Abstract
本发明公开了一种大麦嫩苗固体饮料及其制备方法,属于保健食品技术领域。该固体饮料以大麦嫩苗粉为主要原料,同时添加仙人掌提取物、三七提取物、荷叶提取物、猕猴桃粉等多种功能性成分,辅以多种辅料,复配后营养成分更加全面,补充体内所需各类营养元素,满足不同人群健康需求,保健效果更好。该固体饮料除了具有排毒、促消化、提高机体免疫力等功效,还对高血压、高血糖、高血脂患者具有较好的保健效果。

本发明涉及一种固体饮料,具体地说是一种大麦嫩苗粉固体饮料及其制备方法,属于保健食品技术领域。
背景技术
大麦嫩苗的营养及药用价值早在《本草纲目》中就有记载:“麦苗,气味辛、寒、无毒,主治消酒毒、暴热、酒疽、目黄,并捣烂绞碎滤服之,又解蛊毒;煮汁滤服,除烦闷,除时疾狂热,退胸隔热,利小肠、作苗食,甚益颜色”。现代研究表明:大麦嫩苗是一种均衡含有人体所需六大基本营养素及几十种微量元素、具有显著排毒功效,并可营养细胞的高碱性纯天然健康食品。大麦嫩苗富含维生素A、C、E、B族和钙、镁、磷、铁、硒矿物质等营养素,同时富含叶绿素,优质膳食纤维(占苗干重14~25%)和超氧化物歧化酶(SOD)、过氧化氢酶(CAT)等具有抗氧化、延缓衰老作用的活性成分,具有降血糖、降血压、降血脂、改善细胞营养作用,增强身体素质和肌体免疫力,帮助肠胃蠕动,促进消化吸收,清除体内毒素,有效平衡人体新城代谢,达到预防多种疾病的目的。大麦嫩苗粉因其良好的保健功效深受广大消费者的喜爱,但目前国内市场上的大麦嫩苗产品虽然琳琅满目,但大部分产品的配方组成成分都较单一,仅仅以大麦苗粉为主要原料,辅以常规辅料制备而成,未与其他功能性原料相结合,不管在营养功效还是口感性状方面,都达不到理想的效果。随着生活水平的不断提高,人们对营养健康保健的需求越来越高,尤其是在针对“现代文明病”(主要指心脏病、高血压、糖尿病、肝病、肥胖、癌症等)的预防与治疗上具有良好效果的保健食品越来越受到广大群众的欢迎。
发明内容
针对现有技术中存在的问题,本发明提供了一种大麦嫩苗粉固体饮料。该固体饮料以大麦嫩苗为主要原料,同时添加多种功能性成分,与大麦嫩苗粉协同作用,营养更加全面,促进了机体对营养物质的吸收与利用,在具有排毒、促进胃肠蠕动的同时还对高血压、高血糖、高血脂患者具有良好的预防与治疗作用,能能够有效提高机体的免疫力,是一种良好的多功能保健食品。
本发明还提供了上述大麦嫩苗固体饮料的制备方法。
本发明采用以下技术方案:
一种大麦若叶青汁固体饮料,它是由以下重量份的原料制成:大麦嫩苗粉80-100份、仙人掌提取物10-15份、三七提取物3-8份、荷叶提取物6-15份、猕猴桃粉10-15份、大蒜多糖6-10份、维生素C 3-8份、叶酸1-3份、低聚异麦芽糖10-20份。
优选的,所述的大麦嫩苗粉固体饮料,它是由以下重量份的原料制成:大麦嫩苗粉90份、仙人掌提取物12份、三七提取物5份、荷叶提取物10份、猕猴桃粉12份、大蒜多糖8份、维生素C 5份、叶酸2份、低聚异麦芽糖15份。
上述的大麦嫩苗粉固体饮料的制备方法,它包括以下步骤:
(1)选取20-30公分的有机大麦嫩苗为原料,清洗除杂后置于90℃条件下烫漂10min,捞出后置于-20~-25℃下冷冻4-6小时后,于真空度为50-60Pa、隔板温度50-60℃的真空冷冻干燥机种干燥1-2小时,然后将干燥后的嫩苗取出进行超微粉碎,过180-200目筛,制得大麦嫩苗粉;
(2)将新鲜仙人掌清洗去皮,切段,于90-95℃热水中煮5-7分钟,然后取出加入5-8倍量清水打浆后静置8-12小时,浆液水浴回流提取2-3次,每次1-1.5小时,合并提取液并浓缩至稠膏状,然后真空冷冻干燥至粉末,制得仙人掌提取物,备用;
(3)挑选三七清洗后切碎,加入5-8倍量清水浸泡20-24小时,然后经水浴回流提取2-3次,每次1-2小时,合并提取液并浓缩至稠膏状,然后真空冷冻干燥至粉末,制得三七提取物,备用;
(4)将荷叶清洗后切碎,加入5-8倍量清水浸泡20-24小时,然后经水浴回流提取2-3次,每次1-2小时,合并提取液并浓缩至稠膏状,然后真空冷冻干燥至粉末,制得荷叶提取物,备用;
(5)选取优质猕猴桃,清洗后切片放入90-95℃的水中烫漂10min,然后取出置入烘箱中干燥至含水量<3%,磨成细粉并过100-150目筛即得猕猴桃粉,备用;
(6)将上述步骤所制得的大麦嫩苗粉、仙人掌提取物、三七提取物、荷叶提取物、猕猴桃粉和大蒜多糖、维生素C、叶酸、低聚异麦芽糖按照重量配比充分混合均匀,然后进一步超微粉碎成180-200目的粉末,最后经微波灭菌,包装即得成品。
所述真空冷冻干燥的真空度为1-3Pa,冷冻室温度为-20-30℃,冷冻时间为3-5小时。
本发明的有益效果是:以有机大麦嫩苗为主要原料,同时添加仙人掌提取物、三七提取物、荷叶提取物、猕猴桃粉等多种功能性成分,复配后营养成分更加全面,补充体内所需各类营养元素,满足不同人群健康需求,保健效果更好。本发明的产品富含多种膳食纤维,还含有多种黄酮类化合物、叶绿素、天然维生素及矿物质补充源、天然食物纤维、活性酵素、蛋白质等,可以增强提高人体的免疫系统和抗病能力,调节及维持身体健康的PH值,缓解压力,焦虑及预防老化。该固体饮料除了具有排毒、促消化、提高机体免疫力等功效,还具有显著的降低高血压、高血脂、高血糖的效果,由于各原料组分协同作用,养分吸收更加完全,其降三高的功效要明显高于任何单一组分的效果,且食用方便,口感好。
具体实施方式
下面结合具体实施例对本发明的内容进行详细的说明。
实施例1
一种大麦若叶青汁固体饮料,它是由以下重量份的原料制成:大麦嫩苗粉80份、仙人掌提取物10份、三七提取物3份、荷叶提取物6份、猕猴桃粉10份、大蒜多糖6份、维生素C 3份、叶酸1份、低聚异麦芽糖10份。
上述的大麦嫩苗粉固体饮料采用下述方法制备得到:
(1)选取20-30公分的有机大麦嫩苗为原料,清洗除杂后置于90℃条件下烫漂10min,捞出后置于-20~-25℃下冷冻4-6小时后,于真空度为50-60Pa、隔板温度50-60℃的真空冷冻干燥机种干燥1-2小时,然后将干燥后的嫩苗取出进行超微粉碎,过180-200目筛,制得大麦嫩苗粉;

