本发明涉及花茶技术领域,尤其涉及一种滋阴填髓鱼骨茉莉茶及其制备方法。
背景技术
近年来,在饮食方面钠盐摄取过高和缺钙导致的高血压、肥胖等疾病的发病率逐年增高并出现低龄化趋势,而且现代医学也已证明缺钙比高钠的危害性更大。因此,食物中钙含量的提高是解决缺钙问题的主要途径之一。
近年来,牡蛎作为我国重要的海产经济贝类产量不断增加,而占其总重80%以上的牡蛎壳大多数作为固体废弃物被丢弃在垃圾场或填海,已成为环境一大公害,迫切需要新技术手段来解决这一问题。另外,由于牡蛎壳中碳酸钙的含量高达95%左右,以牡蛎贝壳为原料制备生物钙日益引起人们的重视。本文以牡蛎加工废弃物牡蛎壳为钙源制备高纯度谷氨酸螯合钙,不仅可作为补钙剂,又可作为代盐剂及调味剂使用,从而变废为宝,对保护环境有重要意义。
山楂又名山里红、红果、胭脂果,为蔷薇科山楂属植物,我国资源丰富。山楂果有很高的营养价值,具有多方面的药理活性。常吃山楂及其制品能增强食欲,改善睡眠,保持骨骼和血液中钙的恒定,预防动脉粥样硬化,使人延年益寿。因此,在人们日益重视自身保健的今天,研究山楂的功能特性及其制品日益受到人们的广泛关注。目前,对山楂抗氧化性的研究鲜见报道。
发明内容
本发明目的就是为了弥补已有技术的缺陷,提供一种滋阴填髓鱼骨茉莉茶及其制备方法。
本发明是通过以下技术方案实现的:
一种滋阴填髓鱼骨茉莉茶,由下列重量份的原料制成:
玉米15-16、鱼骨3-4、柚子皮15-17、豆蚕皮3-4、红糖7-10、茉莉花茶汁200-250、牡蛎壳100-110、山楂100-105、白糖10-15、槲皮素0.1-0,2、L-焦谷氨酸0.7-1、熟地黄1.3-2、锦灯笼1.3-3、玉竹1-2。
所述的一种滋阴填髓鱼骨茉莉茶的制备方法,包括以下步骤:
(1)将熟地黄、锦灯笼、玉竹用6-9倍量的水浸提后,滤得到中药汁;
(2)将牡蛎壳先用清水清洗表面杂物,粉碎,加适量水研磨成糊状,加水搅拌,过滤除去滤液,得钙源牡蛎壳粉;
(3)取L-焦谷氨酸、钙源牡蛎壳粉混合,加入混合物100-110倍的蒸馏水中,加热到70-75℃,加入醋酸或小苏打调节pH为5-6,保温搅拌1-1.2小时,抽滤,将滤液蒸发浓缩至膏状,加入膏状重量20-33倍的、90-92%的乙醇溶液,搅拌均匀,得螯合钙醇液;
(4)玉米、鱼骨混合置于搅拌机搅拌成糊状,再与中药汁混合倒入锅内,小火浸煮,浓缩成膏状;
(5)取柚子皮、豆蚕皮洗净沥干后,剪碎,再用红糖均匀揉搓,混合腌渍5-8天,取得腌渍好的物料,沥去糖水,再共同送入烘箱小火烘烤1-2分钟,收集待用;
(6)将山楂粉加入到其重量20-30倍的、47-50%的乙醇溶液中,于功率为197-00W下超声35-40min,过滤得提取液;
(7)将提取液滴加到合钙醇液中,滴加完毕后加入上述槲皮素,搅拌均匀,置于50-60℃的恒温水浴中,保温10-12小时,出料,将滤液蒸发浓缩至膏状,得抗氧化螯合钙;
(8)将茉莉花茶汁与上述步骤所得物料以及剩余各物料混合均匀,再灭菌灌装,即得。
本发明的优点是:本发明高值化利用了海洋生物资源,以牡蛎加工产生的大量废弃物—牡蛎壳为钙源制备谷氨酸螯合钙,增加花茶的钙含量,提高人体对钙的吸收率;本发明还添加有山楂提取物,具有较强的抗氧化能力,该山楂提取物与槲皮素间存在抗氧化协同作用,通过与螯合钙共混改性,得到具有高效抗氧化、高营养价值的添加助剂,本发明工艺简便易行,且绿色环保;
本发明入口清甜,香气四溢,营养丰富,还添加有熟地黄、锦灯笼、玉竹等食药材,富予了本发明滋阴补血、益精填髓、利咽生津、润肺养胃的保健功效。
具体实施方式
一种滋阴填髓鱼骨茉莉茶,由下列重量份的原料制成:
玉米15、鱼骨3、柚子皮15、豆蚕皮3、红糖7、茉莉花茶汁200、牡蛎壳100、山楂100、白糖10、槲皮素0.1,2、L焦谷氨酸0.7、熟地黄1.3、锦灯笼1.3、玉竹1。
所述的一种滋阴填髓鱼骨茉莉茶的制备方法,包括以下步骤:
(1)将熟地黄、锦灯笼、玉竹用6倍量的水浸提后,滤得到中药汁;
(2)将牡蛎壳先用清水清洗表面杂物,粉碎,加适量水研磨成糊状,加水搅拌,过滤除去滤液,得钙源牡蛎壳粉;
(3)取L焦谷氨酸、钙源牡蛎壳粉混合,加入混合物100倍的蒸馏水中,加热到70℃,加入醋酸或小苏打调节pH为5,保温搅拌1小时,抽滤,将滤液蒸发浓缩至膏状,加入膏状重量20倍的、90%的乙醇溶液,搅拌均匀,得螯合钙醇液;
(4)玉米、鱼骨混合置于搅拌机搅拌成糊状,再与中药汁混合倒入锅内,小火浸煮,浓缩成膏状;
(5)取柚子皮、豆蚕皮洗净沥干后,剪碎,再用红糖均匀揉搓,混合腌渍5天,取得腌渍好的物料,沥去糖水,再共同送入烘箱小火烘烤1分钟,收集待用;

(3)取L-焦谷氨酸、钙源牡蛎壳粉混合,加入混合物100-110倍的蒸馏水中,加热到70-75℃,加入醋酸或小苏打调节pH为5-6,保温搅拌1-1.2小时,抽滤,将滤液蒸发浓缩至膏状,加入膏状重量20-33倍的、90-92%的乙醇溶液,搅拌均匀,得螯合钙醇液;
(4)玉米、鱼骨混合置于搅拌机搅拌成糊状,再与中药汁混合倒入锅内,小火浸煮,浓缩成膏状;
(5)取柚子皮、豆蚕皮洗净沥干后,剪碎,再用红糖均匀揉搓,混合腌渍5-8天,取得腌渍好的物料,沥去糖水,再共同送入烘箱小火烘烤1-2分钟,收集待用;
(6)将山楂粉加入到其重量20-30倍的、47-50%的乙醇溶液中,于功率为197-00W下超声35-40min,过滤得提取液;
(7)将提取液滴加到合钙醇液中,滴加完毕后加入上述槲皮素,搅拌均匀,置于50-60℃的恒温水浴中,保温10-12小时,出料,将滤液蒸发浓缩至膏状,得抗氧化螯合钙;
(8)将茉莉花茶汁与上述步骤所得物料以及剩余各物料混合均匀,再灭菌灌装,即得。
