本发明通过以下技术方案实现:
一种苹果味月季花黑鱼片,由以下重量份的原料制成:黑鱼180~190份、苹果55~60份、月季花23~25份、马铃薯淀粉3.1~3.3份、小麦淀粉2.7~2.9份、葵花籽油6.6~6.8份、青菜11~13份、菠菜8~10份、空心菜14~16份、海带13~15份、乳酸链球菌肽0.02~0.04份、纳他霉素0.03~0.05、乙基麦芽酚A10.11~0.13份、乙基麦芽酚A30.14~0.16份、桔梗根0.32~0.34份、金银花0.21~0.23份、建兰根0.24~0.26份、蓬蒿0.42~0.44份、红瑞木0.22~0.24份、小檗根0.17~0.19份、含笑花0.14~0.16份。
作为发明进一步的方案:一种苹果味月季花黑鱼片的制备方法,具体包括以下步骤:
(1)选择新鲜、无病害的黑鱼,进行去鳞、去内脏处理,沿鱼脊椎骨剔下鱼体两侧的鱼肉并剖成长度为42~44mm、宽度为17~19mm、厚度为1.7~1.9mm的鱼片,在鱼片表面均匀加入乙基麦芽酚A3搓揉320~330s,静置16~18min,备用;
(2)将苹果用自来水清洗干净,进行去皮、去核、切块处理,投入转速为1300~1350r/min的榨汁机榨汁360~370s,过55~60目筛,得苹果汁和苹果末,备用;
(3)向苹果汁内加入乙基麦芽酚A1,用转速为220~225r/min的搅拌器搅拌270~280s,均匀喷洒在步骤(1)的鱼片表面,置于温度为-36~-34℃的冷冻箱不重叠平铺冷冻38~40h,将温度升高至-24~-22℃冷冻17~19h,得苹果汁鱼片,备用;
(4)将苹果汁鱼片室温自然解冻,放在沥水架上沥水15~17min,加入马铃薯淀粉搓揉410~420s,静置34~36min,投入转速为3150~3200r/min的打浆机打浆530~540s,加入小麦淀粉搓揉380~390s,静置28~30min,得苹果汁鱼浆,备用;
(5)将月季花用自来水清洗干净,沥水16~18min,投入转速为,2400~2450r/min的打浆机打浆490~500s,得月季花浆;将苹果汁鱼浆、月季花浆、乳酸链球菌肽和纳他霉素投入转速为550~560r/min的混合搅拌机搅拌720~730s,盖上保鲜膜置于保鲜箱密闭发酵10~12h,得苹果月季花鱼浆,备用;
(6)将海带用自来水清洗干净,沥水18~20min,置于温度为-19~-17℃的真空冷冻干燥箱干燥至无水分,投入转速为5850~5900r/min的粉碎机粉碎680~690s,得海带粉,备用;
(7)将青菜、菠菜和空心菜用自来水清洗干净,沥水23~25min,投入转速为2800~2850r/min的打浆机打浆480~490s,加入海带粉用转速为245~250r/min的搅拌器搅拌300~310s,得蔬菜浆,备用;
(8)将桔梗根、金银花、建兰根、蓬蒿、红瑞木、小檗根和含笑花用自来水清洗干净,加入桔梗根重量55~60倍量的水,大火煮沸,中火熬煮8~10min,文火熬煮33~35min,过滤,得中药渣一和中药提取液一;将中药渣一投入转速为6500~6550r/min的粉碎机粉碎520~530s,过155~160目筛,得中药粉;将中药粉置于渗漉器中不间断加入其重量14~16倍量、质量分数为32~34%的乙醇渗漉30~32min,得中药提取液二;合并中药提取液一和中药提取液二,文火熬煮10~12min,室温自然冷却,减压浓缩至无水分,得中药提取物,备用;
(9)苹果月季花鱼浆、苹果末、蔬菜浆、葵花籽油和中药提取物投入转速为580~590r/min的混合搅拌机搅拌660~670s,倒入模具中,置于温度为93~95℃的烘烤箱烘烤6~8min,升高温度至120~122℃烘烤45~50s,室温自然冷却,得苹果味月季花黑鱼片;
(10)将苹果味月季花黑鱼片真空袋装,185~190W/cm2紫外照射30~32min,充氮包装,得成品。
