木耳,为真菌类担子菌纲木耳科木耳属植物。。木耳既可野生又可以人工培植,种子实体呈耳状、叶状或杯状、薄、边缘波浪状,宽3-10厘米,厚2毫米左右,以侧生的短柄或狭细的附着部固着于基质上。色泽黑褐,质地柔软呈胶质状,薄而有弹性,湿润时半透明,干燥时收缩变为脆硬的角质近似革质。味道鲜美,可素可荤,营养丰富。木耳味甘,性平。具有补气血、润肺、止血的功效,常用于气虚血亏、四肢搐搦、咯血、吐血、衄血,、崩漏、高血压病、便秘。
楮头红,全草多干燥皱缩,茎四棱形,无毛,表皮红色或棕色,偶有折色斑点。叶对生,多皱缩破碎,黄色或黄绿色,椭圆形或狭卵形,基产浅心形,边缘细齿及缘毛。聚伞花序顶生,花紫色。楮头红味甘,性微寒,归肺、肝二经。具有清热平肝、利湿解毒的功效,主治肺热咳嗽、头目眩晕、耳鸣、耳聋、日赤羞明、肝炎、风湿痹痛、跌打伤肿、蛇头疔、无名肿毒。
果酱是把水果、糖及酸度调节剂混合后,用超过100℃温度熬制而成的凝胶物质。制作果酱是长时间保存水果的一种方法。主要用来涂抹于面包或吐司上食用。果酱含有天然果酸,能促进消化液分泌,有增强食欲、帮助消化之功效。果酱还能增加色素,对缺铁性贫血有辅助疗效。果酱含丰富的钾、锌元素,能消除疲劳,增强记忆力。婴幼儿吃果酱可补充钙、磷、预防佝偻病。以甘草、八月瓜为主要原料,木耳、楮头红为保健原料,生产出一种甘草风味八月瓜果酱,目前还未见报道和产品上市。
发明内容
本发明以甘草、八月瓜为原料,同时添加木耳、楮头红开发出一种甘草风味八月瓜果酱。填补了国内使用这类原料制作果酱的一项空白。
一种甘草风味八月瓜果酱,采用以下步骤制作:
A.八月瓜预处理:取成熟的新鲜八月瓜,清洗干净,去皮,将果肉放入装有60-100目网筛的打浆机打浆,制得八月瓜果浆;
B.甘草预处理:取新鲜甘草根,清洗干净,通过斩切机切成0.5-1厘米长的碎段,加入甘草碎段重0.4-0.6%的纤维素酶、0.3-0.5%的半纤维素酶、0.2-0.4%的蛋白酶,加热至38-42℃,保持30-40分钟,后倒入装有60-100目网筛的打浆机进行打浆,制得酶解甘草浆;
C.中药材预处理:按一定比例取中药材木耳、楮头红,加入原料中药材重5-15倍的水,浸泡2-3小时,再煎煮30-60分钟,后连同煎煮液一起倒入装有60-100目网筛的打浆机进行打浆,制得中药泥;
D.配料:取八月瓜果浆100-150重量份、酶解甘草浆20-30重量份、中药泥5-10重量份、白砂糖20-30重量份、果胶0.3-0.5重量份,充分搅拌均匀,制得甘草八月瓜中药混合浆;
E. 酒精发酵:将甘草八月瓜中药混合浆倒入发酵设备,加入果醋酵母0.5-1重量份,密封静置发酵,待酒精达到0.5-1%体积比,结束发酵;
F.浓缩:将发酵的甘草八月瓜中药混合浆倒入蒸汽夹层锅,加热浓缩,加热过程中适当搅拌,待果酱含糖量达到60%以上,加入柠檬汁0.01-0.02重量份,搅拌均匀,制得甘草风味八月瓜果酱;
G.灌装:将甘草风味八月瓜果酱通过灌装设备分装入已灭菌的容器设备中,装罐温度控制在85-90℃;
H.杀菌、冷却:将装罐好的甘草风味八月瓜果酱,放入沸水中用蒸汽加热18-22分钟,进行杀菌,后进行冷却;
I.检验、贮存:将检验合格的八月瓜果酱置于阴凉、干燥、避光处。
本发明步骤C一定比例的中药材配比为以下原料重量比:木耳45-55%、楮头红45-55%。
本发明步骤G中加热浓缩,装罐量为容器的85-95%。
本发明的作用机理:
