技术领域
本发明涉及一种食品的加工方法,尤其是涉及一种桑黄速溶保健粉的制作方法。
背景技术
桑黄是珍稀药用真菌,其子实体可入药。它主要寄生于杨、柳、桦、桃等阔叶树的枯立木及立木上及树干上,其主要功能为抗癌,抗纤维化,抗氧化,其治疗癌症的有效率达90%以上。桑黄在生物抗癌领域被国际公认为最具抗癌功效的真菌,其在抗癌领域中有效率排名第一,是国际医药界与保健品行业抗癌产品生产原料。这味古老的中药,名气远不如冬虫夏草,可是它的功效却不比冬虫夏草差。目前,国际公认的生物桑黄多糖是从桑黄的菌丝体、子实体中提取具有生物活性的多糖类物质。研究证实,桑黄多糖具有明显免疫调节、抗癌抗肿瘤、抗氧化、降低血糖、保护肝脏等作用。
新鲜的桑黄的营养价值高,用于加工成桑黄速溶保健粉可实现对桑黄原料的综合利用,可以直接食用,味道鲜美,贮藏时间长,提高其经济价值。

本发明的目的是提供一种桑黄速溶保健粉的制作方法,可以直接食用,味道鲜美,贮藏时间长。
本发明解决其技术问题所采取的技术方案是:
一种桑黄速溶保健粉的制作方法,其特征在于:采用豆粕清洗→浸泡配料→分装灭菌→接种培养→破碎烘干→糖化和糊化→干燥造粒→热风干燥→成品包装为加工工艺流程,具体操作步骤为:
(1)豆粕清洗、配料:将豆粕及适量高粱清洗浸泡8小时,取出沥去余水,拌入1.5%碳酸钙装瓶灭菌,在58.2千帕下灭菌2小时;
(2)接种培养:将灭菌后的豆粕混合料冷却至40℃,按无菌操作接入桑黄菌种,置45℃下培养8天,当菌丝长满瓶后取出培养物,粉碎烘干待用;
(3)糖化和糊化:将烘干的菌物入锅,加其重量12倍的清水进行加热糖化和糊化,温度达118℃,不断搅拌,使其充分糊化;
(4)造粒:在糊化物中添加适量白果粉、蛋白糖、洋槐花粉、酸角汁,然后用造粒机制粒,热风干燥,用食品包装即为成品。
有益效果:本发明产品口感清香味美,速溶性好,具有桑黄鲜美的风味,本产品营养丰富,口感鲜美,还具有明显免疫调节、抗癌抗肿瘤、抗氧化、降低血糖、保护肝脏等功效,食用方便,营养保健。
具体实施方式
实施例1:
一种桑黄速溶保健粉的制作方法,具体操作步骤为:
(1)豆粕清洗、配料:将豆粕、玉米清洗浸泡12小时,取出沥去余水,拌入5%碳酸钙装瓶灭菌,在147.1千帕下灭菌2小时;
(2)接种培养:将灭菌后的豆粕混合料冷却至25℃,按无菌操作接入桑黄菌种,置27℃下培养15天,当菌丝长满瓶后取出培养物,粉碎烘干待用;
(3)糖化和糊化:将烘干的菌物入锅,加其重量2倍的清水进行加热糖化和糊化,温度达120℃,不断搅拌,使其充分糊化;
(4)造粒:在糊化物中添加适量奶粉、麦芽糖、槐花粉、拐枣汁,然后用造粒机制粒,热风干燥,用食品包装即为成品。
实施例2:
一种桑黄速溶保健粉的制作方法,具体操作步骤为:
(1)豆粕清洗、配料:将豆粕、苦荞麦、燕麦清洗浸泡20小时,取出沥去余水,拌入1%碳酸钙装瓶灭菌,在88.6千帕下灭菌1小时;
(2)接种培养:将灭菌后的豆粕混合料冷却至20℃,按无菌操作接入桑黄菌种,置28℃下培养20天,当菌丝长满瓶后取出培养物,粉碎烘干待用;
(3)糖化和糊化:将烘干的菌物入锅,加其重量6倍的清水进行加热糖化和糊化,温度达180℃,不断搅拌,使其充分糊化;
(4)造粒:在糊化物中添加适量红茶粉、木糖醇、桂花粉、栝楼汁,然后用造粒机制粒,热风干燥,用食品包装即为成品。