作为发明进一步的方案:步骤(9)所述的模具,厚度为2.5~2.7mm,形状为五角星形、圆形、心形、花朵形、动物形中的一种或多种。
作为发明进一步的方案:本发明所使用的月季花、青菜、菠菜、空心菜和海带含量均以鲜重重量计。
作为发明进一步的方案:本发明所使用的桔梗根、金银花、建兰根、蓬蒿、红瑞木、小檗根和含笑花含量均以干重重量计。
桔梗根:宣肺,利咽,祛痰,排脓;用于咳嗽痰多,胸闷不畅,咽痛,音哑,肺痈吐脓,疮疡脓成不溃。
金银花:宣散风热,清解血毒;用于各种热性病,如身热、发疹、发斑、热毒疮痈、咽喉肿痛等症,均效果显著。
建兰根:滋阴清肺,化痰止咳。
蓬蒿:调胃健脾、降压补脑;对咳嗽痰多、脾胃不和、记忆力减退、习惯性便秘有较好的疗效。
红瑞木:清热解毒,止痢,止血;主湿热痢疾,肾炎,风湿关节痛,目赤肿痛,中耳炎,咯血,便血。
小檗根:清热燥湿,泻火解毒;治急性肠炎,痢疾,黄疸,热痹,瘰疬,肺炎,结膜炎,痈肿疮疖,血崩。
含笑花:振奋精神,激发活力,消除疲劳,凉血解毒,护肤养颜,安神解郁。
本发明的有益效果:本发明提供的一种苹果味月季花黑鱼片,配方科学合理,配比均衡,各原料之间有效营养成分相互作用,使得鱼片表面色泽均匀,表面纹理清晰,片形平整,形态完整,具有淡淡的花香味,无鱼腥味,质地均匀,口感酥嫩,有嚼劲,滋味鲜美,具有防治咽喉肿痛、咳嗽痰多、便秘、体力不支的保健功效;在鱼肉表面加入乙基麦芽酚A3进行搓揉,不但能够有效降低鱼肉的鱼腥味,而且能够有效避免鱼肉腐败变质;鱼肉表面均匀喷洒苹果汁后投入低温冷冻箱进行冷冻,使得苹果汁的有效营养成分更好的融入到鱼肉内部,使其具有降低胆固醇、防癌抗癌、改善呼吸系统和肺功能、促进胃肠蠕动、维持酸碱平衡的功效,在苹果汁内加入乙基麦芽酚A1混合均匀,能够明显提高苹果的鲜味,进一步降低鱼肉的鱼腥味;依次使用马铃薯淀粉和小麦淀粉对鱼肉进行搓揉处理,能够有效嫩化肉质,增强鱼肉的弹性,使其更有嚼劲;加入月季花浆、乳酸链球菌肽和纳他霉素进行保鲜发酵,不但能够使得月季花的有效成分更好的渗入到鱼肉内部,提升鱼肉的香味,而且能够保证发酵期间鱼肉的鲜嫩;加入蔬菜原料,能够有效均衡鱼片的营养结构,使其具有更高的营养价值;加入多种草药,提取其有效成分进行与鱼浆混合,不但能够有效促进人体对有效营养成分的吸收和利用,而且使其具有消除疲劳、清热解毒、调胃健脾的功效,与苹果末和蔬菜浆一起混合加入到鱼浆中,其苦味被有效掩盖。

下面用具体实施例说明本发明,但并不是对本发明的限制。
实施例1
本发明实施例中,一种苹果味月季花黑鱼片,由以下重量份的原料制成:黑鱼180份、苹果55份、月季花23份、马铃薯淀粉3.1份、小麦淀粉2.7份、葵花籽油6.6份、青菜11份、菠菜8份、空心菜14份、海带13份、乳酸链球菌肽0.02份、纳他霉素0.03、乙基麦芽酚A10.11份、乙基麦芽酚A30.14份、桔梗根0.32份、金银花0.21份、建兰根0.24份、蓬蒿0.42份、红瑞木0.22份、小檗根0.17份、含笑花0.14份。
作为发明进一步的方案:一种苹果味月季花黑鱼片的制备方法,具体包括以下步骤:
(1)选择新鲜、无病害的黑鱼,进行去鳞、去内脏处理,沿鱼脊椎骨剔下鱼体两侧的鱼肉并剖成长度为42mm、宽度为17mm、厚度为1.7mm的鱼片,在鱼片表面均匀加入乙基麦芽酚A3搓揉320s,静置16min,备用;

(5)将月季花用自来水清洗干净,沥水16min,投入转速为,2400r/min的打浆机打浆490s,得月季花浆;将苹果汁鱼浆、月季花浆、乳酸链球菌肽和纳他霉素投入转速为550r/min的混合搅拌机搅拌720s,盖上保鲜膜置于保鲜箱密闭发酵10h,得苹果月季花鱼浆,备用;
(6)将海带用自来水清洗干净,沥水18min,置于温度为-19℃的真空冷冻干燥箱干燥至无水分,投入转速为5850r/min的粉碎机粉碎680s,得海带粉,备用;
