市场上果醋的种类较多,而梧桐子大多用于入药,将梧桐子与山楂加工成梧桐子山楂果醋,未见相关文献报道及相关产品面市。

本发明要解决的技术问题是提供一种梧桐子山楂果醋的酿造方法,制得的果醋营养丰富,风味独特,可顺气和胃、健脾消食、清热润肺。

一种梧桐子山楂果醋的酿造方法,其特征在于,采用以下步骤:
(1)原料预处理:挑选优质、成熟饱满的梧桐子、山楂为原料,取6kg的梧桐子、3kg的山楂,洗净去杂后,破碎处理,混合,制得原料粒;
(2)胶磨:向原料粒中加入其重量2倍的蒸馏水、5%的淀粉糖浆、0.35%的柠檬酸,搅拌均匀,进行打浆,再送入胶体磨进行磨浆,制得原料浆;
(3)酶解:向原料浆中加入0.45%的果胶酶和0.06%蛋白酶,混合均匀,置于温度42℃、湿度56%下进行酶解,再采用微波灭酶,微波工作频率为160MHz,输出功率为35Kw,时间为20min;过滤,制得酶解液和料渣;
(4)超声波提取:将料渣送入超声波提取锅内,并添加5kg的纯净水,设定超声波频率60kHz,保持提取锅恒温42℃,经提取55min,提取2次,合并提取液并离心过滤,制得提取液和提取渣;
(5)制备醋醅:将麸皮汁0.35kg、木糠0.45kg、豆粕0.25kg、麦芽糖液0.3kg和0.5kg的料渣,加水拌和,湿度控制在46%,经108℃灭菌10分钟,冷却后,接种培养8小时的酒母60毫升、麦曲汁25毫升,再置于35℃培养室,每5小时翻拌一次,培养15小时后备用;
(6)混合发酵:向酒精发酵后的酒醪中加入酶解液2.5kg、提取液1.5kg、梧桐花粉0.8kg、芜菁籽粉0.5kg、玉竹汁0.35kg,翻拌均匀;维持品温32℃进行醋酸发酵,每日翻拌3次,经过36天醋醅发生醋香,同时酸度不再升高即终止醋酸发酵,立即加入15%的葡萄糖液,再翻醅2天即可;
(7)纯化:将醋酸发酵醪在42℃恒温水浴环境下进行回流浸提35min,冷却至室温,过滤得滤液及滤渣,再将滤渣加入其重量3倍的纯净水在68℃环境下进行回流浸提25min,冷却至室温,过滤,合并滤液,制得醋液;
(8)澄清:将醋液泵入木桶中,进行陈酿30天,得澄清液;
(9)杀菌、包装:将澄清液用板式热交换器杀菌,温度为88℃,杀菌后趁热灌装,采用玻璃瓶进行密封包装,即为成品。

实施例1:
一种梧桐子山楂果醋的酿造方法,其特征在于,具体操作步骤为:
(1)原料预处理:挑选优质、成熟饱满的梧桐子、山楂、芜菁子为原料,取5kg的梧桐子、3kg的山楂和2kg的芜菁子,洗净去杂后,破碎处理,混合,制得原料粒;
(2)胶磨:向原料粒中加入其重量3倍的去离子水、2%的枣花蜜、0.25%的柠檬酸,搅拌均匀,进行打浆,再送入胶体磨进行磨浆,制得原料浆;

