Abstract
本发明提供酒精饮料用乳化香料组合物,其在酒精饮料的制造工序中,即使在与酒精浓度数倍于酒精饮料的浓缩浆料相混合的情况下,也不会产生悬浮物、沉淀,保持稳定的乳化状态,对酒精饮料赋予透明外观,且不会损害酒精饮料的风味·香味。本发明的酒精饮料用乳化香料组合物包含(a)含有香料的油溶性成分;(b)聚甘油脂肪酸酯,其1质量%水溶液的600nm下的透射率为65%以上;以及(c)卵磷脂。

技术领域
本发明涉及酒精饮料用的乳化香料组合物、含有其的酒精饮料和含有高浓度酒精的酒精饮料用浓缩浆料。
背景技术
作为对饮料赋予风味·香味的方法,广泛使用使油溶性香料乳化而得到的乳化香料。乳化香料可以赋予与水溶性香料不同的具有持续性的风味·香味。近年来,除运动饮料和果汁饮料等的软饮料以外,在烧酒海波(チューハイ)、酸酒(サワー)、鸡尾酒、甜味果酒、其他杂酒和利口酒等外观为透明的酒精饮料中使用乳化香料的机会也在增加。这些商品的透明的外观是商品价值的一部分,因此为了赋予风味·香味而添加的乳化香料必须为透明分散的物质。
此外,对于酒精饮料中使用的乳化香料,需要在酒精饮料的制造工序中将乳化香料添加于浓度数倍于酒精饮料的浓缩浆料中,因此,要求在高浓度的酒精溶液中的乳化稳定性。通常而言,其浓缩倍率为4倍到6倍左右,酒精饮料的酒精浓度为7%时,5倍浓缩浆料的酒精浓度达到35%。
一般而言,已知酒精溶液中含有的乙醇会对乳化稳定性造成负面影响。可以认为其理由在于,乙醇在油相和水相中均能互溶,因此(i)界面会变得不明确,(ii)乳化剂的取向受阻从而无法维持液滴,(iii)因互溶而导致的物质迁移会促进油和水分离为两层。因此,即使在将乳化香料用于软饮料时在乳化稳定性方面不存在问题,但在高浓度的酒精溶液中有时也无法充分地获得乳化稳定性,即使是同样的乳化香料,也存在不适合在酒精饮料中使用的情况。因此,为了得到酒精饮料用的乳化香料,研究还需要考虑到酒精饮料的制造工序。即,需要在高浓度的酒精溶液中的乳化稳定性。
作为可以保持酒精饮料制品或碳酸饮料制品的香味、且具有乳化稳定性和透明性的乳化香料,提出了下述乳化组合物,其含有酶分解的卵磷脂0.1~2质量%、聚甘油脂肪酸酯3~10质量%、蔗糖脂肪酸酯1~5质量%、多元醇50~85质量%、水1~10质量%和香料1~10质量%(日本专利第4563438号说明书,专利文献1)。此外,作为透明性高、且具有对酸、热和酒精的耐性的乳化香料,提出了下述乳化香料组合物,其含有HLB为10以上的亲水性聚甘油脂肪酸酯、HLB为8以下的亲油性聚甘油脂肪酸酯、以及溶血卵磷脂 (日本专利第5588048号说明书,专利文献2)。
然而,这些乳化组合物或乳化香料组合物不具有在高浓度的酒精溶液中所需要的乳化稳定性,作为要求对酒精饮料赋予透明的外观且不损害酒精饮料的风味·香味的乳化香料而言尚不充分。

发明内容
发明所要解决的问题
在这样的状况下,要求提供下述酒精饮料用乳化香料,其在酒精饮料的制造工序中,即使在与酒精浓度数倍于酒精饮料的浓缩浆料相混合的情况下,也不会产生悬浮物、沉淀,保持稳定的乳化状态,对酒精饮料赋予透明的外观,且不损害酒精饮料的风味·香味。
解决课题的手段
