上述的茯苓百合灵芝面条,优选的,所述百合是将将百合煮熟后,然后在太阳下晒干使得含水量低于10%,粉碎到50-80目制成。

本实施例的茯苓百合灵芝面条的制备方法,是将所述原料混合均匀后和面和成面团,加水量为25份,将面团发酵后制成面条,并且干燥。发酵的温度为30摄氏度,发酵时间为3小时。干燥是指干燥至面条的含水量在 12%。
本实施例经检验的各项指标如下 : (1)感官指标 : 色泽 :表面呈粗粮应有的色泽。
外观 :表面光滑,无粗糙感。
气味 :气味正常,无霉味、酸味及其他异味。
口感 :光滑细腻,不粘牙,柔软爽口,具有粗粮原料发芽或发酵后应有的滋味。
(2)理化指标 : 水分介于 12.5%~ 14.5%之间 ;脂肪酸值 ( 湿基 ) ≤ 80 ;自然断条率≤ 10% ;灰分 ≤ 10%。
(3)卫生指标 : 酸价 ( 以脂肪含量计 ) ≤ 5 ;砷 ( 以 As 计 )<0.5mg/kg;铅(以Pb计)<0.5mg/kg细菌总数<750个/g;致病菌没有。