(6)将上述步骤所制得的大麦嫩苗粉、仙人掌提取物、三七提取物、荷叶提取物、猕猴桃粉和大蒜多糖、维生素C、叶酸、低聚异麦芽糖按照重量配比充分混合均匀,然后进一步超微粉碎成180-200目的粉末,最后经微波灭菌,包装即得成品,3g/袋。
实施例2
一种大麦若叶青汁固体饮料,它是由以下重量份的原料制成:大麦嫩苗粉100份、仙人掌提取物15份、三七提取物8份、荷叶提取物15份、猕猴桃粉15份、大蒜多糖10份、维生素C 8份、叶酸3份、低聚异麦芽糖20份。
上述的大麦嫩苗粉固体饮料采用下述方法制备得到:
(1)选取20-30公分的有机大麦嫩苗为原料,清洗除杂后置于90℃条件下烫漂10min,捞出后置于-20~-25℃下冷冻4-6小时后,于真空度为50-60Pa、隔板温度50-60℃的真空冷冻干燥机种干燥1-2小时,然后将干燥后的嫩苗取出进行超微粉碎,过180-200目筛,制得大麦嫩苗粉;
(2)将新鲜仙人掌清洗去皮,切段,于90-95℃热水中煮5-7分钟,然后取出加入5-8倍量清水打浆后静置8-12小时,浆液水浴回流提取2-3次,每次1-1.5小时,合并提取液并浓缩至稠膏状,然后真空冷冻干燥至粉末,制得仙人掌提取物,备用;其中的真空冷冻干燥的真空度为1-3Pa,冷冻室温度为-20-30℃,冷冻时间为3-5小时。

(5)选取优质猕猴桃,清洗后切片放入90-95℃的水中烫漂10min,然后取出置入烘箱中干燥至含水量<3%,磨成细粉并过100-150目筛即得猕猴桃粉,备用;
(6)将上述步骤所制得的大麦嫩苗粉、仙人掌提取物、三七提取物、荷叶提取物、猕猴桃粉和大蒜多糖、维生素C、叶酸、低聚异麦芽糖按照重量配比充分混合均匀,然后进一步超微粉碎成180-200目的粉末,最后经微波灭菌,包装即得成品,3g/袋。
实施例3