(6)混合发酵:向酒精发酵后的酒醪中加入酶解液2kg、提取液1kg、梧桐花粉0.45kg、绿茶粉0.5kg、五味子提取汁0.4kg,翻拌均匀;维持品温38℃进行醋酸发酵,每日翻拌2次,经过28天醋醅发生醋香,同时酸度不再升高即终止醋酸发酵,立即加入12%的果糖液,再翻醅3天即可;
(7)纯化:将醋酸发酵醪在45℃恒温水浴环境下进行回流浸提30min,冷却至室温,过滤得滤液及滤渣,再将滤渣加入其重量2倍的纯净水在55℃环境下进行回流浸提15min,冷却至室温,过滤,合并滤液,制得醋液;
(8)澄清:将醋液泵入木桶中,进行陈酿42天,得澄清液;
(9)杀菌、包装:将澄清液用板式热交换器杀菌,温度为95℃,杀菌后趁热灌装,采用玻璃瓶进行密封包装,即为成品。
实施例2:
一种梧桐子山楂果醋的酿造方法,其特征在于,具体操作步骤为:
(1)原料预处理:挑选优质、成熟饱满的梧桐子、山楂、青葙子和槠实子为原料,取3kg的梧桐子、2kg的山楂、青葙子和槠实子各1kg,洗净去杂后,破碎处理,混合,制得原料粒;

(7)纯化:将醋酸发酵醪在38℃恒温水浴环境下进行回流浸提55min,冷却至室温,过滤得滤液及滤渣,再将滤渣加入其重量5倍的纯净水在58℃环境下进行回流浸提32min,冷却至室温,过滤,合并滤液,制得醋液;
(8)澄清:将醋液泵入木桶中,进行陈酿32天,得澄清液;
(9)杀菌、包装:将澄清液用板式热交换器杀菌,温度为108℃,杀菌后趁热灌装,采用玻璃瓶进行密封包装,即为成品。
实施例3:
一种梧桐子山楂果醋的酿造方法,其特征在于,具体操作步骤为:
(1)原料预处理:挑选优质、成熟饱满的梧桐子、山楂、沙棘为原料,取10kg的梧桐子、6kg的山楂、4kg的沙棘,洗净去杂后,破碎处理,混合,制得原料粒;
(2)胶磨:向原料粒中加入其重量6倍的去离子水、8%的蜂蜜、0.55%的柠檬酸,搅拌均匀,进行打浆,再送入胶体磨进行磨浆,制得原料浆;

(6)混合发酵:向酒精发酵后的酒醪中加入酶解液5kg、提取液3kg、梧桐花粉1kg、枇杷叶粉0.25kg、罗汉果汁0.45kg,翻拌均匀;维持品温45℃进行醋酸发酵,每日翻拌2次,经过40天醋醅发生醋香,同时酸度不再升高即终止醋酸发酵,立即加入23%的蛋白糖液,再翻醅3天即可;
(7)纯化:将醋酸发酵醪在50℃恒温水浴环境下进行回流浸提25min,冷却至室温,过滤得滤液及滤渣,再将滤渣加入其重量4.5倍的纯净水在58℃环境下进行回流浸提35min,冷却至室温,过滤,合并滤液,制得醋液;
(8)澄清:将醋液泵入木桶中,进行陈酿30天,得澄清液;
(9)杀菌、包装:将澄清液用板式热交换器杀菌,温度为102℃,杀菌后趁热灌装,采用玻璃瓶进行密封包装,即为成品。

(6)混合发酵:向酒精发酵后的酒醪中加入酶解液2.5kg、提取液1.5kg、梧桐花粉0.8kg、芜菁籽粉0.5kg、玉竹汁0.35kg,翻拌均匀;维持品温32℃进行醋酸发酵,每日翻拌3次,经过36天醋醅发生醋香,同时酸度不再升高即终止醋酸发酵,立即加入15%的葡萄糖液,再翻醅2天即可;
(7)纯化:将醋酸发酵醪在42℃恒温水浴环境下进行回流浸提35min,冷却至室温,过滤得滤液及滤渣,再将滤渣加入其重量3倍的纯净水在68℃环境下进行回流浸提25min,冷却至室温,过滤,合并滤液,制得醋液;
(8)澄清:将醋液泵入木桶中,进行陈酿30天,得澄清液;
(9)杀菌、包装:将澄清液用板式热交换器杀菌,温度为88℃,杀菌后趁热灌装,采用玻璃瓶进行密封包装,得成品。
