面条作为一种速食产品深受人们欢迎和喜爱,由于市面上的面条多以小麦粉为原料制作而成,其品种单一、营养口味也单一,且在烹煮过程中易出现糊水、断条、口感不够纯正、柔软等缺陷,同时由于传统面条在加工过程中往往为了克服原料其本身的缺点而加入增白剂、食用明矾等以增加其白度、面筋强度和光滑度,由于加入了增白剂、食用明矾的食物会妨碍大脑对钙和铁的吸收,尤其是对少年儿童的大脑发育会产生严重的危害,对中老年人的大脑也有不同程度的损伤,本发明的面条不仅味道清新、颜色美观,而且能够补充丰富的维生素及人体内多种微量元素、防癌抗癌,富含优质植物蛋白质,且杂粮面条具备抗老防衰等保健养生功效。

本发明目的是为了提供一种营养丰富、无添加剂的蔬菜杂粮面条。

一种蔬菜杂粮面条,由下列重量份的原料组成:高筋面粉150-250份、南瓜20-30份、鸡蛋黄15-25份、食盐2-4份、大米粉60-100份、紫甘蓝15-25份、豇豆20-30份、红薯淀粉65-85份、玉米粉60-70份、芥菜20-40份、赤小豆粉60-100份、水200-300份。
进一步,由下列重量份的原料组成:高筋面粉150份、南瓜20份、鸡蛋黄15份、食盐2份、大米粉60份、紫甘蓝15份、豇豆20份、红薯淀粉65份、玉米粉60份、芥菜20份、赤小豆粉60份、水200份。
进一步,由下列重量份的原料组成:高筋面粉200份、南瓜25份、鸡蛋黄20份、食盐3份、大米粉80份、紫甘蓝20份、豇豆25份、红薯淀粉80份、玉米粉65份、芥菜30份、赤小豆粉80份、水250份。
进一步,由下列重量份的原料组成:高筋面粉250份、南瓜30份、鸡蛋黄25份、食盐4份、大米粉100份、紫甘蓝25份、豇豆30份、红薯淀粉85份、玉米粉70份、芥菜40份、赤小豆粉100份、水300份。
本发明的有益效果是:
