人体之间存在较大的个体差异,某些食物对某些人是福音,而对某些人则会诱发疾病,尤其一些具有致敏性的食物资源,在进行营养膳食调配或营养食品加工时应注明起到警示的作用,或者尽量避免采用这些食物原料进行特定供应范围的营养食品的加工。例如黄豆、花生、杏仁、榛仁、鸡蛋等食物,虽然营养丰富,但是具有一定的致敏性,或者含有营养抑制因子,未经脱敏处理,过敏质人群或幼儿应慎重食用。
芝麻:又名脂麻、胡麻,是胡麻的籽种,包括黑芝麻、白芝麻品种,为一年生直立草本植物,遍布世界上热带地区以及部分温带地区。芝麻是中国主要油料作物之一,具有较高的应用价值。中国自古就有许多用芝麻和芝麻油制作的各色食品和美味佳肴,一直著称于世。芝麻含有大量的脂肪,其中主要为油酸、亚油酸、棕榈酸、花生酸等甘油酯。芝麻还含有甾醇、芝麻素、芝麻酚、叶酸、烟酸、蔗糖、卵磷脂、蛋白质、膳食纤维、糖类、维生素A、维生素B1、维生素B2、尼克酸、维生素E、卵磷脂、钙、铁、镁、铬等营养成分。相关研究结果表明芝麻具有健胃、保肝、养血等功效,还可预防皮肤干枯粗糙,令皮肤细腻光滑、红润有光泽。黑芝麻还具有增加体内黑色素、利于头发生长的作用。
黑糙米:黑米是一种药、食兼用的黑色大米。性平、味甘,归脾、胃经。黑糙米含粗蛋白质8.5~12.5%,粗脂肪2.7~3.8%,碳水化合物75~84%,粗灰分1.7~2%。黑米所含锰、锌、铜等无机盐大都比大米高1~3倍,还含有精白米缺乏的维生素C、叶绿素、花青素、胡萝卜素及强心甙等特殊成分。具有开胃益中、健脾活血、明目、抗衰老等功效。
小米:小米又名粟,古代称禾、稷或粟,中国北方通称谷子,去壳后叫小米。原产于中国北方黄河流域,约有8千多年的栽培历史,是中国古代的主要粮食作物,有白、红、黄、黑、橙、紫各种颜色。小米的营养价值很高,含蛋白质9.2%~14.7%,脂肪3.0%~4.6%,碳水化合物76.1%及多种维生素,一般粮食中不含有胡萝卜素,但每100克小米含胡萝卜素0.12毫克,维生素B1的含量位居所有粮食之首。小米含铁量为大米的4.8倍,含磷为大米的2.3倍。《本草纲目》载小米“治反胃热痢,煮粥食,益丹田,补虚损,开肠胃。”小米味甘咸、性凉,入肾、脾、胃经,具有健脾和胃、除湿、补益虚损、和中益肾、除热解毒、滋阴补血、健脑、安眠等功效,主治脾胃虚热、反胃呕吐、消渴、泄泻。
粳白米:俗称大米、精米、白米等,是稻米中谷粒较短圆、黏性较强、胀性小的白色品种,全世界有二分之一的人口以之作为主食。粳米中含有丰富的蛋白质,所含人体必需的氨基酸也比较全面,还含有脂肪、钙磷、铁及B族维生素等多种营养成分。粳米性平、味甘,归脾、胃经。具有养阴生津、补中益气、平和五脏、止烦渴、健脾胃、固肠止泄、壮筋骨、通血脉、益精强志等功效。主治泻痢、胃气不足、口干渴、呕吐、诸虚百损等。唐代医药学家孙思邈在《千金方•食治》中强调说,粳米能养胃气、长肌肉。《食鉴本草》认为粳米有补脾胃、养五脏、壮气力的良好功效。
玉米胚芽:玉米为一年生禾本科植物,又名苞谷、玉蜀黍、棒子等。玉米性平、味甘,有益肺宁心、健脾开胃等功效。玉米籽粒的胚约占籽粒总质量的10%~15%,体积占籽粒总体积的1/3左右,几乎是所有植物中最大的。玉米胚芽中脂肪含量高达35~72%,且主要为亚油酸脂,其脂肪酸组成符合人体健康需求,是生产食用油脂的良好原料。玉米胚还富含高品质的可溶性蛋白质、谷胱甘肽、超氧化物歧化酶、维生素E、可溶性糖等生物活性物质。玉米胚既是优质食用植物油生产原料,也是优质蛋白质来源。玉米胚蛋白主要为水溶性蛋白,主要为占总蛋白的40%左右的白蛋白和40%左右的球蛋白,谷蛋白20%左右,醇溶蛋白仅4%左右,玉米胚蛋白氨基酸组成及营养效价接近鸡蛋蛋白质。现代医学及营养学研究结果表明,玉米中丰富的亚油酸和维生素E,具有降低胆固醇水平、减少动脉硬化发生等作用;玉米胚中含有的谷胱甘肽,具有预防人体罹患癌症的功能;玉米含有的微量元素硒能加速人体内氧化物分解,抑制恶性肿瘤,具有防癌作用。
马铃薯全粉:马铃薯别称土豆、洋芋、馍馍蛋等,多年生草本,但作一年生或一年两季栽培。多用块茎繁殖,可入药。每100g马铃薯含热量66~113J,淀粉9~20g,蛋白质1.5~2.3g,脂肪0.1~1.1g,粗纤维0.6~0.8g,钙11~60mg,磷15~68mg,铁0.4mg~4.8mg,硫胺素0.03~0.07mg,核黄素0.03~0.11mg,尼克酸0.4~1.1mg 。马铃薯块茎还含有禾谷类粮食所没有的胡萝卜素和抗坏血酸。从营养角度来看,它比大米、面粉具有更多的优点。马铃薯味甘、性平,具有和胃健中、解毒消肿、补脾益气、缓急止痛、通便等功效。营养专家检测分析马铃薯生命力指数为8.6,证明对生命力的提高有效。防病指数为126.67,属于高指数范围。马铃薯具有很高的营养价值和药用价值。马铃薯全粉是采用新鲜马铃薯为原料加工的马铃薯干燥粉末制品,具有鲜马铃薯的营养价值与功效。
猕猴桃:猕猴桃原产中国,1904年从宜昌传到新西兰,称奇异果。中国是猕猴桃的原生中心,世界猕猴桃原产地在湖北宜昌市夷陵区雾渡河镇。猕猴桃营养丰富,风味鲜美。每100克猕猴桃果实维生素总量一般为100~200毫克,高的达400毫克,约为柑桔5~10倍。猕猴桃果实中的另外含糖类8~14%、柠檬酸、苹果酸等有机酸类1.4~2-0% 以及猕猴桃碱、蛋白水解酶、单宁果胶和糖类等有机物,以及钙、钾、硒、锌、锗等微量元素和人体所需17种氨基酸,其Vc、Mg及微量元素含量最高。猕猴桃味酸、甘,性寒。具有调中理气、生津润燥、解热除烦、防癌抗癌的功效。用于消化不良、食欲不振、呕吐、排毒抗衰老、治口腔溃疡、抗便秘、防治结肠癌及动脉硬化等。猕猴桃全果粉是以猕猴桃为原料科学加工而成的粉末制品,保留天然猕猴桃的全部营养成分。

草菇:草菇又名兰花菇、苞脚菇起源于广东韶关的南华寺中,300年前我国已开始人工栽培,是世界上第三大栽培食用菌,我国草菇产量居世界之首。草菇营养丰富,味道鲜美。每100g鲜菇含207.7mg维生素C、2.6g糖、2.68g粗蛋白、2.24g脂肪、0.91g灰分。草菇蛋白质含18种氨基酸,其中必需氨基酸占40.47~44.47%。此外,还含有磷、钾、钙等多种矿质元素。中医认为草菇性寒,味甘、微咸,无毒。具有消食祛热、补脾益气、清暑热、滋阴壮阳、防止坏血病、促进创伤愈合、护肝健胃、增强人体免疫力等功效,是优良的食药兼用型的营养食品。