(5)选取优质猕猴桃,清洗后切片放入90-95℃的水中烫漂10min,然后取出置入烘箱中干燥至含水量<3%,磨成细粉并过100-150目筛即得猕猴桃粉,备用;
(6)将上述步骤所制得的大麦嫩苗粉、仙人掌提取物、三七提取物、荷叶提取物、猕猴桃粉和大蒜多糖、维生素C、叶酸、低聚异麦芽糖按照重量配比充分混合均匀,然后进一步超微粉碎成180-200目的粉末,最后经微波灭菌,包装即得成品,3g/袋。
下面对本发明产品的降三高功能进行试验研究
1、配方产品对高脂食物诱导小鼠体重升高、血脂四项作用研究
在kkay小鼠建立高血脂模型,测定和比较不同配方产品对小鼠体重和血脂四项的作用,以实施例3制备的产品为测试配方样品。选取雌性8周龄肥胖kkay小鼠42只,确认kkay小鼠肥胖后,随机分为:高脂饲料(脂肪含量46.5%)+双蒸水组(高脂食物组)、高脂饲料+配方产品组、高脂饲料+大麦嫩苗粉组、高脂饲料+仙人掌提取物组、高脂饲料+三七提取物组、高脂饲料+荷叶提取物组、高脂饲料+猕猴桃粉组;同时基础饲料喂养雌性8周龄C57BL/6J小鼠6只(基础饲料+双蒸水组)作为正常对照组,连续给药一个月,各组给药剂量为20mg/kg。实验结果如表1所示。

表1中的测试结果表明,喂食高脂饲料导致易肥胖kkay小鼠体重显著增加,而灌胃配方产品后可以显著减少由高脂饲料引起的kkay小鼠体重的增加,而单一原料的大麦嫩苗、仙人掌、三七、荷叶和猕猴桃组对小鼠的体重增加也分别起到一定的减少作用,但其效果并不显著。此外配方产品能显著降低kkay小鼠总胆固醇水平、小鼠甘油三脂水平、低密度脂蛋白水平,且还具有升高高密度脂蛋白水平的作用,各单一原料的对照实验组中的大麦嫩苗、仙人掌、三七、荷叶和猕猴桃组也具有相似的作用,但其单一原料的效果不显著,而本发明的配方产品对总胆固醇和甘油三酯的作用效果要明显高于各单一原料所引起变化幅度的总和,这是由于本发明个配方组分科学合理的搭配,起到了协同增效的作用,促进了各营养元素的吸收与利用。
2、配方产品对高脂食物诱导的小鼠血糖升高作用研究
在kkay小鼠建立高血糖模型,测定和比较不同配方产品对血糖的作用。雌性8周龄肥胖kkay小鼠42只,确认kkay小鼠肥胖后,随机分为:高脂饲料(脂肪含量46.5%)+双蒸水组(糖尿病组);高脂饲料+配方产品组、高脂饲料+大麦嫩苗粉组、高脂饲料+仙人掌提取物组、高脂饲料+三七提取物组、高脂饲料+荷叶提取物组、高脂饲料+猕猴桃粉组;同时基础饲料喂养雌性8周龄C57BL/6J小鼠6只(基础饲料+双蒸水组)作为正常对照组,连续给药一个月,各组给药剂量为20mg/kg。分别测定空腹血糖含量、随机血糖含量以及餐后血糖含量,其测试结果如表2所示。

由表2可以看出高脂饲料喂养诱导易患2型糖尿病的kkay小鼠后,小鼠血糖大幅度升高,灌胃各配方产品以及对照组产品后,kkay小鼠的血糖浓度发生变化。空腹血糖检测、随机血糖检测和餐后血糖检测结果显示:灌胃本发明配方产品后血糖浓度可以显著降低。由于糖耐量受损是2型糖尿病的前期必然阶段,高脂诱导的kkay小鼠糖耐量受损,调节血糖的能力降低,指示胰岛素抵抗,而给予配方产品后的kkay小鼠糖耐量受损减轻,这是由于配方产品中的有效成分起到了调节和降低血糖的作用。与糖尿病组相比,灌胃相同剂量的单一大麦嫩苗组、仙人掌组、三七组、荷叶组和猕猴桃组中,除仙人掌和三七对血糖降低较为明显之外,其他原料对血糖降低效果并不明显,而由各原料和辅料组成的本发明产品则具有较好的降血糖的效果,这是由于配方中各组分互相作用,营养搭配合理,促进各养分的吸收与利用,进而产生了较好的降血糖的效果。
3、配方产品对转基因肥胖鼠的血压升高作用研究
在SD大鼠建立高血压模型,判断高血压模型的建立:BP>120mmHg,测定和比较不同配方产品的降血压作用。雄性30天日龄的SD大鼠56只,随机均分为7组,高脂饲料(脂肪含量46.5%)+双蒸水组(高血压病组);高脂饲料+配方产品组、高脂饲料+大麦嫩苗粉组、高脂饲料+仙人掌提取物组、高脂饲料+三七提取物组、高脂饲料+荷叶提取物组、高脂饲料+猕猴桃粉组;同时基础饲料喂养雄性30天日龄的SD大鼠8只(基础饲料+双蒸水组)作为正常对照组,连续给药一个月,各组给药剂量为20mg/kg。测试结果如表3所示。