八月瓜,益胃生津、清热利尿;甘草,补脾益气、祛痰止咳;木耳,补气血、润肺;楮头红,清热平肝、利湿解毒。利用以上四味中药相互配伍,协同生效,通过调节肝的升发,肺的肃降,促进胃的健运,固达益胃生津、补脾益气的功效。
本发明以甘草、八月瓜为原料,同时添加木耳、楮头红,制作出一种甘草风味八月瓜果酱。其充分利用甘草、八月瓜的营养价值,与中药相互配伍,协同增效,具有益胃生津、补脾益气的功效。发明中,采用纤维素酶、半纤维素酶、蛋白酶对甘草进行酶解,为产品增添了独特的风味,对甘草八月瓜中药混合浆进行果醋酵母发酵,为产品增添了醇香味,制得的成品味道细腻,醇香可口,风味独特,老少皆宜,且保健功能突出,长期食用可明显改善脾虚食少、饮食积滞人群的不适。其制作工艺简单,易于实现,经济效益、社会效益显著。
以下结合实施例,对本发明作较为详细的说明。
具体实施方式
实施例1,一种甘草风味八月瓜果酱,采用以下步骤制作:
A.八月瓜预处理:取成熟的新鲜八月瓜,清洗干净,去皮,将果肉放入装有60目网筛的打浆机打浆,制得八月瓜果浆;
B.甘草预处理:取新鲜甘草根,清洗干净,通过斩切机切成0.5厘米长的碎段,加入甘草碎段重0.4%的纤维素酶、0.3%的半纤维素酶、0.2%的蛋白酶,加热至38℃,保持30分钟,后倒入装有60目网筛的打浆机进行打浆,制得酶解甘草浆;
C.中药材预处理:按重量比例取中药材木耳52%、楮头红48%,加入原料中药材重5倍的水,浸泡2小时,再煎煮30分钟,后连同煎煮液一起倒入装有60目网筛的打浆机进行打浆,制得中药泥;
D.配料:取八月瓜果浆100kg、酶解甘草浆20kg、中药泥5kg、白砂糖20kg、果胶0.3kg,充分搅拌均匀,制得甘草八月瓜中药混合浆;
E. 酒精发酵:将甘草八月瓜中药混合浆倒入发酵设备,加入果醋酵母0.5重量份,密封静置发酵,待酒精达到0.5%体积比,结束发酵;
F.浓缩:将发酵的甘草八月瓜中药混合浆倒入蒸汽夹层锅,加热浓缩,加热过程中适当搅拌,待果酱含糖量达到60%以上,加入柠檬汁0.01kg,搅拌均匀,制得甘草风味八月瓜果酱;
G.灌装:将甘草风味八月瓜果酱通过灌装设备分装入已灭菌的容器设备中,装罐温度控制在85℃;
H.杀菌、冷却:将装罐好的甘草风味八月瓜果酱,放入沸水中用蒸汽加热18分钟,进行杀菌,后进行冷却;

本发明实施例1经25位脾虚食少、饮食积滞的人群,连续食用10天,每日30克,症状明显缓解人数为15人,有效率为60%;连续食用20天,每日30克以上,症状明显缓解人数为17人,有效率为68%。
实施例2,一种甘草风味八月瓜果酱,采用以下步骤制作:
A.八月瓜预处理:取成熟的新鲜八月瓜,清洗干净,去皮,将果肉放入装有80目网筛的打浆机打浆,制得八月瓜果浆;
B.甘草预处理:取新鲜甘草根,清洗干净,通过斩切机切成0.6厘米长的碎段,加入甘草碎段重0.5%的纤维素酶、0.4%的半纤维素酶、0.3%的蛋白酶,加热至40℃,保持35分钟,后倒入装有90目网筛的打浆机进行打浆,制得酶解甘草浆;
C.中药材预处理:按重量比例取中药材木耳24%、楮头红17%、红门兰19%、橄榄21%、蚕豆19%,加入原料中药材重10倍的水,浸泡2.5小时,再煎煮40分钟,后连同煎煮液一起倒入装有60-100目网筛的打浆机进行打浆,制得中药泥;
D.配料:取八月瓜果浆130kg、酶解甘草浆28kg、中药泥6kg、白砂糖25kg、果胶0.6kg,充分搅拌均匀,制得甘草八月瓜中药混合浆;
E. 酒精发酵:将甘草八月瓜中药混合浆倒入发酵设备,加入果醋酵母0.8重量份,密封静置发酵,待酒精达到0.9%体积比,结束发酵;