榛蘑:榛蘑:别名蜜环菌、蜜色环蕈、蜜蘑、栎蘑。榛蘑含甘露醇、D-苏糖醇、卵磷脂、麦角甾醇和甲壳质等生理活性成分。每百克干物质含维生素B18.0微克,维生素B252.5微克,维生素C11.23微克,维生素PP34.15毫克,富含钙、磷、铁等微量元素,钾的含量高达每百克2000多毫克。蛋白质、胡萝卜素、维生素C等营养成份,是一般蔬菜的十几倍。榛蘑所含氨基酸以天冬氨酸、谷氨酸、赖氨酸为最高;其游离氨酸有胱氨酸、半胱氨酸、组氨酸、精氨酸、天冬氨酸、甘氨酸、谷氨酸、苏氨酸、α-丙氨酸、脯氨酸、酪氨酸、缬氨酸、亮氨酸。榛蘑味甘、性温,具有清目、利肺、益肠胃、祛风活络、强筋壮骨、镇静等功效。具有抗辐射、促进造血机能、调节免疫机能、抑制肿瘤生长等药理和保健作用。
银耳:是银耳科真菌银耳(Tremella fuciformis Berk.)的干燥子实体,是一种食药兼用的名贵食用菌。每100g干银耳含蛋白质6.6g、脂肪0.6g、碳水化合物75.3g、粗纤维2.6g、灰分8.3g及多种维生素。中国传统医学认为银耳味甘、性平,归肺、胃、肾经;有强精补肾、润肠益胃、补气和血、强心、滋阴润肺、生津、美容嫩肤、延年益寿之功效。银耳中含有的银耳多糖具有提高免疫力、抗肿瘤等作用。银耳蛋白质中含有17种氨基酸,几乎含有人体所必需的所有氨基酸。银耳富含多种矿物质,如钙、磷、铁、钾、钠、镁、硫等,尤其钙、铁的含量很高,在每百克银耳中,含钙643毫克,铁30.4毫克。银耳中含有的海藻糖、多缩戊糖、甘露糖醇等肝糖具有扶正强壮的作用。银耳富含维生素D,能防止人体钙流失,尤其对青少年身体生长发育十分有益;银耳富含硒等微量元素,可增强机体抗肿瘤的免疫力;银耳含有酸性多糖类物质,可激活淋巴细胞,增强吞噬细胞的吞噬能力,增强人体免疫力及骨髓造血功能;银耳富含膳食纤维可助胃肠蠕动,加快体内有毒有害物质的排除。
螺旋藻:亦称 “节旋藻”,蓝藻纲、颤藻科的低等原核生物,约有38种,多数生长在碱性盐湖。螺旋藻体长200-500μm,宽5-10μm,圆柱形,呈疏松或紧密的有规则螺旋形弯曲。藻体由单细胞或多细胞组成的不分枝丝状体,胶质鞘无或只有极薄的鞘,并有规则螺旋状,以形成藻殖段繁殖,无异形胞和后壁孢子。最早将螺旋藻作为食物的是十六世纪墨西哥的阿兹特克人。螺旋藻在乍得的食用历史可以追溯至九世纪的卡内姆-博尔努帝国。目前国内外均有大规模人工培育,主要为钝顶螺旋藻、极大螺旋藻和印度螺旋藻三种,可食用,营养丰富,含有丰富抗癌蛋白及多种维生素, 是维生素B12和β-胡萝卜素含量最高的食品。螺旋藻还是所有食物中可吸收性铁质含量最高的食物,以及其他大量矿质元素和提高机体免疫力的生物活性物质。螺旋藻多糖是螺旋藻藻体中碳水化合物的主要存在形式,含量高达干重的14%~16%。螺旋藻所含的类脂几乎全都是重要的不饱和脂肪酸类。螺旋藻干粉蛋白质含量60%~72%,相当于大豆的1.7倍、小麦的6倍、玉米的9.3倍、鸡肉的3.1倍、牛肉的3.5倍、鱼肉的3.7倍、猪肉的7倍、蛋类的4.6倍、全脂奶粉的2.9倍。