本发明涉及一种蔬果保鲜处理方法,具体涉及一种石榴运输期间保鲜防撞包装方法,将卡拉胶与聚丙烯酰胺、D‑葡萄糖酸钠、磷酸二氢钙、碳酸氢钠混合加入红瑞木浸提液,加热搅拌后通入造粒模型中造粒,将新鲜采收的石榴放入包装袋内,并加入球形颗粒,向包装袋内通入蒸馏水、混合气体,然后封袋即可,本发明包装方法有较好的防撞击、保鲜、护色效果。

技术领域
本发明涉及一种蔬果保鲜处理方法,具体涉及一种石榴运输期间保鲜防撞包装方法。
背景技术
石榴是遍布我国南北的一种水果,在温带及亚热带地区分布广泛,其果实美观鲜艳、营养丰富,距西南亚农业大学分析,石榴汁中含有17种游离氨基酸,和17种水解氨基酸,而且加工制成的石榴汁是风味独特的清凉饮料,石榴酒更是久负盛名,石榴果实不仅营养丰富,而且药用价值较高,可治疗肠炎、气管炎、肺炎、扁桃体炎、口腔炎等,根据其根、花、果皮含有大量生物碱,具有治疗痢疾、止血和收敛的药效,石榴的根茎果皮中含有较多鞣质,是制革和印染工业的中药原料,现在的石榴生产,已经从零散分布向大规模生产基地发展,鲜食和加工制汁相结合,扩大国内销售,开拓海外市场,有较好的发展趋势,目前石榴运输主要依靠装袋后外套泡沫网再进行装箱,以防止石榴运输、搬运期间发生碰撞导致损伤的现象,但由于泡沫网是两端开口结构,而且厚度一般,防运输损伤效果一般。
发明内容
本发明提供一种石榴运输期间保鲜防撞包装方法。
本发明采用的技术方案为:一种石榴运输期间保鲜防撞包装方法,包括以下步骤:
(1)将卡拉胶与聚丙烯酰胺、D-葡萄糖酸钠、磷酸二氢钙、碳酸氢钠按100-110:3:5:1:1的重量比混合均匀,按1:10的体积比加入红瑞木浸提液,加热至80-85℃,在3000-3200r/min的搅拌速率下保温搅拌23-28分钟,得到稳定胶质溶液;
(2)将胶质溶液通入造粒模型中造粒,造粒粒径在0.1-0.15cm,得到球形颗粒,将球形颗粒在45-48℃的热风下干燥至含水量在15-18%;
(3)将新鲜采收的石榴放入包装袋内,并按100:5的重量比加入球形颗粒,向包装袋内通入包装袋体积1/5-1/4的蒸馏水,并向包装袋内通入混合气体,充气量与包装袋剩余体积相当,然后封袋即可,将装袋后的石榴装箱贮存。
所述红瑞木浸提液在制作时,将红瑞木与无水乙醇按1:8-10的体积比混合加热至50-55℃后,抽真空至真空度达到1.35-1.38MPa,真空回流浸提5-6小时,回收乙醇,得到红瑞木浸提液;
所述混合气体由氧气、二氧化碳、氮气按1:3:1的体积比混合得到。
所述包装袋充气封袋后,包装袋与石榴之间最大空隙值≥0.5cm,≤1cm。
本发明有益效果在于,
由卡拉胶与聚丙烯酰胺、D-葡萄糖酸钠、磷酸二氢钙、碳酸氢钠按100-110:3:5:1:1的重量比混合得到的制胶原料经加水加热搅拌、造粒、干燥得到的球形颗粒胶体具有极好的粘附性吸水性能,添加于包装袋内并向包装袋内加入蒸馏水,通入混合气体封装,能快速复水并膨胀,并粘附在石榴表面,在惯性撞击下能够起到良好缓冲作用并避免石榴损伤,使用时,在封带结束后,可人工晃动袋内颗粒状胶体,使得颗粒状胶体均匀粘附在石榴表面,以起到更好且全方位的防撞击缓冲效果;
另外,颗粒状胶体吸水膨胀后可再次干燥,可反复利用;
以红润木浸提液为溶液制胶,红瑞木无水乙醇浸提液具有较好的抑菌保鲜作用;
由氧气、二氧化碳、氮气按1:3:1的体积比混合得到混合气体能够推迟石榴呼吸高峰出现,并对石榴有较好的护色作用。
具体实施方式
实施例1、