本发明者为解决上述课题进行了深入研究,发现期望的是使用聚甘油脂肪酸酯和卵磷脂的组合作为含有香料的油溶性成分的乳化剂。进一步发现,作为表示聚甘油脂肪酸酯等的表面活性剂的性质的尺度,一般而言使用HLB(亲油亲水平衡,Hydrophilic-LipopilicBalance),但为解决上述课题而期望的聚甘油脂肪酸酯无法根据HLB来选择,期望的是使用1质量%水溶液的600nm下的透射率为65%以上的聚甘油脂肪酸酯,从而完成本发明。
即,本发明提供如下所示的酒精饮料用乳化香料组合物、含有其的酒精饮料和酒精饮料用浓缩浆料等。
[1] 酒精饮料用乳化香料组合物,其包含
(a)含有香料的油溶性成分;
(b)聚甘油脂肪酸酯,其1质量%水溶液的600nm下的透射率为65%以上;以及
(c)卵磷脂。
[2]根据[1]所述的酒精饮料用乳化香料组合物,其中,(c)卵磷脂未被酶分解。
[3]根据[1]或[2]所述的酒精饮料用乳化香料组合物,其中,(b)聚甘油脂肪酸酯为十聚甘油与选自硬脂酸、油酸或其组合的脂肪酸所形成的酯。
[4]根据[1]~[3]中任一项所述的酒精饮料用乳化香料组合物,其中,相对于(b)聚甘油脂肪酸酯100质量份,含有(c)卵磷脂20~135质量份。
[5]酒精饮料,其含有[1]~[4]中任一项所述的乳化香料组合物。
[6]酒精饮料用浓缩浆料,其含有[1]~[4]中任一项所述的乳化香料组合物。
[7]根据[6]所述的酒精饮料用浓缩浆料,其中,酒精饮料用浓缩浆料的酒精浓度为20容量%以上。

发明效果
通过使用本发明的酒精饮料用乳化香料组合物,可以使油溶性香料透明地分散于酒精饮料中。根据本发明的优选方式,通过使用本发明的酒精饮料用乳化香料组合物,可以提供适口性高的酒精饮料而不损害酒精饮料制品的风味·香味。此外,根据本发明的优选方式,对于本发明的酒精饮料用乳化香料组合物,在酒精饮料的制造工序中,即使在与浓度数倍于酒精饮料的浓缩浆料相混合的情况下,也不会产生悬浮物、沉淀,可以保持稳定的乳化状态。
具体实施方式
本发明的酒精饮料用乳化香料组合物包含(a)含有香料的油溶性成分;(b)聚甘油脂肪酸酯,其1质量%水溶液的600nm下的透射率为65%以上;以及(c)卵磷脂。本发明的酒精饮料用乳化香料组合物通过包含上述的(a)成分、(b)成分和(c)成分,可以使油溶性香料透明地分散于酒精饮料中,可以使酒精饮料中的乳化稳定性优异。以下,针对本发明的酒精饮料用乳化香料组合物中包含的各成分进行详细说明。
(a)含有香料的油溶性成分
本发明的酒精饮料用乳化香料组合物包含(a)含有香料的油溶性成分。
作为(a)含有香料的油溶性成分中使用的香料,只要是通常在食品或饮料中使用的香料则没有特别限制,例如可以举出酯类、醇类、醛类、酮类、缩醛类、酚类、醚类、内酯类、呋喃类、烃类、酸类等合成香料、以及天然香料等。

进一步,作为天然香料,可以优选例举出例如大茴香、橙子、柠檬、酸橙、柑橘、橙叶、佛手柑、蜜蜂花、西柚、榄香、乳香、柠檬草、橙花、马乔莲、当归根、八角茴香、罗勒、香叶、菖蒲、甘菊、葛缕、小豆蔻、决明子、肉桂、胡椒薄荷、荷兰薄荷、薄荷、普列薄荷、胡椒、紫苏、柏树、牛至、西印度苦香树(cascarilla)、姜、西芹、松针、鼠尾草、神香草、茶树、芥末、辣根、欧鼠尾草、丁香、干邑(cognac)、芫荽、龙蒿、桉树、茴香、愈创木、莳萝、白千层、驱虫籽、甘椒、杜松、胡芦巴、大蒜、月桂、肉豆蔻种衣、没药、肉豆蔻、云杉、天竺葵、香茅、薰衣草、醒目薰衣草、玫瑰草、玫瑰、迷迭香、檀香、橡木苔、柏木、香根草、沉香油、玫瑰木(bois derose)、广藿香、劳丹脂、枯茗、百里香、伊兰香、桦木、柿子椒、芹菜、妥卢香脂、灵猫香、不凋花、安息香、茉莉、金合欢、晚香玉、木樨草、金盏花、含羞草、红没药、鸢尾草、香草和甘草等。也可以使用这些天然香料中含有的香料成分。