螺旋藻富含维生素B1、B2、B3、B6、B12及维生素E等。螺旋藻几乎全价浓缩了人体最需要的各种维生素。螺旋藻还是叶绿素的天然宝库,量多质优,占藻体的1.1%,是大多数陆生植物的2~3倍,是普通蔬菜的10倍。螺旋藻所含叶绿素的类型主要是叶绿素a,含量高达7600mg/kg藻粉,其分子结构与人的血红素十分相似,是人类合成血红蛋白的直接原料。螺旋藻含有全部人体必需氨基酸,赖氨酸含量高达4.0%~4.8%,与动植物源食品相比最接近联合国粮农组织的推荐标准,而且组成均衡,人体对其吸收利用率特别高。螺旋藻富含人体所需钙、磷、镁、铁、钠、锰、锌、钾、氯等矿物质,约占藻体中矿物质总量的9%。其中铁含量为一般含铁食物的20倍,钙含量是牛奶的10倍。并且螺旋藻所含的矿物质,均属细胞生物性范围内的碱金属元素,不对人体细胞和组织器官产生任何副作用。相关研究结果表明螺旋藻具有减轻癌症放化疗的毒副反应、提高免疫功能、保护肠胃、抗肿瘤、防癌抑癌、抗辐射功能、治疗贫血症等多种功效。螺旋藻粉是以螺旋藻为原料科学加工而成的粉末制品,含有天然螺旋藻的全部营养成分。
紫菜:是在海中互生藻类的统称,紫菜属中叶状藻体可食的种群。紫菜营养丰富,其蛋白质含量超过海带,并含有较多的胡萝卜素、核黄素、碘、磷、钙等。每100g干紫菜含蛋白质24~28g、脂肪0.9克、碳水化合物31~50g、钙330毫克、磷440毫克、铁32毫克、胡萝卜素1.23毫克、核黄素2.07毫克、尼克酸5.1毫克、丙氨酸3.4g、谷氨酸3.2g、甘氨酸2.4g、白氨酸2.6g、异白氨酸1.4g,其蛋白质、铁、磷、钙、核黄素、胡萝卜素等含量居各种蔬菜之冠,故紫菜又有“营养宝库”的美称。紫菜味甘、咸,性凉。具有能软坚散结、清热化痰、补肾养心、利尿、提高机体的免疫力、抑制肿瘤之功效。用于甲状腺肿、水肿、慢性支气管炎、咳嗽、脚气、高血压等。由于紫菜富含胆碱和钙、铁,还具有能增强记忆的作用。
由于芝麻和玉米胚芽、食用菌、藻类含有丰富人体所需必需脂肪酸,尤其是富含亚油酸、亚麻酸等十八碳多烯酸,同时还含有充足的蛋白质、氨基酸、植物多糖、维生素等营养成分,因此具有特殊的营养作用与功效,是加工具有特殊用途的营养食品的优质原料。但是多不饱和脂肪酸特别容易发生氧化酸败而失去营养价值,甚至生成有害的过氧化物,尤其氧气及脂肪氧化酶的存在是导致其氧化酸败的重要原因,然而目前在生产过程中还无法避免这一现象发生,导致产品的贮存稳定性差,影响了产品的品质。另外食用菌、藻类、果蔬中含有的食用菌活性多糖、藻类多糖、维生素、氨基酸也容易受到极性条件的影响和破坏,失去营养价值,然而在加工利用过程中经常处于有氧气、高温、有机溶剂等环境中,无法保证原料中功能成分的天然生物活性。
发明内容
本发明提供一种无致敏无添加剂健脑强身菌藻复合营养米粉及其生产方法,产品富含钙、锌、氨基酸、维生素D等营养成分,不含香精、色素、甜味剂及防腐剂等任何食品添加剂。产品无致敏性,可作为正处于生长期的少年儿童或体质虚弱之人的营养食品,具有健脑增智、强身健体的作用。
本发明采取的技术方案是,包括下列步骤:
(一)原辅料的配比