一种石榴运输期间保鲜防撞包装方法,包括以下步骤:
(1)将卡拉胶与聚丙烯酰胺、D-葡萄糖酸钠、磷酸二氢钙、碳酸氢钠按100:3:5:1:1的重量比混合均匀,按1:10的体积比加入红瑞木浸提液,加热至80℃,在3000r/min的搅拌速率下保温搅拌23分钟,得到稳定胶质溶液;
所述红瑞木浸提液在制作时,将红瑞木与无水乙醇按1:8的体积比混合加热至50℃后,抽真空至真空度达到1.35MPa,真空回流浸提5小时,回收乙醇,得到红瑞木浸提液;
(2)将胶质溶液通入造粒模型中造粒,造粒粒径在0.1cm,得到球形颗粒,将球形颗粒在45℃的热风下干燥至含水量在15%;
(3)将新鲜采收的石榴放入包装袋内,并按100:5的重量比加入球形颗粒,向包装袋内通入包装袋体积1/4的蒸馏水,并向包装袋内通入由氧气、二氧化碳、氮气按1:3:1的体积比混合得到的混合气体,充气量与包装袋剩余体积相当,然后封袋即可,将装袋后的石榴装箱贮存。
实施例2、
一种石榴运输期间保鲜防撞包装方法,包括以下步骤:
(1)将卡拉胶与聚丙烯酰胺、D-葡萄糖酸钠、磷酸二氢钙、碳酸氢钠按106:3:5:1:1的重量比混合均匀,按1:10的体积比加入红瑞木浸提液,加热至83℃,在3100r/min的搅拌速率下保温搅拌25分钟,得到稳定胶质溶液;
所述红瑞木浸提液在制作时,将红瑞木与无水乙醇按1:9的体积比混合加热至53℃后,抽真空至真空度达到1.34MPa,真空回流浸提5.7小时,回收乙醇,得到红瑞木浸提液;
(2)将胶质溶液通入造粒模型中造粒,造粒粒径在0.3cm,得到球形颗粒,将球形颗粒在46℃的热风下干燥至含水量在16%;
(3)将新鲜采收的石榴放入包装袋内,并按100:5的重量比加入球形颗粒,向包装袋内通入包装袋体积1/5的蒸馏水,并向包装袋内通入由氧气、二氧化碳、氮气按1:3:1的体积比混合得到的混合气体,充气量与包装袋剩余体积相当,然后封袋即可,将装袋后的石榴装箱贮存。
实施例3、
一种石榴运输期间保鲜防撞包装方法,包括以下步骤:
(1)将卡拉胶与聚丙烯酰胺、D-葡萄糖酸钠、磷酸二氢钙、碳酸氢钠按110:3:5:1:1的重量比混合均匀,按1:10的体积比加入红瑞木浸提液,加热至85℃,在3200r/min的搅拌速率下保温搅拌28分钟,得到稳定胶质溶液;
所述红瑞木浸提液在制作时,将红瑞木与无水乙醇按1:10的体积比混合加热至55℃后,抽真空至真空度达到1.38MPa,真空回流浸提6小时,回收乙醇,得到红瑞木浸提液;
(2)将胶质溶液通入造粒模型中造粒,造粒粒径在0.15cm,得到球形颗粒,将球形颗粒在48℃的热风下干燥至含水量在18%;
(3)将新鲜采收的石榴放入包装袋内,并按100:5的重量比加入球形颗粒,向包装袋内通入包装袋体积1/5的蒸馏水,并向包装袋内通入由氧气、二氧化碳、氮气按1:3:1的体积比混合得到的混合气体,充气量与包装袋剩余体积相当,然后封袋即可,将装袋后的石榴装箱贮存。
以下结合具体保鲜实验对本发明进一步说明,
试验1试供石榴于试验当天采自蚌埠市怀远县,试验前经挑选、分级,共挑选100粒石榴,随机分为A、B、C、D、E5组,每组20粒;
A组采用实施例1处理方法对石榴进行贮存;
B组不进行处理;
C组在实施例1的基础上将红瑞木浸提液替换为水;
D组在实施例1的基础上取消添加聚丙烯酰胺、D-葡萄糖酸钠、磷酸二氢钙、碳酸氢钠;
E组在实施例1的基础上将由氧气、二氧化碳、氮气按1:3:1的体积比混合得到的混合气体替换为空气;