由表3可以看出高脂饲料喂养诱导大鼠与正常组比较收缩压大幅度升高,升高幅度达69.6%;灌胃本发明配方产品一个月后,配方组可以显著降低大鼠的血压,而各单一原料组对血压降低的效果并不明显。
临床应用实例
实例1:李某某,男,55岁,患高血脂多年,曾服用其他降血脂药物,效果不理想且副作用较大;经服本发明固体饮料,每天3次,一次一袋,20天后,血脂趋向正常。
实例2:孙某,男,47岁,患高血压、高血脂,伴有眩晕、胸闷,连续服用本发明产品一个月,每天3次,一次一袋,眩晕、胸闷症状消失,血脂血压明显下降。
实例3:蔡某,女,65岁,患高血脂、高血压多年,感觉头晕、手脚发麻,经服本发明产品10天,每天3次,一次1袋,症状明显好转,后继续使用本产品一周血脂血压测试以降至正常。
实例4:林某,女59岁,患高血糖、高血压,感觉头晕、疲劳、多饮多尿、消瘦,经服本发明产品,随餐饮用,温水冲服,每天3次,一次一袋,一周后头晕、疲劳症状明显减轻,继续使用本产品15天后,血糖、血压恢复正常值。
实例5:姚某某,男,73岁,患有高血压多年,患者头痛、头晕、记忆力减退、肢体麻木、夜尿增多、心悸、胸闷、乏力,经服本发明产品15天后,临床症状明显减轻,后继续服用本发明产品10天后,血压恢复正常。

1.一种大麦若叶青汁固体饮料,其特征在于,它是由以下重量份的原料制成:大麦嫩苗粉80-100份、仙人掌提取物10-15份、三七提取物3-8份、荷叶提取物6-15份、猕猴桃粉10-15份、大蒜多糖6-10份、维生素C 3-8份、叶酸1-3份、低聚异麦芽糖10-20份。
2.根据权利要求1所述的大麦嫩苗粉固体饮料,其特征在于,它是由以下重量份的原料制成:大麦嫩苗粉90份、仙人掌提取物12份、三七提取物5份、荷叶提取物10份、猕猴桃粉12份、大蒜多糖8份、维生素C 5份、叶酸2份、低聚异麦芽糖15份。

(2)将新鲜仙人掌清洗去皮,切段,于90-95℃热水中煮5-7分钟,然后取出加入5-8倍量清水打浆后静置8-12小时,浆液水浴回流提取2-3次,每次1-1.5小时,合并提取液并浓缩至稠膏状,然后真空冷冻干燥至粉末,制得仙人掌提取物,备用;
(3)挑选三七清洗后切碎,加入5-8倍量清水浸泡20-24小时,然后经水浴回流提取2-3次,每次1-2小时,合并提取液并浓缩至稠膏状,然后真空冷冻干燥至粉末,制得三七提取物,备用;
(4)将荷叶清洗后切碎,加入5-8倍量清水浸泡20-24小时,然后经水浴回流提取2-3次,每次1-2小时,合并提取液并浓缩至稠膏状,然后真空冷冻干燥至粉末,制得荷叶提取物,备用;
(5)选取优质猕猴桃,清洗后切片放入90-95℃的水中烫漂10min,然后取出置入烘箱中干燥至含水量<3%,磨成细粉并过100-150目筛即得猕猴桃粉,备用;
(6)将上述步骤所制得的大麦嫩苗粉、仙人掌提取物、三七提取物、荷叶提取物、猕猴桃粉和大蒜多糖、维生素C、叶酸、低聚异麦芽糖按照重量配比充分混合均匀,然后进一步超微粉碎成180-200目的粉末,最后经微波灭菌,包装即得成品。
4.根据权利要求3所述的大麦嫩苗粉固体饮料的制备方法,其特征在于,所述真空冷冻干燥的真空度为1-3Pa,冷冻室温度为-20-30℃,冷冻时间为3-5小时。