以下物料均按质量分数进行配比,黑芝麻90~100份、白芝麻50~60份、黑糙米40~50份、小米30~40份、粳白米20~30份、玉米胚芽10~20份、马铃薯全粉10~20份、猕猴桃全果粉5~10份、苹果全果粉5~10份、冻干草菇3~5份、榛蘑1~3份、银耳1~3份、螺旋藻粉1~2份、紫菜1~2份、DE25~35麦芽糊精40~70份、蔗糖5~20份、葡萄糖3~10份;
(二)高脂物料分散与钝化香化处理
按配方要求准确称取无杂质干净的黑芝麻、白芝麻、黑糙米、小米、粳白米、玉米胚芽混合均匀,利用黑糙米、小米、粳白米对黑芝麻、白芝麻、玉米胚芽进行分散,并通过滞筛式撞击破碎进行粒度均化处理,获得粒度为小米粒的1/4~1/3大小的混合料,然后置于旋转式高温烘烤装置中,温度120~150℃、15~30min处理,钝化物料中脂肪氧化酶,同时产生焙烤香气,活化物料中功效成分,提高物料营养性及可消化性,然后取出,洁净条件下存放,备用;
(三)菌藻无尘精细粉碎处理
按配方要求准确称取无杂质洁净的冻干草菇、榛蘑、银耳、紫菜混合,送入低温多功能粉碎装置,装置内以食品级氮气维持1标准大气压,外循环冷却液控制装置内温度0~3℃,研磨粉碎时间40~60min,以30~50ml/min流速向装置内喷洒0℃冰水进行消尘,得到粒度70~100μm的湿润粉末,最大限度保留天然原料中生物活性成分,同时赋予产品柔滑细腻的口感;然后洁净条件下贮存,备用;
(四)精混合、高温短时间造粒
将步骤(二)、(三)及马铃薯全粉、DE25~35麦芽糊精初步混合后,利用螺旋挤压混合装置常温下进一步进行精混合,重复操作1~3次,充分混合,同时使各种物料组分发生交织与分散,提高各种物料成分的分散均匀度,然后110~140℃双螺杆挤压造粒,干燥,得到粒度100~140μm的颗粒料,无菌贮存,备用;
(五)调配、灌封
将步骤(四)及猕猴桃全果粉、苹果全果粉、螺旋藻粉、蔗糖、葡萄糖无菌条件下混合搅拌均匀,灌装封口,得到不具有致敏性,不添加任何添加剂,具有健脑强身作用的菌藻复合营养米粉,产品以沸水或温开水冲调,即冲即饮,食用方便。
本发明产品以芝麻、黑糙米、小米、粳白米、玉米胚芽、马铃薯、猕猴桃、苹果、草菇、榛蘑、银耳、螺旋藻、紫菜为主要原料,不含任何香精、色素、甜味剂及防腐剂、强化剂等添加剂,富含天然植物蛋白、多种氨基酸、矿物质、维生素、多不饱和脂肪酸、磷脂等功能成分。同时由于采用本专利特有技术对物料进行分散均化破碎与高温焙烤钝化脂肪氧化酶活性,避免了高脂物料粉碎粘结成团,防止脂肪氧化酸败现象的发生,提高了产品贮存稳定性,优化了产品的风味与口感。采用低温充氮粉碎方式避免原料中热敏性营养成分及易氧化营养成分因高温及氧气的作用发生变质,最大限度地保留物料中天然营养成分及其生物活性,保持和提高产品的保健功效。产品适合正处于生长阶段的少年儿童或体质虚弱的消费者用于补充营养,可健脑增智、强身健体。也适于其他人群食用,提高免疫力、补充营养、增强体魄。产品生产过程无污染,无废渣、废汽及有害物质产生,实现绿色生产;产品风味优雅、纯正,口感优良,食用安全、方便。
具体实施方式
实施例1
(一)原辅料的配比