(a)油溶性成分只要至少含有香料成分即可,除香料外,也可以含有其他油溶性成分。作为香料以外的油溶性成分,可以使用通常在食品或饮料中使用的物质,例如可以举出棕榈油、椰子油、玉米油、菜籽油、牛油、猪油、乳脂等各种植物油脂和动物油脂;碳原子数为8~12的中链甘油三酯、β-胡萝卜素、辣椒色素、胭脂色素和叶绿素等油溶性天然色素;维生素A、维生素D、维生素E等脂溶性维生素;抗氧化剂;松香、柯巴脂、达马脂、榄香脂、酯胶等植物性树脂等。
乳化香料组合物中的香料的配合量,可以根据该香料的香味强度而适当调整,通常为0.1~10质量%,优选为0.1~5质量%。
(b)聚甘油脂肪酸酯
本发明的酒精饮料用乳化香料组合物包含(b)聚甘油脂肪酸酯,其1质量%水溶液的600nm下的透射率为65%以上。聚甘油脂肪酸酯是将甘油聚合而得到的聚甘油所具有的羟基中的一个以上与脂肪酸酯化而得到的物质,根据甘油的聚合度、脂肪酸的数量(酯化度)和脂肪酸的种类而存在多种种类。本发明中,使用其中1质量%水溶液的600nm下的透射率为65%以上的聚甘油脂肪酸酯。通过使用具有上述透射率的聚甘油脂肪酸酯,即使在将本发明的酒精饮料用乳化香料组合物与含有高浓度酒精的浓缩浆料相混合的情况下,也可以保持稳定的乳化状态。聚甘油脂肪酸酯的该透射率为65%以上,优选为70%~100%。
本发明中,作为构成聚甘油脂肪酸酯的聚甘油,平均聚合度优选为6~10,更优选为平均聚合度为10的十聚甘油。
作为构成聚甘油脂肪酸酯的脂肪酸,优选为碳原子数为14~18的脂肪酸,更优选为硬脂酸、油酸或其组合。
此外,作为聚甘油脂肪酸酯的酯化度,相对于聚甘油1摩尔,优选将脂肪酸0.1~2摩尔进行酯化而得到的聚甘油脂肪酸酯,更优选为将脂肪酸1摩尔进行酯化而得到的聚甘油脂肪酸酯。
作为本发明中特别优选使用的聚甘油脂肪酸酯,可以举出十聚甘油单硬脂酸酯、十聚甘油单油酸酯或其组合。
作为聚甘油脂肪酸酯,市售有多个种类。其中,作为本发明中优选使用的1质量%水溶液的600nm下的透射率为65%以上的聚甘油脂肪酸酯,可以举出例如Decaglyn 1-SVEX(商品名,日光ケミカルズ株式会社制)、Decaglyn 1-OVEX(商品名,日光ケミカルズ株式会社制)等。
本发明中,聚甘油脂肪酸酯的透射率测定如下进行。首先,使聚甘油脂肪酸酯以达到1质量%的方式分散于离子交换水中,在80℃的热水浴中加热并搅拌30分钟,形成均匀的水溶液。其后,将所得到的聚甘油脂肪酸酯水溶液冷却至25℃,从而形成试验液。对该试验液,以水作为对照液,使用光程长1cm的比色皿测定600nm下的透射率。透射率的测定使用常规的分光光度计来进行。使用两种以上的聚甘油脂肪酸酯时,根据其质量比率进行混合并制备从而使得以聚甘油脂肪酸酯计达到1质量%,进行测定。
