Abstract
本发明提供了一种固香型微胶囊果冻,其按重量份数包括以下组分:精油固香微胶囊0.1‑0.5份、果汁60‑70份、凝胶辅料12‑13份、甜味辅料3‑10份、防腐剂0.1‑0.5份、维生素C 0.1‑0.5份、有机酸0.2‑0.8份、缓冲盐0.1‑0.5份。本发明的固香型微胶囊果冻能够缓慢释香、香味持久、口齿生香、天然安全、营养丰富。

技术领域
本发明属于食品领域,具体涉及一种果冻,特别是一种固香型微胶囊果冻。
背景技术
果冻是一种休闲食品,口感软滑,大众接受程度高,每年以20-30%的增长率快速发展。随着果冻产业发展,未来主流趋向天然化、功能性化。
陈皮精油,具有理气健脾、燥湿化痰的保健作用。
柠檬精油,有助于改善体内微循环,具有提神醒脑、振奋精神、缓解烦躁的作用。
高良姜精油,具有温胃止呕、改善消化不良等作用,长期服用可温和排毒,并有明显的醒酒作用。
火龙果,又称红龙果、龙珠果、仙蜜果、玉龙果等,为仙人掌科(Cacataceae)量天尺属多年生蔓性植物火龙果(Hylocereus undulatus Britt)的果实。火龙果因其多汁味美、营养丰富而受到消费者的喜爱,其果形独特,美味可口,营养丰富,是一种新兴的有良好保健功效的水果,具有广阔的发展前景。尤其是红心火龙果,色彩鲜艳,更是受到人们的青睐,其中的天然色素属于甜菜苷类色素,可抗氧化、减少和清除自由基、抑制黑色素瘤细胞、革兰氏菌、酵母菌、霉菌等的生成。然而火龙果成熟期气温高,鲜果含水量高不易储存,采后鲜果在自然条件下极易腐烂,鲜果贮藏期短。
发明内容
本发明的一个目的在于针对以上要解决的技术问题,提供一种能够缓慢释香、香味持久、口齿生香、天然安全、营养丰富的功能型果冻。
本发明的另一个目的在于提供上述功能型果冻的制备方法。
为此,本发明提供了如下技术方案:
一种固香型微胶囊果冻,其按重量份数包括以下组分:精油固香微胶囊0.1-0.5份、果汁60-70份、凝胶辅料12-13份、甜味辅料3-10份、防腐剂0.1-0.5份、维生素C 0.1-0.5份、有机酸0.2-0.8份、缓冲盐0.1-0.5份。
在本发明的一个方面,所述精油固香微胶囊经由以下步骤制得:
(1)制备水相液:将麦芽糖浆和变形淀粉以重量比5:1混合后,加入与混合物等质量的纯净水,在90℃下80rpm搅拌至完全溶解均匀;
(2)制备油相液:另外将精油在40℃下20rpm进行搅拌,并加入占其重量百分比为20%的单甘脂和硬脂酰乳酸钠的混合物,其中单甘脂和硬脂酰乳酸钠的重量比为3:1,搅拌至完全溶解均匀;
(3)将油相液泵入水相液中,其中水相液占两者总体积的55-85%,保持在40℃下20rpm搅拌30min,直至乳液搅拌均匀;
(4)在30MPa下进行均质;
(5)喷雾干燥,即得所述精油固香微胶囊。
在本发明的一个方面,精油为可食天然植物精油。更优选地,精油为陈皮精油、柠檬精油或高良姜精油。
在本发明的一个方面,精油通过水蒸气蒸馏法提取并经油水分离后制得。
在本发明的一个方面,果汁为火龙果果汁。
在本发明的一个方面,凝胶辅料为海藻卡拉胶、魔芋粉、琼脂、明胶、结冷胶、槐豆胶中的至少一种或几种。
在本发明的一个方面,甜味辅料为糖类或甜味剂。优选地,糖类包括但不限于白砂糖、葡萄糖、果糖、麦芽糖。优选地,甜味剂包括但不限于天然甜味剂和人工合成甜味剂。更优选地,天然甜味剂包括但不限于甜菊糖、甘草苷、木糖醇。更优选地,人工合成甜味剂包括但不限于糖精、糖精钠、麦芽糖醇、山梨糖醇、甜蜜素、阿斯巴甜、安赛蜜、三氯蔗糖。
在本发明的一个方面,防腐剂为山梨酸钾。
在本发明的一个方面,有机酸是苹果酸、酒石酸、柠檬酸中的至少一种。
在本发明的一个方面,缓冲盐是枸橼酸盐、磷酸盐、磷酸二氢盐、醋酸-醋酸钠中的任意一种。
