锌是人体必需的微量元素之一,被人们冠以“生命之花”、“智力之源”的美称,能够促进骨骼和智力发育,维持正常味觉,润泽肌肤,增强免疫力,促进伤口愈合,抗病菌,抗病毒,保护视力,抗癌。
但是市场上的棒棒糖含有高糖高脂及多种添加剂,如色素、香精及防腐剂等,缺乏营养和保健功能,给人体带来很大伤害,随着人们消费水平和保健意识的增强,高糖高脂的棒棒糖已不再受到消费者的喜爱,市场亟需一种健康营养的棒棒糖产品。

(4)将可可液块加热至46~48℃,不断搅拌至完全融化,加入可可脂,52~54转/分钟搅拌12~14分钟,得可可液;
(5)将剩下8/9的乳糖醇置于夹层锅中,以3~4℃/分钟进行加热升温,42~44转/分钟进行不断搅拌,至温度为126~128℃,得糖液;
(6)将发酵虾皮鸡肝浆、糖液、中药提取物和花粉加入可可液中,混合均匀,精磨3~4小时,72~74℃精炼2~3小时,加入凝乳酶,促进凝结,增强耐储藏性,混合均匀,保持温度为47~49℃,得巧克力浆;
(7)将巧克力浆置于模具中,插入棒棒糖的小棒,置于-14~-12℃冷却间,冷却13~15分钟,置于52~54℃的烘箱中,加热6~8秒,取出,置于-14~-12℃冷却间,冷却16~18分钟,使棒棒糖组织致密,增强稳定性和贮藏性,脱模,用巧克力浆画上花纹,进行点缀,得儿童补锌棒棒糖;
(8)用石头纸进行外层大包装,得成品。

实施例1
一种儿童补锌棒棒糖,由以下重量份的原料制成:可可液块56、可可脂42、乳糖醇17、脱脂乳粉14、虾皮12、鸡肝11、花粉5、山楂叶1.6、柿蒂1.6、石榴皮1.6、食盐0.2、开菲尔0.2、复合酶0.04、凝乳酶0.02。
所述的花粉,由以下重量比的原料制成:桃花:李花:玫瑰花:龙胆花:七彩菊:金盏花:洛神花=22:17:16:16:11:11:6,所有的花均为干花,将所有花进行混合粉碎,过120目筛,得初花粉,向初花粉中加入初花粉重量3倍量的体积分数为68%的食用酒精溶液,置于42℃的真空旋转蒸发仪中,加热浓缩至原体积的1/4,取出,置于46℃的烘箱中,烘干至无水分,得花粉。
所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:植酸酶:木聚糖酶:脂肪酶:果胶酶=17:13:10:6:5:5。
一种儿童补锌棒棒糖的制备方法,其具体步骤为:
(1)将虾皮和鸡肝洗净,置于置于沸水中漂烫16分钟,取出,洗净,重新加入虾皮和鸡肝总重量3倍量的冷水,加热,煮沸至完全熟透,取出,置于-6℃的冷却间,冷却至0℃,加入虾皮和鸡肝总重量0.5倍量的水,打浆,加入食盐,置于细胞破碎仪进行破碎,破碎6秒,停止4秒,重复破碎12次,得虾皮鸡肝浆;

(4)将可可液块加热至46~48℃,不断搅拌至完全融化,加入可可脂,52转/分钟搅拌12分钟,得可可液;
(5)将剩下8/9的乳糖醇置于夹层锅中,以3℃/分钟进行加热升温,42转/分钟进行不断搅拌,至温度为126℃,得糖液;
(6)将发酵虾皮鸡肝浆、糖液、中药提取物和花粉加入可可液中,混合均匀,精磨3小时,72℃精炼2小时,加入凝乳酶,促进凝结,增强耐储藏性,混合均匀,保持温度为47℃,得巧克力浆;
(7)将巧克力浆置于铅笔形模具中,插入棒棒糖的小棒,置于-14℃冷却间,冷却13分钟,置于52℃的烘箱中,加热6秒,取出,置于-14℃冷却间,冷却16分钟,使棒棒糖组织致密,增强稳定性和贮藏性,脱模,用巧克力浆画上花纹,进行点缀,得儿童补锌棒棒糖;
(8)用石头纸进行外层大包装,得成品。
实施例2
一种儿童补锌棒棒糖,由以下重量份的原料制成:可可液块57、可可脂43、乳糖醇18、脱脂乳粉15、虾皮13、鸡肝12、花粉6、山楂叶1.7、柿蒂1.7、石榴皮1.7、食盐0.2、开菲尔0.2、复合酶0.04、凝乳酶0.02。
所述的花粉,由以下重量比的原料制成:桃花:李花:玫瑰花:龙胆花:七彩菊:金盏花:洛神花=23:18:17:17:12:12:6,所有的花均为干花,将所有花进行混合粉碎,过130目筛,得初花粉,向初花粉中加入初花粉重量3.5倍量的体积分数为70%的食用酒精溶液,置于44℃的真空旋转蒸发仪中,加热浓缩至原体积的1/4,取出,置于47℃的烘箱中,烘干至无水分,得花粉。
所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:植酸酶:木聚糖酶:脂肪酶:果胶酶=18:13:11:7:6:5。
一种儿童补锌棒棒糖的制备方法,其具体步骤为:
(1)将虾皮和鸡肝洗净,置于置于沸水中漂烫17分钟,取出,洗净,重新加入虾皮和鸡肝总重量3.5倍量的冷水,加热,煮沸至完全熟透,取出,置于-5℃的冷却间,冷却至0℃,加入虾皮和鸡肝总重量0.5倍量的水,打浆,加入食盐,置于细胞破碎仪进行破碎,破碎6秒,停止4秒,重复破碎13次,得虾皮鸡肝浆;