对于聚甘油脂肪酸酯在乳化香料组合物中的配合量,如果相对于油溶性成分过多,则使其分散于高酒精浓度的浓缩浆料中时容易产生沉淀、悬浮物,如果过少,则存在饮用浓度下的浑浊度变强的情况。因此,聚甘油脂肪酸酯在乳化香料组合物中的配合量相对于(a)含有香料的油溶性成分100质量份优选为1~200质量份、更优选为5~150质量份、进一步优选为5~120质量份。
(c)卵磷脂
本发明的酒精饮料用乳化香料组合物还包含(c)卵磷脂。作为本发明中使用的(c)卵磷脂,只要是通常在食品或饮料中使用的物质则没有特别限制,例如可以使用大豆卵磷脂、菜籽卵磷脂、葵花卵磷脂、蛋黄卵磷脂和酶分解的卵磷脂等。其中,酶分解的卵磷脂存在添加量增加时产品的风味变差、苦味增加的情况,因此优选使用未被酶分解的卵磷脂。特别地,优选使用未被酶分解的大豆卵磷脂、菜籽卵磷脂和葵花卵磷脂。作为这样的卵磷脂,例如可以优选举出日清レシチンDX(商品名,日清オイリオ株式会社制)(大豆卵磷脂)、GIRALECPremium(商品名,Lasenor公司制)(葵花卵磷脂)等。本发明的一个实施方式中,本发明的酒精饮料用乳化香料组合物优选实质上不含酶分解的卵磷脂。例如,酶分解的卵磷脂的使用量相对于乳化香料组合物的总质量优选小于0.1质量%。
对于卵磷脂在乳化香料组合物中的配合量,如果相对于聚甘油脂肪酸酯过少,则使其分散于高酒精浓度的浓缩浆料中时容易产生沉淀、悬浮物,如果过多,则存在饮用浓度下的浑浊度变强的情况。因此,卵磷脂在乳化香料组合物中的配合量相对于(b)聚甘油脂肪酸酯100质量份优选为5~200质量份、更优选为10~150质量份、进一步优选为20~135质量份。
此外,对于卵磷脂在乳化香料组合物中的配合量,如果相对于油溶性成分过少,则使其分散于高酒精浓度的浓缩浆料中时容易产生沉淀、悬浮物,如果过多,则存在饮用浓度下的浑浊度变强的情况。因此,卵磷脂在乳化香料组合物中的配合量相对于(a)油溶性成分100质量份优选为1~150质量份、更优选为5~80质量份、进一步优选为8~80质量份。
本发明的酒精饮料用乳化香料组合物中,(a)油溶性成分、(b)聚甘油脂肪酸酯和(c)卵磷脂的配合量相对于乳化香料组合物的总质量优选为0.1~45质量%、更优选为0.1~22.5质量%、进一步优选为0.1~15质量%。
(d)水溶性溶剂
本发明的酒精饮料用乳化香料组合物包含(a)油溶性成分、(b)聚甘油脂肪酸酯和(c)卵磷脂,此外还包含(d)水溶性溶剂。作为本发明中使用的(d)水溶性溶剂,可以举出水和多元醇等。
作为多元醇,只要是通常在食品或饮料中使用的物质则没有特别限制,可以举出例如甘油、丙二醇、1,3-丁二醇、D-山梨醇等。其中优选为甘油。
水溶性溶剂在乳化香料组合物中的配合量为了调整油溶性成分等的浓度而适当决定即可,没有特别限制。
本发明的酒精饮料用乳化香料组合物中,在不妨碍本发明的效果的范围内,除上述成分外,还可以进一步包含水溶性香料、焦糖色素等水溶性色素、增粘多糖类、果糖-葡萄糖糖浆等糖质、果胶等的食物纤维、阿斯巴甜等高甜度甜味料。
本发明的酒精饮料用乳化香料组合物可以利用在乳化制剂的制备中使用的公知技术来制造。具体而言,可以举出使用均质搅拌机和高压均化器等搅拌装置将油溶性和水溶性成分进行搅拌并混合的方法。搅拌并混合时,可以任选进行冷却或升温。
