发明内容
本发明涉及一种风味苦瓜饼干的加工技术,所用材料是苦瓜、面粉、食用油、糖,工艺流程是:洗切-蒸煮-拌料-发酵-烘烤-包装。该技术加工的饼干,口感最大限度的保留了苦瓜独有的苦味,具备绿色健康食品的特质。
具体实施方式
风味苦瓜饼干其配方:苦瓜500克,面粉300克,糖30克,食用油50克,苏打粉10克,盐5克,选大个肉厚新鲜苦瓜清洗干净切成5CMx5CM的方块,和苏打粉一起倒入沸水中,煮至发软捞出放入冷水中冷却至凉,用纱布将苦瓜包好挤出苦瓜汁备用,将面粉、糖、发面酵母、盐放入盆中,倒入苦瓜汁搅拌均匀,静置发酵2小时,磨具刷油,将发酵好的面团倒入磨具,上火烘烤,烘烤:180℃/180℃,时间约25分钟即可。
产品的感官标准:表面底色为金黄色,色泽美观、无异味、异嗅、无肉眼可见杂质,外形美观,无霉变,无糖粒,无粉块。