(3)将山楂叶、柿蒂和石榴皮粉碎,过130目筛,得中药粉,加入中药粉重量3.5倍量的纯净水,混合均匀,加入复合酶,搅拌均匀,置于38℃水浴,48转/分钟,搅拌酶解4.5小时,加热煮沸后,停火,浸泡2.5小时,8000转/分钟离心15分钟,得提取液和中药渣,向药渣中加入药渣重量2.5倍量的体积分数为65%的酒精溶液,35转/分钟,搅拌处理35分钟,10000转/分钟离心10分钟,得提取液和中药渣,合并所有提取液,73℃烘箱中干燥至无水分,得中药提取物;
(4)将可可液块加热至47℃,不断搅拌至完全融化,加入可可脂,53转/分钟搅拌13分钟,得可可液;
(5)将剩下8/9的乳糖醇置于夹层锅中,以3.5℃/分钟进行加热升温,43转/分钟进行不断搅拌,至温度为127℃,得糖液;
(6)将发酵虾皮鸡肝浆、糖液、中药提取物和花粉加入可可液中,混合均匀,精磨3.5小时,73℃精炼2.5小时,加入凝乳酶,促进凝结,增强耐储藏性,混合均匀,保持温度为48℃,得巧克力浆;
(7)将巧克力浆置于橡皮形模具中,插入棒棒糖的小棒,置于-13℃冷却间,冷却14分钟,置于53℃的烘箱中,加热7秒,取出,置于-13℃冷却间,冷却17分钟,使棒棒糖组织致密,增强稳定性和贮藏性,脱模,用巧克力浆画上花纹,进行点缀,得儿童补锌棒棒糖;
(8)用石头纸进行外层大包装,得成品。
实施例3
一种儿童补锌棒棒糖,由以下重量份的原料制成:可可液块58、可可脂44、乳糖醇19、脱脂乳粉16、虾皮14、鸡肝13、花粉7、山楂叶1.8、柿蒂1.8、石榴皮1.8、食盐0.3、开菲尔0.3、复合酶0.05、凝乳酶0.03。
所述的花粉,由以下重量比的原料制成:桃花:李花:玫瑰花:龙胆花:七彩菊:金盏花:洛神花=24:19:18:18:13:13:7,所有的花均为干花,将所有花进行混合粉碎,过140目筛,得初花粉,向初花粉中加入初花粉重量4倍量的体积分数为72%的食用酒精溶液,置于46℃的真空旋转蒸发仪中,加热浓缩至原体积的1/4,取出,置于48℃的烘箱中,烘干至无水分,得花粉。
所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:植酸酶:木聚糖酶:脂肪酶:果胶酶=19:14:12:8:6:6。
一种儿童补锌棒棒糖的制备方法,其具体步骤为:
(1)将虾皮和鸡肝洗净,置于置于沸水中漂烫18分钟,取出,洗净,重新加入虾皮和鸡肝总重量4倍量的冷水,加热,煮沸至完全熟透,取出,置于-4℃的冷却间,冷却至1℃,加入虾皮和鸡肝总重量0.6倍量的水,打浆,加入食盐,置于细胞破碎仪进行破碎,破碎6秒,停止4秒,重复破碎14次,得虾皮鸡肝浆;
(2)将脱脂乳粉加入虾皮鸡肝浆中,混合均匀,加入1/9乳糖醇,于121℃灭菌16分钟,冷却至45℃,加入开菲尔,44转/分钟,震荡8分钟,置于28℃静置发酵16小时,分解大分子物质,产生小分子香味和营养成分,去除虾皮和鸡肝的腥味,得发酵虾皮鸡肝浆;
(3)将山楂叶、柿蒂和石榴皮粉碎,过140目筛,得中药粉,加入中药粉重量4倍量的纯净水,混合均匀,加入复合酶,搅拌均匀,置于39℃水浴,49转/分钟,搅拌酶解5小时,加热煮沸后,停火,浸泡3小时,8000转/分钟离心15分钟,得提取液和中药渣,向药渣中加入药渣重量3倍量的体积分数为66%的酒精溶液,36转/分钟,搅拌处理40分钟,10000转/分钟离心10分钟,得提取液和中药渣,合并所有提取液,74℃烘箱中干燥至无水分,得中药提取物;
(4)将可可液块加热至48℃,不断搅拌至完全融化,加入可可脂,54转/分钟搅拌14分钟,得可可液;
(5)将剩下8/9的乳糖醇置于夹层锅中,以4℃/分钟进行加热升温,44转/分钟进行不断搅拌,至温度为128℃,得糖液;
(6)将发酵虾皮鸡肝浆、糖液、中药提取物和花粉加入可可液中,混合均匀,精磨4小时,74℃精炼3小时,加入凝乳酶,促进凝结,增强耐储藏性,混合均匀,保持温度为49℃,得巧克力浆;
(7)将巧克力浆置于汽车形模具中,插入棒棒糖的小棒,置于-12℃冷却间,冷却15分钟,置于54℃的烘箱中,加热8秒,取出,置于-12℃冷却间,冷却18分钟,使棒棒糖组织致密,增强稳定性和贮藏性,脱模,用巧克力浆画上花纹,进行点缀,得儿童补锌棒棒糖;
(8)用石头纸进行外层大包装,得成品。
对比例
市售普通棒棒糖。
实施例和对比例棒棒糖的感官评定:
随机选择30人,每人对实施例和对比例的棒棒糖进行评定,每项满分10分,分别对每项进行打分,结果取平均值,并根据分数解释棒棒糖的各指标特征。实施例和对比例棒棒糖的感官评定结果见表1。