通过使用本发明的酒精饮料用乳化香料组合物,可以使油溶性香料透明地分散于酒精饮料中。在此“酒精饮料”是指酒精浓度为1容量%以上的饮料用组合物。饮料用组合物可以是酒精饮料用浓缩浆料,也可以将酒精饮料用浓缩浆料在其后适当稀释从而制备期望的酒精浓度的酒精饮料。
作为本发明的酒精饮料,酒精浓度优选为1~80容量%,更优选为1~60容量%,进一步优选为1~50容量%。特别地,优选酒精浓度小于10容量%,即1~10容量%。
酒精饮料用浓缩浆料的酒精浓度只要考虑使用目的等来适当决定则没有特别限制,但一般而言优选为20容量%以上,更优选为20~60容量%,进一步优选为20~50容量%。
作为添加本发明的酒精饮料用乳化香料组合物而得到的酒精饮料,可以举出例如酸酒、烧酒海波、鸡尾酒、甜味果酒、其他杂酒、利口酒等。本发明中,酒精饮料可以含有碳酸、果汁。
本发明的酒精饮料用乳化香料组合物的添加量考虑使用目的等来适当决定即可,没有特别限制,但相对于所得到的酒精饮料的总量优选为0.01~0.5质量%,更优选为0.03~0.2质量%。
本发明中,可以直接将本发明的酒精饮料用乳化香料组合物添加至酒精饮料中,也可以在酒精饮料制造工序中添加至将酒精饮料浓缩而得到的酒精饮料用浓缩浆料中。根据本发明的优选方式,本发明的酒精饮料用乳化香料组合物即使在添加于这样的高酒精浓度的浓缩浆料中的情况下,也不会产生悬浮物、沉淀,可以保持稳定的乳化状态。
在将本发明的酒精饮料用乳化组合物添加至酒精浓缩浆料中时,通过将所得到的浆料溶液用水和碳酸水等的水溶性溶剂稀释,可以制备期望的酒精饮料。
实施例
接着,举出实施例来进一步详细地说明本发明,但本发明不受这些实施例的任何限制。应予说明,聚甘油脂肪酸酯的透射率用以下方法测定。
<聚甘油脂肪酸酯的透射率的测定>
首先,将聚甘油脂肪酸酯以达到1质量%的方式分散于离子交换水中,在80℃的热水浴中加热并搅拌30分钟,形成均匀的水溶液。其后,将所得到的聚甘油脂肪酸酯水溶液冷却至25℃,从而形成试验液。对该试验液,以水为对照液,使用光程长1cm的比色皿测定600nm下的透射率。透射率的测定使用株式会社岛津制作所制的紫外可见分光光度计UV-1700。使用两种以上聚甘油脂肪酸酯时,根据其质量比率进行混合并制备从而使得以聚甘油脂肪酸酯计达到1质量%,进行测定。
[实施例1]
使7.5g的1质量%水溶液的600nm下的透射率为85.5%的聚甘油脂肪酸酯(商品名:Decaglyn 1-SVEX/日光ケミカルズ株式会社制,十聚甘油单硬脂酸酯,HLB:12.5)升温溶解于219.6g甘油(商品名:精制グリセリン/花王株式会社)和62.4g水中。将所得到的溶液用高速搅拌机(ホモミクサーMARK II,プライミクス株式会社制)搅拌,并进一步添加预先将7.5g柠檬酸橙香料(高砂香料工业制)和3g大豆卵磷脂(商品名:日清レシチンDX/日清オイリオ株式会社制)混合均匀化而得到的混合物,在9000rpm下进行10分钟乳化处理,制备乳化香料组合物。
[实施例2]
将聚甘油脂肪酸酯变更为1质量%水溶液的600nm下的透射率为73.5%的商品名:Decaglyn 1-OVEX(日光ケミカルズ株式会社制,十聚甘油单油酸酯,HLB:12.0),除此以外,以与实施例1同样的方式制备乳化香料组合物。