以下物料均按质量分数进行配比,黑芝麻90份、白芝麻50份、黑糙米40份、小米30份、粳白米20份、玉米胚芽10份、马铃薯全粉10份、猕猴桃全果粉5份、苹果全果粉5份、冻干草菇3份、榛蘑1份、银耳1份、螺旋藻粉1份、紫菜1份、DE25~35麦芽糊精40份、蔗糖5份、葡萄糖3份;
(二)高脂物料分散与钝化香化处理
按配方要求准确称取无杂质干净的黑芝麻、白芝麻、黑糙米、小米、粳白米、玉米胚芽混合均匀,利用黑糙米、小米、粳白米对黑芝麻、白芝麻、玉米胚芽进行分散,并通过滞筛式撞击破碎进行粒度均化处理,获得粒度为小米粒的1/4大小的混合料,然后置于旋转式高温烘烤装置中,温度120℃、30min处理,钝化物料中脂肪氧化酶,同时产生焙烤香气,活化物料中功效成分,提高物料营养性及可消化性,然后取出,洁净条件下存放,备用;

(二)高脂物料分散与钝化香化处理
按配方要求准确称取无杂质干净的黑芝麻、白芝麻、黑糙米、小米、粳白米、玉米胚芽混合均匀,利用黑糙米、小米、粳白米对黑芝麻、白芝麻、玉米胚芽进行分散,并通过滞筛式撞击破碎进行粒度均化处理,获得粒度为小米粒的1/3大小的混合料,然后置于旋转式高温烘烤装置中,温度150℃、15min处理,钝化物料中脂肪氧化酶,同时产生焙烤香气,活化物料中功效成分,提高物料营养性及可消化性,然后取出,洁净条件下存放,备用;
(三)菌藻无尘精细粉碎处理

将步骤(二)、(三)及马铃薯全粉、DE25~35麦芽糊精初步混合后,利用螺旋挤压混合装置常温下进一步进行精混合,重复操作3次,充分混合,同时使各种物料组分发生交织与分散,提高各种物料成分的分散均匀度,然后140℃双螺杆挤压造粒,干燥,得到粒度140μm的颗粒料,无菌贮存,备用;
(五)调配、灌封
将步骤(四)及猕猴桃全果粉、苹果全果粉、螺旋藻粉、蔗糖、葡萄糖无菌条件下混合搅拌均匀,灌装封口,得到不具有致敏性,不添加任何添加剂,具有健脑强身作用的菌藻复合营养米粉,产品以沸水或温开水冲调,即冲即饮,食用方便。
实施例3
(一)原辅料的配比
以下物料均按质量分数进行配比,黑芝麻95份、白芝麻55份、黑糙米45份、小米35份、粳白米25份、玉米胚芽15份、马铃薯全粉15份、猕猴桃全果粉7.5份、苹果全果粉7.5份、冻干草菇4份、榛蘑2份、银耳2份、螺旋藻粉1.5份、紫菜1.5份、DE25~35麦芽糊精55份、蔗糖12.5份、葡萄糖6.5份;
(二)高脂物料分散与钝化香化处理
按配方要求准确称取无杂质干净的黑芝麻、白芝麻、黑糙米、小米、粳白米、玉米胚芽混合均匀,利用黑糙米、小米、粳白米对黑芝麻、白芝麻、玉米胚芽进行分散,并通过滞筛式撞击破碎进行粒度均化处理,获得粒度为小米粒的1/4大小的混合料,然后置于旋转式高温烘烤装置中,温度135℃、22.5min处理,钝化物料中脂肪氧化酶,同时产生焙烤香气,活化物料中功效成分,提高物料营养性及可消化性,然后取出,洁净条件下存放,备用;
(三)菌藻无尘精细粉碎处理
按配方要求准确称取无杂质洁净的冻干草菇、榛蘑、银耳、紫菜混合,送入低温多功能粉碎装置,装置内以食品级氮气维持1标准大气压,外循环冷却液控制装置内温度1.5℃,研磨粉碎时间50min,以40ml/min流速向装置内喷洒0℃冰水进行消尘,得到粒度85μm的湿润粉末,最大限度保留天然原料中生物活性成分,同时赋予产品柔滑细腻的口感;然后洁净条件下贮存,备用;