F.浓缩:将发酵的甘草八月瓜中药混合浆倒入蒸汽夹层锅,加热浓缩,加热过程中适当搅拌,待果酱含糖量达到60%以上,加入柠檬汁0.012kg,搅拌均匀,制得甘草风味八月瓜果酱;
G.灌装:将甘草风味八月瓜果酱通过灌装设备分装入已灭菌的容器设备中,装罐温度控制在86℃;
H.杀菌、冷却:将装罐好的甘草风味八月瓜果酱,放入沸水中用蒸汽加热21分钟,进行杀菌,后进行冷却;
I.检验、贮存:将检验合格的八月瓜果酱置于阴凉、干燥、避光处。
红门兰,多年生草本,高15-40厘米。叶互生,长圆状披针形;基部有鞘。穗状花序顶生,紧密,多花,成为紧密粗大的穗;花淡紫红色,唇瓣顶端3-4裂或微裂如波状牙齿形,距圆锥状或长的囊状,比子房短或近等长。红门兰味甘,性平,归心、肾、胃三经。具有补肾养阴,健脾益胃的功效,主治阴虚痨热、烦躁口渴、不思饮食、月经不调。
橄榄,为橄榄科植物橄榄树的果实。果实纺锤形,两端钝尖,表面棕黄色或黑褐色,有不规则深皱纹。果肉厚,灰棕色或棕褐色。气无,果肉味涩,久嚼微甜。以个大、坚实、肉厚、味先涩后甜者为佳。橄榄味甘、酸,性平,归肺、胃、脾、肝四经。具有清肺利咽、生津止渴的功效。主治咳嗽痰血、咽喉肿痛、暑热烦渴、醉酒、鱼蟹中毒。
蚕豆,种子扁矩圆形,种皮表面浅棕褐色,光滑,做有光泽,两面凹陷;种脐位于较大端,褐色或黑褐色。质坚硬,内有子叶2枚,肥厚,黄色。气微,味谈,嚼之有豆腥气。蚕豆味甘,性平,归脾、胃、三经。具有健脾利水、解毒消肿的功效,主治膈食、水肿、疮毒。
本发明实施例2的作用机理:
八月瓜,益胃生津、清热利尿;甘草,补脾益气、祛痰止咳;木耳,补气血、润肺;楮头红,清热平肝、利湿解毒。红门兰,补肾养阴,健脾益胃;橄榄,清肺利咽、生津止渴;蚕豆,健脾利水、解毒消肿。利用以上七味中药相互配伍,协同生效,通过调节肝的升发,促进肺的肃降,固达润肺止咳的功效。
本发明实施例2经22位脾虚食少、饮食积滞的人群,连续食用10天,每日30克,症状明显缓解人数为15人,有效率为68.18%;连续食用20天,每日30克以上,症状明显缓解人数为21人,有效率为77.27%。
实施例3,一种甘草风味八月瓜保健果酱,采用以下步骤制作:
A.八月瓜预处理:取成熟的新鲜八月瓜,清洗干净,去皮,将果肉放入装有100目网筛的打浆机打浆,制得八月瓜果浆;
B.甘草预处理:取新鲜甘草根,清洗干净,通过斩切机切成1厘米长的碎段,加入甘草碎段重0.6%的纤维素酶、0.5%的半纤维素酶、0.4%的蛋白酶,加热至42℃,保持40分钟,后倒入装有100目网筛的打浆机进行打浆,制得酶解甘草浆;
C.中药材预处理:按重量比例取中药材木耳13%、楮头红15%、红门兰10%、橄榄15%、蚕豆15%、山药15%、千日红17%,加入原料中药材重15倍的水,浸泡3小时,再煎煮60分钟,后连同煎煮液一起倒入装有100目网筛的打浆机进行打浆,制得中药泥;
D.配料:取八月瓜果浆150kg、酶解甘草浆30kg、中药泥10kg、白砂糖30kg、果胶0.3-0.5kg,充分搅拌均匀,制得甘草八月瓜中药混合浆;
E. 酒精发酵:将甘草八月瓜中药混合浆倒入发酵设备,加入果醋酵母1重量份,密封静置发酵,待酒精达到1%体积比,结束发酵;
F.浓缩:将发酵的甘草八月瓜中药混合浆倒入蒸汽夹层锅,加热浓缩,加热过程中适当搅拌,待果酱含糖量达到60%以上,加入柠檬汁0.015kg,搅拌均匀,制得甘草风味八月瓜果酱;
G.灌装:将甘草风味八月瓜果酱通过灌装设备分装入已灭菌的容器设备中,装罐温度控制在90℃;
