄豆熟粉2.5份、红豆熟粉2.5份、黑米熟粉3.5份、紫薯粉2份、大麦熟粉2.6份、小麦熟粉2.4份、南瓜粉2份、燕麦熟粉3份、黑芝麻熟粉1份和枣粉2份,混合均匀。
按质量份数计,将上述酵素粉10份、功能糖18份、杂粮粉40份、乳清蛋白粉3份和亚麻籽粉6份混合均匀,灭菌、每25g装一袋,即得综合酵素代餐包。
食用时,将一袋代餐包(25g)倒入杯中,加入约200ml沸水调匀食用,也可根据个人口味适当加减,稍事冷却(3-5分钟),待充分溶胀后食用口感较佳。
实施例3
A.糙米粉、苹果粉和凤梨粉等酵素粉的制备
(1)预处理:按照实施例2的预处理方式对糙米、苹果和凤梨进行预处理。
(2)厌氧发酵:
厌氧发酵:将60%糙米、苹果或凤梨浆液、30%水和5%的红糖置入密闭容器,添加5%酵母菌液(由实施例1制备)后30℃发酵140天,然后过滤得到糙米、苹果或凤梨酵素初液和糙米、苹果或凤梨一次发酵渣。
(3)好氧发酵:向上述糙米、苹果或凤梨酵素初液中分别添加10%醋酸菌液(由实施例1制备),并且打开密闭容器,常温发酵50天,至乙醇含量为0.3%且糖度为4,然后过滤除滤液得到糙米、苹果或凤梨二次发酵液和二次发酵渣。
(4)酵素渣处理:按照实施例2的方式处理糙米、苹果和凤梨二次发酵渣,即得糙米粉、苹果粉和凤梨粉,备用。
B.综合酵素代餐包的制备
酵素粉:按质量份数计,取糙米粉3份、苹果粉2份和凤梨粉2份,混合均匀。
功能糖、杂粮粉、乳清蛋白粉和亚麻籽粉均为市售原料。
功能糖:按质量份数计,取魔芋膳食纤维10份、菊芋粉26份和低聚异麦芽糖30份,混合均匀。
杂粮粉:按质量份数计,取黄豆熟粉5份、红豆熟粉2.5份、黑米熟粉7份、紫薯粉3份、大麦熟粉5份、小麦熟粉4份、南瓜粉4份、燕麦熟粉6份、黑芝麻熟粉1份和枣粉4份,混合均匀。
按质量份数计,将上述酵素粉10份、功能糖25份、杂粮粉55份、乳清蛋白粉3份和亚麻籽粉10份混合均匀,灭菌、每25g装一袋,即得综合酵素代餐包。
食用时,将一袋代餐包(25g)倒入杯中,加入约200ml沸水调匀食用,也可根据个人口味适当加减,稍事冷却(3-5分钟),待充分溶胀后食用口感较佳。
本发明的酵素代餐包体现“酵素”的养生概念和产品风格,同时追求低热量,高膳食纤维的原则;有减肥,降脂,促排便,改善心脑血管健康等功能。并且成分更加丰富,总体热量减少,蛋白类物质的比重高。

Claims (10)
1.一种综合酵素代餐包,其特征在于,按质量份数计,包含酵素粉10-20份、功能糖18-25份、杂粮粉40-55份、乳清蛋白粉3-7份和亚麻籽粉6-10份。
2.根据权利要求1所述的综合酵素代餐包,其特征在于,所述酵素粉包含糙米粉、苹果粉和凤梨粉。
3.根据权利要求2所述的综合酵素代餐包,其特征在于,按质量份数计,所述酵素粉包含糙米粉3-6份、苹果粉1-2份和凤梨粉1-2份。
4.根据权利要求2所述的综合酵素代餐包,其特征在于,所述糙米粉、苹果粉和凤梨粉分别由糙米、苹果和凤梨通过二次发酵后制得。
5.根据权利要求1所述的综合酵素代餐包,其特征在于,所述功能糖包含魔芋膳食纤维、菊芋粉和低聚异麦芽糖。
6.根据权利要求5所述的综合酵素代餐包,其特征在于,按质量份数计,所述功能糖包含魔芋膳食纤维10-20份、菊芋粉13-26份和低聚异麦芽糖18-36份。
7.根据权利要求1所述的综合酵素代餐包,其特征在于,所述杂粮粉包含黄豆熟粉、红豆熟粉、黑米熟粉、紫薯粉、大麦熟粉、小麦熟粉、南瓜粉、燕麦熟粉、黑芝麻熟粉和枣粉。
8.根据权利要求7所述的综合酵素代餐包,其特征在于,按质量份数计,所述杂粮粉包含黄豆熟粉2.5-5份、红豆熟粉2.5-5份、黑米熟粉3.5-7份、紫薯粉2-4份、大麦熟粉2.6-5.2份、小麦熟粉2.4-4.8份、南瓜粉2-4份、燕麦熟粉3-6份、黑芝麻熟粉1-2份和枣粉2-4份。
9.根据权利要求2所述的综合酵素代餐包,其特征在于,所述酵素粉由原料通过以下步骤制备:
(1)预处理:将原料清洗干净后风力吹干,然后用紫外线照射进行表面杀菌,粉碎后成浆液;
(2)厌氧发酵:以重量含量计,将40%~60%的所述浆液、30%~50%的水和5%~15%的红糖置入密闭容器,添加5%酵母菌液后30℃发酵140~160天,然后过滤得到酵素初液和一次发酵渣;
(3)好氧发酵:向所述酵素初液中添加10%醋酸菌液,并且打开密闭容器,常温发酵50~70天,至乙醇含量低于0.5%且糖度不高于5,然后过滤得到二次发酵液和二次发酵渣;
(4)酵素渣处理:将所述二次发酵渣冷冻干燥,超微粉碎后过200目筛,即得酵素粉。
10.根据权利要求1-9中任一项所述的综合酵素代餐包的制备方法,其特征在于,包括以下步骤:
将酵素粉、功能糖、杂粮粉中的各成分预先按照比重称重混合,然后根据配方将酵素粉、功能糖、杂粮粉、乳清蛋白粉和亚麻籽粉按照配方比重称量,然后混合均匀,灭菌、装袋,即得综合酵素代餐包。