(四)精混合、高温短时间造粒
将步骤(二)、(三)及马铃薯全粉、DE25~35麦芽糊精初步混合后,利用螺旋挤压混合装置常温下进一步进行精混合,重复操作2次,充分混合,同时使各种物料组分发生交织与分散,提高各种物料成分的分散均匀度,然后125℃双螺杆挤压造粒,干燥,得到粒度120μm的颗粒料,无菌贮存,备用;
(五)调配、灌封
将步骤(四)及猕猴桃全果粉、苹果全果粉、螺旋藻粉、蔗糖、葡萄糖无菌条件下混合搅拌均匀,灌装封口,得到不具有致敏性,不添加任何添加剂,具有健脑强身作用的菌藻复合营养米粉,产品以沸水或温开水冲调,即冲即饮,食用方便。
实施例4

(二)高脂物料分散与钝化香化处理
按配方要求准确称取无杂质干净的黑芝麻、白芝麻、黑糙米、小米、粳白米、玉米胚芽混合均匀,利用黑糙米、小米、粳白米对黑芝麻、白芝麻、玉米胚芽进行分散,并通过滞筛式撞击破碎进行粒度均化处理,获得粒度为小米粒的1/4大小的混合料,然后置于旋转式高温烘烤装置中,温度150℃、15min处理,钝化物料中脂肪氧化酶,同时产生焙烤香气,活化物料中功效成分,提高物料营养性及可消化性,然后取出,洁净条件下存放,备用;
(三)菌藻无尘精细粉碎处理

Claims (2)
1.一种无致敏无添加剂健脑强身菌藻复合营养米粉,其特征在于是由下列步骤得到的:
(一)原辅料的配比
以下物料均按质量分数进行配比,黑芝麻90~100份、白芝麻50~60份、黑糙米40~50份、小米30~40份、粳白米20~30份、玉米胚芽10~20份、马铃薯全粉10~20份、猕猴桃全果粉5~10份、苹果全果粉5~10份、冻干草菇3~5份、榛蘑1~3份、银耳1~3份、螺旋藻粉1~2份、紫菜1~2份、DE25~35麦芽糊精40~70份、蔗糖5~20份、葡萄糖3~10份;
(二)高脂物料分散与钝化香化处理

2.如权利要求1所述的一种无致敏无添加剂健脑强身菌藻复合营养米粉的生产方法,其特征在于,包括下列步骤:
(一)原辅料的配比
以下物料均按质量分数进行配比,黑芝麻90~100份、白芝麻50~60份、黑糙米40~50份、小米30~40份、粳白米20~30份、玉米胚芽10~20份、马铃薯全粉10~20份、猕猴桃全果粉5~10份、苹果全果粉5~10份、冻干草菇3~5份、榛蘑1~3份、银耳1~3份、螺旋藻粉1~2份、紫菜1~2份、DE25~35麦芽糊精40~70份、蔗糖5~20份、葡萄糖3~10份;
(二)高脂物料分散与钝化香化处理
按配方要求准确称取无杂质干净的黑芝麻、白芝麻、黑糙米、小米、粳白米、玉米胚芽混合均匀,利用黑糙米、小米、粳白米对黑芝麻、白芝麻、玉米胚芽进行分散,并通过滞筛式撞击破碎进行粒度均化处理,获得粒度为小米粒的1/4~1/3大小的混合料,然后置于旋转式高温烘烤装置中,温度120~150℃、15~30min处理,钝化物料中脂肪氧化酶,同时产生焙烤香气,活化物料中功效成分,提高物料营养性及可消化性,然后取出,洁净条件下存放,备用;