H.杀菌、冷却:将装罐好的甘草风味八月瓜果酱,放入沸水中用蒸汽加热2分钟,进行杀菌,后进行冷却;
I.检验、贮存:将检验合格的八月瓜果酱置于阴凉、干燥、避光处。
山药,略呈圆柱形,弯曲而稍扁,长15-30cm,直径1.5-6cm。表面黄白色或淡黄色,有纵沟、纵皱纹及须根痕,偶有浅棕色外皮残留。体重,质坚实,不易折断,断面白色,粉性。无臭,味淡、微酸,嚼之发黏。光山药呈圆柱形,两端平齐,长9-18cm,直径1.5-3cm。表面光滑,白色或黄白色。山药味甘,性平。归脾、肺、肾三经。具有补脾养胃、生津益肺、补肾涩精的功效,常用于脾虚食少、久泻不止、肺虚喘咳、肾虚遗精、带下、尿、虚热消渴。
千日红,一年生直立草本植物,高20-60厘米,茎粗壮,有分枝,枝略成四棱形,有灰色糙毛,幼时更密,节部稍膨大。叶片纸质,长椭圆形或矩圆状倒卵形,顶端急尖或圆钝,凸尖,基部渐狭,边缘波状,两面有小斑点、白色长柔毛及缘毛,有灰色长柔毛。花多数,密生,成顶生球形或矩圆形头状花序,常紫红色,有时淡紫色或白色。千日红味甘,性平,具有止咳祛痰、定喘、平肝明目的功效,主治支气管哮喘。
本发明实施例3的作用机理:
八月瓜,益胃生津、清热利尿;甘草,补脾益气、祛痰止咳;木耳,补气血、润肺;楮头红,清热平肝、利湿解毒。红门兰,补肾养阴,健脾益胃;橄榄,清肺利咽、生津止渴;蚕豆,健脾利水、解毒消肿;山药,补脾养胃、生津益肺;千日红,止咳祛痰、平肝明目。利用以上九味中药相互配伍,协同生效,通过调节肝的升发,促进肺的肃降,固达润肺止咳的功效。
本发明实施例3经19位脾虚食少、饮食积滞的人群,连续食用10天,每日30克,症状明显缓解人数为15人,有效率为78.95%;连续食用20天,每日30克以上,症状明显缓解人数为17人,有效率为89.47%。

Claims (2)
1.一种甘草风味八月瓜保健果酱,其特征在于,采用以下步骤制作:
A.八月瓜预处理:取成熟的新鲜八月瓜,清洗干净,去皮,将果肉放入装有100目网筛的打浆机打浆,制得八月瓜果浆;
B.甘草预处理:取新鲜甘草根,清洗干净,通过斩切机切成1厘米长的碎段,加入甘草碎段重0.6%的纤维素酶、0.5%的半纤维素酶、0.4%的蛋白酶,加热至42℃,保持40分钟,后倒入装有100目网筛的打浆机进行打浆,制得酶解甘草浆;
C.中药材预处理:按重量比例取中药材木耳13%、楮头红15%、红门兰10%、橄榄15%、蚕豆15%、山药15%、千日红17%,加入原料中药材重15倍的水,浸泡3小时,再煎煮60分钟,后连同煎煮液一起倒入装有100目网筛的打浆机进行打浆,制得中药泥;
D.配料:取八月瓜果浆150kg、酶解甘草浆30kg、中药泥10kg、白砂糖30kg、果胶0.3-0.5kg,充分搅拌均匀,制得甘草八月瓜中药混合浆;
E. 酒精发酵:将甘草八月瓜中药混合浆倒入发酵设备,加入果醋酵母1重量份,密封静置发酵,待酒精达到1%体积比,结束发酵;
F.浓缩:将发酵的甘草八月瓜中药混合浆倒入蒸汽夹层锅,加热浓缩,加热过程中适当搅拌,待果酱含糖量达到60%以上,加入柠檬汁0.015kg,搅拌均匀,制得甘草风味八月瓜果酱;
G.灌装:将甘草风味八月瓜果酱通过灌装设备分装入已灭菌的容器设备中,装罐温度控制在90℃;
H.杀菌、冷却:将装罐好的甘草风味八月瓜果酱,放入沸水中用蒸汽加热2分钟,进行杀菌,后进行冷却;
I.检验、贮存:将检验合格的八月瓜果酱置于阴凉、干燥、避光处。
2.根据权利要求1所述的一种甘草风味八月瓜保健果酱,其特征在于:所述步骤G中容器为玻璃瓶,装罐量为容器的体积85-95%。