本发明还提供了所述固香型微胶囊果冻的制备方法,步骤如下:
(1)将凝胶辅料用适量温水冲开后加热至溶解;
(2)加入甜味辅料、防腐剂、维生素C、有机酸以及缓冲盐,调pH值至4.2-6.5;
(3)加入果汁、精油固香微胶囊,即得固香型微胶囊果冻。
精油存在挥发快、稳定性差、不易保存、香味持续短等问题,然而,本发明采用精油微胶囊技术,将可食的天然精油通过微胶囊化后,使精油具有较高的稳定性并能很好地防止外部环境的影响,能够解决贮藏难、留香时间短等上述问题,同时和火龙果进行调香复配,协调火龙果的香味和精油的香味,不仅赋予果冻新颖持久的香味,还将植物精油中功能性成分与果冻进行有机结合,使得两者能够互相促进、协同产生较为清香和富含多层次感的口感和风味。本发明将精油固香微胶囊添加至果冻里,使果冻具有缓慢释香、香味持久、口齿生香的技术效果,并且能够显著改善果冻入口的口感,使其更加柔滑。
本发明的果冻除了能够提供各种特殊风味,还能够将精油活性成分与火龙果中的功能性成分结合,产生健脾、改善微循环、温胃理气各种协同作用,有益于身体健康。

具体实施方式
下面结合具体实施例,对本发明的技术方案作进一步详述,但本发明并不限于以下实施例。
如未特别指出,以下组分原料均可通过商业渠道购买或通过已知方法制备获得。
如未特别指出,以下实施例中所涉及的原料组分份数均为重量份数。
火龙果果汁的制备:将火龙果净选去皮榨汁去果籽去渣,并灭菌,即得。
实施例1
陈皮味火龙果果冻
以陈皮为原料,通过水蒸气蒸馏法提取陈皮精油,经油水分离后备用。
将麦芽糖浆和变形淀粉(重量比5:1)混合后,加入等质量的纯净水,在冷热缸中90℃下80rpm搅拌至完全溶解均匀,制备水相液;将陈皮精油在另一冷热缸中40℃下20rpm进行搅拌,并加入占陈皮精油重量比20%的单甘脂和硬脂酰乳酸钠的混合物(两者重量比3:1),搅拌至完全溶解均匀,制备油相液;通过蠕动泵将油相液泵入水相液中(水相液占两者总体积的55%),并保持40℃下20rpm搅拌30min,等到形成均匀乳液;在30MPa下进行高压均质;喷雾干燥即得固香缓释微胶囊。
将海藻卡拉胶4.5份、魔芋粉2.8份、琼脂5.7份混合少量温水12份冲开后加热至溶解,然后加入糖精钠3份,山梨酸钾0.5份,维生素C 0.5份,柠檬酸0.2份,酒石酸0.6份,与0.3份磷酸二氢钠进行pH值调节至4.2。继续加热至全部辅料溶解待稍凉加入果汁70份、陈皮精油微胶囊0.5份,封装冷藏。
实施例2
柠檬味火龙果果冻
以柠檬为原料,通过水蒸气蒸馏法提取柠檬精油,经油水分离后备用。
将麦芽糖浆和变形淀粉(重量比5:1)混合后,加入等质量的纯净水,在冷热缸中90℃下80rpm搅拌至完全溶解均匀,制备水相液;将柠檬精油在另一冷热缸中40℃下20rpm进行搅拌,并加入占柠檬精油重量比20%的单甘脂和硬脂酰乳酸钠(两者重量比3:1),搅拌至完全溶解均匀,制备油相液;通过蠕动泵将油相液泵入水相液中(水相液占两者总体积的65%),并保持40℃下20rpm搅拌30min,等到形成均匀乳液;在30MPa下进行高压均质;喷雾干燥即得固香缓释微胶囊。
将海藻卡拉胶7份、明胶3.2份、槐豆胶2.8份混合12份温水冲开后加热至溶解,然后加入甜菊糖5份,山梨酸钾0.1份,维生素C 0.3份,苹果酸0.2份,与醋酸-醋酸钠0.5份进行pH值调节至6.5。继续加热至全部辅料溶解待稍凉加入果汁60份、柠檬精油微胶囊0.3份,封装冷藏。
实施例3
高良姜味火龙果果冻
以高良姜为原料,通过水蒸气蒸馏法提取高良姜精油,经油水分离后备用。
