一种黄精沙枣保健饮料及其制备方法,属于食品加工技术领域;本发明对黄精进行深度开发,目的在于提供一种黄精沙枣保健饮料;通过对黄精和大蒜科学配比,采用冷冻干燥之后进行超微粉碎,再与沙枣浸提液混合、加入茶多糖后加水调配制备而成,得到的黄精沙枣保健饮料利于长期保存,营养物质丰富,保健功效突出,具有补气养阴、健脾、润肺、益肾的功能,并且饮料的口感丰富、气温芬芳,适合大部分人群饮用。

技术领域
本发明涉及食品领域,尤其涉及一种黄精沙枣保健饮料及其制备方法。
背景技术
黄精为百合科黄精属多年生草本植物干燥根茎,既可以作为药,又可以做食物;黄精性平、味甘,具备补脾润肺、滋阴生津、补中益气;黄精根茎中含有黄精低聚糖、黄精多糖、黄酮类、醌类、黏液质、氨基酸及Zn、Cu和Fe等多种人体必需的元素。
黄精富含低聚糖、黄酮类等具有生物活性的化学成分;低聚糖有利于改善人体肠道生物环境,使有益菌群增殖,减少和抑制有害物质对人体的侵害;此外,黄精还含有较多的黄酮类化合物,黄酮类化合物对高血压引起的头痛、头晕等症状有明显疗效,黄酮类化合物具有较强的抗癌防癌作用,黄酮类化合物具有明显的消炎、抗溃疡作用,黄酮类化合物还具有降血糖、抗氧化、抗突变性、抗衰老、保护神经系统,改善记忆力等作用;同时黄精还具备降血压和防治动脉粥样硬化与肝脂肪浸润等药理功用;还具有显著的抗菌和抗病毒功用,可增强人体免疫力,增强体内超氧化物歧化酶的活性,可减速机体衰老;黄精还可以抑制杆菌及致病性皮肤真菌,以黄精为主治疗皮肤真菌手足癣和甲癣,白癣等多种癣症,疗效明显。
黄精甘甜,并有特征香气,尽管在产地民间广为食用,但在现代食品意义上的开发利用还十分少见;因此,为了对黄精进行充分地开发利用,我们将黄精进行特殊处理并与沙枣、大蒜、茶多糖进行合理调配生产黄精保健饮料,不仅能提高黄精饮料的营养价值,而且可使黄精饮料具有独特的保健功能特性,尤其适合中老年人和糖尿病患者食用。
发明内容
本发明的主要目的在于提供一种黄精沙枣饮料,该黄精沙枣饮料以黄精、沙枣、大蒜、茶多糖制成。
本发明的另一个目的在于提供一种既能有效保存原料营养成分、又能规模化生产的黄精沙枣饮料制备方法。
本发明的技术方案是:
一种黄精沙枣保健饮料,由以下质量比的原料制成:
黄精25-40、沙枣30-50、大蒜10-15、茶多糖3-8。
本发明黄精沙枣保健饮料的制备方法,包括以下步骤:
(1)取所述质量分的黄精、大蒜清洗干净,加工为厚度1-2mm的薄片,放入温度-13℃以下的冰柜中预冻2~3h,使其完全冻结,再放入真空冷冻干燥机中冷冻干燥至水分含量8%以下,然后放入低温气流超微粉碎机进行粉碎,粉碎机体磨细腔内温度为-16—-18℃,加工为细度400目以上的超微粉末;
(2)将沙枣与其质量10-15倍超纯水混合,煎煮100-150min,得到沙枣浸提液;
(3)将步骤(1)得到的超微粉末、步骤(2)得到的沙枣浸提液和茶多糖混合得到初混液,在初混液中加入其质量8-12倍的纯净水,保持温度40-45℃,搅拌20-30min后用400目32层的滤布过滤,滤液 经超声波均质后灌装,再进行高压灭菌后得到黄精沙枣饮料;
所述超声波均质条件为:时间30-40min,温度45-50℃,功率250-300W,
所述高压灭菌条件为:时间5-10s,温度80-90℃,压力0.1-0.15Mpa。
本发明的有益效果:
本发明在超微粉碎过程中保持磨细腔内温度为-16—-18℃,有效防止粉碎过程中发热,导致热敏物质的分解,同时避免发热导致的物料粘结,经过超微粉碎之后,提高营养成分的溶出率,利于人体吸收;原料中加入大蒜,利用大蒜优异的抗氧化性、抑菌性,使得本发明保健饮料加工过程中杀菌强度低,利于保证饮料的营养价值,延长保存期限,营养物质丰富,保健功效突出,具有补气养阴、健脾、润肺、益肾的功能,并且饮料的口感丰富、气温芬芳,适合大部分人群饮用。
具体实施方式
下面结合具体实施例对本发明做进一步的详细说明。
实施例1
本发明黄精沙枣保健饮料的制备方法,包括以下步骤:
(1)取4kg黄精、1.5kg大蒜清洗干净,加工为厚度2mm的薄片,放入温度-13℃以下的冰柜中预冻3h,使其完全冻结,再放入真空冷冻干燥机中冷冻干燥至水分含量8%以下,然后放入低温气流超微粉碎机进行粉碎,粉碎机体磨细腔内温度为-18℃,加工为细度400目以上的超微粉末;
(2)取5kg沙枣、50kg超纯水混合,煎煮150min,得到沙枣浸提液;
(3)将步骤(1)得到的超微粉末、步骤(2)得到的沙枣浸提液和0.8kg茶多糖混合得到初混液,在初混液中加入700kg纯净水,保持温度45℃,搅拌30min后用400目32层的滤布过滤,滤液经超声波均质后灌装,其超声波均质条件为:时间40min,温度50℃,功率300W,灌装后在高温高压下灭菌后得到黄精沙枣饮料,其高压灭菌条件为:时间10s,温度90℃,压力0.15Mpa。

1.一种黄精沙枣保健饮料,其特征在于是由以下质量比的原料制成:
黄精25-40、沙枣30-50、大蒜10-15、茶多糖3-8。
2.根据权利要求1所述的黄精沙枣保健饮料的制备方法,包括以下步骤:
(1)取所述质量分的黄精、大蒜清洗干净,加工为厚度1-2mm的薄片,放入温度-13℃以下的冰柜中预冻2~3h,使其完全冻结,再放入真空冷冻干燥机中冷冻干燥至水分含量8%以下,然后放入低温气流超微粉碎机进行粉碎,粉碎机体磨细腔内温度为-16—-18℃,加工为细度400目以上的超微粉末;
(2)将沙枣与其质量10-15倍超纯水混合,煎煮100-150min,得到沙枣浸提液;
