Abstract

本发明公开了一种食品防腐剂,包括重量份如下的各组分:乳酸链球菌素5‑10份、迷迭香酸5‑10份、D‑葡萄糖酸‑δ‑内酯3‑5份、木醋液4‑6份、茶多酚8‑10份、甘氨酸7‑14份。本发明的食品防腐剂无毒无副作用,稳定性好,可在避光处长期保存。不受温度、pH影响,可显著延长产品保质期,提高食品安全性。

一种食品防腐剂
技术领域
本发明涉及一种食品防腐剂,属于食品领域。
背景技术
食品防腐剂是能防止由微生物引起的腐败变质、延长食品保藏期的食品添加剂。因兼有防止微生物繁殖引起食物中毒的作用,又称抗微生物剂(antimicrobial)。食品防腐剂是即对以腐败物质为代谢底物的微生物的生长具有持续的抑制作用。重要的是它能在不同情况下抑制最易发生的腐败作用,特别是在一般灭菌作用不充分时仍具有持续性的效果。对纤维和木材的防腐用矿油、煤焦油、丹宁,对生物标本用甲醛、升汞、甲苯、对羟基苯甲酸丁酯、硝基糠腙衍生物或香脂类树脂。在食品中使用防腐剂受到限制,因此多靠干燥、腌制等一些物理的方法。特殊的防腐剂有乙酸等有机酸、以油酸脂为成分的植物油、芥子等特殊的精油成分。对于生物体的局部(如人体表面或消化道),可以根据具体条件采用各种防腐剂(如碘仿、水杨酸苯酯、苯胺染料或吖啶类色素等)。食品防腐剂的作用机理:①能使微生物的蛋白质凝固或变性,从而干扰其生长和繁殖。②防腐剂对微生物细胞壁、细胞膜产生作用。由于能破坏或损伤细胞壁,或能干扰细胞壁合成的机理,致使胞内物质外泄,或影响与膜有关的呼吸链电子传递系统,从而具有抗微生物的作用。③作用于遗传物质或遗传微粒结构,进而影响到遗传物质的复制、转录、蛋白质的翻译等。④作用于微生物体内的酶系,抑制酶的活性,干扰其正常代谢。现有的食品防腐剂,大多为具有无作用,防腐效果不好。
发明内容
本发明要解决的技术问题是克服现有的缺陷,提供了一种食品防腐剂,对人体无副作用。
为了解决上述技术问题,本发明提供了如下的技术方案:
一种食品防腐剂,包括重量份如下的各组分:乳酸链球菌素5-10份、迷迭香酸5-10份、D-葡萄糖酸-δ-内酯3-5份、木醋液4-6份、茶多酚8-10份、甘氨酸7-14份。
优选地,包括重量份如下的各组分:乳酸链球菌素8份、迷迭香酸7份、D-葡萄糖酸-δ-内酯4份、木醋液5份、茶多酚9份、甘氨酸10份。
优选地,包括重量份如下的各组分:乳酸链球菌素5份、迷迭香酸10份、D-葡萄糖酸-δ-内酯3份、木醋液6份、茶多酚8份、甘氨酸14份。
优选地,包括重量份如下的各组分:乳酸链球菌素10份、迷迭香酸5份、D-葡萄糖酸-δ-内酯5份、木醋液4份、茶多酚10份、甘氨酸7份。
本发明的有益效果:本发明的食品防腐剂无毒无副作用,稳定性好,可在避光处长期保存。不受温度、pH影响,可显著延长产品保质期,提高食品安全性。

以下对本发明的优选实施例进行说明,应当理解,此处所描述的优选实施例仅用于说明和解释本发明,并不用于限定本发明。
实施例1:一种食品防腐剂,包括重量份如下的各组分:乳酸链球菌素8份、迷迭香酸7份、D-葡萄糖酸-δ-内酯4份、木醋液5份、茶多酚9份、甘氨酸10份。
实施例2:一种食品防腐剂,包括重量份如下的各组分:乳酸链球菌素5份、迷迭香酸10份、D-葡萄糖酸-δ-内酯3份、木醋液6份、茶多酚8份、甘氨酸14份。
实施例3:一种食品防腐剂,包括重量份如下的各组分:乳酸链球菌素10份、迷迭香酸5份、D-葡萄糖酸-δ-内酯5份、木醋液4份、茶多酚10份、甘氨酸7份。
实验例1:防腐试验
1、试验样品:
实验组1-3为本发明实施例的1-3的产品;
对照组1为一种食品防腐剂,包括重量份如下的各组分:乳酸链球菌素2份、迷迭香酸7份、D-葡萄糖酸-δ-内酯4份、木醋液5份、茶多酚9份、甘氨酸10份。
对照组2为201310725784.X中实施例1的产品。
2、试验方法:
实验材料为燕麦馒头、卤蛋、盐水鸡,分别加入实验组和对照组产品10g,进行包装,在28℃、相对湿度70%下保存,结果如下表:

1.一种食品防腐剂,其特征在于:包括重量份如下的各组分:乳酸链球菌素5-10份、迷迭香酸5-10份、D-葡萄糖酸-δ-内酯3-5份、木醋液4-6份、茶多酚8-10份、甘氨酸7-14份。
2.根据权利要求1所述的食品防腐剂,其特征在于:包括重量份如下的各组分:乳酸链球菌素8份、迷迭香酸7份、D-葡萄糖酸-δ-内酯4份、木醋液5份、茶多酚9份、甘氨酸10份。