各组处理后于常温下贮存;
试验前对石榴进行称重,定期2周取样称重;
并对贮存期石榴进行分级,分级标准:
5级处理前果实标准;
4级颜色轻微褐变,色泽亮度下降;
3级约1/3果实表面褐变,有漂白现象率;
2级 1/3-1/2果实表面褐变,漂白,果皮软化;
1级大于1/2果实表面褐变,漂白,果实软化失水严重;
0级整个果实表面褐变,漂白,果皮软化严重,果皮出现腐烂;
试验期间,分别对各组石榴于第2、3、4、5周进行称重以及按上述分级标准进行分级,结 果见下表1:

由上表可知,本发明由实施例1保鲜方法方法处理的石榴在降低石榴常温贮存失水率和保鲜效果极好。
试验2试供石榴于试验当天采自蚌埠市怀远县,试验前经挑选、分级,共挑选25粒石榴,随机分为A、B、C、D、E5组,每组5粒;
A组采用实施例1处理方法对石榴进行包装,包装完成后人工晃袋10-15下;
B组采用包装袋封装通入空气包装;
C组在实施例1的基础上将红瑞木浸提液替换为水,包装完成后人工晃袋10-15下;
D组在实施例1的基础上取消添加聚丙烯酰胺、D-葡萄糖酸钠、磷酸二氢钙、碳酸氢钠,包装完成后人工晃袋10-15下;
E组在实施例1的基础上将由氧气、二氧化碳、氮气按1:3:1的体积比混合得到的混合气体替换为空气,包装完成后人工晃袋10-15下;
将A、B、C、D、E5组包装好的石榴于80cm的高处向下自由坠落,观察各组石榴损伤状况;
结果:A组石榴未见损伤,损伤石榴个数为0,且A组胶体颗粒呈膨胀状态,能轻易从石榴表面剥离;
B组石榴损伤率个数为5个;
C组石榴未见损伤,损伤石榴个数为0,且A组胶体颗粒呈膨胀状态,能轻易从石榴表面剥离;
D组石榴损伤率个数为5个,但损伤程度低于B组损伤程度,D组胶体颗粒呈膨胀状态,不易从石榴表面剥离;
E组石榴未见损伤,损伤石榴个数为0,且E组胶体颗粒呈膨胀状态,能轻易从石榴表面剥离。

Claims (5)

1.一种石榴运输期间保鲜防撞包装方法,其特征在于,包括以下步骤:
(1)将卡拉胶与聚丙烯酰胺、D-葡萄糖酸钠、磷酸二氢钙、碳酸氢钠按100-110:3:5:1:1的重量比混合均匀,按1:10的体积比加入红瑞木浸提液,加热至80-85℃,在3000-3200r/min的搅拌速率下保温搅拌23-28分钟,得到稳定胶质溶液;
所述红瑞木浸提液在制作时,将红瑞木与无水乙醇按1:8-10的体积比混合加热至50-55℃后,抽真空至真空度达到1.35-1.38MPa,真空回流浸提5-6小时,回收乙醇,得到红瑞木浸提液;
(2)将胶质溶液通入造粒模型中造粒,得到球形颗粒,将球形颗粒干燥至含水量在15-18%;
(3)将新鲜采收的石榴放入包装袋内,并按100:5的重量比加入球形颗粒,向包装袋内通入包装袋体积1/5-1/4的蒸馏水,并向包装袋内通入混合气体,充气量与包装袋剩余体积相当,然后封袋即可,将装袋后的石榴装箱贮存。
2.根据权利要求1所述的一种石榴运输期间保鲜防撞包装方法,其特征在于,造粒粒径在0.1-0.15cm。
3.根据权利要求1或2所述的一种石榴运输期间保鲜防撞包装方法,其特征在于,球形颗粒在45-48℃的热风下干燥。
4.根据权利要求1所述的一种石榴运输期间保鲜防撞包装方法,其特征在于,所述混合气体由氧气、二氧化碳、氮气按1:3:1的体积比混合得到。
5.根据权利要求1、2、4任意一项所述的一种石榴运输期间保鲜防撞包装方法,其特征在于,所述包装袋充气封袋后,包装袋与石榴之间最大空隙值≥0.5cm,≤1cm。