(7)将青菜、菠菜和空心菜用自来水清洗干净,沥水23min,投入转速为2800r/min的打浆机打浆480s,加入海带粉用转速为245r/min的搅拌器搅拌300s,得蔬菜浆,备用;
(8)将桔梗根、金银花、建兰根、蓬蒿、红瑞木、小檗根和含笑花用自来水清洗干净,加入桔梗根重量55倍量的水,大火煮沸,中火熬煮8min,文火熬煮33min,过滤,得中药渣一和中药提取液一;将中药渣一投入转速为6500r/min的粉碎机粉碎520s,过155目筛,得中药粉;将中药粉置于渗漉器中不间断加入其重量14倍量、质量分数为32%的乙醇渗漉30min,得中药提取液二;合并中药提取液一和中药提取液二,文火熬煮10min,室温自然冷却,减压浓缩至无水分,得中药提取物,备用;
(9)苹果月季花鱼浆、苹果末、蔬菜浆、葵花籽油和中药提取物投入转速为580r/min的混合搅拌机搅拌660s,倒入模具中,置于温度为93℃的烘烤箱烘烤6min,升高温度至120℃烘烤45s,室温自然冷却,得苹果味月季花黑鱼片;
(10)将苹果味月季花黑鱼片真空袋装,185W/cm2紫外照射30min,充氮包装,得成品。
作为发明进一步的方案:步骤(9)所述的模具,厚度为2.5mm,形状为五角星形、圆形、心形、花朵形、动物形中的一种或多种。
作为发明进一步的方案:本发明所使用的月季花、青菜、菠菜、空心菜和海带含量均以鲜重重量计。
作为发明进一步的方案:本发明所使用的桔梗根、金银花、建兰根、蓬蒿、红瑞木、小檗根和含笑花含量均以干重重量计。
实施例2
本发明实施例中,与实施例1不同之处在于原料重量份数的不同,其他条件均相同。
一种苹果味月季花黑鱼片,由以下重量份的原料制成:黑鱼185份、苹果58份、月季花24份、马铃薯淀粉3.2份、小麦淀粉2.8份、葵花籽油6.7份、青菜12份、菠菜9份、空心菜15份、海带14份、乳酸链球菌肽0.03份、纳他霉素0.04、乙基麦芽酚A10.12份、乙基麦芽酚A30.15份、桔梗根0.33份、金银花0.22份、建兰根0.25份、蓬蒿0.43份、红瑞木0.23份、小檗根0.18份、含笑花0.15份。
实施例3
本发明实施例中,与实施例1不同之处在于原料重量份数的不同,其他条件均相同。
一种苹果味月季花黑鱼片,由以下重量份的原料制成:黑鱼190份、苹果60份、月季花25份、马铃薯淀粉3.3份、小麦淀粉2.9份、葵花籽油6.8份、青菜13份、菠菜10份、空心菜16份、海带15份、乳酸链球菌肽0.04份、纳他霉素0.05、乙基麦芽酚A10.13份、乙基麦芽酚A30.16份、桔梗根0.34份、金银花0.23份、建兰根0.26份、蓬蒿0.44份、红瑞木0.24份、小檗根0.19份、含笑花0.16份。
随机选择18~60岁的受试者80位,随机分为4组,每组20人,对实施例苹果味月季花黑鱼片和对比例市售鱼片进行感官评定,每项满分为100分,最后得分为平均分,实施例苹果味月季花黑鱼片和对比例市售鱼片的感官评定见表1:

从表1的结果可以看出,实施例的苹果味月季花黑鱼片,鱼片表面色泽均匀,表面纹理清晰,片形平整,形态完整,具有淡淡的花香味,无鱼腥味,质地均匀,口感酥嫩,有嚼劲,滋味鲜美,得到广大消费者的喜爱。
实施例苹果味月季花黑鱼片和对比例市售鱼片的保健效果:
有效:不适症状减轻或消失;无效:不适症状不变或更加严重。
随机选择咽喉肿痛、咳嗽痰多、便秘和体力不支的患者各200名,随机分为2组,每组100名,所有患者受试前3天停用所有药物,实施例和对比例组每人每天食用该组鱼片50克,受试时间为30天,实施例苹果味月季花黑鱼片和对比例市售鱼片的保健效果见表2:

从表2的结果可以看出,实施例的苹果味月季花黑鱼片分别经多种疾病的患者食用后,能够有效抑制多种疾病,减轻疾病症状,其有效率明显较对比例高,说明本发明提供的苹果味月季花黑鱼片具有良好的保健效果。