从表1的结果表明,本发明的儿童补锌棒棒糖,色泽均匀,口感丰富,天然香味浓郁、和谐,酸甜适口,组织细腻、光滑,外酥内脆,不粘纸,不粘牙,得到广大儿童的喜爱。
实施例和对比例棒棒糖增强免疫力的效果:
随机选择清洁级昆明种小鼠100只,雌雄各半,分为5组,每组雌雄各为10只,5组分别为实施例组、对比例组和对照组,所有小鼠除自由进食和饮水外,实施例组和对比例组的每只小鼠每天灌胃该组的棒棒糖2.5克,对照组的每只小鼠每天灌胃等量的生理盐水,连续灌胃30天,测小鼠的胸腺脏器指数、脾脏脏器指数、廓清指数和血清IL-2,实施例和对比例棒棒糖增强免疫力的效果见表2。

从表2可以看出,实施例的儿童补锌棒棒糖,小鼠的胸腺脏器指数、脾脏脏器指数、廓清指数和血清IL-2均较对比例和对照组得到明显改善,说明实施例儿童补锌棒棒糖有明显的增强免疫力的效果。
Claims (5)
1.一种儿童补锌棒棒糖,其特征在于,由以下重量份的原料制成:可可液块56~58、可可脂42~44、乳糖醇17~19、脱脂乳粉14~16、虾皮12~14、鸡肝11~13、花粉5~7、山楂叶1.6~1.8、柿蒂1.6~1.8、石榴皮1.6~1.8、食盐0.2~0.3、开菲尔0.2~0.3、复合酶0.04~0.05、凝乳酶0.02~0.03。
2.根据权利要求1所述儿童补锌棒棒糖,其特征在于,所述的花粉,由以下重量比的原料制成:桃花:李花:玫瑰花:龙胆花:七彩菊:金盏花:洛神花=22~24:17~19:16~18:16~18:11~13:11~13:6~7,所有的花均为干花,将所有花进行混合粉碎,过120~140目筛,得初花粉,向初花粉中加入初花粉重量3~4倍量的体积分数为68~72%的食用酒精溶液,置于42~46℃的真空旋转蒸发仪中,加热浓缩至原体积的1/4,取出,置于46~48℃的烘箱中,烘干至无水分,得花粉。
3.根据权利要求1所述儿童补锌棒棒糖,其特征在于,所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:植酸酶:木聚糖酶:脂肪酶:果胶酶=17~19:13~14:10~12:6~8:5~6:5~6。
4.根据权利要求1所述儿童补锌棒棒糖的制备方法,其特征在于,具体包括以下步骤:
(1)将虾皮和鸡肝洗净,置于置于沸水中漂烫16~18分钟,取出,洗净,重新加入虾皮和鸡肝总重量3~4倍量的冷水,加热,煮沸至完全熟透,取出,置于-6~-4℃的冷却间,冷却至0~1℃,加入虾皮和鸡肝总重量0.5~0.6倍量的水,打浆,加入食盐,置于细胞破碎仪进行破碎,破碎6秒,停止4秒,重复破碎12~14次,得虾皮鸡肝浆;
(2)将脱脂乳粉加入虾皮鸡肝浆中,混合均匀,加入1/9乳糖醇,于121℃灭菌14~16分钟,冷却至42~45℃,加入开菲尔,42~44转/分钟,震荡6~8分钟,置于26~28℃静置发酵14~16小时,得发酵虾皮鸡肝浆;

(8)用石头纸进行外层大包装,得成品。
5.根据权利要求4所述儿童补锌棒棒糖的制备方法,其特征在于,所述步骤(7)的模具,形状为铅笔形、橡皮形、汽车形中的一种或几种。