将聚甘油脂肪酸酯变更为1质量%水溶液的600nm下的透射率为60.2%的商品名:Decaglyn 1-SVF(日光ケミカルズ株式会社制,十聚甘油单硬脂酸酯,HLB:12.0),除此以外,以与实施例1同样的方式制备乳化香料组合物。
[比较例3]
将聚甘油脂肪酸酯变更为1质量%水溶液的600nm下的透射率为39.2%的商品名:ポエムJ-0381V(理研ビタミン株式会社制,十聚甘油单油酸酯,HLB:14.0),除此以外,以与实施例1同样的方式制备乳化香料组合物。

向95%乙醇368mL、果糖-葡萄糖糖浆230g、柠檬酸18g和柠檬酸钠4g添加水从而制成1000mL,制备酒精饮料的5倍浓缩浆料(酒精浓度35容量%)。向该5倍浓缩浆料中分别添加0.5质量%的实施例1、比较例1和2中制备的乳化香料组合物。
[2]评价方法
将分别添加有实施例1~5和比较例1~3的乳化组合物的5倍浓缩浆料在室温下保存1周后,观察浆料的状态。评价结果示于表2。

应予说明,使三种聚甘油脂肪酸酯以上述配合比制成1质量%水溶液时,600nm下的透射率为55.8%。
[比较例5]
使13.5g的1质量%水溶液的600nm下的透射率为60.2%的聚甘油脂肪酸酯(商品名:Decaglyn 1-SVF/日光ケミカルズ株式会社制,十聚甘油单硬脂酸酯,HLB:12.0)和3g蔗糖脂肪酸酯(商品名:DKエステル SS/第一工业制药株式会社制)升温溶解于237.3g甘油(商品名:精制グリセリン/花王株式会社)和29.7g水中。将所得到的溶液用高速搅拌机(ホモミクサーMARK II,プライミクス株式会社制)搅拌,并添加预先将15g柠檬香料(高砂香料工业制)、1.2g酶分解的卵磷脂(商品名:Emultop/カーギルジャパン株式会社制)和0.3g维生素E(エーザイ株式会社制)混合均匀化而得到的混合物,在9000rpm下进行20分钟乳化处理,制备乳化香料组合物。

将试验例3中已进行一周后的评价的5倍浓缩浆料(实施例6和7)进一步用水稀释5倍,从而制备酒精饮料。并且,通过目视观察并测定透射率来评价其透明性。结果示于表6。

[试验例5]添加有乳化香料组合物的酒精饮料的风味·香味的评价
向酒精度数为50%的伏特加140mL、柠檬酸3.6g和柠檬酸钠0.8g、维生素C 0.1g、安赛蜜钾0.13g、三氯蔗糖0.016g添加水从而制成1000mL,制备酒精度数为7%的酒精饮料。分别加入0.1质量%的实施例6、7和比较例4中制备的乳化香料组合物,从而制备含有乳化香料组合物的酒精饮料。使用这些酒精饮料来进行感官评价。
<方法>
由公司内的8名专门小组成员,以1为苦味最弱、5为苦味最强进行5等级评价。将8人的评价结果以平均值的形式总结示于表7中。

使0.9g的 1质量%水溶液的600nm下的透射率为85.5%的聚甘油脂肪酸酯(商品名:Decaglyn 1-SVEX/日光ケミカルズ株式会社制,十聚甘油单硬脂酸酯,HLB:12.5)升温溶解于244.2g甘油(商品名:精制グリセリン/花王株式会社)和42.9g水中。将所得到的溶液用高速搅拌机(ホモミクサーMARK II,プライミクス株式会社制)搅拌,并添加预先将10.8g的含有0.9g中链脂肪酸甘油三酯的梅子香料(高砂香料工业制)、0.9g葵花卵磷脂(商品名:GIRALEC Premium/Lasenor公司制)和0.3g提取生育酚(商品名:理研Eオイルスーパー80N/理研ビタミン株式会社制)混合均匀化而得到的混合物,在9000rpm下进行10分钟乳化处理,制备乳化香料组合物。表8中示出实施例8的乳化香料组合物的组成(质量%)。