1.一种苹果味月季花黑鱼片,其特征在于,由以下重量份的原料制成:黑鱼180~190份、苹果55~60份、月季花23~25份、马铃薯淀粉3.1~3.3份、小麦淀粉2.7~2.9份、葵花籽油6.6~6.8份、青菜11~13份、菠菜8~10份、空心菜14~16份、海带13~15份、乳酸链球菌肽0.02~0.04份、纳他霉素0.03~0.05、乙基麦芽酚A10.11~0.13份、乙基麦芽酚A30.14~0.16份、桔梗根0.32~0.34份、金银花0.21~0.23份、建兰根0.24~0.26份、蓬蒿0.42~0.44份、红瑞木0.22~0.24份、小檗根0.17~0.19份、含笑花0.14~0.16份。
2.根据权利要求1所述的苹果味月季花黑鱼片的制备方法,其特征在于,具体包括以下步骤:
(1)选择新鲜、无病害的黑鱼,进行去鳞、去内脏处理,沿鱼脊椎骨剔下鱼体两侧的鱼肉并剖成长度为42~44mm、宽度为17~19mm、厚度为1.7~1.9mm的鱼片,在鱼片表面均匀加入乙基麦芽酚A3搓揉320~330s,静置16~18min,备用;
(2)将苹果用自来水清洗干净,进行去皮、去核、切块处理,投入转速为1300~1350r/min的榨汁机榨汁360~370s,过55~60目筛,得苹果汁和苹果末,备用;

(4)将苹果汁鱼片室温自然解冻,放在沥水架上沥水15~17min,加入马铃薯淀粉搓揉410~420s,静置34~36min,投入转速为3150~3200r/min的打浆机打浆530~540s,加入小麦淀粉搓揉380~390s,静置28~30min,得苹果汁鱼浆,备用;
(5)将月季花用自来水清洗干净,沥水16~18min,投入转速为,2400~2450r/min的打浆机打浆490~500s,得月季花浆;将苹果汁鱼浆、月季花浆、乳酸链球菌肽和纳他霉素投入转速为550~560r/min的混合搅拌机搅拌720~730s,盖上保鲜膜置于保鲜箱密闭发酵10~12h,得苹果月季花鱼浆,备用;
(6)将海带用自来水清洗干净,沥水18~20min,置于温度为-19~-17℃的真空冷冻干燥箱干燥至无水分,投入转速为5850~5900r/min的粉碎机粉碎680~690s,得海带粉,备用;
(7)将青菜、菠菜和空心菜用自来水清洗干净,沥水23~25min,投入转速为2800~2850r/min的打浆机打浆480~490s,加入海带粉用转速为245~250r/min的搅拌器搅拌300~310s,得蔬菜浆,备用;
(8)将桔梗根、金银花、建兰根、蓬蒿、红瑞木、小檗根和含笑花用自来水清洗干净,加入桔梗根重量55~60倍量的水,大火煮沸,中火熬煮8~10min,文火熬煮33~35min,过滤,得中药渣一和中药提取液一;将中药渣一投入转速为6500~6550r/min的粉碎机粉碎520~530s,过155~160目筛,得中药粉;将中药粉置于渗漉器中不间断加入其重量14~16倍量、质量分数为32~34%的乙醇渗漉30~32min,得中药提取液二;合并中药提取液一和中药提取液二,文火熬煮10~12min,室温自然冷却,减压浓缩至无水分,得中药提取物,备用;
(9)苹果月季花鱼浆、苹果末、蔬菜浆、葵花籽油和中药提取物投入转速为580~590r/min的混合搅拌机搅拌660~670s,倒入模具中,置于温度为93~95℃的烘烤箱烘烤6~8min,升高温度至120~122℃烘烤45~50s,室温自然冷却,得苹果味月季花黑鱼片;
(10)将苹果味月季花黑鱼片真空袋装,185~190W/cm2紫外照射30~32min,充氮包装,得成品。
3.根据权利要求2所述的苹果味月季花黑鱼片的制备方法,其特征在于,步骤(9)所述的模具,厚度为2.5~2.7mm,形状为五角星形、圆形、心形、花朵形、动物形中的一种或多种。