将麦芽糖浆和变形淀粉(重量比5:1)混合后,加入等质量的纯净水,在冷热缸中90℃下80rpm搅拌至完全溶解均匀,制备水相液;将高良姜精油在另一冷热缸中40℃下20rpm进行搅拌,并加入占高良姜精油重量比20%的单甘脂和硬脂酰乳酸钠(两者重量比3:1),搅拌至完全溶解均匀,制备油相液;通过蠕动泵将油相液泵入水相液中(水相液占两者总体积的85%),并保持40℃下20rpm搅拌30min,等到形成均匀乳液;在30MPa下进行高压均质;喷雾干燥即得固香缓释微胶囊。
将海藻卡拉胶8.7份、魔芋粉1.3份、结冷胶2份混合12份温水冲开后加热至溶解,然后加入白砂糖10份,山梨酸钾0.5份,维生素C 0.1份,柠檬酸0.5份,与0.2份枸橼酸钠进行pH值调节至5,继续加热至全部辅料溶解待稍凉加入果汁65份、高良姜精油微胶囊0.1份,封装冷藏。
产品效果评价
以高良姜精油果冻为例,采用气相色谱质谱对实施例3得到的高良姜精油(非胶囊化)、高良姜精油微胶囊、原味火龙果果冻、碾碎的高良姜味火龙果果冻、碾碎1小时后的高良姜味火龙果果冻分别进行检测,结果如图1至图5所示。
由图1、图2可见,精油微胶囊化后可解决挥发快、稳定性差、不易保存、香味持续短等问题。
由图3、图4和图5可见,添加高良姜精油微胶囊,将果冻碾碎1小时后,风味基本和刚碾碎的TIC图(总离子流图)保持一致,达到缓慢释香、香味持久、挥发少、稳定性改善的目的。
风味感官评定
受试人数为23人,对对照例1(未添加精油,其他成分同实施例3)、对照例2(添加非微胶囊化的精油,其他成分同实施例3)、实施例1、实施例2、实施例3的果冻分别进行试吃后的风味感官评定,结果如下表所示。
以上风味感官评定结果表明,与对照例1、对照例2相比,本发明实施例1、实施例2、实施例3的果冻入口香味均非常浓郁,且香味持久。
Claims (10)
1.一种固香型微胶囊果冻,其特征在于按重量份数包括以下组分:精油固香微胶囊0.1-0.5份、果汁60-70份、凝胶辅料12-13份、甜味辅料3-10份、防腐剂0.1-0.5份、维生素C0.1-0.5份、有机酸0.2-0.8份、缓冲盐0.1-0.5份。
2.根据权利要求1所述的固香型微胶囊果冻,其特征在于,所述精油固香微胶囊经由以下步骤制得:
(1)制备水相液:将麦芽糖浆和变形淀粉以重量比5:1混合后,加入与混合物等质量的纯净水,在90℃下80rpm搅拌至完全溶解均匀;
(2)制备油相液:将精油在40℃下20rpm进行搅拌,并加入占其重量百分比为20%的单甘脂和硬脂酰乳酸钠的混合物,其中所述单甘脂和所述硬脂酰乳酸钠的重量比为3:1,搅拌至完全溶解均匀;
(3)将所述油相液泵入所述水相液中,其中水相液占两者总体积的55-85%,保持在40℃下20rpm搅拌30min,直至乳液搅拌均匀;
(4)在30MPa下进行均质;
(5)喷雾干燥,即得所述精油固香微胶囊。
3.根据权利要求2所述的固香型微胶囊果冻,其特征在于,所述精油为可食天然植物精油。
4.根据权利要求2所述的固香型微胶囊果冻,其特征在于,所述精油为陈皮精油、柠檬精油或高良姜精油。
5.根据权利要求2所述的固香型微胶囊果冻,其特征在于,所述精油通过水蒸气蒸馏法提取并经油水分离后制得。
6.根据权利要求1所述的固香型微胶囊果冻,其特征在于,所述果汁为火龙果果汁。
7.根据权利要求1所述的固香型微胶囊果冻,其特征在于,所述凝胶辅料为海藻卡拉胶、魔芋粉、琼脂、明胶、结冷胶、槐豆胶中的至少一种或几种。
8.根据权利要求1所述的固香型微胶囊果冻,其特征在于,所述甜味辅料为糖类或甜味剂。
9.根据权利要求1所述的固香型微胶囊果冻,其特征在于,所述有机酸是苹果酸、酒石酸、柠檬酸中的至少一种。
10.权利要求1-9任一项所述的固香型微胶囊果冻的制备方法,其特征在于步骤如下:
(1)将凝胶辅料用适量温水冲开后加热至溶解;
(2)加入甜味辅料、防腐剂、维生素C、有机酸以及缓冲盐,调pH值至4.2-6.5;
(3)加入果汁、精油固香微胶囊,即得固香型微胶囊果冻。