使1.8g的1质量%水溶液的600nm下的透射率为85.5%的聚甘油脂肪酸酯(商品名:Decaglyn 1-SVEX/日光ケミカルズ株式会社制,十聚甘油单硬脂酸酯,HLB:12.5)升温溶解于231.6g甘油(商品名:精制グリセリン/花王株式会社)和57.9g水中。将所得到的溶液用高速搅拌机(ホモミクサーMARK II,プライミクス株式会社制)搅拌,并添加预先将6.0g橙子香料(高砂香料工业制)、2.4g葵花卵磷脂(商品名:GIRALEC Premium/Lasenor公司制)和0.3g维生素E(エーザイ株式会社制)混合均匀化而得到的混合物,在9000rpm下进行10分钟乳化处理,制备乳化香料组合物。表9中示出实施例9的乳化香料组合物的组成(质量%)。

向95%乙醇526mL、果糖-葡萄糖糖浆280g、柠檬酸16g和柠檬酸钠4.5g添加水从而制成1000mL,制备酒精饮料的5倍浓缩浆料(酒精浓度50容量%)。向该5倍浓缩浆料中添加0.15质量%的实施例9中制备的乳化香料组合物,经过一周后仍显示出均匀且良好的乳化稳定性。
[试验例9]稀释至饮用浓度时的透明性的评价
将试验例8中已进行一周后的评价的5倍浓缩浆料(实施例9)进一步用水稀释5倍,从而制备酒精饮料。并且,通过目视观察并测定透射率来评价其透明性时,外观透明,透射率为98.9%。对于实施例9中制备的乳化香料组合物,即使在添加至5倍浓缩浆料中在常温下保存一周后用水稀释5倍,也可以得到均匀且外观透明的酒精饮料。
如上所述,本发明的酒精饮料用乳化香料组合物在配合于酒精饮料中时可以赋予高适口性以及透明外观,与含有高浓度酒精的酒精饮料用浓缩浆料混合时,也不会产生悬浮物、沉淀,可以保持稳定的乳化状态。此外,根据本发明的优选方式,本发明的酒精饮料用乳化香料组合物不会损害酒精饮料制品的风味·香味。因此,本发明的酒精饮料用乳化香料组合物作为酒精饮料用的乳化香料组合物是有用的。
工业实用性
通过使用本发明的酒精饮料用乳化香料组合物,可以提供适口性高且具有透明外观和风味·香味的酒精饮料和酒精饮料用浓缩浆料。
Claims (8)
1.酒精饮料用乳化香料组合物,其包含
(a)含有香料的油溶性成分;
(b)聚甘油脂肪酸酯,其1质量%水溶液的600nm下的透射率为65%以上;以及
(c)卵磷脂。
2.根据权利要求1所述的酒精饮料用乳化香料组合物,其中,(c)卵磷脂未被酶分解。
3.根据权利要求1或2所述的酒精饮料用乳化香料组合物,其中,(b)聚甘油脂肪酸酯为十聚甘油与选自硬脂酸、油酸或其组合的脂肪酸所形成的酯。
4.根据权利要求1~3中任一项所述的酒精饮料用乳化香料组合物,其中,相对于(b)聚甘油脂肪酸酯100质量份,含有(c)卵磷脂20~135质量份。
5.酒精饮料,其含有权利要求1~4中任一项所述的乳化香料组合物。
6.酒精饮料用浓缩浆料,其含有权利要求1~4中任一项所述的乳化香料组合物。
7.根据权利要求6所述的酒精饮料用浓缩浆料,其中,酒精饮料用浓缩浆料的酒精浓度为20容量%以上。
8.稀释权利要求6或7所述的浓缩浆料从而制造酒精饮料的方法。
